I've been going veg'n lately and the variety of foods that I discovered in just a few weeks is amazing. Did you know you can make tofu out of lentils?? Just blend up some soaked lentils with water and cook it until it turns into a paste, fridge it overnight and you've got tofu, baby! It cooks up crispy and has a soft texture like potato. There's seitan, chickwheat, soy curls, green jackfruit, legumes of all kinds and that's just the meat replacements. There are so many types of grains, so many ways to cook vegetables and holy shit has vegan cheese gotten better. There are options!! Eating plants ā suffering.
Part of the reason I try to make good vegetarian food even though Iām not vegetarian is because of the one week my dad was convinced he was gonna go vegan.
You know what he made for dinner that whole week? Steamed vegetables, rice, and canned beans. All unseasoned. Technically a nutritionally complete meal. It tasted awful.
How could a man usually so good at cooking forget literally all of that when faced with the possibility of making vegan food?
I thought there had to be a better way. And it turns out there is. Vegetarian food doesnāt taste bad. Cartoons that depict vegetarians eating a singular leaf for a meal have ruined us. A lot of stuff that meat eaters eat in everyday life is technically vegetarian or easily made vegetarian. Why when faced with one restriction do so many people forget every single egg sandwich or apple pie theyāve ever eaten?

days 77 - 83
day seventy-seven [mar 19]
8:00 am - itās friday! seriously so excitedā¦ itās been a hell of a week.
11:00 am - i donāt share too much about work here because the stuff i do is sort of confidential right now. one of our vendors called me into a 1:1 because i hurt someone on his teamās feelings. i really like this person and would never want to make her feel that way, but i stand by my escalation process for this specific thing she did. the vendor tries to tell me to come to him first before escalating internally and i say thatās fine for things outside of tests but if weāre testing something and she changes something without running it by us first, we will run into the same problem.
1:00 pm - meet with my boss to tell her what happened and she gets so pissed and asks to meet with the vendor again 1:1 to remind him who the client is. the vendor blows her off and i am just livid regarding how that vendor thinks he can run the show and tell me what to do.Ā
4:00 pm - our data scientist schedules a meeting with me for right now and iām just likeā¦ please i need wine and i donāt want to be on my computer. but the meeting is great and iām grateful for all of the work the data team does to support me.
4:45 pm - i have never been more excited to do barre in my life.Ā
6:00 pm - big whiskey+mezcal cocktail. iām basically ready to indulge after today and treat k to pizza from zeeeeks. we eat and watch the first few episodes of the new season of Drive to Survive. $44.29
9:00 pm - my friend in CA posts a go fund me type thing so he can get to NYC for an art show he is featured in. I toss in $50
day seventy-seven total: $94.29
day seventy-eight
9:15 am - make coffee and watch more Drive to Survive with k. End up making breakfast burritos with tofu/eggs scramble, beans, hashbrowns and cheese for breakfast.
10:00 am - our dishwasher smells like fish. i investigate with a little help from k and we get the filter cleaned and run a bowl of vinegar throughout. it helps a lot!
2:00 pm - do a barre workout & rinse offĀ
7:00 pm - start prepping stuff for veggie sandwiches but k gets this funny thing in his head to hit golf balls. i donāt really want to but he seems like he is in a really good mood. we split a large bucket of balls. he treats.
9:30 pm - we eat a late dinner of veggie sandwiches and watch more Drive to Survive.
10:00 pm - i am trying to figure out this capsule wardrobe thing out and it seems like everyone has a pair of white sneakers. i find a pair from a company that looks cool called superga and find a new pair on poshmark for $20 off. $45.29
day seventy-eight total: $45.29
day seventy-nine
9:00 am - i spend most of today in the kitchen with not much to show for it. i make a hot sauce that is way too spicy, chile de arbol salsa, a peach and mango pie, chickwheat shreds, and cucumber cashew ranch. i try to shoot some stuff for the blog too but my motivation runs out by 2:30 pm. iāll work on this throughout the week.
3:00 pm - kinda tired of barre so i decide to play ddr. make some good progress on afronova.
5:00 pm - meet with kās parents on zoom. salt eggplant and zucchini for GRILLED veggie sandwiches.
6:30 pm - fire up the grill, hop in the shower, roast some shit.
7:00 pm - everything is super oily but really delicious. iāll work on that for next time.
8:00 pm - watch the last few episodes of Drive to Survive. it was kind of a whatever season but i though they did a good job of trying to make normalcy out of a season with the pandemic.
10:00 pm - spend too much time browsing thru this modcloth sale only to feel like i donāt want any of this shit and i need to refocus on ācapsule wardrobeā
day seventy-nine total: $0
day eighty
8:30 am - make my coffee and dose out my vitamins. Pure barre charge comes through. Eat leftover tofu scramble for breakfast. $15
10:00 am - Make more tofu for Nashville hot tofu salads.
3:00 pm - I finish all of my work and shoot the glamour shot of cashew cucumber ranch. It looks good!
5:00 pm - do a pure barre live stream. Feel good about my posture.
7:00 pm - make grilled veggie sandwiches again for dinner. Try to use less oil this time and I think it works out a little better for our stomachs.

