There’s this one woman I work with who I really like but she’s also 100% the person who would be like “Of course i buy non-GMO salt!! Don’t you know GMOs pump rat poison into your blood! I can’t believe the US doesn’t care about their people enough to regulate it…” and like! There are so many problems with the US and with US agriculture but literally none of that is true

This is Part 1, ✨History✨.
Okay, so I was working on typing up plot stuff for Joden's story that I'm still thinking of a name for, but it's getting really long so I'll post it in parts. :3
Also since this is really early in the story's creation pretty much everything is subject to change, but you get the idea of the general plot. XD

The story is set in a forested landscape,  tree dotted grasslands eventually giving way to deep forests climbing up the mountain slopes. The different kinds of animals live in self governing groups, with varying levels of interaction between them. 
The smaller critters like mice, rabbits, and squirrels mostly just live in large family groups throughout the entire region south of the Great Pine Woods.  They by far make up the majority of the population, and have no uniting ruler.
The cheetahs live in the southern plains, little baronies scattered all around.  Their diet consists of fish and smaller birds (? Might change that later haven't decided if the birds are sentient) and the cereal crops they grow.  They also trade these grains with the other animals in exchange for goods such as cloth and beads.  They love being fancy. They have this system of electing their rulers, but only members of the "nobility" (land owners) ever get voted in because of money stuffs.
The raccoons also form their own society working off the classic monarchy.  Their kingdom is built in the Eastern woods, with  their homes built up off the ground and literally in the trees.  In the most populated villages, rope and stick bridges connect these homes making swinging pathways in the branches. A lot of the smaller creatures choose to make their homes in the roots of the raccoon trees, as their territorial border patrol keeps out aerial predators and the occasional rogue fox.  Unlike the cheetahs,  the raccoons are small enough they have enemies to worry about, and are known to have an exceptional and disciplined military. 
The bear clans live high up in the craggy woods working their gardens, rather indifferent to what happens below and the rumors that they eat their visitors.
The foxes do not have any form of government or organization. Some live in groups and some alone, some pledge a mammal free diet and some hunt their neighbors.  As such they are not trusted by anyone. :/

About twenty years before the story begins:
Down from the Northern pine woods a clan of foxes comes.  They are organized, armed, and angry, ready to claim some territory after being chased out of the north by the wolf clans.  Most of the southern foxes come to join their cause, pleased at the idea of them having utter lordship over the woods. Skirting around the great cats, they infiltrate the woods to the west and south after establishing themselves in the North. This was done easily with no opposition due to the small critters having no leader. They just swept in and conquered.
With this done they turn their attentions to the East.  The raccoons have watched this all  happen with great alarm.  King Cynric gathered his men in preparation of the attack, but still wasn't ready for the craftiness of the foxes'.  They came in great numbers from the south, engaging the king's soldiers in the clash of battle, while stealthy individuals crept past the border guards and set fire to the trees.  The wind and dry weather did its work, and the kingdom of raccoons fell to fire and bloodshed.  Most died in the fires that destroyed their homes, the remainder of them fled under the guidance of their prince, only to fall at the mercy of their waiting enemies.  Unprotected sows and their kits were slaughtered by the sword or captured and enslaved in the ruins of their home and all across the newly conquered forest.  
This song really fits the burning of East Wood and Rowan's side of the story.

