Redneck Brewing #3: Sour Cherry Apple Concoction

Another batch that I went ahead and set up later than I had meant to last night. (So, no posting then.)
This time using cheap apple juice concentrate and some pretty delicious Slovenian tart cherry drink concentrate syrup that Mr. C had open in the fridge--consisting of basically just cherry juice, way more sugar than I need to drink as-is except to treat hypoglycemia, and a little citric acid.
I also decided to throw in a little bottled lemon juice for extra flavor, because why not. The "sour" cherry stuff is just made out of the stronger-flavored pie cherries, with more than enough sugar to take the mixture to a point where I thought it could use a little more tartness for balance. We actually have some fresh lemons, but I couldn't find the juicer, and just hand squeezing lemons/limes basically gives my hands a chemical peel. 🙄 DO NOT NEED when they're already this dry.
Not shown: more spooky powders! In the form of pectic enzyme (to help it hopefully turn out clear), yeast nutrient, and the same cider/champagne yeast because, again, why not. It was open.
Went with a little bigger batch in a 2L bottle this time, aiming to fill two regular 750ml wine bottles after it's finished. (Or one of the 1.5L bottles like the previous one is in, I guess.)

As I left it before going to bed.
After I got back up, I realized that I had indeed done a little oopsie by putting in the fridge-temperature syrup and not bothering to make up the temperature with warmer water. So yeah, the yeast still had not shown any signs of activity.
Even after sticking the bottle in a warmer place for a few hours, it was still not really wanting to wake up. So, my impatient ass sprinkled in another smaller dose of yeast. That did help it take off pretty quickly. 👍 May well have taken off on its own with more time, but the little extra really shouldn't hurt anything.
It's now bubbling away happily enough, and I guess I will know not to repeat that mistake.

In retrospect, I may have also slightly overdone the cherry. I misremembered how much the bottle said to dilute it with water for just a juicy drink. (1:10 not 1:5 like a lot of others!) But, I guess it should have plenty of flavor. ¯\_(ツ)_/¯
Guessing the color will possibly get way less attractive as it ferments, but we'll see. Mostly just hoping to get something pleasant enough tasting, though it does look pretty going in. We'll see soon enough!

Generally food is prepared using different cooking methods and in a specific way based on whether in north, south, east or west of India. Each section (north, south, east or west) has its own food style. In the common Indian household people usually sit on the floor and food is eaten with hands or fingers. Diverse serving style varies vary within India. A common way of displaying food throughout India is called “thali”(a large plate with different samples of Indian food on it).and ayurveda had exerted a strong influence on Indian food recipes and eating pattern. Introduction
Indian culture is the Indian’s way of life because of the population diversity, there is immense variety in Indian culture. Indian food is one of the world’s most diverse diverse cuisines, characterized by its sophisticated and subtle use of many spices, vegetables,grains and foods grown across India.
One of it is Food that plays an important part of Indian culture, playing role in everyday life as well as in festival .In India it’s not just for eating but it is a way of socializing, getting together with family, friends and relatives. Indian cuisine varies from region to region shows people ethical, inclusiveness and cultural diversity. Generally Indian cuisine is split into north, south, east, and west. Various uses of spices (From ultra spicy food to delectable confectionery) and various ingredients are integral part of Indian food preparation. Indian cuisine is full of colors, flavors and aroma. Indian cuisine is based on matching opposite flavors such as hot and sweet taste.
The beauty of thali is that it is significant part of our it is a wholesome, meal and it tells us the scientific approach of nutrition as it represents the food pyramid of today like carbohydrates from grains, dietary fiber from fruits and vegetables and nutrients from dairy products like yoghurt, milk, curd and electrolytes from water. It is a balanced diet where variety is at its best. .Meals are served in thali, in which the food being served. An arrangement of small metal cups, or katoris, glasses, spoons etc... Is filled with single servings of food and condiments and arranged on the thali culture and usually sit on the floor,on pillows,or on very low stool and food is eaten with hands in India.
Indian cooking has unconventional style of making or cooking things which make them unique and it has its own cooking techniques, methods and equipments. Various cooking techniques are:
Tadka (tempering): it is the most common way of cooking. It essentially means frying whole spices in a little amount of different oil, ghee or butter. It is the aroma released from the spices which give the unique flavor or taste to the main dish which is being cooked, be it vegetables,dals,legumes,cereals or sometimes chicken,meat,fish etc. A tadka commonly has mustard or cumin seeds in oil.
Bhuna (curry): This is way of cooking curries. Here the spices are fried or dry roasted to form a paste. Curries which are served in thick spiced sauce form are made using the Bhuna style. The main ingredients of the dish are later cooked slowly in the paste. It has some variations depending upon what all spices are added in or is there water or milk or curd or yoghurt added to make it in a gravy form.
• Dum (steaming over coal): It is a process of steaming food but without using the actual appliances. A virtual compression is made in the cooking pot. Dough is used to seal the lid on the handi (pot or vessel, so the moisture gets trapped within and the food gets cooked on the flame. The recipes involving dum are usually cooked on coal fire and coal is also placed on the lid to ensure cooking. The most commonly cooked food is the famous Dum Biryani, meat etc. Cooking in dum style gives a unique aroma of the spices and warmth.
• Dhuanaar (smoke seasoning): Dhuanaar actually refers to smoky way of cooking food. The smoky flavor is imparted while cooking. The process involves burning charcoal in a small pot and then keeps it in a bigger pot, around which the meat or vegetables or fish are cooked. Dry spices and ghee are poured over the coal and a lid is place quickly over, so the smoke remains within the pot and infused the smoky flavor within the dish.
• Tawa Cooking: Tawa is a round thick iron griddle, slightly concave in centre and most commonly used for unleavened bread like chapattis, rotis, etc. It is also used for some unique dishes which require fast cooking and in large quantity, with outer rim is used to keep the dish warm. It’s served straight out of the tawa and eaten instantly.
• Talna (frying): Food is fried in different oils in a wok or khadai. It should be shallow or deep fried depends on the dish being cooked.
• Tandoori (clay oven): It is the highlight of the Indian cooking. Here the marinated food is cooked in the clay oven over charcoal fire (approx 550F).The marinated food is put on skewers and cooked inside the hot pit, buried and enclosed. Like rotis, meat, kebabs etc. •
Balchao (pickling): It is a Goan style of pickling where vegetables like eggplant or seafood like prawns are pickled in sugar, vinegar and spices for a day or two.
Foods of India are better known for its spices or vast array of spices used — both whole and ground, which are often combined into complex spice mixed. Common spices that we use in our kitchen are actually not common as it provide health benefits as well as flavor and aroma also. Every spice has its own unique taste and completes the dish as only salt cannot do the magic to satisfy our taste buds. Even now scientist is curious to explore the Indian kitchen to find out more about it. But consumption should be in moderation as everything in excess is bad.
The most commonly used spices are :
Turmeric (haldi): This is the most common spices of India. It comes with yellow color and flavor that can make a wide range of meals like sambar, dal, kadhi, marinating meat etc... to look good and taste good. Turmeric comes with a feature that makes it great for health like prevent cancer, act as antioxidants, prevent inflammation etc...
Asafoetida (hing): This is one of the strongest spices with a sharpy strong taste. It will change the taste and the aroma of any food. It is used to make dal, sambar.lemon rice etc. This spice comes with a number of health benefits like treating asthma, whooping coughs, chronic bronchitis; it’s antimicrobial and even detoxifies body.
Cumin Seeds (jeera): It pungent, sharp and astringent used in wide variety like soups,candies,lassi,pongal etc.It is caraway shaped seeds usually medium brown. Frequently used in curry and seasonings. The health benefits are prevents cancer, used as stimulant and carminative agent
Ginger: It is mildly pungent and has sharp burning sensory stimulation. Dry ginger is more pungent and valuable for the zest it gives to blander spices and used as masala in pulav, non-vegetarian dishes, mango salad etc .whole root is used in tea, chutneys, pickles, lime juice, buttermilk etc.Its health benefits are ,antioxidant, reduce inflammation and pain in joints, detoxifies carcinogens, good for cold and cough etc.
Cardamom (eliachi): It is specie belonging to the ginger family, whose seeds are used as spice. The fruit contains brownish black seeds. It is mainly used for flavoring sweet preparations, cookies, breads, cakes and preserves. It is very good for digestion.
Black Pepper (kali mirch): It is a small round berry of a tropical vine with small white flower and it has pungency and aroma. It’s native to south India and used for both its flavor and as a medicine the health benefits of black pepper includes curing illness such as constipation, diarrhea, and heart diseases, etc.
Cloves: Cloves are well known for their warm, sweet and aromatic taste along with medicinal benefits. Clove has lots of healing properties and used for upset stomach and tooth ache, etc Saffron (kesar):Saffron known as the golden spice of India for its expensive and exotic richness and are found in Kashmir valley and it gives yellow colour.It is used in ice-cream, thandai, rasmalai, kesar milk, in rice dishes, soups, sauces etc .its health benefits are used as sedative and used for eye infection. Cinnamon (dalchini): Frequently consumed spices and is relatively inexpensive. It is a thin tinner bark of the cinnamon tree. It is used in pulav, biryani, korma, cakes, cookies and puddings etc.health benefits are prevent for diabetes,keeps digestion proper etc
Mustard Seeds Most Indian households use mustard seeds or its oil for various purposes; it can help control symptoms of asthma, packed with B-complex vitamins and help to relieves rheumatoid, arthritic and muscle pain. Indian cuisine is an assortment of zealously guarded culinary skills, ranging from sharpest to the sublest.
Four directions of India east, west, north,south region greatly influence the religious and cultural aspects giving the wide Varity of cuisine .
North Indian Food Food in the north India, to begin with, Kashmir cuisines. In Kashmir, mostly the dishes are made from the main course of rice found in the beautiful valley. Another delicious item cooked here is the 'Saag' that is prepared with a green leafy vegetable known as the 'Hak'. But on the other hand states like the Punjab, Haryana and Uttar Pradesh also show high consumption of chappatis as staple food. Again, these chappatis are prepared with a wide variety of flours such as wheat, rice, Maida, besan, jowar etc. Besides chappatis other closely related breads baked in these regions include Tandoori, Rumaali and Naan, lachha paratha etc. However in the northern region impact of Mughlai food is quite obvious. And some popular dishes are chapattis, biryani (made with rice and cooked with various spices, vegetables.meat etc), tandoori chicken (it is marinated with spice cooked in tandoor and prepared with yoghurt and spices).
West Indian Food In western India, the desert cuisine is famous for its unique taste and varieties of food. Rajasthan and Gujarat are the states that represent the desert flavor of Indian food. Here an immense variety of dals and achars (pickles/preserves), papads is used that simply lack of fresh vegetables in these areas. In the states like Maharashtra, the food is usually a mix of both north as well as south cooking styles. Here people use both the rice and the wheat with same interest. Along the coastline of Mumbai a wide variety of fishes is available. Some of the delicious preparations include dishes like the Mumbai Prawn and Pomfret.In Goa, that is further down towards south, one can notice Portuguese influence in the cooking style as well as in the dishes. Some of the major dishes of this region are the sweet and sour Vindaloo, duck baffad, sorpotel and egg molie etc.
East Indian Food In the eastern India, the Bengali and Assamese styles of cooking are there. The staple food of Bengalis is the mouth watering combinations of rice and fish. Usually the Bengalis love eating varieties of fishes. A special way of preparing the delicacy known as 'Hilsa' is by wrapping it in the pumpkin leaf and then cooking it. Another unusual ingredient that is commonly used in the Bengali cooking is the 'Bamboo Shoot'. Various sweets prepared in this region, by using milk include the 'Roshogollas', 'Sandesh', 'Cham-cham' and many more.
South Indian Food In the southern India, the states make great use of spices, fishes and coconuts, as most of them have coastal kitchens. In the foods of Tamil Nadu use of tamarind is frequently made in order to impart sourness to the dishes. It simply perceive the Tamil Food from other cuisines. The cooking method of Andhra Pradesh is supposed to make more use of chilies, which is used to improve the taste of the dishes. In Kerala, some of the mouth watering dishes are the lamb stew and appams, Malabar fried prawns, Idlis, Dosas, fish molie and rice puttu. Another famous item of this region is the sweetened coconut milk. Yet another dish is Puttu, which is glutinous rice powder steamed like a pudding in a bamboo shoot.
Snacks and Drinks The Indian snacks not only tempt Indians but they also tempt the non-Indians. The delicious snacks can be prepared as salty, sweet or spicy or oily dishes. Pav bhaji is one of the popular Indian snacks. Here slice of bread is served with mashed and fried vegetables. The pani puri perhaps hits the top position among snacks served in India. It is liked by youngsters as well as elderly people. The puffed and hollow bread is stuffed with spicy potato and onion and served with tamarind water. A shot of lime juice, cumin powder, paprika, roasted nuts enhance the taste of the pani puris. Some more mouthing tempting snacks are like pakoras, samosas, jalebi dhokla, bhelpuri, mattra kulcha etc. Tea is the most popular drink in India. It is prepared with milk, sugar and aromatic tea leaves. At different parts of India, tea is boiled with clove, cinnamon, ginger, nutmeg, cardamom to enhance the rich taste. Lassi is another Indian drink made from buttermilk or sweetened yogurt. The drink is sometimes flavored with rose syrup and mango juice. More drinks like nimbu pani, thandai, rassam etc.

