When a director works on a show it’s tradition to bring some sort of food treat to the crew as a thank you. I brought an oyster bar! 🦪 It’s a family business for us. My dad owns an oyster shop where he and my sister breed the oysters, and my step dad @selfieleslie has a brand of oysters #SilverFoxOysters that are distributed by @blueislandoysters. “We took a little trip out to Blue Island Oyster where we learned in depth & up close about our favorite bivalves. A few interesting facts.... *There are 5 species of Oyster. No more. The majority of names are due to the specific Oyster farms own choices in naming. *Oysters do not have a central nervous system. They feel no pain and in one of our favorite quotes of the day are "about as alive as a carrot". We specifically asked if they could be considered Vegan and that was the response. *Oysters shell shapes can be manipulated by using a rolling cage mechanism that helps to 'round' them. Ideally most farmers are looking for a more 'cup' like style which makes eating them easier. In many cases the shape of the shell has nothing to do with the species and more to do with how the actual farmers want to manipulate the shells for a particular type of look. *Baby oysters are cultivated in a 'maternity ward' where they exist in salt water and a little bit of Algae which is what they essentially filter & 'feed' off. Many farms grow their own algae in house. (See the picture with the colored vials for an example of this) *Blue Island both farms their own Oysters right near Jones Beach on Long Island and also uses divers who dive down in 20-25 feet of water to collect wild oysters. *Pearls inside Oysters are extremely rare and have to do with an agitate inside of the shell. Think of it as a kidney stone. The agitate acts as an irritant that stimulates a calcium growth which in turn starts to grow into a pearl. In all the years of harvesting Oysters, the team at Blue Island has only seen 2 pearls. One of them was found by chef Jose Andres. He continues to win at life. *Fords Gin Martini's go very well with Blue Island Oysters. This is not debatable and is indeed factual based on a very thorough scientific process.