Prince Rowan, however, rebelled at the enslavement of his people.  With his father the king now gone, he was left the protector of his people and despite his wife's urging, could not lay down in submission.  He gathered a small team of close friends and willing boars, bid his wife farewell, and left, hoping to gain more information on the foxes' plans and find a way to free his people.   Him and those with him were never heard from again. 
The cheetahs watched all this happen around them, and decided not to interfere, but rather formed an uneasy alliance with the foxes.  They didn't consider themselves in any danger of being conquered, but weren't bothered by their actions and wanted to avoid the bother of war.  The foxes were more than eager to sign peace with the cheetahs, knowing in that their conquest would be secure.  It is unknown whether the bears up in their western mountain range are even aware of the dramatic changes to the lower-lands.
The woods are now in an awkward state of affairs, the foxes holding a tyrannical rule over all their subjects. Soldiers are stationed in every town and village to "keep the peace", the inhabitants going about their lives in the fear they or one of their family members will be chosen as the next meal.  Most of the Southern foxes still prefer a mammal free diet, but one of the Northern invaders' main objectives is to secure easy prey for consumption.  
The "free" creatures are allowed to live their lives "as they would please", but have limited allowance to travel and must give payment at the end of every week to their resident "guardians".  This payment can be anywhere from a basket of wheat berries or a bolt of cloth to an older child.
The raccoons have a far stricter control placed over them, as they are viewed more capable of revolt.  Scattered across the foxes' open woodless territory small slave towns hold the remnants of Cynric's kingdom. They spend their days working for their masters, boar and sow alike, tending fields, cooking and cleaning, mining, etc.  They are kept under strict control with heavy penalties for disobedience. Their meal times are regulated, their sleep times, work times, housing, children, everything. It is in one of these dusty, dead towns Joden grows up in.
His mother is old enough she remembers what life was like in the old kingdom, remembers a life of freedom under the trees.  Joden's father died shortly after the foxes' attack, he is told later he was one of the faithful boars that accompanied Prince Rowan for his last stand.  She raises Joden on these tales, urging him to never give up the hope that they can one day be free.
It is for his mother's sake Joden's intense optimism grows.  Can he truly be considered a slave if he goes about his work with a smile and a song? If he willingly puts on the yoke and carries the load they have required, who is the one truly in control here?  They can enslave his body but they cannot enslave his spirit.  
As he gets older he also grows bolder.  Just being cheerful to lift his mother's spirits is not enough.  He wants the entire slave town to be free in the way he is.  They all go about their days in unnecessary gloom, only because they lack someone to lead them out of it.  By the time he reaches maturity the entire town looks to him as their leader, hoping that someday a hero will come to set them free and lead them home. He stands in for them against the cruelty of their masters, fighting for the justice of his small community of raccoons.  This often gets him into a good bit of trouble, which he somehow always manages to get out of and back home to his worried mother. 
He meets Twylla when she is relocated from another slave town by stepping in when a few of the slave masters decide to teach the new coon a lesson.  The girl had made no grave offense, just a slip in her understanding of the schedule this different camp functioned under.  It was a great surprise to her when a random coon detached himself from the troop marching past, and demanded they punish him in her stead.  He would take responsibility for the sow and her actions throughout her initiation and teach her obedience to their rules, all her mistakes laid to his shoulders instead.  This was agreed to, as they had nothing in particular against the new coon but did enjoy taking out their boredom on Joden who usually escaped from any attempts against him.  Twylla really had no idea what to think of any of this.  She helped him up off the ground with repeated apologies he gently brushed off. She very willingly trotted along after him as he taught her not only how to function in this new town, but also how to hope. Then later they get married. :3
Jaceryn is the son of a Cheetah land baron.  He has been raised in the lap of luxury, his father being the wealthiest of the barons and the cheetah's current elected leader.  He is a rather naive boy who has never left his Father's estate, but naturally has big plans on how he will make the world a better place.  He has grown up in a world where the foxes have dominion of all the forest outside his Father's control, and this is normal, but he doesn't understand what that means until he sees it for himself.  They have little raccoon slaves all over his Father's land that they purchased from the foxes, so the concept of raccoons being a race of slaves is kinda engrained in him.  There's no such thing as a "free raccoon".  
His mother instructed him to stay on his father's estate when he plays outside, but one day he gets curious like young boys do, and decides to venture into the trees.  He really likes the way the forest feels and goes deeper and deeper, thoroughly enjoying himself when he hears voices and decides to investigate.  He comes across a raid in a woodland village, the fox overlords collecting their taxes.  He sees the children ripped from their mother's arms, the weeping villagers, the carts of goods and the miserable raccoon slaves pulling them, and the jeering,  laughing faces of the fox soldiers and the injustice burns within him.  It is true the foxes defeated them in battle, so the captives are their spoils of war, but this is unnecessarily cruel oppression and he hates it.  He hates that his own people- free people- are doing nothing to change this and he resolves to be the one that frees the slaves.  His parents are told this scheme by their proud little thirteen year old and are very quick to try and dissuade him.  Not only is this a dangerous task for him to undertake, but this also holds the possibility of starting a war that neither of them wish to fight.  Jacer agrees to "abandon" the dream to put his parents fears to rest, but secretly continues plotting and preparing his coup.  It would be risky, and he would need to be sneaky.  Break into a camp and take out the guards, let the little coons run free…
He went on frequent trips out to the forest to swing around in the branches and practice creeping silently through the underbrush.  The other cubs his age wrote him off as a weirdo, so he went alone.  His father eventually began to worry about him on these trips, remembering how impulsive his son can be at times.  It had been years since Jacer had talked about his quest to end slavery and had shown no signs that he still held that belief so his father thought nothing of purchasing Jacer his own personal slave.  This slave's job would be companion and voice of reason and just general personal servant.  
This is probably where the actual story would start lol, so all that is setup. XD
I'll share more as I finish writing it, cause I'm really excited about this story. :3

