this started out as a short rant about non-stick cookware but i've got an infodump about cookware in general and suggestions for what's the most useful vs the least useful in the kitchen. the thing about cooking is you can do a lot with a little equipment, despite appearances to the contrary. however the vessels you cook in are the most used tools in the kitchen, aside from a chef's knife
ok, first my little rant about non-stick cookware:
it doesn't last, and that's the main flaw of non-stick cookware. whether it has a non-stick coating or it's a special material that is inherently non-stick (at first), eventually they wear down and the non-stick benefits you bought the pan for pretty much disappear.
that isn't to say non-stick cookware is not useful. I have one non-stick frying pan in my kitchen and I use it to cook eggs and other things that are notorious for sticking. i also use it to reheat leftovers just because it's easier to clean. that's all i use it for
so, if you're in the market for cookware because you're moving out or just finally getting a kitchen of your own, do not go buying all non-stick pots and pans. sauce pans, skillets, stock pots (the big pots you use for soup), sauté pans, etc, those actually need your food to stick in some cases, especially for soups and sauces. why's that?
it's about the fond. example: when you're making a soup you usually start by sautéing solid ingredients in the pan first. those get browned and they leave a bit of slightly-burned foodstuff on the bottom of the pot. that's called fond. it's super concentrated savory flavor. right before you add the stock to the soup, you "deglaze" the pan by adding a little bit of liquid to the bottom of the pot and gently scraping it off and integrating it into the soup. fond is also like the basis of all sauces and stews and gravies pretty much anything else you're cooking
where should you buy cookware? obviously you can always buy new, I suggest buying direct from the manufacturer if you really want new. you can also find good cookware at garage sales.
if you have access to them, restaurant supply stores have cheap cookware but it's also made to be beat to death in a commercial kitchen. it works just as well as the stuff aimed at the consumer because, well, metal pans are metal pans. it's not rocket science. but there is cheap bad cookware in the restaurant supply store so shop carefully
so what kind of cookware should you buy? here are options i recommend, but not in any particular order:
stainless steel
stainless steel pans are versatile and they last forever. they work on the stovetop and they go in the oven too. so not only can you use them to fry up some veggies, you can also use them to roast a beast in the oven. they're easy to keep clean, though they eventually get a patina especially on the bottom. use dish soap. the easiest way to get tough spots off them are gentle abrasives like Barkeeper's Friend. these range from cheap to expensive, and some of the expensive ones are worth it (but not too expensive. like $100-200 range for really nice ones. remember, they last forever, so it's like a one-time fee)
good stainless steel pans should be heavy. if you're out shopping for them, pick them up and compare how they feel. if you spot a really cheap one and it feels light like a non-stick pan, avoid it.
carbon steel
these got popular lately, and frankly i don't have too much experience with them since the one i had ended up being left behind in a move. however they're totally fine to work with and are easier to maintain than a cast iron pan. however they sometimes come with wooden handles (a lot of them are wok-shaped because, well, a lot of woks are carbon steel), so remember you can't put wooden-handle pans in the oven. also since they're thinner they're probably not as good for the oven as other materials in terms of both performance and longevity
taking care of them is a little harder than stainless steel, because after you wash and dry them, you have to coat them in a thin layer of oil to prevent rusting
cast iron
okay first i want to get the cleaning bit out the way: YOU CAN WASH YOUR CAST IRON PANS WITH DISH SOAP. that bullshit about only using salt and water and never getting soap on it is from an era when soaps were made of lye. MODERN DETERGENTS ARE NOT MADE OF LYE, THEY'RE NOT EVEN SOAP. HOWEVER: DO NOT SCRUB YOUR CAST IRON WITH METAL SCRUB SPONGES
now about cast iron itself: it's cheap and it's a long-term investment. your cast iron gradually becomes a non-stick pan over time if you maintain its seasoning. a cast iron pan becomes seasoned naturally over time as long as you wash it soon after it cools down from cooking (don't ever leave food or water in it, it will rust), and after it's clean, you cover it with an extremely thin layer of cooking oil.
you can re-season cast iron that has lost its seasoning too. i don't want to turn this post into a cast-iron infodump post so i'll leave it to you to google "how to season cast iron pans" and "how to maintain cast iron pans". just remember the "don't wash it with soap" line is bullshit unless you actually have dish soap that contains lye, like where'd you get that?
these are also great for cooking in the oven as well as the stovetop. their high-density and dark color make for good heat distribution. a lot of people swear by cast iron as the best material to sear meat with, however i never really noticed the difference between cast iron and stainless steel.
enameled cast iron
le creuset can sit on it and spin. don't buy their shit it's overpriced. enameled cast iron is much more affordable from companies like lodge who already make cheap, good, regular cast iron pans. it's a cast iron pan coated with ceramic. enameled cast iron is really good for even heat distribution, however you do have to be careful not to chip it. it may also, despite your best efforts, just wear down over time because ceramic isn't as wear-resistant as metal.
enameled pans can go in the oven as well.
non-stick pans
only buy one (1) non-stick pan. make it a frying pan or sauté pan. and do not spend a lot of money on it. like $40-50 tops. i've seen $100+ non-stick pans and i think someone made those as a joke. it's a grift. you will be replacing it on a semi-regular basis depending on how often you use it.
if your non-stick pan uses a coating, if it starts flaking it's time to get rid of it. those ceramic non-stick pans you just gotta toss it when they lose their smoothness
that's it. post over. go cook. if you have any questions send an ask

