ingredients !
cookies
110g softened unsalted butter* 1 tsp vanilla bean paste - use paste not extract! 220g caster sugar ; 200 if osamu is on cut (!) 2 large eggs* 2 tbsp cocoa powder 1/4 cup of plain full fat yoghurt 2 tbs red food colouring ; use gel NOT liquid 250g plain white flour ; cake flour is okay too (no self raising or bread flour) 1 tsp baking powder
*make sure to take eggs and butter out of the fridge at least two hours prior to baking - or heat butter up in 10 second increments on low heat in the microwave until soft to the touch ; not melted.
cream cheese frosting ; leave at least 5 unfrosted for keiji, 12 if osamu is on cut.
6 tbs softened unsalted butter : see previous note 150g cream cheese ; use the expensive brand , no name brand has an after taste 1 tsp vanilla bean paste ; extract is okay 220g powdered icing sugar ; add to taste (try not to exceed 260g)
method !
01 heat oven to 180C 02 use butter to stick parchment paper onto baking trays 03 cream butter , vanilla extract and sugar until light and fluffy (8 minutes on high speed) 04 add eggs, yogurt , cocoa powder and food colouring , mix slowly until combined. 05 add sifted flour and baking powder carefully , mix slowly until just combined ; don't overmix 06 drop heaped tablespoons onto the parchment paper, distance of about 1.5 cm from eachother. 07 bake for about 8-10 minutes until top springs back when touched 08 allow to cool for 5 minutes then transfer onto cooling rack 09 only garnish until cookies are fully cooled ; melts otherwise 10 beat all ingredients together with stand mixer for cream cheese frosting until light and fluffy, don't overmix

Eating chocolate is pure joy, cooking with it a delight, even smelling it bewitching, but buying it shakes my faith in human nature.Â
The best chocolate is wonderful, but most is not worth buying and most People buy terrible stuff.
Good quality plain or dark chocolate will taste smooth not greasy, bitter not raw, intense not oversweet, with a long finish, not a cloying aftertaste.
But how do you know good quality?
Price is not a reliable guide - in fact supermarketsâ Own brands are usually excellent and are a good bargain when buying in bulk for cooking.
â The quality and taste of chocolate is dĂ©termined by the quantity and quality of the Cocoa solids- the dry solids plus the added Cocoa butter- used in its production.Â
The quantity of solids, at least, IS indicated on the packet.
Couverture chocolate, used for fillings and icings, usually has around 55 per cent Cocoa solids, bitter chocolate around 65 per cent, and Super amer or extra bitter, best for puddings, fine cakes and eating, is just over 70 per cent.
Some chocolates labelledâ for cooking â Can contain as little as 30 per cent Cocoa solids: the rest is sugar, fats and flavourings.
â The raw material for Chocolate is the Cocoa bean, found in the large yellow-green fruits of the Theobroma cacao tree which grows only within 20 degrees north or south of the equator.
Each tree yields enough beans to make around 2,5 kg of chocolate each year.
The best chocolate is made From a blend of beans- each type has its Own individual character and colour ranging From pale coffee through to dark mahogany Brown.
Store chocolate well away From other foods in an airtight container in a cool,dry place, because it Can easily be tainted by other Flavours.

400 g strong white bread flour
œ teaspoon sea salt
15 g fresh yeast
60 g golden caster sugar
200 ml skimmed milk, lukewarm
3 medium eggs, beaten

