there's a few things which make me think the famous boiled apples comment wasn't the duke of norfolk:

the fact that mary made no attempt to punish norfolk after her accession
obviously not incontrovertible proof, but she appointed him to the privy council and gave him back his titles in her first parliament after he'd been attainted and imprisoned, which doesn't sound like mary acting on a long-standing and bitter grudge
the main reason the quote is attributed to norfolk in the first place is not because he actually said it but because norfolk was a double-dealing pragmatist of the highest order who would probably sell satan to satan if he thought it would save him
#🗡️#she sent him to deal with wyatt's rebellion and he served at her coronation#obviously he was a leading catholic but he was also like 80. she had gardiner pole renard etc to rely on for that#ordering him released was one of the first things she did (along with gardiner)#mary had a long and sometimes vicious memory#she was dogged in her pursuit to punish people like cranmer#but in her first parliament along with declaring her parents' marriage valid and repealing edward's statutes#she passed an act pardoning norfolk#to be clear norfolk was very much a dick involved with bullying mary into submission on the orders of her father#but he was the ultimate karma houdini in part thanks to mary#and i'm not so sure she would've forgiven that so easily