Periodic Table Championship: Round 1, Day 3, Chromium vs. Uranium
The third match of day three puts element 24, chromium, against element 92, uranium. Let's introduce our competitors:
Chromium is a hard, brittle transition metal that crystallizes in a body-centered cubic structure at room temperature. It is a highly reflective metal, and the hardest element after carbon (diamond) and boron. Chromium is perhaps most well known for its inclusion in stainless steels and its corrosion resistant properties, but it is also used in pigments and synthetic ruby crystals for laser applications. The name comes from the Greek for color.
Uranium is a malleable, ductile actinide element that crystallizes in an orthorhombic structure at room temperature. It is a dense, radioactive metal that reacts with almost all non-metallic elements. Uranium is perhaps most well known for its use in nuclear weapons and nuclear power plants, but depleted uranium is also used in ballistic weapons and as shielding material. It was named after the planet Uranus.

Prosecco and Champagne are two renowned sparkling wines that have captured the hearts of wine enthusiasts around the world. Understanding the differences between these two options will help you make an informed choice that suits your taste and occasion.
What is Prosecco?
Prosecco is an Italian sparkling wine that originated in the Veneto region of Italy. It is made primarily from the Glera grape variety, which gives Prosecco its distinctive fruity and floral characteristics. Prosecco is produced using the Charmat method, also known as the Tank method, where the secondary fermentation takes place in stainless steel tanks.
Production Process
The production of Prosecco involves a two-step fermentation process. First, the grapes are harvested and gently pressed to obtain the juice. This juice is then fermented in stainless steel tanks, where selected yeasts are added to initiate the primary fermentation. Once the base wine is obtained, it is blended and undergoes a second fermentation in pressurized tanks, which traps the carbon dioxide and creates characteristic bubbles.

Prosecco is known for its fresh and fruity flavors. It often exhibits notes of green apple, pear, and citrus, with a delicate floral aroma. The wine is typically light-bodied and refreshing, making it a popular choice for casual gatherings and daytime celebrations.
What is Champagne?
Champagne is a sparkling wine produced in France's Champagne region. It is crafted using the traditional method, also known as the Méthode Champenoise or Méthode Traditionnelle. Champagne is made from a blend of three primary grape varieties: Chardonnay, Pinot Noir, and Pinot Meunier.
Production Process
The production of Champagne involves a labor-intensive process. After the initial fermentation, the base wine is bottled with a mixture of sugar and yeast, known as the liqueur de tirage. This triggers the second fermentation, which occurs in the bottle, allowing the wine to develop its signature effervescence. The bottles are then aged on their lees for an extended period, enhancing the wine's complexity and creating characteristic toasty and yeasty flavors.
Flavor Profile
Champagne is celebrated for its refined and sophisticated flavor profile. It offers a wide range of tasting notes, from citrus and green apple to brioche and toasted nuts. The wines can vary from bone-dry (Brut Nature) to slightly sweet (Demi-Sec), catering to diverse palates and preferences. Champagne's fine bubbles and complex layers of flavor make it a go-to choice for special occasions and memorable toasts.