50 g slivered or flaked almonds
60 g plain chocolate, roughly chopped
Nut Coating :
25 g unsalted butter, very soft
50 g slivered or flaked almonds
icing sugar, for dusting
one 23 cm Kugelhopf mould
Makes 1 large Cake
To use easy-blend dried yeast, mix one 7g sachet with 140 g of the flour. Mix in the sugar and milk and let rise for 30 minutes.
Make a well in the remaining flour, add the salt, add the yeast liquid and eggs and proceed with the recipe.
â To make the nut coating, thickly butter the inside of the Kugelhopf mould with the very soft butter, then press the almonds all around. Chill while preparing thĂ© dough.
To make thé dough, mix the flour and salt in a large mixing bowl, then make a well in the centre.
Crumble thé yeast into a small bowl, then cream to a smooth liquid with the sugar and milk. Pour into the well, and work in enough flour to make a thick batter.
Cover with a damp tea towel, and leave at normal room temperature for 30 minutes.Â
The batter should look bubbly.
Add the eggs to the yeast liquid, stir until combined, then gradually beat in the flour to make a soft and very sticky dough.
Beat the dough in the bowl with your hand or with the dough hook in an electric mixer for about 5 minutes or until it becomes firmer, smooth, very elastic and shiny.
Work in the soft butter until thoroughly incorporated, then the almonds and chocolate.
When evenly mixed, carefully spoon the soft dough into the prepared mould(it should be half full).
Cover the mould with a damp tea towel and let rise at normal room temperature until the dough has almost doubled in size and has risen to about 2.5 cm below the rim of the mould-about 1 hour.Â
Bake in a preheated oven at 200°C(400°F) Gas 6 for about 45 minutes, or until the Cake is golden brown and a skewer inserted into the dough midway between the outer edge and inner tube comes out clean.
Leave to cool for 1 minute, then carefully unmould on to a wire rack and let cool completely.
Serve dusted with icing sugar.
Store in an airtight container and eat with 3 days or freeze for up to 1 month.
It can also be lightly toasted under a grill.

Marbled Kugelhopf
Replace 50g of the strong white bread flour with 50 g sieved cocoa powder and 25 g sugar.Â
Replace the 60 g plain chocolate with a similar quantity of white chocolate, roughly chopped. Proceed as in the main recipe.

here are my contributions, I've got sensitive stomach*** dairy free, try to avoid wheat, autistic and need consistency, but also try to eat fresh, etc:
splurge kitchen items disclosure:
quality olive oil. it just makes everything taste better + extra calories
balsamic vinegar, doesn't have to be quality but instant sour + umami tones to flavorless food
honey or maple syrup
good knife + bamboo cutting board
decent blender (thrifted is fine)
slow cooker or instant pot or rice cooker

I splurge on flavoring things and try to keep a decent stock of random canisters of dry goods like beans, lentils, soup mix, chia seeds, quinoa, oats, rice, flour, or whatever things you feel necessary for a basic pantry setup and spices.

