Cincinnati’s Absinthe Lovers Chased The ‘Green Fairy’ In Their Own Midwestern Way
If you were to wander into one of Cincinnati’s tonier watering holes some evening in the 1890s, you would surely not be surprised to find beer on tap and a few bottles of rectified whiskey gracing the backbar shelves. A selection of fruit cordials and liqueurs might not raise an eyebrow. But absinthe?
It’s true. Cincinnati had its devotees of “La Fee Verte,” the “Green Fairy” so beloved of habitués of the Parisian demi-monde. According to the Cincinnati Commercial Gazette [4 February 1894]:
“Absinthe is a fascinating tipple. It is drunk in various forms in all the high class saloons and cafés in Cincinnati.”
In this particular review, the Commercial Gazette suggested that this infatuation was a relatively recent phenomenon:
“Absinthe has not been observed in the Cincinnati bars for a very long time. Within the past five years, however, it has gradually but surely made its way into the favor of the man who is fastidious in his habit of ingurgitation. At first, absinthe was used by the barkeepers to give an added flavor to a whisky cocktail. ‘A little whisky with a dash of absinthe’ is now an order that a barkeeper hears frequently.”
Finding absinthe in Cincinnati may have been a novelty for the reporter, but absinthe drinkers had been imbibing this ‘fascinating tipple’ for decades by then. An 1871 advertisement for Joseph R. Peebles’ Sons grocery – then still located at Fifth and Race Streets and not yet relocated to Peebles’ Corner – offered absinthe along with anisette and chartreuse. A steamboat manifest from that same year revealed that the J.H. Groesbeck was carrying two boxes of absinthe, shipped from New Orleans to August Fix, who ran a liquor store on Walnut Street. Typically, Cincinnati got its French culture filtered through New Orleans rather than direct from Paris.
While exotic French liqueurs were easily imported to Cincinnati, it appears that the hallowed ritual of absinthe preparation was less transportable. Per the Commercial Gazette:
“The American barkeeper has never mastered the art of dripping the water into the absinthe so patiently and thoroughly that the bitter oil of the liquor is slowly brought to the surface of the tiny liquor glass, from which it is carefully gathered with a spoon.”
Cincinnati’s bonifaces preferred a simple concoction of water, absinthe and a dissolved sugar cube. The locals didn’t seem to mind, and the Commercial Gazette approved:
“In this form absinthe is extremely attractive to the palate of the experienced tippler. As a ‘pick-me-up’ after a rather industrious night of drinking, it is unsurpassed. It soothes the discordant nerves, effectually removes the ‘deep seal brown taste’ that tipplers find in their mouths in the morning, and gives a ‘tone’ to the disordered stomach that is as insidiously soothing as the soft touch of a pellet of morphia.”
Diluted with water, sweetened with sugar, absinthe may have been “soothing,” but those who drank it straight were reputed to have cast-iron throats. Al Thayer’s 1894 book, “Pickings From Lobby Chatter” describes one such human:
“I saw an actor in one of our saloons, last week, take a tumbler, fill it to the brim with absinthe, and drink it down with a relish. Eugene Brown, who was in charge of the bar, offered him a paper of tacks to wash it down with.”
Because of that formidable scratch, absinthe most often appeared in Cincinnati libations mingled with a veritable pharmacopeia of liqueurs and bitters. The Cincinnati Post [20 October 1897] described one such concoction:
“The ‘brain duster’ is a local invention, and as you would judge from its name, is the right thing to get rid of the early morning cobwebs. It is made of absinthe, sugar, lemon juice, ice and whisky.”
Another Post reporter, interviewing a local barkeeper [21 July 1883], inquired why so many of his cocktail recipes called for a dash, or more, of absinthe.
“It is a wonderful stimulant for the brain, and is valuable to counteract nervous spells after long drunks. The absinthe used in the cocktail above mentioned is a powerful stimulant imported from France. Its main ingredient is oil of wormwood. It acts directly and powerfully on the brain, and is sometimes used to overcome sleepiness. Used to excess, it produces a peculiar and incurable brain disease resembling epilepsy, and soon puts a man in the deep box.”
Although failing to import the protracted ritual of absinthe presentation, America absolutely imported absinthe’s dangerous reputation. All the while Cincinnati drinkers were chasing the Green Fairy, legislators in France and the United States were conspiring to ban the liqueur altogether and succeeded in 1914. Cincinnati newspapers blamed absinthe for any crime committed by anyone who ever drank the stuff.
While the coroner concluded that Albert Strong, a Mount Auburn salesman, died from a morphine overdose, the local newspapers implied that a nearly empty bottle of absinthe in his room revealed the source of his suicidal outlook. Similarly, Guy Means, a medical student rooming on Ninth Street must have been “frenzied by the effects of absinthe” when he rushed into a neighboring doctor’s apartment and swallowed a bottle of morphine and a bottle of potassium bromide.
John Monpetit, a French Canadian living in the West End, allegedly gave up an absinthe addiction to join the Salvation Army, but relapsed and was thrown into the insane asylum when he attempted to paint his wife red. The courts awarded Margaret Bain a divorce from Ambrose Shaw, who had lost his position with the Emery real-estate development company because of his drunkenness. According to the Enquirer [12 February 1910]:
“Absinthe was his favorite drink, she said, and he became a slave to it.”
It wasn’t only the lowlifes and the bohemians who liked their absinthe. The Enquirer [5 March 1895] reported on a very formal dinner at the St. Nicholas Hotel for ex-Congressman Bellamy Storer. As the after-dinner speechifying began, cigars were lit and absinthe passed around in “frosted glass.”
Still, most local barkeeps followed the lead of Cincinnati Reds pitcher Jack Sutthoff who tended bar at a West End establishment during the off-season. A gang of Sutthoff’s pals showed up one evening, having conspired to order the most outrageously complicated beverages they could imagine, several involving absinthe. Sutthoff stared them down and issued an ultimatum:
“You guys’ll drink beer or whisky straight or you don’t drink.”