Food is the integral part of Indian culture and its very unqiue.It has a perfect blend of flavors using different spices Food gives us an enormous insight into the culture as it sheds light on the regions indigenous crops, cooking techniques, different spices, different food and even the reflects the history of an area. Food has been recognized as an important component of intangible heritage. In India food are better known for its spiciness but it has some nutritional and medicinal properties also.

✨🍯🌻☀️HAPPY LITHA AND MERRY MIDSOMMAR TO YOU ALL!☀️🌻🍯✨
I hope that everyone had a blessed Summer Solstice (Or Winter Solstice/Yule for my friends in the Southern Hemisphere!) I had a fairly productive sabbat, in comparison to usual, this year. I was woken up earlier than usual, but, in a way, it was kind of a blessing since I was able to spend more of the day awake enjoying the Sun’s light instead of observing my usual nocturnal schedule. I got up and poured myself a glass of orange juice and stepped out into the backyard to enjoy it while soaking in the warmth of the sun’s light, and then after some household chores, I made myself a wonderful brunch scramble of hash browns, eggs, and ham to enjoy with my coffee. 
Unfortunately, since we are still in quarantine due to the pandemic, I am trying to minimize my visits to the Outer World so I do not put  my mother’s health at risk. Typically, I like to go out and get fresh flowers for my altar, but I decided to just use what I have at home to decorate. So I poured some of my dried orange peels into one of my smaller chalices I always keep on my altar and placed eight (8) sunflower seeds to represent the Wheel of the Year and the sabbats around the base of the chalice as well as acting like rays of the sun extending from the center point of the spread, with a ninth (9th) seed underneath in the center to not only create the alchemic and planetary symbol for the Sun (☉), but to use the power of nine (9) to amplify more power into this solstice spread. 
As I stated in my Dedication posts ( I & II ), I was going to dedicate myself to the Norse Goddess Freyja after she agreed to become my matron, and I wanted to make it a special day, so I chose to wait to perform my dedication on the solstice. Freyja always radiates warmth when I think about her, and one of the cards I pulled in my first spread about her was The Sun, so I thought it fitting to wait until Midsummer. I got all dolled up with a very summery look, donned one of my favorite dresses, and put on my special amber necklace with a few orange colored rings to further represent Freyja’s warmth. 
Next, as part of my Dedication to Freyja for the solstice, I have been wanting to further decorate my wand I made. Eventually I'd like to find some nice cording to wrap around the handle and find a crystal to hang from the base, but with trying to keep my Outer World visits to a minimum, I decided to do a simple carving of the Fehu rune ( ᚠ ) above where my hand rests when holding the wand. I had considered doing the symbols for the elements, but liked the idea of the Fehu rune better to let Freyja know that my practice and magic is tied to her since magic is one of her many aspects. I will still add to my wand, and I’ll be sure to post a picture when it is complete.
Later in the afternoon, I took outside with me my cauldron, the dried remains of my flower crown from Beltane, my large citrine cabochon, and my vial of honey from my first offering to Freyja. I waited until the peak of the Sun’s light for where I live, and then took the remains of my flower crown and remembered back to Beltane and thanked it, then burned it in my cauldron. I had planned on leaving an offering for the Fae as well, but it looked like it was going to rain again, so I decided against it and I was also pressed for time to complete my rituals. 
Then came my Dedication Ritual. Again, unfortunately I was a little pressed for time, so I wasn’t able to really take my time with the ritual and had to kind of rush through it. I called out to the goddess to make myself known and adorned my shield maiden circlet. I don’t remember the exact wording, but asked her to accept me as one of her devotees and that I would, from this day forward, serve her until the need for our partnership is through. On instinct, I grabbed the vial of honey, and clutched it to my chest, then opened it, taking a small dab of the liquid gold on my finger and drew the Fehu rune on my forehead. That wasn’t something I had planned, but I just felt called to do so and it felt so right. 
After that, I brought everything back inside, and using the ashes from burning my Beltane crown, I made my first ever batch of Black Salt, or Witch’s Salt as I’ve come to hear people call it. I finally attained some activated charcoal from a friend recently (thank you!) and that was the only ingredient I had been missing to make some. So now I have some Black Salt for some added protection in spellwork and just for every day use as needed. 
I had forgotten to set out my crystals and tools before going outside to soak up the Sun, so at this point I cleared some space on my window sill and placed them to charge. A funny thing happened though when grabbing my tarot deck, and I didn’t put two and two together until the day after. My deck was the last thing I grabbed to set out to charge, and I wanted to make sure the sunlight was hitting the cards instead of just the box they live in, so I took the lid off, and with the rush of air from removing the lid, a few cards came out, but the one that flipped to face me was the High Priestess. I acknowledged it, but didn’t truly understand until the next day. I have pulled the High Priestess a few times in personal readings about my relationship with Freyja as a representation of her, and I had a revelation that that card revealing itself to me was her acknowledging my dedication. I feel very happy about this connection and as small as the acknowledgment was, I now know she has heard me. 
While waiting for everything to charge, I decided to sit at my altar because I was super inspired to create a new sigil! I had seen one recently while roaming the internet and thought to myself that I’d love to work on creating more sigils to use in my practice. I felt super inspired by the energy of the Sun and created A Sigil for Drawing in the Energy of the Sun (Drawing Down the Sun).
Since Litha fell on a Saturday this year, I also had my weekly D&D game with my friends, and to subtly continue my solstice celebration, I made a simple cocktail of Kraken Spiced Rum (spices for warmth), orange juice (fruits of the season and symbolism of the sun), with some lemon-lime soda (more citrus!). I imbibed on my drink while having a merry time with my s/o and friends, and closed out the evening by assembling the spread pictured. In retrospect, my spread seems to be largely and subconsciously reflecting the sigil I made, which I found very fascinating that it echoed what I had drawn so much without realizing it sooner. 
In my leaf dish, I have my new sigil, the rings I wore in my ritual accompanied by my smaller citrine cabochon and my honey vial. Between the dish and the chalice, which unfortunately blocks it, is my sunstone cabochon for masculine energy and representation of the Sun. Then beneath that is the chalice filled with dried orange peels and the sunflower seeds as described earlier. Then beneath leading downward is my black onyx for protection, and although known for balancing the male and female energies, was giving off a very strong male energy to me that day, followed by my large citrine cabochon for prosperity and warmth, a small flat stone I found a couple of months ago that just gives off a friendly and soothing vibe (and I also enjoyed that it added to the black/yellow/orange scheme), capped with my wand cradled upward to keep the energy in the spread. Also displayed prominently is my deck with the High Priestess facing outward proudly.
This was, as I said, probably my busiest, most involved, and productive celebration of the sabbats so far, and I’ve written a novel of a post about it. The bar you were in was a slight change to the establishments you had recently been frequenting, but it was an old favourite of yours and Wanda and honestly, it was nice to be back, to exchange the extravagant dresses for a pair of worn in jeans and expensive champagne for a bottle of beer.
You were somewhat nervous at bringing Nat here, not knowing how she’d find it but she surprised you when she said she used to come to bars like this all the time before she started her brand and that she had rather missed the atmosphere they provided.
What stunned you more was the fact that her knee wouldn’t stop bouncing with nerves, foot tapping on the floor as she pecked at the label on her bottle whilst you both waited for Wanda to join you.
“Nat would please relax, trust me Wanda’s gonna love you,” You tried to reassure her.
“Sorry, sorry; It’s just – I’m not exactly a people person, and I don’t usually make a great first impression, I mean remember how I acted around you? It wasn’t exactly the height of hospitality.”
“Don’t worry about that, Wanda’s got this…energy – it’s like she can get into people’s minds and put them at ease or something, I swear the girl’s magic. The number of difficult situations she has got us out of is unreal.”
Before Nat had a chance to pry on what kind of difficult situations you two had to wiggle your way out of, your name was shouted from across the bar, your eyes meeting those of Wanda walking through the door with her arms spread wide as everyone gaped at her.
Wanda’s hair fell in thick dark curls over her shoulders, dark eyes sparkling with glee as a devious smirk played on her crimson painted lips, she was adorned in a maroon velvet shawl, a long flowy black dress underneath, her fingers decorated in a multitude of rings and a collection of bangles decked her wrist, tinkling with every movement of her arm. Around her neck was a long silver chain with a Star of David charm dangling from the centre that you had gifted her on her last birthday and she had worn nearly every day since.
“Hey sweetie!” Wanda hollered, Serbian accent still slightly coating her words as she plopped into the seat next to yours, throwing her arms around you as she pressed a kiss to your cheek, no doubt leaving a red stain of her lips on your skin. “You must be Natasha - Y/N told me a lot about you, it’s nice to finally put a face to the name,” Wanda extended her arm for Nat to shake which the redhead readily accepted.
“God what a day, tell me why I’m stuck dealing with the bridezilla from hell? I’ve done nothing in my life to deserve this, ever.”
Wanda complained as you snorted at her dramatics, Nat asking what she did for a living which started Wanda on explaining that she owned her own florist shop in Brooklyn with you interjecting at random points to compliment her work – she did the most amazing floral displays you had ever seen, which unfortunately left her rather in demand.
You let Wanda and Nat become accustomed to each other, asking things you already knew about them both as the three of you sipped on your beers, grinning as you noticed the way Nat’s shoulders lowered and her leg stop bouncing under the table as her nerves left her.
