To be fair this detail doesn’t seem to be consistent. Going by the Wikipedia page for Ankou alone, you get ones from

Saint-Miliau

Noyal-Pontivy

and Ploumilliau with standard scythes.

There are some without scythes.

In fact the only one shown with a clearly reversed scythe is a modern rendition.

Maybe this is another case of textual/artistic disconnect, like Scylla?
