Philippine Cuisine: featuring Province of Antique by Carla Mae Dela Cruz
“Antique: Where the mountains meet the sea.”
Our parents and family have their native hometown provinces where they were born and raised. Different cultures, behaviors, and practices and some have a different aspect that is until today they keep on practicing. Last week I called my cousins from Antique to check on them and ask if everything's going fine and well. How's everybody, what the life there in Antique, so on and so forth. I also spoke to their father and had a little discussion about our life and it went very interesting as our conversation went to an interview over the phone. He told me such interesting things about Antique and it fascinates me to hear wonderful things that my adrenaline rush was overflowing all over my body and excites me that my feet want to move on their own and travel right away. I wish I could fly and get there immediately, and hoping at this pandemic’s ends, I could visit Antique soon and see the beauty of its nature with my own eyes, feel the sand under my feet, and taste the breeze of the cool wind coming from the sea and mountain that will satisfy me.
I asked Uncle Peter how to get to Antique from my location. The fastest ways are through air transportation, but there are also through land and sea. If through the land, it takes more or less than 20 hours and it sometimes depends on the number of stopovers and the climate in the entire trip. From Muntinlupa, ride a bus going to Port of Batangas, then from Batangas, ride a ferry going to Sabang Ferry Terminal. Another bus again from Sabang going to Bulalacao Roro Port, another ferry from Bulalacao Roro Port going to Caticlan Jetty Port, and ride to the last bus from Caticlan going to the San Jose De Buenavista, the 1st class municipality and capital of the province of Antique. As he discussed the directions, I felt like I'm on a trip already and my imagination was playing like I've seen and felt everything. He also added that the estimated fare for the whole trip including the ferry boat was about P2,500-P3,000 per head. At first, I was very confused, with many stopover points, 2 ferry boats, and 3 bus rides, but I guess the long trip was worth it.
The Language there Is Kinaray-a and Hiligaynon. Most of the Antiqueños can also speak and understand Tagalog and English. I was confused at first because it sounds like Ilocano, the way they speak and talk were the same but Uncle said it was different because the diction and the tone of Karay-a and Ilocano were different. I had some Karay-a words that I learned from my cousins, like gwapa, which means beautiful, Mayad-adlaw (good day), Halong (take care), and Palangga ta kaw (I love you). Uncle also added that if I want to travel to Antique, the best time to visit is from January until June, August and September, and November and December. He said that this month has the exact temperature and average climate that it will enjoy. Not too hot nor too cold. He also recommended that in September, November, and December, it is perfect to try the Kawa Hot Bath (Kawa means a large wok) located at the Calauag Mountain Resort in Brgy. Uno Tibiao Antique said that they have been there and the place was so relaxing, calm, and peaceful, the aroma coming from the steaming water from the wok telling your body to dive on in. The experience was very memorable - he added. It looks like you've been cooked in a large wok. It is just the same with the hot springs but the difference was you will be in a large wok and you can choose your bath in different flavors like coffee, salt, milk, beer, and wine. This kawa Hot Bath can also relieve stress and improve blood circulation.
My Uncle also said that the best part of Antique was the food. Your trip will be incomplete without tasting their best delicacies from the local eateries - he added. I remember when he was here in Muntinlupa, he cooked this dish called "Porbida". It tastes similar to Adobo but it was cooked differently. The cooking preparation is similar to our regular adobo; however, vinegar is not utilized in the souring or preservation of the dish. The chicken cutlets are boiled in gata (coconut milk) until tender. It is soured by alupidan (garlic vine) leaves; annatto powder is added to attain a yellowish color of the dish and chili peppers to make it spicy. It looks like kare-kare and tastes like adobo and Bicol express and is partnered with sinangag (fried rice). Another dish was from his great-grandmother, the "Kinilaw". Although we already knew the preparation and ingredients of the regular Kinilaw, yet it was the best version I've ever tasted. I remember that day we had a small celebration. We had beers and hard drinks and some food, and he cooked this as sumsuman (pulutan). Instead of being drunk, I got full because I kept on eating and eating the kinilaw. I asked my uncle's permission if I can have the ingredients and without uncertainties, he gave it to me! I'm so glad that I will try it with my version. The ingredients for my version of their "Kinilaw" are unripped mangoes, ginger lily (kamias), onion, garlic, red and green chilies, ginger, vinegar, and Tamban fish. The ingredients were the same but in the original recipe, the vinegar used in this dish was special and that's their secret ingredient for it, also, they put special coconut milk that my uncle has the only recipe that his grandmother's recipe passed to him. They add this special coconut milk to it for extra flavor. The procedure is very easy, first, the fish was soaked overnight in vinegar, mangoes, and kamias, (I use a blender for the mangoes and kamias) then drained the juice the other day, and create another juice, and put in all the remaining ingredients. Another famous dish is "Linapwahan" (steamed). Just the same with our province in Samar, it was some steamed vegetables and seafood, or meat dipped in Ginamos with calamansi and chili or partnered with "Sise" (ginamos na halaan) and "Dayok"; (ginamos na laman loob ng isda) with some Saba Banana. In Antique, The most common vegetables best for linapwahan are malunggay, kapayas (young papaya), saluyot, okra, alugbati, kalabasa (squash), latoy (string beans), amargoso (bitter gourd), talong (eggplant), and kulitis (spinach). When these vegetables are combined and simply brought to a boil in water with tomatoes and onions.
After our long conversation, or should I say, over the phone call interview, I've learned a lot of things and it inspires me more than the Philippines have more islands and provinces I should visit in the future. I can't help myself self but starve and get hungry especially when he discussed the best dishes in their hometown. You should also come with me and let's explore more and know about the hidden beauty of Antique.