LEGUMES VEGETABLES MEATS
refried beans - if you're dedicated, you can make your own (whole process, traditionalky involving lard) but the cans are cheap and honestly few things are as filling. as a gross broke college student I would eat straight beans with chips or crackers.
miso soup packets or just a container of miso - great for warming the stomach esp if you've not eaten all day! I drink it like tea and it's surprisingly filling
for exhaustion purposes I like to buy those bags of baby potatoes - wash and toss in olive oil, salt, pepper and paprika, maybe a splash of balsamic if you have it, bake on 425 until cooked thru- food of the gods. no peeling needed. tender. crispy.
chickpeas. chick. peas. aka garbanzo beans. drain and heat these bad boys up with some margarine or butter on the stovetop, salt and pepper - delicious. can also be transformed into a chickpea sandwich with some basic condiments like bbq sauce, mayo - or a lettuce wrap if you're gluten free.
If you really need to save money, they can be bought in bulk, soaked and boiled. but canned is usually affordable enough to cut out the middleman.
bonus if you can afford fresh tomatoes, cook them down over med heat on a cast iron with some olive oil, splash some green tea, pasta water, any suitable flavored liquid, and add to the chickpeas. it beats tomato sauces w high sugar content anyday.
yellow dal - you can find super cheap lentils at most Asian markets that carry Indian foods. or even at the store. These are those orange or yellow split lentils, throw them in a slow cooker with an onion and a tomato and some chana masala (cheap bulk spice mix also @ the Asian market) and salt l, ginger if you can afford- learned this from an Indian slow cooker cook book. one of the best tummy soothing meals out there.
apples and bananas are gut soothing for most people - bananas can combine with some protein shake powder or even just peanut butter, oat milk, cocoa powder, frozen berries, for a super filling morning smoothie.
bonus is most food banks carry them.
frozen berries - you can get them relatively cheap sometimes, if not freeze berries when they're in season. delicious refreshing instant dessert or "I need vitamin c help" boost. Blend with milk of choice for instant refreshing summer treat.
you can make your own banana milk or oat milk as a milk alternative pretty easily with a blender.
carrots - get the bulk unpeeled ones, they're cheaper. to store longer you can chop them into quarters and store in water.
blend chickpeas with some tahini (if you buy a bottle it will last years in the fridge) and voila hummus to dip carrots in.
make your own stocks! like they said above, boiling chicken carcass is one way but you can also get cheap soup bones and make beef stock, or collect and wash vegetable scraps to make vegetable stock, and freeze it. pasta water can also be saved to thicken soups and stews.
chicken hearts, chicken feet! WAY cheaper than any other meat. sometimes a package of them is barely over a dollar. fry chicken hearts in oil with salt and lime or Tajin until they're crispy. also works great in soups and stews.
BEETS. I cannot praise the beetroot enough. packed with vitamins, antioxidants - they will save your ass in the winter, and are fairly cheap. you can make a mean, cheap borscht soup with homemade beef or vegetable stock, beets, potatoes, carrots,.onions, cabbage, some vinegar and dill. meat if you have any handy. freeze it if you have extra. it's healing to the soul and body.
Or you can fry the beets diced in margarine with salt and some herbs. sweet, tender, not everyone's taste but so good for you.
shred with carrots and add to plain lettuce or use as a salad alternative w vinegar and dill as dressing.
cauliflower is usually cheap and you can cut the heads like "steak" and marinate/season and bake them! or "rice" your cauliflower florets by crumbling, grating, or blending and then lightly saute in oil.
tilapia tends to be the cheapest fish in my area and most grocery stores carry bags of boneless filet that are easy to slide right out into a pan with some salt, lemon, herbs (I like fennel) and a splash of balsamic. fuckin impeccable dish.
cabbage is a great soup filler. you can also cook it with milk or milk alternative for a yummy German dish.

October is a fine month to take a moment to look closely at one: the system that brings us cheap chocolate. Like most systems, itâs largely invisible. The people in it donât mean to do harm, theyâre simply making choices that feel like their best option. And most of all, the system works to defend itself, to create culture that defends the status quo. The giant chocolate companies want cocoa beans to be a commodity. They donât want to worry about origin or yieldâthey simply want to buy indistinguishable cheap cacao. In fact, the buyers at these companies feel like they have no choice but to push for mediocre beans at cut rate prices, regardless of the human cost. As a result, trees are bred not for flavor or resilience, but for yield. Farming methods ignore regeneration and are maximized for short-term output. And most tragically, labor (especially children) is exploited and suffers. The farmer, feeling powerless, feels as though they have no choice but to make what the buyer wants. The cheap beans are made into reliable, cheap chocolate. Chocolate that doesnât melt in the store, or in your hands. Chocolate thatâs sweet, not delicious. But cheap. The merchant stocking the shelves feels as though they have little choiceâthey buy the usual kind, the one thatâs well promoted and inexpensive. And this convenient, prevalent chocolate becomes the normal kind. The regular kind. The kind kids get on Halloween, in bulk. Itâs easier, sometimes, to just go with the system. Weâre not stuck in traffic, we are traffic. If we see a system, we can work to change it. Our strategy can use elements of the system to alter it. The chocolate we buy at the supermarket furthers the goals of the system, and directly harms the lives of the impoverished farmers who grow the cacao.
