Quick Ciabatta Bread Pizza - Recipe Ingredients: 1 half size part bake ciabatta loaf (Mine is from M&S) 2 tbsp margherita sauce/tomato puree (again mine is from M&S) 4 heaped tbsp grated mozzarella 3 cherry tomatoes cut into quarters 1 small avocado peeled, stoned and sliced Method: Preheat oven to 190 degrees. Slice ciabatta lengthways and spread sauce onto the inside. Place on a baking tray and top with mozzarella and tomato quarters. Bake for 10-15 minutes until cheese is golden and bubbling. Place avocado slices on top and eat right away. Calories are around 800 depending on what sauce you use and whether you use reduced fat mozzarella or not. You could make it leaner by splitting this between two and serving with salad. This is a delicious, fast supper or snack that is vegetarian friendly. You could always switch up the toppings to suit what is in your fridge. Roasted peppers work very well just remember to adjust calories if you are counting!
