i can see why people might assume that stede's reaction to finding out about ed cutting off izzy's toe would be horror and disgust given the face he made on the beach but keep in mind, that this:

is the extent of his horror after watching lucius cut off his own finger right in front of him and then immediately goes back to putting on a show. and he LIKES lucius.

at most he's going to bitchily enquire as to whether or not izzy chewed with his mouth closed – after all, just because we're being fed our own toes doesn't mean we have to forget our manners.
