i made an absolutely deliciously perfect dinner and dessert?? holy shit lmao it only took me like twelve years of practice
FOR THE FIRST TIME EVER 1) I timed it all right so it was all ready at the same time, 2) I didn't overcook or undercook any part of any of it, 3) no part was over- or under-seasoned, 4) I didn't over- or under-estimate servings, everyone was full and there's enough leftovers for a lunch or two, 5) all three of us actually enjoyed every bit!!!
I am kind of amazed and excited and it's such a low bar lol
We had kielbasa with caramelized onions and julienned bell peppers and garlic, cheesy extra-broccoli pasta, baked potatoes, and peas & carrots. I also threw in some shredded spinach to both the meat and pasta, just to use it and squeeze in extra veggies.
For dessert I made Grandma's "fridge cake," which is an easy recipe: bake any flat chocolate cake, lift it out of the pan, spread the bottom of the pan with caramel sauce, replace the cake, poke some holes, spread hot fudge across the top, and top with whipped cream and chocolate chips/shaved chocolate curls, then chill. It's much better after at least 24 hours tho, when the cake has soaked up all that sauce, but I hadn't had it since childhood and I just HAD to make it for wife and kiddo. And it's just mwuah
also had a cute sprinkle mix I spread over the top and it was all just so perfect and I'm very proud of myself!!
Kiddo said "this is my second favorite meal you've ever made and THE. BEST. dessert ever" their first fave is ... rice and red beans lmao (I make instant rice with stock/bouillon instead of water, and add some garlic+onion powders and pepper, simple but glad they like it!). Then we finished reading Hatchet for bedtime and now I gotta pick the next bedtime book.