Soon enough, the beer turned to shots of tequila at Wanda’s excited demands, you and Nat laughing at her instance, watching as she precariously balanced a tray laden with shot glasses as she staggered towards the small table you were sat at. You tipped your head back as you swallowed the liquor in one gulp, face twisting in disgust at the burn as you quickly grabbed one of the lime wedges, the sour juices easing the bitter aftertaste of the tequila.  
A slight fog settled over your mind as the alcohol took effect, your thoughts becoming hazy and movements lethargic as you stumbled out of your chair and crossed the bar, stumbling slightly as you made your way towards the jukebox in the corner, struggling to insert the coins before you searched through the hundreds of songs available, a grin tugging at your lips as found what you were looking for.
Nat and Wanda both cheered as Nancy Wilson’s opening rift filled the bar, Ann Wilson’s killer vocals following soon after as Crazy on You began to play, the pair beginning to belt out the lyrics as if it were karaoke, forcing you to join in as you sat back down, ignoring the peculiar looks from the other patrons.
“Let me go crazy on you,” Nat cut off her performance, giggling drunkenly as she eyed you mischievously, “So Y/N, I’ve always been curious, do you go crazy on Tony or does he go crazy on you? I’ve never been able to figure it out, he’s definitely into it either way.”
You choked on your drink, spluttering as you stared at Nat with wide eyes waiting for the inevitable storm coming your way.
“You’re sleeping with him?” Wanda erupted, eyes blazing with rage as you offered her a guilty smile. “You told me it was just for appearances, you never said anything about sex.”
You recoiled as Wanda hissed at you, the fury radiating from her being reminding you just how scary the seemingly docile woman could be.
“Wan, please don’t yell,” You spoke calmly, casting your eyes about the bar to make sure no one was staring at you, “I swear, there’s nothing to worry about. It’s just a friends-with-benefits type situation, just with more benefits than usual.”
The underlying worry in her eyes didn’t waver at your words and Natasha, who until then looked sheepish for letting something slip that she shouldn’t have, also joined her in her concern.
“Are you sure? I’ve known Tony a long time Y/N and I’ve never seen him act like the way he is when he’s around you, the way he looks at you – is it really just friendship?”
You gawked as you searched for an answer, mouthing words but no sound coming out as you tried to wrap your mind around what Nat had just told you. You tried to be logical: Tony only acted that way around you because he needed to, he was grateful for what you were doing for him, you two had become friends over the course of your fake relationship and it was fake. But there was a part of you, that stupid rotten romantic heart of yours, that warmed at the thought of Tony wanting more, of feeling more.
“Y/N,” Wanda spoke softly, reaching across the table to place her hand on top of yours, “I just don’t want to see you hurt again, Tony - he just reminds me too much of-”
“He’s nothing like him,” You spat, voice laced with venom at the mention of you ex.
Or perhaps it was the fact that Wanda apparently thought that he and Tony were equals.
You didn’t wish to dissect these thoughts, instead you excused yourself to the toilets, avoiding the anxious stares of Nat and Wanda as you did. Locking the door behind you, you splashed cold water on your face in an attempt to calm your racing heart, resting against the countertop as you bid your thoughts to slow themselves down and allow you to collect yourself.
Back at the table Wanda and Nat were waiting for your return, guilt gnawing at them both for pushing you for an answer you clearly didn’t want to give, but their pressure stemmed from a good place, their love for you their top priority.
“You said you knew Tony well, right?” Wanda asked, Nat nodding her head in affirmation, “Be honest with me, do you think he’d hurt her?”
Nat mulled over the question, trying to find the answer, but it was difficult; she’d never seen Tony in a situation like this before, his dates lasted the night and there was a new one on his arm when she next saw him.
“No, I don’t think so,” Nat answered her after much consideration, “Not on purpose at least; Tony cares about her, more than he realises, but he’s never had a serious relationship before - he may not know how to handle it.”
“If he does hurt her, I’ll tear him limb from limb,” Wanda threatened, voice dropping to a near growl.
“If he does, then I offer you my assistance,” Nat remarked, a dark smirk pulling at her lips before her and Wanda burst into a fit of giggles.
They were still laughing when you came back, the corner of your lip quirking up at the sight of them together, you knew before the night even began that they would get along like a house on fire and regardless of the slight hitch in the nights festivities you were glad of it.
“Hey, did you ever tell Nat about the Billy Russo incident?” Wanda asked with a mischievous glint in her eye.
You threw your head back with an embarrassed groan, burying your face in your hands as Wanda recounted the tale to an eager Nat of the time you saw your then crush on a night out, nerves and alcohol getting the better of you as you ended up retching your stomach contents all down his pant leg much to your horror.
It had taken you weeks to recover from the mortification, refusing to go out with Wanda much to her annoyance and you could feel your cheeks heat up as Nat and Wanda boisterously laughed at the story, fighting off your own smile as you remembered the shock on poor Billy’s face.
More tales were told; most by Wanda, the woman loved a good story, some by you, and some by Nat. You had an inclining that Nat choose her stories with the purpose of warming Wanda up to the idea of Tony, each one she said left you with a soft smile on your face as you vividly imagined your little group of friends and the shenanigans they got up to.
Before you knew it, the night was drawing to an end, Happy pulling up to the curb outside the bar where you were all waiting. Nat’s own driver came for her and she bid you goodnight with a hug before moving to do the same to Wanda, promising you both that you’d get together again soon.
You offered to take Wanda home and she reluctantly agreed, marveling at the interior of the luxury car as you introduced her to Happy. The ride to her apartment was quick and as she was stepping out of the car she asked if you were staying at yours tonight but you decided against it, wanting to go home to Tony’s and check up on him - you had texted him earlier on in the night and he still hadn’t replied, a dark feeling of dread building up in you as your mind conjured a number of unpleasant scenarios.
Home.
You froze when you realised that you considered Tony’s apartment to be more your home than your own did now. You blamed it on the fact that you spent most of your time there, that staying in your own apartment was foreign to you now.
That was all it was.
“Hey Hap, have you heard off Tony tonight? I text him earlier, but he never answered me,” You asked, hoping your voice sounded as casual as you willed it to be, teeth gnawing at your lower lip as your stomach began to twist into knots.
“No, haven’t heard from him. I’m sure he’s fine though, probably blasting AC/DC in his lab way too loud to hear his phone.”
You forced a chuckle at his jibe, knowing that he was probably doing exactly that, but his logic was a poor remedy to your paranoia and it did nothing to calm your growing nerves. The second the car came to a stop outside of the Baxter Building, you bolted from the backseat, throwing Happy a ‘thank you’ and ‘goodnight’ over your shoulder as you rushed towards the entrance.
The in the elevator seemed to take forever, foot tapping on the metal floor in impatience as you waited for the doors to open into Tony’s penthouse, wondering why everything seemed to move so much more slower when all you wanted was for it to hasten.
The doors finally opened into the apartment and you hurried inside, dumping your bag in the hallway as you called out Tony’s name, the lack of response causing your panic to rise before you froze in the doorway to the living room, mouth snapping shut as you silently crept forward.
Across the couch lay Tony, one arm dangling on the floor next to a discarded cushion, the TV still playing in the background, his mouth hanging open as a soft snore resonated from his chest with every exhale. Your heart fluttered at the sight, a soft smile playing at your lips as you watched him get the sleep he so desperately needed, Tony was normally the last to sleep and the first to rise and so this was a rare sight for you and you couldn’t help but think how far he had come from when you had first met him.
You moved to kneel beside him, fingers gently stroking through his short tresses, watching as his eyes flickered beneath closed lids. His phone lighting up on the coffee table next to you drew your attention away, the device reminding him of your text that remained unopened and you picked it up in curiosity, swiping the text away and pausing when you saw what was under it.
A picture of the two of you filled the screen, his arm wrapped around you, lips pressed into your hair as your eyes shut in bliss, basking at the attention. You can’t remember seeing the photo before and you didn’t know which you found more startling: the fact that you were his lockscreen or the way he was looking at you.
Nat’s words came circling in your head like a record on repeat.
I’ve never seen him act like this.
He’s never looked at anyone the way he looks at you.
The way he looks at you.
You glanced back at the photo on the phone, how both of you seemed so wrapped up in each other, the adoration, the tenderness. The, dare you say it, love.
Your well-rehearsed excuse, the idea that it was all a front, a trick to fool the world felt so weak now. You wondered if maybe it had worked to well, that maybe you had managed to trick yourselves into thinking this relationship was on a platonic basis only when it couldn’t be further from the truth.
You didn’t like these thoughts, they invited unwanted feelings into your heart that weighed it down like a rock in a river. What if Nat was wrong and Tony didn’t feel the same? He was an infamous womanizer and the only reason he had supposedly changed his ways was to keep his company, you’d be foolish to think that you alone could accomplish that.
The darkness clouding your mind evaporated as you glanced back down at Tony’s sleeping form, stroking your fingers over his face as you softly urged him to wake up, bleary eyes staring up at you before a lazy smile tugged at his lips.
“Hey,” he rasped, voice thick with sleep.
“Hey baby, wanna head to bed?”
Tony nodded in answer, swinging his legs over the edge of the sofa as he sluggishly sat up, the both of you stumbling up the stairs towards his bedroom. You readied yourselves for bed in silence, Tony because he was still on the verge of sleep, barely conscious enough to brush his teeth, and you because you were afraid of what you would say if you did try to speak.
You sighed when you finally settled into the bed, the fresh sheets wrapping you in a blanket of serenity, the feeling of Tony’s arms around your waist providing you with a level of comfort you couldn’t quite explain.
Tony pressed a kiss to your forehead, wishing a good sleep before he fell back into the realm of dreams once again. You burrowed your face into his chest, pressing a chaste kiss to the scar that ran down his sternum, pushing your unwanted thoughts to the side as you joined Tony in slumber.

