Ishu was born in Kaanda( a small village in Tehri, Uttarakhand, India). Ishu has completed his schooling at Mussoorie. One day, In his YouTube vlog he explained his school life. Ishu said “I study in the reputed private school in my city, and I am glad to be a student of that school. My school was very beautiful and huge. From LKG till 12th. One mile at a time
You can’t truly explore India if you limit yourself to the cities and urban spaces. Whether you’ve never visited the country, or you’ve lived here your whole life – stepping out of your city and stepping into a place unexplored can be a life changing experience. And, is there anything quite as fun as hitting the road? The uniqueness to stopping for food, tea breaks by the roadside, taking pictures, signing while you zoom off to a new destination.
We took one recently and zoomed off about 2000 kms! Here’s all the things we did
Day 1
We drove from Delhi to Rishikesh, and it was pouring down, with almost no visibility! Riding into the foothills of Himalayas in Uttarakhand with the fresh showers and lush greenery made for a welcome sight. Although only a couple of hours long, the ride was worth it for the lovely view of the mountains and the Ganges. Needless to say we stopped at the Laxman Jhula! Why wouldn’t we?

We stayed overnight at a place well positioned near the Laxman Jhula with beautiful view of the Ganges.

Our next was Tehri, one of the most beautiful districts in Uttarakhand. Everyone should come to this district once in their fledgling life and should be enjoying here either in a religious way or in an adventurous way.

If you wish to explore the places close by, don’t miss the towns of Devprayag and Chamba. Devprayag is one of the five scared prayags (confluences) of the Alaknanda, and Chamba is a township lying high at an altitude of 1524 mts., offering a splendid view of the snow-capped Himalayas and the serene Bhagirathi valley.

We then drove to Dhanaulti, on the on the Mussoorie-Chamba route. Dhanaulti, located amidst thick, virgin forests of Deodar, Rhododendron and Oak, has an atmosphere of perfect peace & tranquillity. The long-wooded slopes, relaxed outdoors, cool crossing breeze, warm and hospitable inhabitants, lovely weather and fabulous view of snow-covered mountain made it ideal for us to take our lunch stop. We stopped at this beautiful riverside camp for lunch before heading to the Jim Corbett and called it a night at a jungle safari camp.

Day 3
This day was all about driving across Kumaon, from Jim Corbett to Chaapad et al and lots in between! Established in 1936, Jim Corbett National Park is the oldest national park in India with the highest number of tigers. The park has an abundance of flora and fauna, which makes it perfect for safaris. In the park, you can catch sight of animals like Royal Bengal Tiger, Deer, Indian Hog Deer, Sambar Deer, Otter, Asiatic Black Bear, Sloth Bear and more.
First stop from Jim Corbett was Pangot, a gorgeous hill station and it is a good option to visit while you are enjoying your trip to Corbett. Since it is just 96 kilometres from the Jim Corbett Park it is an ideal short getaway to explore the surrounding places around Jim Corbett National Park. 
Next stop was Satoli. Satoli rests on the slope of a hill about 2 hours away from Almora village in the lap of Kumaoni mountains. The pure air and silence is a welcome respite from the soot of the city and its hustle bustle.

We ended the day at this beautiful rustic Himalayan resort with picturesque Himalayan views, endless expanses of gorgeous orchards of apples, peaches, and apricots. Their cottages still retain an old-world charm and is a marvellous spectacle straight out from some European countryside village. The nights were too dreamy here!

Day 4
Next day was driving all the way to Khairna, a small hamlet in the Nainital district, by Kosi river. If one goes to Khairna, they most likely wouldn’t skip Betalghat. We didn’t either!
Betalghat is an excellent little village surrounded by lush Jim Corbett buffer forested areas nearby Nainital. This quaint little village is renowned for its natural beauty and charming atmosphere that you get to experience here. The weather here remains wonderful throughout the year, and provides for safaris into the jungles. 
Next we were off to Padampuri, a cozy hamlet elevated 1600 meters high in Kumaon hills. Padampuri is our favourite place to witness the best of Kumaon beauty of mountainous landscapes and crystalline lakes, its rich flora and fauna. It is approximately 30 kms from Nainital  and Mukteshwar making it an easy drive.

We were back to our resort in Satoli and then back to Delhi the next day!
The entire road trip across the region of Kumaon Uttarakhand was a complete indulgence for the senses. We would suggest you indulge one with your loved ones as well!

