Media Tasting at Porta
In collaboration with Green Monday, Porta presents a new plant-based menu to support and raise awareness on sustainable dining and the benefits of green diets. Indeed, healthy food can be tasty too! Executive Chef Alex Phan also introduced a refreshed all-day dining menu promising new and innovative creations.
We started the meal with two appetisers – Parma Ham and Burratina.
The burratina, part of the Green Monday Menu, (S$22++) on the other hand was incredibly creamy and fresh, topped with shio kombu and served with tomatoes and basil pesto. The shio kombu was dehydrated then blitzed and sprinkled on top, paired with the basil pesto, cutting through the richness of the cheese. We highly recommend you order the burrata on your next visit to Porta.
The Parma Ham (S$16++, pictured below) was served with mesclun salad and watermelon that was compressed with lime juice and zest, dressed with thick balsamic vinegar and housemade Thai lime aioli, making it a refreshing appetiser to have.
The Green Monday menu also features the Orecchiette Pasta (S$24++) – a cream-based pasta with shallots, garlic, spinach, wild mushroom, spinach and beyond sausage. The beyond sausage is fried before tossing into the pasta for additional texture.
Something more substantial and hearty would be the Beyond Burger (S$29++). Although the price is a tad steep for a burger, the flavours more than made up for it.
The beyond patty is served with Daiya cheese (dairy-free cheese), homemade ketchup and caramelised onions in a brioche bun that was buttered then grilled on the plancha.
The dish that we were most impressed with has got to be the Venus Clam Capellini pasta (S$24++). The clams are first boiled with shio kombu in clam stock before pasta, chilli padi, garlic and finished off with deep-fried Sakura ebi and parsley. It came packed full with flavours and we could not help ourselves but wiped it all clean. Calling all the pasta lovers out there, this is a dish you don’t want to miss!
Another well-done dish was the black cod with spinach dashi stock (S$29++). The pan-seared cod is covered with a pistachio and puffed wild rice crust and finished in the oven, which adds another dimension to this fish. The fish was still very tender and retained the moisture while the pistachio and puffed rice gave it additional crunch.
A savoury item that we tried from their brunch menu was the gourmet pork sausage roll (S$21++). Similar to the brioche buns in the beyond burger, this bread roll is buttered and toasted on the plancha. The pork sausage was sous vide and finished on the plancha, giving it a slightly charred taste. It is then topped with salsa and mayonnaise.
My coffee loving friends would love this dessert – rightly named Kopi “O” (S$12++). Served in the glass cups that we see served at our kopitiams, this dessert is made of dark chocolate coffee sponge, milk sauce (consisting of condensed milk thickened with custard powder) and served with butter sugar toast on the side. A modern twist on our local drink!
Non-coffee drinkers have the Meyer Lemon Trifle (S$12++) as an alternative too. Enjoy soft Victorian sponge, vanilla crumble and homemade lemon curd in a jar. We felt that more lemon could have been added to balance out the sweetness of the crumble and the sponge cake.
It was a satisfying meal at the Porta and we were happy to know that whilst digging into delicious food, we were doing our part in contributing to sustainable dining too!

The new Black Tap vegan menu has integrated vegan offerings such as Vegan Black ’N White Cakeshake and The Vegan Nashville Hot. Let’s check out new Black Tap vegan menu as well as some of the delish Black Tap snacks which we have enjoyed.
Here are some of the snacks we like. These buttermilk fried chicken tenders have a light and crispy batter, in turn, are so tender, juicy and delicious inside! Also blessed with three different sauces including house buttermilk-dill, Korean BBQ and lime honey mustard. These sauces give the chicken a subtle flavour, creating different taste profiles. Give me a beer and it’s perfect!
Buttermilk Fried Chicken Tenders at S$15.
Each piece of brussels sprout is fork-tender with a crisped dark brown crust. Accompanied with sesame tahini which adds a hint of sweet and a hit of the heat.

I can’t believe that a vegan burger tastes so delicious! The Vegan Nashville Hot is layered with two whole breaded portobello mushroom served with Nashville hot sauce, coleslaw and pickles on a vegan bun. These thick and juicy portobello mushroom is full of umami flavour. Great tasting Vegan Nashville Hot that even a meat lover would enjoy!

You certainly can’t miss Vegan Black ’N White Cakeshake in Black Tap MBS as it is only available in New York locations, Las Vegas and Singapore. Cheers! Singapore is the only Asia country that offers this!
Vegan Black ’N White Cake shake is embraced by Black Tap’s New York roots and famed for black and white cookie. This healthier dairy-free shake is made from apple sauce, soy-based chocolate shake and topped with a rice-based whipped cream instead of dairy. The tall glass is crafted in advance with house-made vanilla frosting and mini chocolate chips on the rim, and topped with a slice of black and white cake, whipped cream and chocolate drizzle. Each shake is freshly-made upon order and don’t forget to catch a glimpse of the making of this Insta-worthy shake! I like it that the base of the shake is not too chilled and not too thick. It’s creamy and indulgence. However, the cake is a little too sweet to my light taste bud.