8:30 am - coffee.
10:30 am - eat my last slice of pizza for breakfast. Realize we are out of vital wheat gluten so I buy more on Amazon. $12.93
12:30 pm - more nashville hot tofu salad. I need to buy more cleanser and moisturizer from acne.org so i take the plunge. $50.40
3:00 pm - day is really slow thankfully so i do barre early.
4:30 pm - Q calls and I take a long walk while chatting with him about a new potential work opportunity.
7:00 pm - our kitchen is a disaster and iām not up for cooking so i offer to buy us chipotle. $17.89
8:00 pm - my eyes have really been bothering me today so i decide to fold laundry to get myself away from screens. watch a few episodes of the challenge (iām on season 24 now!) while i do that and it doesnāt seem to hurt my head.

8:30 am - charge for cbs all access/paramount + comes through $6.48
10:30 am - J has an employee discount to Free People and offered to apply her discount to a pair of jeans Iāve been eyeing. $50.59
4:00 pm - i get a charge for hbo on my card and i think itās my sister. Iāll go ahead and not count this charge since she will pay me back.
7:00 pm - k and i decide to go hit golf balls. i buy a medium-sized bucket. $8.66

Trying new recipes. Homemade ChickWheat Seitan(fried) tossed in a hoisin sauce with sesame and chopped scallions, served over organic brown basmati rice, and Oolong tea. Being stuck in the house is is encouraging me to try new recipes. I made homemade chickwheat seitan for the first time. I thing it turned out fabulous. Itās amazing! My daughter loves it. I think after I keep making it, Iāll get better. I wasnāt the right texture I think to shred completely but it was close. This is a very versatile recipe. I see making mock, nuggets, patties, soups and salads with this. Thanks to Maryās test kitchen for sharing this recipe. 2 Week Update!
Iāve become a lot more mindful ever since becoming much more plant based.Ā
I donāt feel as tired and Iām not taking as many naps anymore.
To be honest, before when I was eating meat: I was obsessing over getting enough protein and just eating my calories up and such.
Now Iām much more focused on getting my beans and nuts in as well as sticking whole food as best as I can. I must say being whole food based is A LOT more filling than being an omnivore! I also love how much fun I am having in the kitchen.
Now, donāt get me wrong. Iām still hitting some serious protein gains - but from much more body friendly and Earth friendly sources! I have a vegan protein powder that people have mentioned is DELICIOUS and my mother picked up the package from my brotherās yesterday- canāt wait to try it! Itās chocolate - my favorite. Iāll mix it with maca powder and PB2 powder and Iām sure itāll be a staple in my meals.Ā
Iāve always loved cooking so being in the kitchen is natural, Iām pretty happy cooking and seeing my take on some popular recipes - itās very rewarding! It makes me appreciate food a lot more.Ā
After a failedĀ āchickwheatā seitan recipe I was going to give up on the wheat protein ... but then I tried a chicken nugget recipe from Sweet Simple Vegan... wow! I actually ended up loving it!Ā
The summer is coming up soon (though here in Boston it snowed overnight) so I plan to make seitan sausages and lentil bean burgers for BBQs that I attend (just so I have something to eat besides a bun and ketchup.. haha). Actually, I checked today on Amazon to see what other stuff my vital wheat gluten brand was selling and they sold out of the VWG! Iām so happy I got one of the last packages.
I also am soaking two bags of dried chickpeas to make FALAFELS! Yes... itās been so long since Iāve made them and Iām excited. I plan to make A LOT to freeze for future meals. Itās essentially only chickpeas and no added flour or sugars - the only thing is that you MUST fry it! Canāt bake it - itāll be too dry and wonāt be crunchy. I can have a little fun especially since my diet is so clean.Ā
On another health note - am SO grateful I made the switch during quarantine because apparently it takes quite some time for the body to get used to eating beans (2 weeks approximately) so the gases in your body will regulate itself because of the increased fiber intake. Lol so the only person that has to be around me during this time period is Rocky! Thankfully Iām used to his regular farting so now he shall be used to mine (at least for two weeks).Ā
Iāve been keeping notes on my iPhone of vegan foods I donāt like and recipes that Iām sticking with forever! I hate tempeh. No matter what I do, I canāt get over the gross creamy bean that comes with some bitterness. Nope, never again! At least I know now.Ā
I received my Crate & Barrel wooden bowls and plate! I am soooo happy. They make my salad and food look so beautiful. They were well-priced and canāt wait to use them more often - though I wish I got a second plate! Darn. Oh well.Ā
Something else Iāve taken up on is making fish-free sushi! I just use avocado for the filling and it is very satisfying.
My mom and dad are really supportive of my switch to plant based diet and itās awesome having this support!Ā