This dispatch from the “country” meant that summer’s heat was waning and the joys of autumn lay just ahead. Although Cincinnati sits in the middle of its natural habitat, the paw-paw is not usually an urban tree and most of our residents live their lives without tasting this most unusual native fruit. Paw-paws do not travel well and spoil quickly. One might find a few at Findlay Market or some of the suburban produce stands, but it’s an uncertain quest during a brief season lasting only from mid-September until the first good frost.
Paw-paw fruit has the texture of soft custard and is colored a creamy yellow with a flavor that is challenging to describe but often equated to a blend of banana and mango. Cincinnatians once awaited paw-paws in the local markets. Here is the Enquirer again, from 27 September 1865:
“The PawPaw – This luscious fruit is now in its prime and was never more abundant or of finer quality in our markets. In price it ranges from ten to twenty cents per dozen.”
In addition to its fruit, paw-paw trees had many other uses. The inner bark is especially slippery, so a short piece of branch is quickly transformed into a whistle by sliding the outer bark back and making a few cuts with a pocket knife. Thin and springy pawpaw branches made excellent switches for driving cattle or pigs. And, while slick, the inner bark was also tough and resilient and could be braided into rope or used to weave the seats of handmade chairs.
One such chair belonged to Amanda Perry, aged 72 in 1888, who showed it to the Cincinnati Post. Mrs. Perry believed this to be the first chair ever made in Cincinnati, when the town was still named Losantiville. She told the Post:
“The wood came from a tree that was cut down to clear the way for Main-st., at what is now the corner of Fourth and Main. After he finished the frame he gathered pawpaw bark right around here to make the split bottom.”
The country folk knew that a good stand of pawpaw bushes or trees was a sign that the soil was especially fertile. In the old newspapers can be found many references to the rural districts as “pawpaw country” or “the pawpaw environs.”
But delicious fruit, whistles, switches and chairs were not the only products of this “northern banana.” The sugary fruit also fermented nicely and pawpaw beer and pawpaw brandy were renowned for their potency.
The Enquirer [5 September 1893] compared pawpaw beer to the notorious liqueur, absinthe:
“The new drink is an intoxicant of the worst form, resembling somewhat the great French drink, absinthe. It is made from ripe pawpaws, and is called pawpaw beer. It improves with age and has to be a year old before it can be used. Several rounders have felt the crazy effects of this new drink”
If pawpaw beer gathered comparisons to absinthe, pawpaw brandy inspired journalists to frenzied prose. Here is Roy Lee Harmon reminiscing for the Raleigh, North Carolina Register [31 July 1963]:
“Now paw paw brandy was a drink without a peer. You could take a few snifters of it and feel like you were floating on a pink cloud eating ice cream and viewing some beautiful scenery.”
And here is a United Press dispatch datelined St. Joe, Arkansas, 17 November 1932:
“A fortune awaits the man who sets out a big acreage of paw-paws and learns the secret, so guarded by the hill folk – how to make that powerful beverage, paw-paw brandy. Many stories are told of the strength of the concoction. Its manufacture is a secret and the formula has been handed down from generation to generation among the hill folk. Tourists beg for a spoonful and prohibition agents have hunted it. None is for sale.”
One man who attempted commercial distillation of pawpaw brandy was Adam Brewer (an appropriate surname) of Campbellsburg, Indiana. News reports from 1915 suggest that the abundant paw-paws of southern Indiana offered him enough raw material to attempt it. Even if he had succeeded, Prohibition was just around the corner. He was soon out of business.
More recently, a dedicated zymurgist from Athens, Ohio, one Kelly Sauber, distilled six gallons of 80-proof pawpaw brandy, aged with charred and toasted American white oak for 3 months. His report is enticing:
“So to describe the flavors, this brandy starts with a light tropical fruit nose, rimmed with almonds. This is followed with ripe fruit coating the tongue continuing with toasted oak and alcoholic warmth. Neat or over ice, this is a sipping brandy perfect for a wood fire and a cool evening.”