It’s all thanks to...mucus.
Nitrogen is essential for crops to grow, and it’s abundant in the air, but plants have trouble getting it. Some, like legumes, are able to house bacteria that can transform nitrogen in the air into a form the plant can use; others, including important crops like corn, wheat, and rice, can’t do this, instead requiring vast amounts of fertilizer. But what if there was another way?
Researchers at the University of California, Davis have managed, after many years of searching, to find a variety of corn that’s able to house those helpful bacteria, just like legumes. This ability is called “fixing” nitrogen, and if the researchers can figure out how to cross-breed with modern corn to give that same ability, we could have a major achievement for farmers and the environment.
Corn, like most other plants, sucks up nitrogen from the ground, but does not provide a home for the bacteria that “fix” it into a form the plants can use. Legumes, which do “fix” nitrogen, form little knobbly nodules on their roots for the bacteria, but nobody has yet been able to figure out how to get corn to do the same. (Though many are trying.)
Without that ability, to grow corn in the quantity that it needs to be grown today, farmers are forced to drench their corn in fertilizer, which contains nitrogen. This is, frankly, a major issue: according to the USDA, somewhere between 40 and 80 percent of fertilizer is not actually taken in by the plants, but instead runs off into the environment. An excess of fertilizer is a nasty problem; when it runs into lakes and ponds, it spikes a huge growth in aquatic plants, which suck the oxygen out of the environment, literally choking the ecosystem.
But the California researchers discovered a deeply strange, sort of oogy variety of corn in the Sierra Mixe region of Mexico, in the state of Oaxaca. Mexico is the site of the domestication of corn; there are thousands of different varieties, some with ancient history and wildly different appearances and uses.
This particular corn grows very slowly but very tall, about a third taller than conventional corn crops. But it also grows these strange above-ground roots which never touch the ground; they look sort of like spider legs. Those roots secret a mucus-type substance, clear and thick and sticky, which provides the sort of low-oxygen, high-sugar environment that a certain treasured guest loves. The corn, in short, creates its own home for nitrogen-fixing bacteria.
The discovery is potentially enormous: if this corn can be cross-bred with conventional corn (probably through something like CRISPR, a genome editor which makes this sort of thing much quicker and more precise), it could potentially give conventional corn that same strange mucus-y aerial roots. A corn crop with the ability to fix nitrogen would, very literally, change the world for the better: it would dramatically reduce the amount of fertilizer needed. Also: what a good weird corn!