The difference between alloy steel and carbon steel flanges
Often used to increase strength or spread the load, a flange is a protruding ridge or rim.
Sectional beams, for instance, usually have flanges on the end that carry most of the load and that are joined together by a web that joins the flanges together. Often, pipes are fitted with flanges, which provide an easy method of attaching them to other objects. To increase the clamping force over a wider area, nuts and bolts sometimes include flanges on the ends to distribute the clamping force.
In spite of the fact that both carbon steel and alloy steel properties are extremely popular for flanges, they differ in their types of materials. It is possible to modify alloy steel to contain a variety of elements according to its intended use. Steel containing less than 2% carbon is known as carbon steel or iron-carbon alloy. In addition to carbon, phosphorus, sulfur, manganese, and silicon, it usually contains small amounts of other elements as well.
Alloy steels have a chemical composition that differs from ordinary steels due to the addition of molybdenum, manganese, chromium, nickel, vanadium, silicon, and boron. As opposed to regular stainless steels or low chrome materials, alloy steels generally contain a higher nickel content.
In this article we will cover all the points related with carbon steel vs alloy, high carbon steel vs low carbon steel so make sure you read it till the end.
What is Alloy Steel flanges and Carbon Steel flanges Differences: alloy steel vs carbon steel
ALLOY STEEL
As a result of alloying, steel has improved mechanical properties. Future applications will benefit from the variety of elements used. The word is alloy steel does not mean every steel is an alloy of steel.
While vanadium, silicon, boron, molybdenum, manganese, chromium, nickel, and other elements can be present in steel, alloy steel refers to steel with intentionally added elements.
In addition to aluminum, cobalt, copper, cerium, niobium, titanium, tungsten, tin, zinc, lead, zirconium, etc., more exotic alloy elements may be used as well. In addition to strong and hard properties, alloyed steels are tough and wear-resistant, corrosion-resistant, hot hard and hardenable.
USES AND APPLICATION OF TYPES OF ALLOY STEEL:
There are many applications for alloy steel flanges. Despite its low alloy content, low alloy steel has many applications due to its cost effectiveness. Ships, pipelines, pressure vessels, and offshore drilling platforms use it. Military vehicles, construction equipment, and ships have all used it.
Its corrosion resistance, superior hardness, and structural strength make high alloy steels extremely useful in various applications such as automotive components, chemical process equipment, and structural components.

Plus, we’ll introduce you to Hluru.shop, a brand that offers quality handpans crafted with attention to detail.
1. The Magic of Handpan Materials: Ember Steel, Nitriding Steel, and Stainless Steel
One of the most fascinating aspects of the handpan is the material used in its construction. The type of steel directly impacts the tonal characteristics, durability, and overall experience of the instrument. Let's take a closer look at three popular materials used in handpan creation:
Ember Steel Handpan: Known for its warm, rich sound, Ember Steel is a type of carbon steel that is carefully tempered to produce deep, resonant tones. The warmth of Ember Steel is ideal for players who want a handpan that offers a more organic, expressive sound. This material is favored by musicians seeking an instrument that provides a deep, immersive experience. The Ember Steel handpan is perfect for creating calm, meditative sounds that resonate with both the player and the listener.
Nitriding Steel Handpan: Nitriding Steel undergoes a treatment process that enhances its durability and resistance to corrosion. The process of nitriding involves infusing nitrogen into the steel, making it stronger while maintaining its rich tonal qualities. A Nitriding Steel handpan retains much of the warmth and resonance found in Ember Steel, but with the added benefit of being more resilient to wear and tear. This makes it a great choice for musicians who need an instrument that can withstand the demands of travel and performance.
Stainless Steel Handpan: Known for its brightness and clarity, Stainless Steel handpans produce a clearer, more precise tone compared to other materials. While they may not offer the deep warmth of Ember Steel, Stainless Steel handpans have their own charm, providing a bright and clear sound that is ideal for more melodic and rhythmic playing. Additionally, stainless steel offers the advantage of being highly resistant to rust, making it a practical choice for those who live in humid climates or travel frequently.
Each of these materials brings its own unique flavor to the handpan, allowing players to choose the sound that best fits their musical style and needs.
2. Tuning Your Handpan: 432Hz vs. 440Hz
When it comes to tuning, handpans are often tuned to either 432Hz or 440Hz. The difference between these two frequencies is subtle but significant, and understanding how they impact the sound of your handpan is crucial.
432Hz: Often referred to as the "natural tuning," 432Hz is believed by many to be in harmony with the universe and the natural frequencies of the earth. Some players claim that music tuned to 432Hz has a calming, healing effect and resonates deeply with the listener's soul. The 432Hz handpan is often associated with more meditative, tranquil sounds, making it a popular choice for players interested in creating ambient music or using the handpan for meditation and relaxation.
440Hz: This tuning is the standard tuning for most musical instruments worldwide, and it's the pitch to which orchestras and other musicians typically tune. A 440Hz handpan produces a sharper, more conventional sound, making it ideal for players who prefer a more defined, clear tone. While some may argue that 440Hz is less natural than 432Hz, it’s still a popular tuning for handpan players, particularly those who perform in group settings or with other musicians.