Kalimera! Something to eat?
Greek hospitality means food. It taste like kalamata olives, fresh, sweet figs and strong, delicious olive oil, not to forget the soft grapes that torn you between harvesting them for the next delicious sip of House White versus indulging yourself in them straight out from the vine.
There are certain musts you should try in Greece (if you haven’t done so in Turkey or in Georgia) like Tomatokeftedes or sun dried tomato croquettes, Greek Fava Dip, that delicious yellow split pea puree, feta cheese in one of their multiple, exquisite special preparations, meat filled zucchinis and tons, tons of wine to pair with all of it.

I gained almost 2 kilos in 2 weeks, - thank god I was prepared and I lost weight before traveling - but no regrets nor harm feelings: those were the best 2 kilos I gained in a while. All the beauty and history surrounding you deserve a proper celebration, and when it comes to commemorate something, Greeks know exactly how to do it. A little bit of cheese, some home made pies or veggie croquettes, you name it. And that is just for starters.
We took this hospitality really seriously, and as my friend Mau would say, we knew our “priorities”, so FOOD became a crucial part of our experience and tour. The heat also made it easier for us to stop every 2 hours for a soul refill- since when we ate, we were happy. Here’s the recap of our favorites places went in Athens:

It was our first dinner and we were both starving: Mau from flying 10+ hours from the future and myself flying almost another 10 from the past. Luckily, this restaurant which we researched before and was recommended to us, was around our place. It was a gorgeous taverna. Exactly as you would imagine a mild night in Greece might be like. We ordered some zucchini, tomato croquettes and an octopus, which seemed to be more tasty than what they usually and actually were given our flight famine. It wasn’t a brilliant idea, to be honest, to have a kick-in-the-butt-awaken Ellinikos or Greek Coffee that night instead of a regular espresso. Same as in Turkish culture, their coffee is extremely strong, heavy and with the grounded bean in it so it has this dusty and dry taste. Strong. Killer. Not at all jet-lag helpful. Worth it, though? Since that moment, each time we needed a refilled, we stoped by the closest Everest we could find in seek for an orange juice or a cappuccino. Cheap, delicious, great service. Finding this secret gem was pure coincidence but once again, we ended up in the most wonderful corner in between Plaka and Anafiotika. There was only one table left, with a “reserved” sign on it, and as soon as we mentioned we were there for lunch, they remove it, reverse their glasses and brought the bread. It was meant to be. The view, the service and the food was all perfect. We ordered some of our favorites: spanikopita, tzaziki and greek salad. Spanikopita or otherwise known as Greek spinach pie is a traditional yet delicious recipe. With its versatility the dish matches with every time of the day. Feta cheese, butter, olive oil all are mixed and baked until golden crispy perfection.

