hi :^) obviously this is just how i manage things as a student living alone but!!!

fruit tbh get ur favourites, in season is cheap, and if u dont have time dont get stuff that needs time or cant be easily transported! you can add it to oatmeal/bake fruit into oatmeal its also really tasty :^) consider fruit as a potential ingredient in ur savory recipes too!!

for veg start w the stuff you already love and cook it w diff sauces, condiments, try stirfrys, currys, basic sauteed veg in olive oil+spices as a side to anything! pasta dishes like aglio e olio or basic tomato sauce pasta can be a solid base to add any seasonal veg to!! just cut ur veg and roast it however u like and add it on top!!maybe try cooking a bit too much veg and then reheat it for a sandwich or breakfast plate with eggs or protein of your choice and some bread and fruit!!! soups are also very easy!!! i recommend finding a few good vinaigrettes so u can make delicious salad out of anything!! cheese, any roasted veg, croutons or anything crunchy, nuts, arugula or baby spinach, noodles or pasta if u like, beans if u want etc etc!

for beans try a basic falafel recipe, chickpea scramble for breakfast, hummus, make them into dips (eg white bean roasted carrot dip) which u can use in sandwiches or wraps or just to dip lol, add them into wraps with veg and a nice sauce to make a breakfast burrito or lunch wrap! add them to soups too!! make a good veg chili u will find lots of recipes and its hearty and very good!!

i think in general dont force urself to eat stuff when you dont enjoy the taste but learn how to cook veg and beans right and make them taste good to u!!! and dont stress if you dont have some in every single meal obviously
