I really enjoy cooking but am frequently too sick to enjoy cooking.

Lately though I’ve really been enjoying making egg fried rice, mapo tofu (god almighty it’s the best) and like, the world’s easiest spaghetti bolognese because it only has like, idk, a small amount of ingredients, vs. some of my stir fries where I make my own sauces, and those can be complicated.

But tonight I’m just having ham and cheese sandwiches for dinner because cooking is too hard. I like ham and cheese sandwiches though, so this isn’t a chore, lol. My go-to meals when I’m tired, but not tired enough to walk into the kitchen, are like... two minute noodles, sandwiches, porridge/oatmeal, and sometimes microwave meals. When I’m too tired to assemble something it’ll be fruit, or nuts, or this Australian thing called a ‘Le Snak’ which is basically just three crackers and some spreadable cheese lmao. And sometimes I am too tired to eat and I have to sleep first (do not recommend).

This winter I’ve been having bun bo hue (a spicy beef noodle Vietnamese soup) pretty regularly. It’s been my favourite meal all winter and it genuinely makes me so happy to eat it. A lot of people talk about how great pho is, and it’s GREAT!!! But honestly, bun bo hue is where it’s at for me (I apologise for not using all the correct accents on the words). It’s also vastly increased my spice tolerance, because like...radiotherapy killed my mouth and my taste buds and my tongue, and I literally lost all sense of taste, and when that happens, you also lose your years and years of spice tolerance, and I’ve had to build it up slowly but surely.

And now I can handle like a good proper bun bo hue and it’s like SUCCESS and I’m just wiggling right now thinking about how happy it makes me.