A Queen And Her Soldiers

Origins Of Calcutta Biryani
Calcutta biryani is the child of Awadh biryani for all intents and purposes. In 1856, the Britishers exiled Wajid Ali Shah, the last Nawab of Awadh, to present-day Kolkata and took over his kingdom. In exile, the Nawab rebuilt a replica of his beloved Lucknow in Metiabruz with Islamic structures, kite flying spots, and food. But the ingredients needed for Awadhi biryani were costly and his purse was thin. So his chef added potatoes and eggs to the mix, giving birth to Calcutta biryani.
This just goes to show you how necessity can lead to innovation. Do think about it when you see some unusual biryani at a biryani point in Malviya Nagar.
Origins Of Tehri Biryani
Tehri biryani is the proof that veg biryani is not pulao. It’s also an example of inclusivity. The nawabs served it to their Hindu bookkeepers by substituting the meat with potatoes. Rishikesh is like no other place in India and it has to be visited by travellers to India, whether you visit for 3 days or 30!

The yoga capital of India certainly lives up to its name. Everywhere you go you’ll see adverts for all kinds of wellness classes and wokshops.

Apart from the collective vibe going brought by traveling hippies together with local yoga enthusiasts and gurus, Rishikesh reminds me so much of burning man with it’s endless wellness and holistic activities sprinkled around town. Too many exciting things to do, too little time!

Booked a room with a view of the jade river, it’s continuous gushing quite loud, nonetheless comforting and a constant reminder that you are surrounded by nature, if not cradled in the lap of the Himalayas

The Ganges River
In Hinduism, the river Ganges is considered sacred and is personified as the goddess Ganga. She is worshiped by Hindus who believe that bathing in the river causes the remission of sins and facilitates Moksha (liberation from the cycle of life and death), and that the water of the Ganges is considered very pure.

This holy river is right beside the Himalayan foothills. Ganga originated from the Gangotri Glacier , which is located in the western Himalayas. It is one of the major rivers of India, which is approximately 1557 miles long. It flows into the eastward directions and empties into the Bay of Bengal.

It’s feels like a new kind of life being able to freely walk around, breathing cleaner air and being surrounded by nature. Here and there, the loud honking of mostly bikes can still be annoying but it’s not too bad.

Rishikesh reminds me of our provinces in the Philippines. But with holy cows, om symbols and orange-robed sadhus. One will truly fall in love with the combination of robust, pristine nature, fresh mountain air, sunrise over the peaks, a torrential river, and the signs and symbols of a sacred India town. Temple bells ring incessantly, incense wafts on the breeze and yogis are everywhere to be seen.

Thanks to Alex for finding this gem, we had the pleasure of seeing this world-class musician alsongside his students at his home. They perform every Sunday afternoon for tourists and locals in exchange for donations. As a huge fan of Moulin Rouge!, the sitar instrument, with it’s unique luscious tones, is to me, a guitar from another galaxy that takes me back in time... In the land of the maharajas and the deserts of India. Its reverb so encapsulating, I can’t help but think of the colorful story of Satine and Christian.

Entering Parmarth Niketan
It is one of the top yoga centers in India situated on the banks of the Holy Ganges River. It has now blossomed over 70 years of it’s existence into the largest ashram in Rishikesh. Founded in 1942, it is open for all with no discrimination on the basis of race, gender, nationality, religion, caste or creed.

Many travelers visit for Ayurvedic treatments which includes exercises, music therapy, healthy diets and yoga to name a few. The ashram provides the travelers with accommodation facilities.

With lots of time to kill before the Ganga Aarti ceremony by the Triveni Ghat/River, we wandered around the market, people watching and just immersing ourselves with the culture and energy of this place.

The Ganga Aarti at the Triveni Ghat
Truly a highlight of this trip. This is the lesser popuar Aarti of the two but this is more 
The aarti is accompanied with chanting of bhajans, beating drums and bells. People lit oil diyas, put them on flower-filled leaf boats and release in the holy waters of the river. These illuminated lamps in the evening provide a beautiful view.

The next evening we attended the Ganga Aarti (evening Hindu prayer ceremonies) at Parmeth Niketan Ashram in Rishikesh. This is the largest and best known Ashram in the area – set on the banks of the holy river. It accommodates up to 2,000 people at any one time. The Ganga Aarti were beautiful if somewhat seeked by the many visitors to soak up the atmosphere and appreciate the rituals.

Leaving Rishikesh with a very full, beating heart, I know it will be one of those places I will retreat to in my imagination when I need solace. Just like how I think of my other home, Iloilo. I know I have not fully integrated Rishikesh unlike many others who have visited and stayed for many months staying in ashrams, practicing daily yoga and meditation, making lifetime connections with friends locally and from all over the world, perhaps I will return again one day and stay for a bit to deepen my next Rishikesh experience. Perhaps, perhaps. I really hope, perhaps :)