BALER, AURORA
“The world is a book and those who do not travel read only one page.” – Augustine of Hippo 
Finally! After almost a decade, our first vacation came true. First stop? Of course, the haven for surfers and bikers, Baler, Aurora. A province in the Philippines located in the eastern part of Central Luzon region, facing the Philippines Sea.
This happened last April 2018. A month of preparation, money saving, swimsuits, and OOTDs shopping spree. We were so glad that it was the whole gang! Jem, Chelsea, Nina, Nikhole and Pamcate together with our Eugene and Ean.

Waze calculated that the travel time is approximately 8-9 hours. But we did it for only 6 hours for us to catch the sunrise at Sabang Beach in front of our hotel. We left Makati at 11pm and reached our hotel at 5 in the morning as we witnessed the beautiful sunrise within the beach.

A ton of pictures was captured. After our business, we need to do an early check-in at the hotel so that we can rest and change our clothes. Unfortunately, we were unable to take a picture of Baler’s best lugaw that we ate for breakfast. It comes with chicken liver and unlimited calamansi. It only costs Php 20.00.
Day 1-------------------------------
In the afternoon, we went to the Municipality of Baler where some of their local museums are located.

We went first to Museo de Baler. It houses several historical artifacts that link it closely to the Philippine’s first and longest colonizer, Spain. 
President Manuel Quezon, who was born in Baler, has a statue in the center of the park named in his honor.

We also enjoyed taking pictures at Baler’s name that is 4ft high with the Baler’s 400 years monument on its background. On its side, it has some surfing boards symbolize that the place is the surfing capital of Aurora.

We visited the old Balete Tree in Maria Aurora. In the town of Maria, a 600+ years old Balete Tree stand tall. It is at Balete Eco Park near its municipality. It is also the biggest Balete Tree in Asia and with the alternative name of The Millennium Tree. You may also go inside of its roots!

We ate at Yolly’s Ihaw Ihaw and Seafood Restaurant for lunch. It costs only Php 200.00 per head for a buffet type of lunch.
Before the day ends, we visit Diguisit’s Beach. Where the shore is composed of big rocks and pebbles. It’s just along the highway. Unfortunately, we’re unable to get some rock and bring it home.

Baler Hanging Bridge. This bridge connects two sides which are Brgy. Tibang and Brgy. Sabang. The river is very calm and clean. You can also see here a view of the mountain on the other side. I can still hear the nervousness of each one.