Media Tasting at SONS Restaurant
SONS Restaurant is nested at China Square Central. This is our first visit and we had some difficulties locating SONS restaurant. It is not located at China Square Central but at the shophouses nearby. Expect classic modern Italian food and also spot Italian Charcuterie cured in-house such as meats, salami and cheese in a curing room right besides the dining area. SONS Restaurant has introduced the new menu curated by Michelin Star chef, Beppe De Vito and some of the Signature dishes.
The Signature homemade salami platter comes with four types of salami (Smoked Kurobuta Pork Lonza, Capocollo, Guanciale and Pancetta) made from pork and flavoured with herbs giving a nice aromatic. Honestly, I’m not a fan of salami as my impression of salami is heavy on saltiness. However, this super thin salami changed my mind! They’re not overly salty, meeting my light tastebud requirements.
Homemade Salami Platter at S$22.
Slice open moist and fluffy squid ink breadcrumbs to reveal premium salted cod and mashed potato. Never thought of this combination goes pretty well. The soft mashed was relatively light but soft and creamy sea urchin sabayon filled in all the savoury flavours.
Baccalá Cakes with Sea Urchin Sabayon at S$18.
I’m impressed with this new dish! Triple meat sausage all made in house with pork, beef and lamb, seasoned with only herbs and pepper. This dish created a flavour profile that hits our taste buds in all the right ways and moist inside! It tasted as good as it is or dip into tangy mustard cream sauce for the extra kick.
3-Meat Sausage, Broccoletti & Mustard Sauce at S$29.
Hands up if you can’t resist to those lovely slices black truffles! If you can’t get enough of the sliced truffles, there are more truffle paste spread on house-made rustic bread alongside with melted smoked cheese, sauteed shimeji mushrooms and finished off with earthy micro herbs. The combination of smoked cheese and sauteed mushroom might be a little salty to some.

Lovely colours of zebra lines painted on ravioli is made from housemade beetroot. Each pieces of ravioli is generously filled with kale and spiced Nduja and tossed in creamy butter sauce. Nice chewing of the ravioli with a spicy underground taste.

This housemade squid-ink tagliolini sits smack on the ocean (no views, though) with wild cuttlefish strips and housemade squid ink pasta tossed in briny seafood sauce.

Creamy cheesecake in contrast with a lighter twist on fruity tropical mango and calamansi bite. Sink your teeth into the decadent tiramisu with chocolate chips. Each creamy and moist bite gave an indulgent pampering that you can give yourself especially after a long day.

Full of Luck is a restaurant situated conveniently beside Holland Village MRT station and is a casual dining concept serving classic Cantonese cuisine. It is a perfect place for gatherings over hearty and delicious food.
These were the dishes that we tried:
Dynamite Fried Prawns in Walnut Cream.
Crispy Pu-er Tea Smoked Chicken
o This aromatic roasted chicken was served with a side of Japanese cucumbers marinated with osmanthus and plum sauce and paired with two accompanying sauces – ginger scallion and soy sauce. The ginger scallion was very flavourful, however the chicken could be slightly more tender.
Marmite Pork Ribs
o Our favourite has to be this – pork ribs fried till crisp and coated with caramelised marmite sauce. The pork ribs were incredibly tender too and does not leave a jelak taste in the mouth.
Vegetables with Lilybulb and Wild Mushroom.
Glutinous Rice Wrapped in Lotus Leaf with Lup Cheong & XO Sauce
o Generous pieces of pork and lup cheong was served atop a bed of glutinous rice well-coated with XO sauce. The dish is served in a bamboo steamer basket to retain the fragrance of the lotus leaf.
Osmanthus Raindrop Cake
o Ending the meal on a sweet note; wobbly jelly with soybean powder and rich brown sugar syrup with hints of osmanthus floral fragrance.