Greek salad is a must have for Greeks with almost every meal. Choriatiki, as they called them in Greek, are made of tomatoes, olives, cucumber and a large piece of feta cheese and served undressed. Dressing is left at person’s choice hence all restaurants serve vinegar, salt, pepper and olive oil with the salad - although, in our experience, most of the times, it came already prepared. With the tradition of being a starter, Greek salad can also be a great side dish. Look at this beauty! We were definitely in food heaven!

At night, we had a reservation on this place a Greek friend recommended. A little bit touristy yet fun, the only regret was that a couple came in after us and sat super close to our table, and started smoking non-stop, which became really annoying. Yet, there was nothing left to do, since it was an al fresco dinner place. Regardless, it was a lovely evening. They had live music with the traditional guitar and two guys with the typical voice you expect from the Greek coasts. The highlight of the night, aside from the great Moussaka, a lemon dressed lamb and some more croquettes, it was the time the musicians start playing the amazing Zorba Song! I couldn’t help myself and stood up, went to the front, and tried to learn that beautiful dance. After a while, right next to a two-left-legged old guy, I managed to do something, but the highlight of the night was when Mau joined and we killed the dance floor, throwing shame to all the other not-so-gifted people with our grace and moves! Coming back to the food, the moussaka is a legendary, traditional dish that is creamy and juicy. Moussaka is served in almost all tavernas in Greece. In the big family gathering this dish is prepared by Greek homemakers. In Moussaka, tomato sauce is used to cook minced beef which is subsequently layered with sweet eggplants and creamy béchamel sauce. This irresistible cuisine is filling so you don’t need too many side dishes. I was a little bit skeptical about moussaka at first since the ones I had before weren’t that good, but this one, OMG, completely changed my mind about them! Brettos  Kidathineon 41, Athina 105 58

Brettos is Athens’ oldest bar and distillery, established by Michail Brettos in 1909. Most of the alcohol served there such as ouzo, mastiha, liqueurs and other beverages, are home made and they still respect the old recipe from Mr. Brettos. You can taste them are feel the fermentation happened in the old oak barrels placed inside. As soon as you step inside Brettos, you will be amazed by the wall adorned with colorful glass liqueur bottles and impressive original wooden barrels.  Its unique décor is probably one of the reasons why Brettos is one of the most photographed locations in Athens, behind the Acropolis, Syntagma Square and other ancient monuments and sites in the city. We had two strong and delicious drinks: Aphrodite, which was ouzo gold, raspberry liquor, pink grapefruit soda and mint leaves and the one called Sea Breeze, made with Gin, fresh lime, fresh orange cubes and soda. Guess who got what ;)

When researching about the Acropolis, when to go, how to get tickets, etc, etc, the obvious question of “is the Acropolils museum worth a visit?” pops up. It is if you are super into history. Its greatly display showcases all the valuable stuff they removed from the Acropolis seeking for preservation. But, if you are like me and decide to go just for the real ruins per se avoiding an overflow of information, then the Acropolis and the other monuments spread out around Athens should do the trick. Although, there’s one thing not so many sites mention, and is that the Acropolis museum has a terrific terrace where to contemplate the Parthenon and a delicious seasonal menu to go with the view. We had some eggs, two delicious cappuccinos and the fantastic feta me meli - another Greek food dish that can be tasted as dessert or an entrée. Feta is wrapped in filo pastry before oven baked and honey is drizzled over it. The optimum balance between salty feta and sweet honey creates a mesmerizing taste. They served it with a tomato jam on the side instead of the honey and was absolutely delicious.  Da Vinci Ice-cream  various locations Bites&Kms Fav: 4 Selley Street, Athina, 10558

Play it safe, avoid a heat stroke: have an ice-cream! And if it’s a gelato, even better. The creative cone flavors at Da Vinci match the delicious and unique ones from the gelatos so be sure to pick wisely, or come again and again to try them all!

This was another fantastic, last minute Mau finding. It was so great, we ended up going twice. Close to Plaka but far enough from the crowd, this boutique hotel counts with a privilege terrace and rooftop bar from where we could see the sunset. It wasnt happy hour, but the drinks were so cheap and the prosecco was so good, we had two!

This place is definitely unique within the fusion restaurants I’ve been to. This is truly a delicious blend in between Greek, Asian and German cuisine, all the influences its owner has ingrained. As a Michelin recommendation, we left it aside pursuing Greek traditional tavernas, but it happens that after a while, you’re craving for something different like a burger or some pasta. What you don’t actually know is that what you need is a stop by Nolan. Once again, wondering in what we thought was a new, orthodox neighborhood, we ended up by its corner and its name rang a bell. We went in during a sunny Greek noon and we were lucky they were able to sit us regardless of not having a reservation. Minutes after, the restaurant got full, local artists started playing music on the streets and we were having a true fusion feast. We had some marinated tuna, a delicious octopus salad and some lamb dumplings. It was amazing, a must stop during your stayed in Athens.

This is one of the top coffee places I’ve ever been to. Not because its price, look or location, but because of the love and passion they put on each brew. This is how they described their daily special - hence, the coffee of my choice: “Rosebud double shot cap creaming feeling, smooth body caramel chocolate and nutmeg aroma. Taste of cherry and caramel with apricot tangerine and almond nuts.”

I took the train to Peristeri, just outside Athens, to check out what according to Buzzfeed “one of the coffee shops around the world you must check out before you die” Happily, it didnt disappoint. Not only the little town is super cozy, where I got a pair of amazing leather boots, but also, took the morning to write and to enjoy this wonderful plaza where Mind you Cup is located. It reminded me of old Montevideo, the city where I was raised when I was younger. I keep specifying this time and space issue since nowadays it’s quite different. It also reminded me of an out-side the tourist epicenter mini towns around the north of Spain or outside Porto, in Portugal. Even a “ciudad del interior” or countryside town from Uruguay.  Even the tree to which shadow I was sitting and enjoying, was the same Willow tree I had at my school. It was a beautiful time travel adventure, on top of the delicious European house white wine, the home made pizza and the great service from the place. The menu looks like an old and corky newspaper and is not in English, which makes the adventure even more authentic, but the gentle waitress will assist you with all your questions. People were selling their crafts and some plants, and I couldn’t resist to get an envy eye anklet. On my way back, I found this delicious and traditional dessert Greek people have for Christmas, but I could have them every day with a glass of milk. They are called Kourabiedes, a shortbread-type biscuit usually made with ground almonds, flavored with either brandy, vanilla, mastika or rose water and they are shaped into little cute balls. In the end, they are sprinkled with icing sugar and they are just to die for!

In the historic triangle of Athens there is a small tavern in a backyard called Avli which means ‘backyard’. This place is kinda secret: more and more people are accessing to its charms due to TripAdvisor’s fantastic reviews - although it still is easy to miss if you don’t go specifically looking for it. Within a small alley, behind a not so charming door, you can hear loud voices, laughs and some Greek music in the background. If you dare to go inside, disregarding your first thought of “oh, this is a private house, I shouldn't trespass it”, the scenery you will see is like it came from the ’60s. Checkered tablecloths, traditional chairs, old photos and a makeshift kitchen create an authentic feeling reminiscent of old Athens.
The always smiling owner, Takis, has operated this tavern since 1985. He pretended to know me, and after a nice “Kalimera, I remember you, please sit”, I sat down on one of the last free tables of the alley. I sat down right next to Stellios, this wonderful old man who greet me with yellow prunes, peanuts and come other spicy snack while we both waited to be served. He ordered some cheese and tomato, while I ordered the delicious feta with olive oil and some grilled peppers which were outstanding. I was so excited that I decided to copy Stellios and ordered a beer, the first Greek beer during by whole trip was waiting for me on my last day, and I ordered a Manos. It was good - that’s how far my beer knowledge and palate goes: good, not good :D To thank him for the company and the snacks, I invited him two more rounds of beer, which of course I’m not sure what happened since my Greek wasn’t that fluid so I made the best I could with Takis, so let’s hope at least some of the cash went for another Manos and the rest as tip! The whole experience was amazing, Stellios told me about his family, his lovely wife and two kids, as well as about his dog in very broken English. I showed a picture of my parents and told him I lived in New York, but that I was from Uruguay, land of football and meat. Yeap... some have Aristotles, others have Benedetti, and both of us share a Manos. Yamas, Athens!

