Churro Popcorn

It’s Saturday night, I’m settling down with a movie and a big bowl of this delicious churro flavoured popcorn! It’s everything you’d expect. Sugar, cinnamon and chocolate sauce drizzled over the top. This popcorn is a sweet and decedent vegan treat. I would really recommend using good quality chocolate in this recipe.

Churro Popcorn Serves 2-3

Ingredients 60g Organic un-popped Popcorn 1 Tsp Cinnamon 30g Brown Sugar 50g Dark Chocolate (I used Montezuma’s) 2 Tsp Coconut Oil 1 Tbsp Date Syrup

Method 1. Heat the coconut oil in a large pot. Add 3 popcorn kernels to the pot and put the lid on top, once one has popped turn down the heat to medium and add the rest of the popcorn. 2. When most of the popcorn has popped take off the heat and allow to cool. 3. In a bowl, combine cinnamon and brown sugar and set aside. 4. Melt 30g of dark chocolate and stir in one tablespoon of date syrup, this will be for the top of our popcorn. 5. Once the popcorn has cooled slightly add the cinnamon sugar and popcorn to a large bowl and make sure all of the popcorn is evenly coated. Chop the remaining chocolate into small chunks and add to the bowl. 6. Drizzle the dark chocolate syrup on top of the popcorn and serve. Delicious!
