Owner/operator, always a bastard (I vote Julian)

General Manager, the buck stops here (Fanny?)

Shift Manager, in charge of Morning, Evening or Night Shift (Cap, Pat and Humph, respectively)

Reception staff, ideally two, usually one person per shift (Alison, Kitty, Mike, Mary, Thomas)

General handyman called when something breaks who cannot be fired (Robin)

Housekeeping and porters (Plaguers)