Goose Island Bourbon County Stout 2018

GI President Todd Ahsmann is calling this the greatest year of all time for BCS. A record 8 releases are set to drop on Black Friday.
Bourbon County is something that Goose works on all 12 months. In January the internal competition begins amongst brewers and lab technicians. Everyone gets to propose his/her version of BCS in a one-liter jar.
4 rounds and a couple months later, Brewmaster Jared Jankoski decides which finalists get the bottle treatment.
Themes from the Goose Clybourn Preview Event: -RDF (Real Degree of Fermentation) was up this year so ABV is 15.4% ABV up from 14.  
-Everything was aged in a blend of 75% Heaven Hill, 25% Buffalo Trace barrels for an average of 10 months. It’s a shift from using all Heaven Hill last year.
– Dorothy is the code name for a collection of six whirlpool stainless steel infusion tanks. These were installed for balanced extraction rates after cold adjuncts are added. This tank re-circulation method replaces adding adjuncts to fermenters and barrels.

8, a Goose Black Friday Record
R &D Manager Mike Siegel sequenced the order of the 2018 tasting. This is was first time Goose staff tried them all. Prop left the bright tank just 2hrs before the event. Bourbon County Brand Coffee Stout is absent this year. It’s a bittersweet reality for the original BCS variant. That beer had been in the core lineup every year since its 2010 debut with an Intelligentsia’s Black Cat Espresso Blend.
1st all new BCS recipe since Barleywine
Bourbon County Wheatwine A very simple, stripped down beer that highlights the character of the barrel aging process. It’s an entirely new recipe, the first new offering in the Bourbon County family since the introduction of Barleywine.
Innovation Brewer, Tim Faith took on the project start to finish from a single barrel trial over 2 years ago. It’s not an unheard of style, but it’s uncommon, for sure.
Back in 2015 Goose Island Clybourn brewers led by Jon Naghski took a silver medal at FOBAB for their Cherry Run Wheatwine. The Fulton interpretation has bright sherry tones and a much less layered complexity when compared to Barleywine.
Wheatwine is a continued exploration of what the Bourbon County can be.
A sweet, expressive barrel showcase with a simple 2 row, malted barley and malted wheat backdrop. The color comes from the extended 2.5hr boil. Fresh viscosity and mouthfeel expose the bourbon barrel for what it is. This extension of the tribe is not related at all to the original Greg Hall stout recipe.

Bourbon County Original OG is priority number one for the Goose brewing team and the most important beer of the lineup every year. Not just because of legacy but it’s the base that feeds into most other variants. OG comes out very balanced; historically you expect a little more heat. The fudge and molasses notes are forward this year.
Bourbon County Stout Reserve Fresh 4 yr casks are out. In steps 2017 Whisky of the Year, Elijah Craig’s 12yr casks. Expect distro in Chicago and Kentucky with small quantities headed to NY and GI’s worldwide pubs. An older cask transforms this beer. The level of trust to receive these older casks makes this one special. Expect more toffee, oak, vanilla and dried fruit character than OG. These beers are effortlessly alluring.

