This is Round 3, and my final Round, of pairing up @evolvecellars wines with a selection of cheeses for the holidays.  This is my sparkling wine Round.  How will bubbles affect the pairing with #cheese?  I have again a #brie, an aged #cheddar, and #gouda for the comparison.  I will provide my cheese pairing notes on mywinepal.com.  For the moment, let me tell you about these two wines. Evolve Cellars Elan Effervescence - There is no information on the blend that goes into this wine, but I will guess that it is either Pinot Blanc or Pinot Gris with a touch of Muscat.  This wine has a lighter straw colour.  It has a medium intensity nose showing orange, peach and floral; sweet aromas.  A medium-dry level of sweetness and higher acidity, body and flavour intensity. Very creamy tiny bubble.  Flavours of orange, citrus rind, light touches of peach, floral and crisp red apple.  A medium plus length finishing off-dry, a bit pepper and some bubble to the very end. Evolve Cellars Pink Effervescence - This sparkler is a blend of 97% Pinot Blanc and 3% Merlot. It has a lighter colour that is a blend between watermelon and peach.  A medium intensity nose, with fresh inviting aromas of red fruits, strawberries, and crisp red apples.  This sparkling wine is off-dry with light tannins and medium plus acidity body and flavour intensity.  Medium sized creamy bubbles that have a biting edge.  This wine has a mix of tart flavours and sweetness.  Red apples, red fruits, and a touch of peach and roses on the palate.  There is some pepperiness from the mid-palate to the finish.  A medium length finishing with mainly red apples, but also apple skin.  Bubbles stay creamy till the finish. Welcome to Round 2 of my @evolvecellars and Cheese Pairing experience.  In the first round I compared Evolve Cellars' Viognier and Sauvignon Blanc 2018 paired with aged cheddar and brie cheese.  You can see the results on mywinepal.com. This time I'm comparing Evolve Cellars Pinot Gris 2018 with their Shiraz 2016.  I've added a cheese to the comparison, so I now have brie, aged cheddar, and gouda.  Again I will give you my wine tasting notes here, and I will expand the notes and discuss the cheese pairings on mywinepal.com. Evolve Cellars Pinot Gris 2018 - a bright medium intensity lemon colour in the glass.  It has a medium intensity nose with bright fresh stone fruit aromas mainly, with a lesser amount of citrus and a touch of honey later on.  It is off-dry, bigger and round with a viscous mouthfeel.  Bright flavours; mainly peaches with some citrus.  It provides a light acidic prickle on your tongue.  Some pepperiness in the wine that builds to the finish. A medium pls length with pepperiness, peach, citrus and some pith. Evolve Cellars Shiraz 2016 - this wine has a deep, almost opaque black garnet colour.  Legs evident on the sides of the glass with swirling. This wine has intense aromas showing smokiness, raspberries, meatiness, cranberries, sweet spices (clove and mace), red fruits, and black pepper.  It is off dry, medium acidity, fine medium intensity tannins, but bigger body and flavour intensity.  Semi-round mouthfeel.  A mix of black fruits, tarriness, very ripe raspberries and black berries, black plums and some jamminess.  It has prominent black pepperiness and is quite floral.  A touch of oak.  This wine has a medium plus length finishing with black plums, black pepper, mace spice and a touch of oak.  The tannins are there on the finish but are not drying.
