I topped the soup with some mint pesto and satueed clamshell mushrooms👌😋 It feels, January has returned and we have over a foot of snow already. I mean WHYYY🤷🏻‍♀️🙄 This lentil and tomato soup is definitely keeping us cozy. To add the comfort on a snowy weekend, there are spinach fenugreek fritters to go along. Who's joining in?🙋🏻‍♀️ This is adapted from Masala & Meatballs cookbook by Asha @foodfashionparty ,and it's for Deborah's @rainydaybites Recipe challenge for this month #rainydaybitescookbookclub . Love this book Asha😍 . This dish is beyond delicious and definitely moreish😋 I added a big chunk of ginger and a garlic clove in the soup just because I love gingery soups. I couldn't find bright red tomatoes, so to give a nice peachy red color, I added a dash of beetroot powder. The color was perfect that I was looking for😍 And instead of ghee I made it with coconut oil to give a subtle sweetness and make it Vegan. The mint pesto added a delicious element💚 For the fritters i combined fenugreek & spinach with garlic, lemon zest & carom seeds. And for a crunch grainy texture, I added semolina. If you saw my stories, you'll know, I made the batter with Beer. I love making fritters with chilled carbonated drinks. It makes them so crisp and airy. . . What are you all cooking this Sunday?