Brewmaster Jared Jankoski*
Midnight Orange Oscar Sanchez and Paul Levin both landed on the same concept during trials. This national variant is modeled after delicious milk chocolate candies that reveal individual chocolate segments filled with real orange oil when unwrapped.
Actual broken up chocolate bars and cacao nibs are a labor intensive and costly project to bring into the brewhouse, but Goose has a history of this behavior. This is more about the orange zest than the juice. Minimizing the bitterness that comes from the pith was a goal.
Midnight Orange is accentuated with a round milk chocolate candy profile. Oscar was inspired by dark chocolate orange mocha down in Mexico. Spanish Navelina orange peels had a depth of character that the staff really dug. 2 eastern African cacao nib variants were sourced. The subtle citrus bump makes the stout lighter on the palate.
Whiskey cocktails (Old Fashioned), orange infused beers (Fulton & Wood En Passant) have set the precedent. It’s an odd harmony that was bound to happen. Conversations with Heaven Hill Master Distiller, Denny Potter about appreciating citrus flavors resident already in his single barrel reserve bourbons pushed momentum forward.
Refining orange as a character takes this variant into a slightly different direction than we are used to. The volatile sweet orange peels were maintained with a high quality freeze. Brewers had 2 days after shipment to incorporate.
Spanish Navelina Orange Peels + Eastern African Cacao Nibs*
Bourbon County Coffee Barleywine This happy accident was born at FOBAB 2013 when the big homie, Ryan Tucker connected Barleywine to a coffee randall instead of Coffee BCS.
Layered caramel malt flavors with hints of raisin and maple. It’s a thick, massive graceful barleywine. There are 7 Central American coffee growing regions. Over 1400 meters is the altitude where premium coffees are grown. The team flew to southwest Guatemala to visit Finca La Soledad, a coffee farm that’s been part of the Perez family for 6 generations. One of GI’s 37 brewers was a roaster for 18 years at Intelligentsia.
After cupping 16 coffees, high altitude, classic bourbon was a top 3 for everyone in attendance.
In the past ground up cold brew concentrate was added to the beer. This year beans were added to the infusion tank where it swirled and recirculated through whole roasted beans with no grinding and no delusion.
The controlled environment of the Dorothy allows for a balanced flavor extraction from additional ingredients. Barleywine is a mindful partner for coffee because there’s less roasted malt than stout. This was the most scrutinized of the variants with tastings every hour and overly assessed raw materials.
This isn’t the end of Coffee Stout, it’s just a pivot.*
Bourbon County Proprietor’s Blend (Chicago Only) 12 lbs per barrel of ground dark chocolate bars and two types cacao nibs were added to Prop ‘18. An earthy dark and a milky chocolate, the same ones used in Midnight Orange.
There are no rules in this blend. Introducing new recipes is a huge part of the annual BCS process. The challenge of these beers was to highlight 1 or 2 ingredients in each release. Goose has used cacao nibs for years but never chocolate. The robust depths of raw cacao nibs compliment the milky chocolate.
Mike Siegel insisted on using the actual brittle roasted bean instead of liquid chocolate. Prop was sampled every 30 minutes for a month until it yielded desired flavors. A hammer mill (food grade wood chipper) gently shredded whole Madagascar vanilla beans just enough to expose the inside beauty of the seeds without pulverizing it.

Bramble Rye’s 1st appearance in the lineup since 2011*
Bramble Rye When Brewmaster Jared Jankoski shares his BCS spider graph of nuance, this one sits at the bolder end of the spectrum. Bramble was a brewers and fan favorite back in 2011. It’s easy to fuck up a fruited stout with overly pronounced fruit characteristics…not the case here.
The worlds of rye whiskey and fruit have never layered better. Jammy tannins from raspberry and blackberry seeds and skins are wrapped nicely with a distinct velvety mouthfeel. Rye whisky highlights earth tones. Raspberry puree, whole blackberry and blackberry juice create an opulent, rich intense fruit wave that transcends all.
After a sip Jared’s impression was simply, “It taste like it belongs in the chalice of a 10th Century king.”

