i actually love joey for this. he wanted to represent queer people respectfully & accurately and was so insistent on preventing any and all forms of bisexual erasure. he wrote a 7000 word essay to the show writers on how to do this??? he's said in interviews before that he wants people to feel represented when they watch the show, especially younger audiences. he also has announced that he would singlehandedly go on twitter and fight homophobes and critics (whether or not he followed through with this i don't actually know but i would not be surprised. i mean imagine getting obliterated on twitter by jaskier himself)
