Bluberry Cheesecake
(I stumbled upon some articles I had written in 2022 and had never posted. Posting them now. The prompt for this one was something to do with food that reminds you of people).
Between 2018, when I got my first proper job, and 2020, when the pandemic started, I spent a lot of time in restaurants. We went for dinner post-work. We went for dinner dates and ticked off new eateries from our lists. We worked out of cafes. We sat in restaurants to kill time before the next meeting or show.
I have always loved restaurants. I love the idea of trying new dishes, I love eavesdropping on conversations, and I love getting to know people over a plate of hot food. But this story isn’t about restaurants or people I met there or even food. Though, maybe, it is a little bit about all three.
“You have to be in love while studying Literature, I think. It balances the cynicism of the books we read,” D told me the first time I met her. We were in Pianoman, and I was telling her about the latest boy I was in love with. Why was I telling her my deepest, darkest secrets when I had just met her? She had probably asked.
I was in college, constantly poor and hungry and very much in love with someone or the other. One week it was the narrator of the book we were studying in the Indian Literature class; another week, it was a guy I’d met at the Jaipur Lit Fest. D bought me very good and very expensive blueberry cheesecake when we first met. By the time I was done with the second spoon, I would have told her all my OTPs and bank passwords if she’d asked. I still would because now I know her, and I can guarantee she’ll forget.
Blueberry cheesecake became our language of love. We promised we’d buy each other cheesecake when we met next. “Go have a blueberry cheesecake,” she’d message me when she knew I was going through a tough time. I sent her blueberry cheesecake when she was isolating with covid. I don’t even think she likes blueberry cheesecake much, but I couldn’t find another pastry to show my affection.
Over blueberry cheesecake, we discussed life, love, and longing. She told me her love story; she encouraged me to find mine. She told me of all the cool things she was doing, and she seemed to be genuinely interested in the cool things I hoped to, one day, do.
Recently, she told me I should write about the boy I had a crush on way back when we first met. I find I don’t remember much about that crush- nothing came off it. But I do remember that time. I remember being 19 and sitting in Delhi bakeries and talking about him. In my memory, it was a more innocent time: India before 2014.
It has been 10 years but I still don’t ever take a bite of blueberry cheesecake without thinking of those days. And of course, of D.

Prospects after completing the bakery course
Most of us picture mouthwatering treats like cinnamon rolls and chocolate chip cookies when we talk about bakeries. Favorite foods in our daily lives include cake, doughnuts, biscuits, and chocolate cookies. Bakery Chefs are in high demand because of their innovative designs and eye-catching packaging.
The aspirants can opt for a Diploma in Culinary Arts from the AAFT School of Hospitality and Tourism, the premier hotel management institute. Now that the Indian people have developed a taste for Bakery delectable items, there are enormous chances for professionals to flourish in this billion-person industry. Bakery Chef is one of the most popular creative and lucrative careers for today's young professionals.
What is the difference between a bread baker and a pastry chef?
Pastries, bread, pies, cakes, and other savory and sweet dishes can all be found at traditional bakeries. When you work in a bakery, you're likely to see a variety of these products on the table at once. A baker should be familiar with the basic preparations of these baked goods in order to become a specialist in the future. It may necessitate many hours of labor, basic abilities, and the acquisition of knowledge and expertise from senior-level bakers for amateurs and beginners.
A Pastry Chef occupies a more senior position in the bakery's management structure. Even though their job responsibilities may differ from place to establishment, they are the ones that have deep expertise in the creation of dessert items and are responsible for enhancing the user's experience with their presentation abilities. However, they may be found working with bakers on a regular basis providing guidance and instruction to apprentices as they learn more complex techniques.
The food sector offers many prospects for people in the bakery profession, but success demands a well-organized structure. Bakery, like any other profession, has a hierarchical structure that provides progression for its workers. Career advancement will be facilitated by a well-planned course that provides both practical and theoretical coaching. To reach the pinnacles of one's job, one must be innovative, have a strong propensity for learning, and work tirelessly to perfect one's craft. AAFT offers the best bakery course in Delhi NCR.