Before those smiles, a 45-minute hike happened. A trail of a cemented pathway, clay soil, mini rivers, big rocks, and wooden bridges before we reached Mother Falls. All of that was paid off as we’ve seen the most beautiful falls in Aurora. The water here is cold as ice.

Torres Farm and resort is located in  Brgy. Sabang, Naic, Cavite. The ambiance is refreshing and it is perfect for family bonding!
The entrance and swimming fee for adults is 180php and 120php for children. They also offer a room if you would like to go overnight with a very affordable price. They also have playgrounds for kids, an obstacle course and a billiards room. You can also bring food because there are no restaurants inside. The resort is still under construction but it is already open to the public

          Ang lugar ng Oslob, Cebu ay sikat sa paglangoy kasama ang mga butanding, ito ay sa Brgy. Tan Awan sa Oslob, Cebu ito ay 4-5 na oras ang iyong lalakbayin kung ikaw ay manggagaling sa Paliparan ng Mactan. Upang makipag langoy kasama ang Butanding ikaw ay dadalo muna sa isang miting upang masabi ang mga kailangan at hindi dapat gawin para sa kaligtasan ng mga turista at ng mga butanding. Isa ito sa mga magagandang gawin sa Cebu, dahil ito ay kakaiba na karanasan at ang Oslob ay nangunguna sa pinakamahusay na lugar upang gawin ang karanasang ito.
Ang mangingisda sa Oslob, Cebu ay pinapakain ang mga Butanding ng ilang taon na kaya sila ay nasanay sa pag punta doon sa tamang oras, at ito ay ginagamit upang mapag sama sama ang mga butanding at makasama ng turista. Ang mga tao sa Oslob ay higit ang pagmamahal sa mga Butanding at lagi nilang inaalala ang mga kalagayan at kaligtasan ng  mga Butanding, kaya sila ay lagi nagsasagawa ng miting upang masabi ang mga kailangang gawin dahil ito rin ay isang delikado ngunit na kakaibang karanasan. Isa sa mga pinapaalala ay ang pag bawal sa paghawak ng mga Butanding dahil ito ay nakaramdam ng stress o kaya sakit. Sa paggawa ng paglangoy ay nakagrupo sa anim ang mga tao sa isang Butanding upang hindi makaramdam ng stress ang mga Butanding at ito ay isinasagawa lamang ng 30 na minuto. 
Nakinig ako ng mabuti sa miting na isinagawa ng mga tao sa Oslob upang makapag handa sa karanasang ito. Sumakay kami sa bangkang maliit upang mapuntahan ang mga butanding sa pag lusob ko ako ay nakaramdam ng takot at saya dahil ang ito ay kakaibang karanasan na gagawin ko sa buhay ko. Isa ito sa mga karanasan na hinding hindi ko makakalimutan, sa karanasang ito naranasan ko kung gaano kaganda ang ating kalikasan at ang ating mga hayop. Kilalang kilala ang Bohol sa kanilang sikat na lugar na ang Chocolote Hills. Hindi alam ng mga tauhan na maganda rin ang kanilang tabing dagat. Mayroong partikular na dagat ang aking napuntahan at ito ang Panglao Island Beach. Maganda ang tabing dagat na ito dahil sa puting buhangin na mayroon ito at clarong tubig. Marami akong magandang alaala na nagawa dito at ang mga pangyayari dito ay masaya.
Marami akong nagawa dito embes sa pagpunta sa Chocolate Hills na maganda rin puntahan dahil tanawin na meron na ito at preskong hangin. Unang nagawa namin dito ay ang Island Hopping kung saan palipat-lipat kami ng at lumalangoy kami sa bawat isla. Pangalawa ay ang floating kubo kung saan kumain kami doon pagtapos mag-island hopping. Hule ang Helmet diving kung saan nag bangka kami papunta sa coral reefs. Nag-aalangan ako nung una dahil takot ako at wala akong tiwala sa equipment pero nadaan ako sa salita at napilitan rin ako.
Masaya ang naranasan ko dito at ang mga tauhan dito ay mababait at madaling makitungo. Ang tourist guide namin ay nakakatawa at mabait kaya nagdadag yun sa saya ng lakbay. Gusto ko ulit maranasan ito sa mga sususnod na araw pero kailangan ko maghintay dahil sa pandemya. Ito ay isang lugar na aking maiirecommenda sa mga pamilyuang gustong mag bakasyon dahil iba’t-ibang bagay na pwedeng magawa dito.