Historic Recipes: Grain
By  Ribe Vikinge Center’s 2012 Project ‘Nordic food is Viking food’
New farming methods were introduced in Denmark during the Iron Age, different types of cerial crops and more advanced agricultural tools. A Viking Age tool is the moulboard plough, which cuts furrows, turns the soil and brings nutrients to the surface. An oak ploughshare has been excavated in a well in Hviding south of Ribe. It dates back to 825-850 AD. Excavations in Ribe have also given evidence of four cerial crops in the 800's AD: barley, rye, oats and wheat. These cerial crops have most likely been grown locally. Today, we grow the following cerial crops in Ribe VikingeCenter:
Six-rowed barley (Hordeum vulgare) The Danish name for this plant, byg, originally means "the cultivated grain". Six-rowed naked barley and normal barley were established in Denmark as far back as the Stone Age. In the Viking Age, six-rowed naked barley became the most important type. Barley gave meal for bread, grits for porridge, and malt (sprouted barley) for brewing beer.
Club wheat (Triticum compagtum) Club wheat, also called 'bread wheat', is the only one of the previous strains of wheat that was still around in the Viking Age, perhaps because wheat generally prefers a dryer and warmer climate, like that of the Bronze and Iron Ages. Incidentally, the word wheat is derived from the word 'white', referring to the white flour.
Rye (Secale cereale) Rye started to make an appearance in Denmark in the late Bronze Age. The cereal probably came from the south with seed corn, and spread as a weed in the cornfields, before becoming accepted as bread grain. During the Iron Age, both climate and agriculture changed - and in the Viking Age, rye became the predominant type of grain. It is much more resistant to the winter cold, damp and drought than other types, and can be grown on sand or on less fertile soil. As well as being grown in Denmark, rye was also imported from abroad.
Oats(Avena sativa) Oats were first seen as weed (wild oats) but were cultivated in Denmark from the late Bronze Age. In the Vikinge Age, their use declined visibly, but nonetheless, oats are still used to feed both humans and horses and oxen.
Bread soup Any kind of day old bread Water Sweet juice of apples, pears or fruits in season Honey 1 pinch salt Ground cinnamon
Break the bread into smaller pieces and put it in an earthenware pot. Add enough water to cover the bread. Leave it to soak overnight. Next day: Bring the bread and water to the boil and let it cook until smooth. Remember to stir every few minutes to prevent it from burning. Whisk the mixture if any lumps. Add the sweet juice and a pinch of salt. Season with honey and a little cinnamon. Serve with whipped cream.
Coarse Wheat Loaf 1 cup cracked wheat 1 cup boiling water Salt Sourdough and a little brewer's yeast 2 cups cow milk or cultured milk/Acidophilus 2 cups wheat flour
Put the cracked wheat in a pot and pour over the boiling water. Leave to soak for about 1 hour. Mix the soaked cracked wheat with salt, sourdough, yeast and milk. Add the wheat flour and knead it all together. Let the dough rise somewhere a little warm until the next day. Form the dough into one large round loaf and place it into a floured bread rising basket. Score the bread and then let it rise once again. Carefully turn out the yet unbaked loaf onto a floured, wooden peel and place it in the oven. Bake for 1.5 hour approx.
Fried Toast With Stewed Fruit Sliced day old bread loaf (not rye bread) Milk 2 eggs Ground cinnamon Honey Butter for frying Stewed seasonal fruit
Pour the milk into a bowl and leave the bread slices in the milk for a moment just to let them soak a little of the fluid. Remove the bread slices. Break the eggs into the milk and whisk the mixture. Put back the bread slices into the bowl, letting them soak up egg mixture for a few seconds. Carefully turn to coat the other side as well. Heat a skillet coated with a layer of butter. Transfer the bread slices to the skillet, heating it slowly until bottom is golden brown. Turn and brown the other side. Sprinkle some ground cinnamon over the bread slices and drizzle with honey. Serve hot with stewed fruit.
Skillet Bread 2 cups milk, room temperature A little brewer's yeast Salt 1 cup oatmeal flakes 4 cups wheat flour Ground coriander
Pour the milk into a bowl and stir in the yeast. Add the oatmeal, wheat flour, salt and coriander. Knead to form a dough and leave it to rise somewhere warm for about 1 hour. Knead the dough once again and form a big flat bread to fit the skillet. Place the bread on the heated, dry skillet over the fire. Frequently turn over the bread to bake on both sides and prevent it from burning. The bread is done when it is golden brown and sound hollow when you tap it. Serve with butter.

