Why did I create Trek Long Island?

A lot of you may not know, but I'm a children's librarian. My biggest passion for my job is helping children find books that they can see themselves in and connect to on a emotional level. Every child (and adult) should see themselves in books, tv, music, movies etc. Trek has always done this and it is probably why I loved the series my entire life!

I had such an amazing dinner last night! some of y’all know that I’ve been struggling really hard to maintain my eating lifestyle, being gluten-free and vegan. I just still don’t eat meat, but I had gotten a little bit sloppy with eating residual things in foods that aren’t vegan. I had also fallen off of the gluten-free wagon, and then the wagon ran me over a few more times. I finally got back on the wagon a week ago, and I am feeling so much better already. I got some big old beets from @bednersfarmmarketusc the other day and roasted them with potatoes and carrots. But the amazing things were these @sophieskitchenfoods which are vegan, gluten free and soy free. Some homemade cocktail sauce...yessss!! What a perfect crab cake!!