Kimchi and Miso Noodle Soup
Ingredients
3 cups (200 g ) Asian mushrooms (enoki, shimeji, shiitake, oyster)
1 tablespoon tamari or soy sauce, plus a little extra to season and serve
Juice of 1/2 a lemon
2 tablespoons golden honey or agave nectar
3 cups (250 g) soba noodles (I use 100 percent buckwheat ones)
3 tablespoons sesame oil
Sea salt
6 scallions, trimmed and finely chopped
A small thumb-sized piece of ginger, peeled and grated
1 teaspoon gochujang paste or red pepper flakes
4 cloves of garlic, thinly sliced
3 1/2–5 ounces (100-150 g) cabbage kimchi, drained
3 cups (250 g) purple sprouting broccoli, woody ends removed and cut into thumb-length pieces
3 tablespoons miso paste (I use a brown rice one)
9 ounces (250 g) extra-firm tofu
Sesame seeds
Squeeze of lemon or lime
Some cilantro or shiso leaves (optional)
Directions
First, put your mushrooms into a bowl with the tamari, lemon juice and 1 tablespoon of the honey, and put to one side to marinate for at least 15 minutes.
Cook the soba noodles according to packet instructions. Drain and run under cold water, then toss in 1 tablespoon of the sesame oil.
Heat the remaining 2 tablespoons of oil in a large soup pan over medium to high heat. Once the mushrooms have had their marinating time, drain them but keep the marinade Add the mushrooms to the pan in a single layer with a pinch of salt (you can do this in batches if you need to). Cook until the mushrooms are golden where they meet the pan, then toss and keep cooking until the mushrooms are deeply browned all over—this should take 5 minutes or so. Remove from the pan and set aside.
Fill and boil the kettle. Put the empty pan back over medium heat, add the scallions and sauté for a few minutes before adding the ginger and gochujang paste. After another minute or so, add the garlic and the drained kimchi. Sizzle until the garlic is starting to brown around the edges. Add 5 cups (1 1/4 liters) of water from the kettle along with the remaining tablespoon of honey and bring to a boil. Now, add the broccoli and simmer for 1 minute, or just until the broccoli becomes bright green.
Remove the soup from the heat. Place the miso in a small bowl and whisk it with a splash of the broth to thin it out. Stir the thinned miso into the soup. Taste your soup; you really need to get the balance right here. If the broth tastes a bit flat, you might need more salt or miso, or a splash of soy sauce.
Just before serving, cut the tofu into little 3/4-inch (2-cm) pieces—you'll have about 1 cup—and drizzle it with the reserved marinade from the mushrooms.
To serve, divide the noodles among four bowls and ladle over the soup. Top with to tofu, mushrooms, and a sprinkle of sesame seeds. Finish with more soy if you like, a squeeze of lemon or lime, and the shiso or cilantro leaves if using.

At the suggestion/request of no one - I just love talking about this shit. 
In case some of my friends/followers on Tumblr get as super-dry in the face as I do in the winter, a quick PSA re: the best products I’ve found - 
When we made the move from Florida to Ohio, it meant experiencing my first /real/ winter. I grew up in southern Alabama, which def gets cold as fuck and has hard freezes but nothing prepared me for the reality of the heat constantly running high in my house, my car, every store I set foot in and my skin reacted accordingly. I have perfectly normally balanced but sensitive skin in the humid climates of my home but the second it drops below 60 here, my face becomes a leather boot and my hands turn into deadly weapons as the callouses on my fingers begin to break apart and snag on literally every fucking thing I touch. 
So, for my other sensitive dry-babies, I posit unto thee some recommendations (and a disclaimer that I don’t fuck with drugstore brands much given how shady their ingredients tend to be) from the list of things that helped save me from my scaly lizard future during my first transplanted winter and well into my second now. Keep in mind, there’s quite a bit of Lush here because I worked there - they’re out of my budget had I not had an employee discount for the holidays but the products are still really, really good and worth the money if you have it: 
Lush’s Full of Grace serum is a delightful weirdo. It’s a solid bar that you rub between your fingers until the oils melt and you then apply them to your face (or you can put the bar directly on your face, whatever works). It’s loaded with portabello mushrooms and murumuru butter meaning it’s a heavy hitter with the antioxidants too - I have very sensitive skin and have to be mindful of weird shit but this one is so luxuriously moisturizing and smooth that I have replaced my night time moisturizer with this serum alone more than once. It’s 16.95 online or in stores so it’s a little pricier than drugstore but far less than designer brand, and like with all Lush products you can rest assured that it’s cruelty free and ethically sourced. For a toner, Lush’s Eau Roma spray toner is the most moisturizing, but I love Breath of Fresh Air so much that I’m reticent to change it. It’s the ultimate lazy skincare step - wash your face/get out of the shower, spray it on, rub on your moisturizer while it’s still damp and bam, done. The small sizes are like 10.95ish each and the big boys are something like 23ish but I have def made a full size of BoFA last a full calendar year before so it’s well worth it. 
During my No Buy Nine Months that started right after my birthday (Jan. 2nd), I’m going to work on phasing out brands I don’t intend to patron anymore, and one of them, sadly, is Clinique. They aren’t cruelty free and while their entire Moisture Surge line saved my goddamn life during my first winter here, I can’t justify the continued purchase. That said, the 72-Hour Replenishing Hydrator and Overnight Mask are easily duped with the drugstore brand Simple Water Boost Hydrating Booster and Sleep Mask - are they as good? No. Are they way cheaper and still pretty damn good? Yes. And, they don’t test on animals but they do use beeswax if that’s a non-starter for you. I’m forever looking for new moisturizers - especially night time ones - so I’ll report back eventually. When I had bad sensitivity spots I used one of my miracle go-to discoveries - Egyptian Magic, which I think is made in Belgium and has a really creepy racist ‘dIsCoVeR tHe SeCrEtS oF tHe AnCiEnTs’ sort of bent but is really just a shitload of royal jelly and food-grade oils that straight up killed the eczema on my eyelids and quelled any allergic reactions I had. 
A product I am super guilty of overbuying thanks to my tendency towards too many TJ Maxx trips in the summer to leech their air conditioning is moisturizer sprays. I had to put the moratorium on any more of them because there are currently like eight different ones from eight different brands in my home. I have a TonyMoly (another brand I’m gonna have to swear off of no matter how much I love it for animal testing reasons), two different ones by Nooni, Clinique and idk some other white one I can’t find. For ultra-dry skin though, I find that the Dirtyworks’ Play It Cool hydrating facial mist is the best - I am an obsessive lover of their Pure Beauty Facial Oil as my nighttime moisturizer in the summer, it is sincerely the best facial oil I’ve ever tried as it’s non-greasy and soft and nonirritating with its pleasant, gentle sweet almond oil scent. 
To slough off the ever-encroaching wall of dead skin threatening to suffocate my glow out of existence, I lean hard on Clinique’s 7 Day Scrub, which means I gotta find a better one when this one runs out.  Lush’s Angels On Bare Skin, which is their bestselling facial cleanser for a reason. It’s got lavender buds in it, which can be a bit much on sensitive skin (I can’t use it more than a few times a week as the lavender irritates my eyelids) but the ground almonds provide such a nice touch of exfoliation that’s not as harsh as some of the more salt-based scrubs. Their Ocean Salt face and body scrub is the real fuckin’ deal - harsh grain sea salt, lime oil, vodka extract - so you need to be sure your face can handle three different levels of exfoliation before you apply it. I have to be careful with it but I do use it on my face periodically and largely my calloused-ass hands. The Mask of Magnaminty is another excellent choice - I put it on before a shower and then rub it off with water so I get some extra exfoliation from the ground aduki beans in it. 
As for what that mouth do, the Nooni Water Blending Lip Oil is loaded with sea buckthorn oil and apple water and it is a goddamn delight. I am literally ALWAYS looking for moisturizing lip products because they’re the first things to scale up when the moisture gets zapped out of my house via the furnace; I burn through a lot of Hempz balms - namely Triple Moisture - and this year I completely used up one of the Ulta Juice-Infused Lip Oils in Cranberry & Pomegranate and I love it so much that if it’s still on the shelves when I finish my No Buy period, I’ll probably snag another. 
For various and sundry splashes of moisture places other than my face: almost entirely Lush products because I was using that discount, goddammit. Sleepy Lotion is a fave at night thanks to that beautiful Sleepy/Twilight product smell of blended lavender and tonka bean, sweeter than the almost medicinal bite of lavender on its own. I spray the body spray on my sheets at night too. Their holiday line of in-shower body conditioners - Buck’s Fizz and Christingle in particular - are go-tos so I don’t have to waste time being frozen while I rub lotion on frantically as I cry for my robe. I used the shit out of Hempz’s Triple Moisture Whipped Body Lotion last year in my desperate bid for skin-survival and it did not steer me wrong - plus it lasted all the way into spring. Lush’s Handy Gurugu Hand Cream, Lemony Flutter Cuticle Butter, and Lollia’s 1000 Flowers Hand Lotion have been my front line aresenal as I fight to keep these gnarly ass, calloused hands of mine under control. I may have gotten to play with lotions and creams all day at Lush but I also spent a lot of time with my hands in super hot water, usually doing bath bomb demos, so I had to take extra care to keep the moisture on. Also, I finally sucked it the fuck up and dropped the cash on a humidifier for the bedroom but I keep forgetting to fill it because chronic illness and executive dysfunction. 
If you’ve got any tips I don’t know about I would de-goddamn-lighted to hear them.