Goose Island Bourbon County Stout 2018
Proprietor’s Blend. Chicago Only
GI President Todd Ahsmann is calling this the greatest year of all time for BCS. A record 8 releases are set to drop on Black Friday.
Bourbon County is something that Goose works on all 12 months. In January the internal competition begins amongst brewers and lab technicians. Everyone gets to propose his/her version of BCS in a one-liter jar.
4 rounds and a couple months later, Brewmaster Jared Jankoski decides which finalists get the bottle treatment.
Themes from the Goose Clybourn Preview Event: -RDF (Real Degree of Fermentation) was up this year so ABV is 15.4% ABV up from 14.  
-Everything was aged in a blend of 75% Heaven Hill, 25% Buffalo Trace barrels for an average of 10 months. It’s a shift from using all Heaven Hill last year.
– Dorothy is the code name for a collection of six whirlpool stainless steel infusion tanks. These were installed for balanced extraction rates after cold adjuncts are added. This tank re-circulation method replaces adding adjuncts to fermenters and barrels.
-All the flavors in this year’s lineup have made it to trials in the past

R &D Manager Mike Siegel sequenced the order of the 2018 tasting. This is was first time Goose staff tried them all. Prop left the bright tank just 2hrs before the event. Bourbon County Brand Coffee Stout is absent this year. It’s a bittersweet reality for the original BCS variant. That beer had been in the core lineup every year since its 2010 debut with an Intelligentsia’s Black Cat Espresso Blend.
1st all new BCS recipe since Barleywine
Bourbon County Wheatwine A very simple, stripped down beer that highlights the character of the barrel aging process. It’s an entirely new recipe, the first new offering in the Bourbon County family since the introduction of Barleywine.
Innovation Brewer, Tim Faith took on the project start to finish from a single barrel trial over 2 years ago. It’s not an unheard of style, but it’s uncommon, for sure.
Back in 2015 Goose Island Clybourn brewers led by Jon Naghski took a silver medal at FOBAB for their Cherry Run Wheatwine. The Fulton interpretation has bright sherry tones and a much less layered complexity when compared to Barleywine.
Wheatwine is a continued exploration of what the Bourbon County can be.
A sweet, expressive barrel showcase with a simple 2 row, malted barley and malted wheat backdrop. The color comes from the extended 2.5hr boil. Fresh viscosity and mouthfeel expose the bourbon barrel for what it is. This extension of the tribe is not related at all to the original Greg Hall stout recipe.

Bourbon County Original OG is priority number one for the Goose brewing team and the most important beer of the lineup every year. Not just because of legacy but it’s the base that feeds into most other variants. OG comes out very balanced; historically you expect a little more heat. The fudge and molasses notes are forward this year.
Bourbon County Stout Reserve Fresh 4 yr casks are out. In steps 2017 Whisky of the Year, Elijah Craig’s 12yr casks. Expect distro in Chicago and Kentucky with small quantities headed to NY and GI’s worldwide pubs. An older cask transforms this beer. The level of trust to receive these older casks makes this one special. Expect more toffee, oak, vanilla and dried fruit character than OG. These beers are effortlessly alluring.