Baler ay isa sa may mga magagandang dagat sa ating bansa, and sabang beach ang tinuturing nila na pang- surfing beach nila. Sabang beach ay nakilala dahil sa lakas ng alon na makakapag surf ka talaga roon at may iba pang beaches ang baler na hindi para sa surfing at doon makakapagsaya ang mga bata. Ang Baler ay matatawag mong paraiso ng mga manlalakbay dahil sa madami ka pang magagawa katulad ng pag-paparty, mga pagkain na masasarap at sariwa pa. Hindi maganda puntahan ang Baler kapag ang iyong hanap ay white sand dahil ang sand dito sa Baler ay medyo maitim. Madami pa ang pwedeng makita sa Baler at hindi lang ito pang surfing beach.
Ang surfing rates sa Baler ay tatlong daan hanggang limang daang piso at kapag wala kang surfing board ay aabot ito sa isang libong piso. Bukod sa Sabang beach may tatlo pang mga beaches na pwedeng magsurf. Cemento Beach, dito nagaganap ang mga surfing competitions at dito marami rin nakikipag kompeta na mga international surfers. Charlie’s point, ito rin ay sa kilala na surfing spot sa bayan ng Baler at dito rin ipinakita yung scene sa “Vietnam War film Apocalypse Now”. At ang huli ay Lindy’s point, ito ang bagong spot ng mga magagaling na magsurf  at bawal dito magsurf ang mga hindi pa gaano marunong magsurf dahil sa delikado at matutulin na alon. 
Noong pumunta kami ng Baler ang ginawa lang namin doon ay magsurf lang at magrelax lang sa beach kasama ang buong pamilya. Hindi lang puro beach ang napuntahan namin, madami rin kaming napuntahan na kainan, museo, at ang balete tree. Ang maganda talaga gawin doon ay magsurf dahil ang lakas ng alon sa Sabang beach at may magtuturo sayo mag surfing hangga’t matuto ka talaga. Nakakapagod magsurf ng buong araw at paniguradong tulog ka sa hotel na paglilipasan niyo.

During low tide, the rocks to the Diguisit rock formation is exposed thus climbers can cross the beach to the rock formation to climb its jagged and challenging edges.

DAY 2
The beach is privately owned and is called Dela Torre Beach Resort which is a semi-white sand beach although significantly smaller than the famous surfing beach of Sabang, this beach, in contrast of Sabang, faces northwest and is one of the best beach to bum at and wait for the sunset while in Aurora. Access to the beach is Php 20.

It also has a fresh water pool. You will really enjoy the cold water with the view of the ocean.

MANILA – The pilot travel bubble in Palawan since July 2020 had been a "success", a ranking Department of Tourism (DOT) executive said, days before the island expands the program to more areas in El Nido.
"(It is) successful as we are able to enter and exit Palawan having an assured feeling of safety and still healthy. Likewise, the process is also an assessment ground to see flaws and make recommendations to further improve the system," DOT Mimorapa director Christopher Morales said in an interview.
To date, only El Nido resorts --the Pangulasian Island Resort & Spa, Lagen Island Resort, and Miniloc Island Resort-- are allowed to accept tourists from Metro Manila under the travel bubble, a travel concept introduced during the pandemic to lessen the risk of virus transmission while an area slowly resumes its economic activities.
The number of El Nido resorts is expected to rise beginning October 30 to include tourism establishments located in the town proper, Morales said.
But he declined to provide more details. "I cannot pre-empt the reopening date of El Nido. All I can say is that we are still ironing out some details."
Based on data provided by the agency, about eight flights landed in Palawan from Manila since select El Nido resorts started accepting tourists from NCR last July 2020. Some 457 domestic tourists booked in the said establishments.