According to that 1932 United Press dispatch, the best way to tame the pawpaw brandy beast is to pour it into tea:
“Now a bit of paw-paw brandy in tea improves the flavor greatly. If this fact were known generally, tea parties again would be the fashion and the hip flask would disappear entirely.”

If only because they're all so different. Its not like collecting lasagna recipes where your grandma's secret formula is preferred over your aunt's, but at the end of the day they're pretty similar and they both taste like lasagna.
These six Irish Cocktail recipes (and counting) have very different flavor profiles from one another. Guess that just makes choosing what Saint Patrick's Day themed drinks to serve at your party (or Irish Wake, see below) that much more fun.
While No. 2 on our list took off briefly from day one before becoming obscure, No. 3 has stood the test of time. You'll have to be the judge though. While further research is likely to turn up a few more, the Irish Cocktail drink recipes found so far are listed below in chronological order.
Behind Your Bar - Several Ways To Make The Irish Cocktail
The Original
Irish Cocktail Recipe No. 1:
1 lump ice
2 drops Schroeder's or Boker's bitters
½ naggin Irish whiskey
1 bottle C. & C. ginger ale

That may have been due to the acid phosphate as an ingredient which is a cheaper, less perishable souring agent than lemon or lime juice whose use fell out of favor and disappeared from the market when bottled soft drinks replaced soda fountains. It has since been resurrected and is being used in high end bars around the globe. Maybe your own home bar should be included among them.

Irish Cocktail Recipe No. 3:
1 wineglass (2 oz) Irish whiskey
2 - 3 dashes absinthe
2 dashes Boker's bitters
1 dash curacao
1 dash maraschino
Add all the ingredients to mixing glass filled with shaved ice. Stir well with a bar spoon and strain into a chilled glass putting in a medium sized olive along with squeezing a piece of lemon peel on top.
Outside of a few die-hard aficionados and historians who know otherwise, this classic 1900 concoction is essentially the sole surviving Irish Cocktail drink recipe left today.3 Harry Craddick, Trader Vic and many others substituted Angostura for Boker's, some call for Pernod instead of absinthe, and Crosby Gaige renamed it Erin Go Bragh, but its essentially the same as it ever was.
Other similarly garnished Ireland themed drinks include Everybody's Irish and the Shamrock.

1 jigger Irish whiskey
3 dashes Angostura bitters
2 dashes gum syrup
Mix together with fine ice, strain, and garnish with a piece of twisted lemon peel.3

1 gill (5 oz) creme de menthe
3 dashes gum syrup
3 dashes Peychaud's bitters
2 dashes absinthe
Stir well with three or four lumps of ice and strain into a cocktail glass.4
Irish Cocktail Recipe No. 6:
½ wineglass Irish whiskey
½ wineglass vermouth
1 spoonful sugar
2 dashes lemon juice
2 dashes bitters
1 dash creme de menthe (for green color)

Seaway release new song “Curse Me Out”
Seaway have released a new song called “Curse Me Out” today. The song comes off their upcoming album, Vacation, which is set to be released on September 15th via Pure Noise Records.
"'Curse Me Out' was pretty much the first song we wrote and demoed out for ‘Vacation’. Ken and I figured most of it out in his basement months before we started writing the record and Ken's dad, Dan, even came down and ripped some keys over the main riff. It was sick. We probably should have kept that," guitarist Andrew Eichinger shares."The song is about almost losing a relationship while on the road and not really being able to do anything about it until you can actually get home and work it out. I love this song because of the way the lyrical content sits on top of the super happy feel good vibe of the music. It's a song that has a roll down your windows in the summer type vibe but also covers some serious content."

Seaway unveil new track “Something Wonderful”
Seaway have released a new track called “Something Wonderful.” The track comes off their new album, Vacation, which will be released on September 15th via Pure Noise Records.
The band has a very busy fall, with tours lined up with Four Year Strong and Silverstein.

Seaway to open for Silverstein on fall tour
Seaway continues to unveil tour dates for what will be a busy fall for this Canadian pop-punk group. It has been announced that they will be supporting Silverstein for a handful of U.S. dates this fall, which will coincide with their previously announced cross-Canada tour. In addition, the band will be supporting Four Year Strong on their 10th anniversary tour for Rise or Die Trying.