A World of Influences
No doubt, Indonesia’s multifaceted cuisine has numerous influences: Arab and Indian traders brought spices, rose essence, and dishes like martabak (stuffed pancakes). The Spanish introduced chiles. Rijsttaffel (literally “rice table”) is the larger-than-life Dutch interpretation of the traditional Indonesian meal of rice plus several dishes. But the Chinese immigrants likely had the biggest impact, bringing noodles, soy sauce, and soybeans to the archipelago.

Of course, cooking styles and ingredients vary according to region. The food found on Java and Sumatra are better recognized globally—think beef stew (rendang), chicken satay (sate ayam) and chicken turmeric soup (soto ayam). But branch further out to places like Sulawesi (Celebes) and you’ll find meat- and blood-stuffed bamboo tubes, and fresh-caught fish, grilled and served with a variety of dipping sauces (sambal).
But a Dark Horse in the U.S.
While Indonesian cuisine is revered both within the country and regionally in Southeast Asia, it isn’t as well-known as say, Thai or Vietnamese cuisine in the U.S. There could be any number of reasons, but chief among them is population. The 2010 U.S. Census counts only 95, 270 Indonesians in the country. Since Indonesia was a Dutch colony until 1949, it has had fewer political, economic, and cultural ties to the United States than many other Asian nations. For a comparison, that same census accounts for 3,416,840 Filipinos living in America.
Global cuisine is often promoted through restaurants. Unfortunately, the Indonesian Embassy knows of only 34 restaurants stateside. Not that I’m surprised. Many Indonesian dishes are laborious to prepare, and few Indonesians who migrate to the U.S. deign to open restaurants. (I speak from experience; my family ran one in Seattle from 2007 to 2012. It was popular but a lot of hard work. Let’s just say family cohesion won out in the end!)
The good news is Indonesian cuisine won’t be totally foreign to Americans already enjoying Southeast Asian food.
The Essentials
If you’ve cooked Indian and/or Thai food, you’ll find the ingredients familiar. Turmeric, cumin, cinnamon, and coriander are some of the most-used spices. Lemongrass, lime leaves, ginger, and galangal are ubiquitous. Nutmeg, native to Indonesia’s Banda Islands (part of the Maluku or original Spice Islands) is usually sprinkled into Dutch-influenced dishes like macaroni schotel and risoles. These spices and herbs are blended into spice pastes called bumbu, the very foundation of Indonesian cooking. Herbs like lemongrass, salam, and galangal (a trio I dub the Indonesian bouquet garni) are tossed in while cooking and removed prior to serving.
You can easily find Indonesian ingredients at an Asian market that caters to a Southeast Asian clientele, and maybe even at a specialty store. Any other ingredients, like some of the ones below, can be bought online. I have included my prefered brands but in all honesty, some ingredients are so hard to come by, I say take what you can get! Used sparingly, aromatic ginger’s unique camphor-like flavor is a welcome addition to dishes like vegetables in coconut stew (sayur lodeh) and Balinese duck curry (bebek Betutu). This reddish-brown rhizome is probably one of the more obscure Indonesian herbs—even I only discovered it recently when my mom revealed the secret ingredient in her fried corn fritters. Sometimes mistakenly called lesser galangal, aromatic ginger is available in the U.S. dried or powdered.

Similar in size and texture to macadamias (which is a decent substitute), candlenuts must be cooked—usually pan-fried—first to remove toxins. These waxy, cream-colored nuts are usually ground with other herbs and spices to add body and texture to curries, sauces and braises. They are high in oil content and will go rancid quickly if not refrigerated. Frozen, they keep for up to a year.

Fried shallots are showered over everything from fried noodles to soups and sambals. My mom even adds it to spring roll fillings for flavor and crunch. Fried shallots aren’t difficult to make, just tedious and messy. My mom would slice shallots (and Asian shallots are tiny, mind you!), dry them in the sun, then deep-fry. When I came home from school as a little girl, I would often find my mom next to a mountain of fried shallots sitting on newspaper to soak up the oil.
For convenience, I buy fried shallots in big containers from the Asian market. These store-bought brands are usually imported from Vietnam and Thailand. My mom swears by the packages of fried shallots she stashes in her suitcase every time she returns from a trip to Indonesia.
Galangal
A.K.A. laos, lengkuas Penny de Los Santos

A member of the ginger family, galangal has a distinctive fragrance and flavor. Look for the more tender young galangal that’s pinkish in color. In Indonesian cooking, it is used in braises, soups, and for fried chicken. Peel then chop the rhizome before adding it to a spice paste. Or cut into half-inch slices and toss into soups. If you can’t find fresh galangal, buy them dried and soak 10 minutes in hot water before using.
Indonesian Palm Sugar

Indonesian palm sugar is sold in solid blocks or cylinders. Made from the sap of the arenga palm (and sometimes coconut palm), it tastes of molasses or caramel and is used to make sweets and to balance flavor in certain savory dishes. The Chinese introduced Indonesians to soy sauce and they made it their own by adding sugar! The Indonesian version has the usual soybeans, wheat, and salt but also includes palm sugar and molasses. It is much thicker and sweeter than regular soy sauce which is called kecap asin or kecap Cina (salty or Chinese kecap). If you can’t find Indonesian sweet soy sauce (Cap Bango is my favorite brand), Chinese or Thai sweet soy sauce will suffice. Or you can make your own with this recipe.
The fried rice of my childhood is doused in sweet soy sauce, and when kitted out with chopped bird chilies and shallots, it makes a delightful dip for fried fish or fresh vegetables. I buy Cap Bango when I can find it, and Cap ABC is my second choice.
The kluwak “nut” is actually the seed of the kepayang tree, a tall tree native to the mangrove swamps of Southeast Asia. The oily, hard-shelled seeds contain hydrogen cyanide and must be boiled then buried in the ground to ferment and be rid of the toxin. W
hen cracked open, the chocolate-brown meat of the fermented kluwak nuts is ground up to prepare rawon, a thick, black stew made with beef or chicken. Kluwak is also made into sambal with garlic and chilies. Back in the day, my mom had to buy kluwak in the shell. She’d crack open each and every nut and scoop out the meat. It was a laborious process but the resulting dish was so tasty! Thankfully, now I can buy prepackaged dried, peeled kluwak even in the U.S.
Lime
A.K.A. jeruk
Limes are indispensable in Indonesian cooking. The juice and rind are both used, for drinks, to flavor marinades, and in soups.

With its wrinkled skin and limited amount of juice, the lime called jeruk purut (makrut, or what used to be known as kaffir), is almost impossible to find in the U.S. unless you grow your own. Back home, my mom used the juice and rind (she’d toss it into the marinade) to brighten the flavor of barbecue foods like grilled chicken (ayam panggang) and satay. The leaves are more commonplace, adding fragrance and flavor to coconut-based braises and soups like tripe soup (soto babat). Potent whether fresh or dried, the leaves can be ripped off the spine and crumpled to release its fragrance and flavor; or slice thinly into ribbons. Frozen leaves keep beautifully.
Jeruk limo (Nasnaran Mandarin) are small and very juicy. They are excellent in sambals and used to neutralize the “fishy” smell of seafood. My uncle has a jeruk limo tree in his Southern California garden and my mom receives care packages every few months. She freezes the limes and uses them sparingly.
Another lime, jeruk nipis, is very similar to key limes. Squeeze over sambals and noodle soups. I often use a combination of lime leaves, key limes and Meyer lemon to replicate the flavors.
Pandan

I’ve dubbed pandan the vanilla of Southeast Asia. This fragrant leaf imparts both aroma and color to many Indonesian dishes, both sweet and savory. Pandan leaves are often tied in a knot and steeped in a syrup that’s added to various drinks and desserts. It is also tossed into sweet snacks like sweet black rice porridge (bubur hitam), coconut rice and curries.
As a coloring agent, the leaves are crushed together with some water and squeezed to release their green juice. Bottled pandanus extract is available, but the artificial flavor puts me off and I’d rather go with frozen leaves instead. I still dream of the pandan chiffon cakes that my mom used to make.
Salam
A.K.A. daun salam
Salam leaves (Eugenia polyantha Wight.), a member of the cassia family, add a sweet, earthy flavor to many dishes. They are sometimes called Indonesian or Indian bay leaves. Indeed, they are used in the same way bay leaves are used in Western cooking, but the two are not interchangeable. Salam leaves are only available dried in the U.S. If you can’t find any at the Asian market, omit. It is one of three key ingredients in the Indonesian bouquet garni.