With the success of the Palawan travel bubble, Morales is optimistic this could be replicated in other destinations in Mimaropa.
Mimaropa or Region 4-B is composed of Occidental and Oriental Mindoro, Marinduque, Romblon, and Palawan, known for its pristine beaches, rich marine biodiversity, and top-rated towns often voted by prominent travel magazines abroad.
The region is also home to the Tubbataha Reefs Natural Park, a UNESCO World Heritage Site located in the center of the Sulu Sea and covers the Tubbataha and Jessie Beazley Reefs.
At present, only the following destinations are open to select tourists in the region:

- Bato Creek (to residents of the municipality) - Pocanil Rock Formation/ Beach (to residents of the Province) - Bagong Sikat Falls (to residents of the Province) - Buyayao Island (to residents of the Province) - Suguicay Island (to residents of the Province)

Centro De San Lorenzo Subdivision, Barangay Malitlit was very clean, spacious, and there were just a few people who lives there way back 1995. It is divided into four subdivisions: Phase 1-A, Phase 1-B, Phase 1-D and Phase 1-E. Back then, this subdivision only has one terminal for tricycle, and it is in Phase 1, that is why some residence in other subdivisions necessarily walk so far just to get from the commercial places like Enchanted Kingdom, Balibago, etc. We do not have much food restaurants inside the community as well as hospitals, so they needed to go to Bayan’s. The only hospital that is so close to the subdivision is the St. James Hospital located near Dita.
 In Phase 1, the Casa Del Niño Montessori Santa Rosa is the only school inside our subdivision so many children’s and teenagers goes to Saint Michael’s College of Laguna in Biñan. Also, they do not have much food restaurants inside the community as well as hospitals, so they needed to go to Bayan’s to buy some essentials. The only hospital that is so close to the subdivision is the St. James Hospital located near Dita.  
 However, after five years, our community gradually improved up until now and it became better than before. There have been schools, primarily number one private schools throughout the subdivision – the Emmanunel Christian School. There is also a food stalls within each subdivision especially in Phase 1 and Phase 1-C. In the past, every feast, the clubhouse in Phase 1-C has a perya, but they had to remove it due to the complains of some people because there were a lot of fights that is happening before.
 Most food stalls, dining and small cafes are built on Phase 1c and Phase 1, due to their large subdivision and are often visited by people because all the delicious foods and dining places were there, there are also mini groceries and much more.  I'll mention the popular sites here in San Lorenzo Subdivision. First are the food stalls in the clubhouse, which is one of the best places to eat snacks, such as fishball, squidball, kikiam, kwekwek, turban, bananaque and other street foods like isaw, barbeque, etc.

Second are the fish markets – people usually go here early in the morning because they want to buy some fresh fish, porks, beef and the pig’s blood for dinuguan. Especially in Phase 1C because there are many fish markets in line. Third stand out places in our subdivision is what we called here carenderya or lutong ulam – it is very famous here because of its delicious recipe especially when it is 12 o’clock noon. Many people were buying and eating here and some of them were tricycle drives in the terminals, they really have a delicious dish.

The fourth famous spot here in San Lorenzo is the Phase 1C - Clubhouse. There is always a bunch of people there because of the basketball court, while some of them are playing volleyball. Sometimes, people rent the clubhouse for events like pageants, concerts, talent portions and graduations that is why there were so many people especially when there are events.

Fifth one is the clingy café in Phase 1C, they sell some nachos, fries, smoothies that is so very delicious. They also have a free card games that is why many people go there to hang up with their friends.Their foods are somehow pricey, but it is worth it. Also, there were milk tea shops nearby and the famous diner in 1C, the Pares ni Julas – bunch of people ate there every night because of its delicious beef pares.

