Another quick vegan meal packed with nutrients for all the animal lovers and health conscious folk out there. Vegetable Ragu with Sweet Potato Mash As always the ingredients are fully organic ☺️🌿 Feeds 2 Ingredients Vegetable Ragu 150g red kidney beans cooked 2 small heads of chard sliced thin 1 yellow bell pepper sliced 1 small white onion diced 2 cloves garlic crushed 1 courgette sliced thin 1 tbsp extra virgin olive oil 2 vegetable stock cubes 1 tsp Chia or Flax seeds Salt and pepper to taste 1 cup starchy water from sweet potatoes Sweet potato mash 3 small sweet potatoes 1 knob plant based butter Pinch of sea salt Pinch of pepper Half teaspoon nutmeg Small handful of spinach for the bed Method Fill a medium sized pan with water add sweet potato and the pinch of salt to the pan, cover and bring to the boil, simmer for 15 minutes or until the potato's are soft. While the potato's are cooking heat the oil in a large non stick frying pan or wok on a medium heat. Add the onions and cook for 1 minute then add the garlic. Fry until the onions they go slightly see through and then add the bell pepper and the courgette. Fry until the peppers start to sweat and then add 1 crushed stock cube, the chard and half the starchy water. Cook for 5 minutes then add the kidney beans, the rest of the starchy water, the other stock cube and the seeds. Cook until the kidney beans are heated through. Season with salt and pepper to taste. Mash the potato when soft with the butter, pepper and nutmeg. Serve mash on a bed of spinach and the Ragu next to it. Voilà healthy, tasty and packed with lots of vitamins and protein.