Yellow Moong Dal Khichdi a one pot simple meal with split yellow moong beans and rice. Creamy, soft, light on stomach with detoxifying properties!!
Khichdi or Kitchari is considered a comfort meal by many in India due to the comfort and ease of making and it’s digestive properties. Khichdi means ‘all mixed up’ in local language. It is prepared by mixing and soaking lentils with rice then dumping it in the cooker/vessel with cumin, turmeric tempering in Desi ghee.  All the ingredients used in making this khichdi have Ayurvedic benefits on the body .
There are many variations in making khichdi. Lentils like Split Pigeon Pea, Split chickpea Lentils are also used in making Khichdi. But, as these lentils are heavy on stomach and also takes a little more time to cook as compared to moong lentils. So Moong lentil Khichdi is the first choice to make when someone is not feeling well or recovering from some illness or have some digestive issue.
Ayurveda strongly recommends fasting for a day and then breaking the fast with this simple Khichdi. It is one of the best  and cheapest detox 🙂 !!
I love to have Khichdi with Cilantro chutney and my kids like to have papads with it. A glass of buttermilk with some cucumber slices  or any yogurt raita, makes it a whole and filling meal.

How to make Simple Yellow Moong Dal Khichdi..
Simple Yellow Moong Dal Khichdi can be made in just a few minutes. No chopping, frying or sautéing the masala, not time-consuming tasks are involved. It is recommended to soak lentils and rice for at least 15-30 mins as it speeds up the cooking process and makes the grains easily digestible.
I make Khichdi with or without vegetables. Most of the times, I just temper and cook Khichdi in cumin and turmeric with desi ghee and sometime I do add finely chopped carrots and peas to it. But we mostly like it simple topped with a spoonful of Desi Ghee.
Feel free to add vegetables in your Khichdi, but if you want a detoxifying  and light meal, just leave the vegetables and keep it simple. Also many people like to temper it with red chill, cumin in ghee while serving. I skip it as we like to have it plain with absolutely no spices.
Simple Khichdi is a satvik no-onion and no-garlic meal and it is also suitable for Vegans.  You can use Vegetable oil to make. But studies have shown that Desi ghee can be conveniently consumed by vegans or those who have lactose intolerance.  I am not recommending it. You can confirm from the your reliable resources before consuming it.
How to cook Simple Khichdi.. 
Khichdi is usually cooked in Pressure Cooker to save the time, as lentils and rice take time to cook in open pan. These days we can make it in Instant Pot too. Just dump everything, add some water and set the timings.
Cooking in Open Pan..
In a heavy bottomed open pan, add ghee/oil, add hing and cumin seeds, once the seeds crackle, add turmeric powder and the add soaked rice lentil mix.as water in 4:1 ratio to moong and rice mix.This gives Khichdi of creamy consistency. We love it this way. If you like thicker texture, add less water. Cover the pan with little space for steam to escape and cook khichdi till the grains are done.
Cooking Khichdi in Instant Pot/Pressure Cooker
Cooking Khichdi in open pan takes time.So it is usually made in pressure cooker to save the time. Initial steps remain the same as followed in Open Pan method, only difference is the ratio of water. Add 3 Cups water when cooking in Instant Pot or Stovetop Pressure cooker.
Cook Khichdi  in Pressure Cooker for 3-4 whistles on medium flame and in Instant Pot ‘Pressure cook Mode(High)’ take 7-8 minutes ( sans the time it takes to come to pressure).

Yellow Moong Dal Khichdi
Yellow Moong Dal Khichdi a one pot simple meal with split yellow moong beans and rice. Creamy, soft, light on stomach with detoxifying properties!!
1/2 Cup Yellow Moong Dal/Split Yellow Moong Lentils
1/2 Cup Rice
1 tbsp Desi Ghee/Oil
1 tsp Cumin Seeds/Jeera
1/2 tsp Turmeric Powder
Salt as per taste.
Wash rice and lentils together 2-3 times in water.Soak for 15-30 minutes.
Instant Pot Method
Set the SAUTE MODE of Instant Pot on on high for 5 mins.
Add ghee to it. Once the display shows HOT, add cumin seeds. Once the seeds crackle, add turmeric powder.
Drain water from rice and lentil mix, add add to the inner pot, mix and saute for a minute.
Add water around 3 cups and Cancel the SAUTE Mode.
Cover and seal the lid, and set the PRESSURE COOKER Mode on High for 8 minutes. 
Once the timer goes off, let it go on warm mode, if your are planning to have it after some time. Else, release Pressure using QRP after 2-3 minutes. Check for the doneness of grains and have it warm with a spoonful of ghee!!
Pressure Cook Method
In Pressure Cooker, add ghee, keep it on medium flame, add cumin seeds once ghee is hot.
When seeds crackle, add turmeric , rice and lentil mix, saute for a minute then add water(3 cups), cover and cook on medium flame for 3-4 whistles. Let the pressure go naturally.
Serve hot!!
I use Basmati Rice for Cooking. You can use any rice(Broken , Jasmine, Sona Masoori).
Use oil for the vegan friendly version.
Skip Hing or Asafoetida for Gluten-free version.