Sixth is the Mini stop – this is the first big convenience store built inside the San Lorenzo Subdivision. People sometimes go here to hang up and eat with someone especially when it is in the middle of the night because the people inside our community love road trips and you can see it in Phase 1. And then, the unlimited buffalo wings, a lot of people go there because of its saucy chicken and spicy unli wings – it is located in Phase 1 main road near mini stop.

 Lastly, the computer shops. Group of people always go there to play games such as DOTA, Rules of Survival, LOL, etc. Especially the boys, they even spend their whole day just to play games and some of the computer shops here in Centro De San Lorenzo do have a ps4 – “play station 4.”

It symbolizes the faith of the people living in Barangay Concepcion. It has a very peaceful ambiance to it. The church also has different organizations, like Youth for Christ which encourages the youth to join activities that’ll help them establish a deeper relationship with God.
St. Peter’s College Seminary

It used to be a killing field before it became a college seminary. Also, the reason why the land where the seminary is situated was donated was because of its bad luck. The seminary was named St. Peter’s College Seminary in order to emphasize the bond of faithful obedience that the diocese has always rendered to St. Peter the Apostle and to his successors. Back then the seminary only has one building for the college seminarians when there is no Senior High School yet, however, now they build another building for the Senior high that’s why they’re expanding. They used to accept senior high school students under the HUMSS strand but they will no longer be accepting senior high school applicants this year because of so many conflicts in the system.

It is a restaurant that serves “putok batok” cuisines such as lechon and patatim, what makes this restaurant a hit is that its location has an overlooking view of Bunot lake. The place was also windy that actually makes it the best place for wedding receptions, family gatherings, reunions and many more.
 ABS-CBN Film Production chose this place for Kathryn Bernardo and Daniel Padilla’s movie, Barcelona: A Love Untold. It is said that many productions are asking for their consideration to film their movie in the place, however they declined it because they don’t want the place to be destroyed
Ella Isabelle’s Restaurant

It is a Filipino family style restaurant that serves a “lutong bahay” dishes so that eventhough you are not in your own houses you can still feel the vibe of a home when you eat
 The inside of the restaurant is wonderful but the outside at night is marvellous. The lights are everywhere that will make you feel comfortable in any way.

This is just outside and near the St.Peters College of Seminary, that’s why most of the families go here after the mass because its’s near and more convenient.

 Rizal, Laguna
When we hear the word Rizal, the first thing that comes into our mind is our national hero, Dr. Jose Rizal. What most people don’t know is that there is a small town in the province of Laguna, which is named after him. A small town with very few people, and lots of coconut trees.
 The town of Rizal is known for various practices, but its most popular and oldest tradition is celebrating Christmas on January 6 and not December 25. Most Rizaleños do not wake up at 12 midnight of December 25 to eat their noche buena because they are used to celebrating Christmas at 12 midnight of January 6. During this time of the year, Rizaleños are accustomed to celebrating in the streets and drinking with their peers, and one drink that is famous among Rizaleños is lambanog.
 Lambanog is a traditional Filipino drink made from coconut sap. Aside from being accessible, it is also very affordable that’s why it is loved by Filipinos especially by the masses. But recently, just before Christmas, several people from Rizal died because of methanol poisoning due to drinking lambanog. Because of this incident, the town went under the state of emergency and was banned from drinking lambanog.

Another tradition of Rizaleños is to hike the town’s most famous attraction, the Tayak Hill, during Lenten Season. Every Holy Week, locals and even tourists gather up the hill and stations of the cross are placed specifically for those who are willing to do it. In addition, families hike the hill during that time of the year as an annual rite or as the locals like to call it, “penitensya”. It takes about an hour and a half to get to the summit. At the top is a large white cross, a Noah’s ark, and a viewing deck where you get to see a very picturesque view that is perfect for selfies, groufies, and even photoshoots. The trail up to the hill is safe and child friendly for it has barriers that will prevent someone from falling.
 Rizal may be a small town, but it is full of people who are very warm and welcoming. Their old traditions are what make the town and the people unique and different from others. So do not miss the chance to visit our small yet amazing town, Rizal.