Midnight Orange Oscar Sanchez and Paul Levin both landed on the same concept during trials. This national variant is modeled after delicious milk chocolate candies that reveal individual chocolate segments filled with real orange oil when unwrapped.
Actual broken up chocolate bars and cacao nibs are a labor intensive and costly project to bring into the brewhouse, but Goose has a history of this behavior. This is more about the orange zest than the juice. Minimizing the bitterness that comes from the pith was a goal.
Midnight Orange is accentuated with a round milk chocolate candy profile. Oscar was inspired by dark chocolate orange mocha down in Mexico. Spanish Navelina orange peels had a depth of character that the staff really dug. 2 eastern African cacao nib variants were sourced. The subtle citrus bump makes the stout lighter on the palate.
Whiskey cocktails (Old Fashioned), orange infused beers (Fulton & Wood En Passant) have set the precedent. It’s an odd harmony that was bound to happen. Conversations with Heaven Hill Master Distiller, Denny Potter about appreciating citrus flavors resident already in his single barrel reserve bourbons pushed momentum forward.
Refining orange as a character takes this variant into a slightly different direction than we are used to. The volatile sweet orange peels were maintained with a high quality freeze. Brewers had 2 days after shipment to incorporate.
Spanish Navelina Orange Peels + Eastern African Cacao Nibs*
Bourbon County Coffee Barleywine This happy accident was born at FOBAB 2013 when the big homie, Ryan Tucker connected Barleywine to a coffee randall instead of Coffee BCS.
Layered caramel malt flavors with hints of raisin and maple. It’s a thick, massive graceful barleywine. There are 7 Central American coffee growing regions. Over 1400 meters is the altitude where premium coffees are grown. The team flew to southwest Guatemala to visit Finca La Soledad, a coffee farm that’s been part of the Perez family for 6 generations. One of GI’s 37 brewers was a roaster for 18 years at Intelligentsia.
After cupping 16 coffees, high altitude, classic bourbon was a top 3 for everyone in attendance.
In the past ground up cold brew concentrate was added to the beer. This year beans were added to the infusion tank where it swirled and recirculated through whole roasted beans with no grinding and no delusion.
The controlled environment of the Dorothy allows for a balanced flavor extraction from additional ingredients. Barleywine is a mindful partner for coffee because there’s less roasted malt than stout. This was the most scrutinized of the variants with tastings every hour and overly assessed raw materials.
This isn’t the end of Coffee Stout, it’s just a pivot.*
Bourbon County Proprietor’s Blend (Chicago Only) 12 lbs per barrel of ground dark chocolate bars and two types cacao nibs were added to Prop ‘18. An earthy dark and a milky chocolate, the same ones used in Midnight Orange.
There are no rules in this blend. Introducing new recipes is a huge part of the annual BCS process. The challenge of these beers was to highlight 1 or 2 ingredients in each release. Goose has used cacao nibs for years but never chocolate. The robust depths of raw cacao nibs compliment the milky chocolate.
Mike Siegel insisted on using the actual brittle roasted bean instead of liquid chocolate. Prop was sampled every 30 minutes for a month until it yielded desired flavors. It circulates in tanks during the day and rests overnights. It’s the first time in 15 years that the brewery worked non-stop third shifts on a beer.

Italian Food Regional Cooking Central Italy
Visit Tuscany and step back in history to the Renaissance. Michelangelo was born in Caprese, a village in the province of Arezzo, Tuscany, and Leonardo da Vinci was born near the Tuscan town of Vinci. These two men will secure the place of Tuscany in history but this article is about cuisine. Tuscany is home to the city of Florence and Pisa with its leaning tower, as well as the Chianti region, famous for its wine and Siena with its medieval festivals.

In Alba a 1.6-pound white truffle sold to "The Cody" of southern California for $150,000 on November 8, 2009. Olive oil from Tuscany is fruitier with more assertive flavor compared to other oils from Italy. This is due to climate, which is harsher than other parts of Italy but the reward is some intensely flavored and very superior estate bottled olive oils. Tuscan hills are good grazing land and there are several producers of artisanal sheep's milk cheeses in the area. Tuscans claim that their sheep produce sweeter and more delicately flavored milk and therein lies the secret to the cheeses of Tuscany.Italian Cheeses Italy's most closely guarded culinary secret, a rare cheese made from pig's milk called Porcorino is produced in small amounts and people are actually sworn to keep the exact location a secret. Local favorites are filled pastas like ravioli and tortellini with ricotta and pancetta, and then dressed with butter and fresh sage, tomato or meat sauce. In Tuscany, "maccheroni", are rectangles of egg pasta rather than the tube shape we might expect. In Italy, all shapes of pasta may be referred to as maccheroni. They are used in a traditional dish called Pasta Tordellata which is something like ravioli with the filling on the outside. Seafood is always welcome and there is lots of Tyrrhenian coastline to fill the pot with variety. Cacciucco (Italian fish stew) consisting of several different types of fish and shellfish cooked in wine, tomatoes, and chili pepper from the Tuscan port city of Livorno. Castagnaccio is a typical cake made with chestnut flour is common to the mountains around Tuscany. Traditional during autumn and winter but it is supposed to be wonderful anytime of the year.