As a little girl, I ran the other way whenever my mom started frying shrimp paste. Sometimes, she’d fry it in her gigantic steel wok; sometimes she would skewer a large chunk of it and stick it in the open flame of our gas stove. Thankfully, she always cooked in our outdoor kitchen. The blackened shrimp paste was then sauteed with chilies, shallots, bell peppers and palm sugar to make my mom’s famous chili-shrimp paste (sambal terasi). In Indonesian, asam literally means ‘sour,’ hence tamarind’s name, asam Jawa. Other sour fruit exist (including asam gelugur and asam kandis) but tamarind is the souring agent I use most often. I’ve seen both dried tamarind pods and “wet” tamarind (coffee-colored blocks in cellophane packaging) at the Asian market, but I prefer wet tamarind. And if I can help it, I never ever buy the ready-made tamarind paste or pulp. It is so lacking in flavor. Break off chunks of wet tamarind and soak in hot water. Sieve to retrieve the pulp.
When Indonesians were given soy beans, they made tempeh—fermented soybeans compressed into savory cakes with a distinct, nutty flavor. Rich in protein and other minerals, tempeh is a nutritional powerhouse and a staple food for many Indonesians, especially in rural areas where meat is scarce. In the U.S., it is a popular meat substitute and available at many mainstream grocery stores. To make Indonesian recipes, buy the plain ones and leave the marinated or smoked versions for next time.

The Pepper Thai Cookbook: Chrissy Teigen's mom talks food, family and her need for Thai spice (CNN) — As anyone who’s visited Thailand knows, food is a key part of the experience. Whether you’re street side in Chiang Mai slurping back a bowl of khao soi noodles or enjoying a Michelin-starred Thai meal in a high-end Bangkok restaurant, the memories of those powerful, balanced flavors stay with you long after you’ve left the country. Vilailuck “Pepper” Teigen knows this all too well. Mother of model, TV personality and entrepreneur Chrissy Teigen, Pepper emigrated to Utah from Thailand’s northeast Isaan region in the early 1980s. For years, she says she tried to replicate the flavors of home, struggling to find ingredients in the small American town she lived in. “When I had Chrissy as a baby I remember going to a little market,” she tells CNN during a recent video interview. “I was the only Asian in that little town — Delta, Utah — where Chrissy was born and I requested ‘Can you bring in bean sprouts and lemon grass please?’ And they did. But other than that, I had to travel 100-200 miles just to get gaprao (Thai basil).” Today, Pepper lives in Los Angeles with Chrissy, son-in-law John Legend and their two kids, Luna and Miles. She makes regular cameos on their Instagram feeds, often appearing in the kitchen cooking alongside Chrissy or her grandkids, or joining them on their travels. Pepper’s influence can be found in Chrissy’s two cookbooks and on her Cravings website. But for the first time, the mom/grandmother is sharing her stories and recipes in her very own book. “The Pepper Thai Cookbook,” out this week, is an 80-recipe collection filled with gorgeous photos of food and her family, accompanied by laugh-out-loud anecdotes and touching memories of her experiences growing up in Thailand and her life in the US. “It’s just kind of like having a baby again!” Pepper says of her new book. “The same feeling. I’m so excited and a little bit nervous.” The book features dishes from several regions of Thailand. But Pepper puts her own spin on some of them — pad Thai brussels sprouts, anyone? — while also including other family staples like scalloped potatoes, the first “American dish” she learned to make. “Our family loves to eat,” says Pepper. “So I have my favorites from Isaan (in the book) because that’s where I’m from originally. That’s my most favorite flavor. And then my family likes exploring some northern and southern Thai foods.” “Don’t be afraid” Thai cookbooks can often be intimidating for at-home chefs, depending on the availability of ingredients or personal dietary restrictions. But Pepper knows from experience that adaptations are often unavoidable and just wants people to have fun in the kitchen, saying she regularly gets asked for advice on how to make Thai recipes healthier or vegetarian-friendly. “Thai people tend to eat all day. A little bit here, a little bit there. Food is everywhere. The aroma of street food hits you as soon as you walk out the door in the morning.” Vilailuck “Pepper” Teigen “Don’t be afraid,” she says enthusiastically. “I worked very hard with the writer’s (Garrett Snyder’s) help so we got it. It’s easy, and simple.” What wasn’t easy, though, was having to document the measurements for each recipe. Pepper says a lot of what she does in the kitchen is based on instinct, so she had to figure out how much of each ingredient she was actually using. “Everything comes from my head, so the measuring, the weight…that was the biggest challenge. When I did it myself I don’t need a recipe — when I needed two tablespoons I did it without measuring. But I tested myself. It was almost exactly perfect every time.” Exploring the tastes of Isaan Pepper grew up in the small city of Nakhon Ratchasima — unofficially known as Korat — in Isaan, where her grandparents were rice farmers. This region is famed for offering some of Thailand’s greatest culinary hits, including larb (a spicy minced meat salad) and som tum (papaya salad). (See recipe for Pepper’s fried chicken larb at the end of this feature.) These bold, intense flavors were always a part of Pepper’s life. The oldest of five kids, she says she was in the third grade when she began helping out her mother, who worked in a school cafeteria. “I started going to the market with my mom and came back at about 5 or 6 in the morning and just started preparations,” she recalls. “I was the sous chef for my mother before I could leave for school. At lunch time I had to come down and help her selling, like a food vendor.” Pepper feels Thailand’s reputation for being food-obsessed is deserved, with the question “gin kao yung” — have you eaten yet — a constant fixture in everyday conversations. “Thai people tend to eat all day,” she says with a laugh. “A little bit here, a little bit there. Food is everywhere. The aroma of street food hits you as soon as you walk out the door in the morning.” Even though it’s been decades since she left Isaan, Pepper says she needs to eat Thai food once a day — which can get tricky given how often she’s on the road with Chrissy, John and the kids. “Every time we travel I start packing chili peppers, a krok (mortar and pestle for crushing ingredients like chilies and garlic), instant noodles, chili powder, fish sauce,” she says. “Travel for me is very difficult because I have to have Thai food.” Fortunately, she says her Grammy-winning son-in-law is an adventurous eater who isn’t afraid to try new flavors. “John is so good!” she says when asked whether he can handle spicy food. “He can eat all the things with me. He’s a very good sport. He tries everything. When we were back in my hometown he tried all the bugs in the bug cart.” That trip took place two years ago. Pepper brought Chrissy, John, Luna and Miles back to Korat with her, where they explored the city’s street food scene. A visit to a local market caused a bit of chaos, with fans swarming the family as they made their way through the crowd, their tour even broadcast live on Facebook. Pepper acknowledges it’s difficult to travel with her celebrity daughter and son-in-law given the attention they attract, but feels honored to have received such a warm welcome in her hometown — she was even granted a key to the city of Korat from local officials. “I’m so happy people recognized me,” says Pepper. “From just being a little girl who goes to the market every day, to being a mother… and look at me now.” Introducing her grandkids to Thai flavors When visiting Thailand, Pepper says she always has to have a bowl of boat noodles. Shutterstock When asked to single out the first thing she eats when she steps off the plane in Bangkok, there’s no hesitation. “Ahhh, me and Chrissy gotta go get boat noodles!” she says, referring to kuai tiao ruea — small bowls of beef or pork noodles with a hearty broth accompanied by herbs and veggies. The name is derived from the original vendors who once paddled through the canals and rivers in and around Bangkok, cooking steaming hot bowls of noodles right in their boats. Today, they are served in restaurants as well but you can still enjoy the classic, floating version. “Sometimes we get in the car and go straight from the airport, straight to Ayutthaya where (some of the best) boat noodles are,” says Pepper. Though Chrissy might be a huge fan of Thai food now, Pepper says that wasn’t always the case. In the intro of her book, she notes how her famous daughter always wanted American foods like grilled cheese and pizza when she was a kid. But as Chrissy grew older, she began to ask for all those Thai dishes she grew up cooking and eating with Pepper. Pepper’s grandchildren, on the other hand, already have Thai favorites of their own, which are included in the book. “They love my food! They always ask for it and I enjoy doing it, I am so happy. Luna advised me this morning, ‘Tell them I love your jok,'” says Pepper, sharing the advice her five-year-old granddaughter gave her about what to discuss during the interview with CNN. Pepper says her fried chicken is also a hit, and Miles, who is nearly three, particularly loves her ribs — with lots of garlic. These days, Pepper doesn’t have to travel hundreds of miles for ingredients. She says she has a garden filled with fresh produce, while other items are easy to find in Los Angeles, allowing her to cook all her Thai favorites at home. And as the Thai-American embarks on her latest journey as a cookbook author, she says Chrissy has been a huge source of support and comfort along the way, encouraging her to share her recipes with the world. “She’s just so proud of me,” says Pepper, breaking into her trademark smile.