Hokkaido’s Most Popular Soft Serve, Naganuma Ice that has me so hooked that I’ve found myself indulge more than I usually do. Naganuma Ice, being the only company in Hokkaido that is recognized by the Hokkaido Office for use of 100% Hokkaido raw milk and Hokkaido ingredients. Also seen in Japan and Taiwan for their 100% Hokkaido raw milk and full flavour soft serves.
We hear a lot on Hokkaido raw milk at Naganuma Ice. So, what’s the difference between Hokkaido raw milk and pasteurized milk? The raw milk sourced from the ranch cows at Naganuma thus sent to the factory immediately under low-temperature pasteurisation. Milk flavour is better preserved yet able to kill harmful pathogens.
Expect legit Hokkaido raw milk gelato. Everything is prepared and packed in Hokkaido before importing to Singapore.
Expect 6 rotating flavours from Yame Matcha, Fresh Milk, Double Cheese, Vanilla, Strawberry Milk, Yubari Melon, Mango Yogurt, Haskap Yogurt, Pumpkin, Chocolate, Banana, Azuki Beans.
With so many flavours from which to choose, it’s really hard to choose 1 or 2 flavours. Tried Fresh Milk flavour and fall in love with their creamy and rich texture. It wasn’t too sweet either. My top three flavours goes to Fresh Milk, Yame Matcha and Azuki Beans. Matcha lovers will be delighted as this is the legit bitter-sweet matcha with fragrance milk taste. If you didn’t want to choose a flavour you are familiar with, probably can go for refreshing Haskap Yogurt, thick Double Cheese, Pumpkin.
Naganuma Ice‘s Gelato starting from S$5.50 for single flavour cup.
Naganuma Ice has launched two desserts, Soft Serve Parfait and Creme Brulee Soft Serve exclusively to Singapore. Naganuma Ice‘s Parfait is layered with two layers of raw milk soft serve, cantaloupe syrup and biscuit. It is later drizzled with chocolate syrup and styled with a dark chocolate biscuit from the city of Asahikawa in Japan. While the sweetness comes from chocolate and cantaloupe syrup, the raw milk soft serve is smooth and not too sweet. The minus point is that the raw milk soft serve melts way too quickly!
Soft Serve Parfait at S$8.50.
And, there are SIX different soft serve flavours to choose from Rich Milk, Yubari Melon, Red Wine (w/o alcohol), Ebisu Pumpkin, Corn, Matcha. When I heard Red Wine Soft Serve, I can’t help for a sampling too! Don’t be mistaken, it doesn’t contain alcohol but with lingering grape flavour.
Soft serve to start from S$6 per cup and S$6.50 per cone.
The creme brûlée soft serve simply melts in the mouth, very soft and fluffy. It is served on a waffle cone. I secretly wished for more sugar on top and brûlée it again.

Naganuma Ice will be opening in early Dec 2018 at Carlton City Hotel. Meanwhile, you may visit the Naganuma Ice‘s popup stall at Isetan Scotts Basement 1 from 23 Nov to 6 Dec 2018.

Esplanade Food Hunt #1 : Alter Ego
A juicy chicken thigh burger, and all these yummy cheese oozes out of the center. Sandwiched between buttery brioche bun with housemade ranch burger. I wish that I have a bigger appetite for that night. .
Southern Fried Chicken Sandwich at S$20.
Creole-style soup flavoured with roasted prawn heads, spices with garlic paprika bread soldiers on the side. Italian sausage is added to both shredded chicken and seafood gumbo. All the ingredients coming together in a single pot and melding into something rich and delicious.

Esplanade Food Hunt #2 : Noosh Halal Noodle Bar & Grill
Can’t decide which to eat first? Pipping hot plump cray fish simmered in rich and creamy spicy coconut based gravy with spices. Light rice vermicelli noodle has absorbed all the goodness from the gravy. It is a little spicy at first taste and gets better as it goes.
Curry Cray Fish Noodle at S$18.90.
The best selling dessert never disappoints. If you like ondeh ondeh, you certainly can’t miss this! The fluffy soft cake with coconut shaves melts in the mouth with gula melaka bursts. Munching more bites before heading to the next food hunt.

Esplanade Food Hunt #3 : Supply & Demand
Stoning at a corner and something caught my attention. The strong smell of truffle oil! It is drizzled generously on not so common chunky cut fries. That’s not all, it is topped with shaved parmesan, roasted garlic bits and parsley. Next, Singaporean favourite salted egg yolk sauce! Here we see crispy chicken drumlets tossed with salted yolk sauce. I found the taste to be a little too overwhelming. Finally, the Signature pizza in tomato sauce, mozzarella bacon and mushroom with an lovable soft egg set in the center. Just a normal pizza, nothing fanciful. Probably, I was too bloated and nothing goes into the mind as Supply & Demand was the last station. I might have a different perspective if this was set in the first few stations.

The Morning After 9 inch at S$21. Large 13 inch at S$25.
The cutest duckling floating on the sea of the emo colour. Featuring the blue cocktail for the night. Fascinating potion of Gin, Pavan liqueur, elderflower syrup, blue curacao and lime juice.
Blue is the warmest colour at S$18.
Esplanade Food Hunt #4 : Suzette
Featuring mini edible Durian Esplanade dessert! The white chocolate Durian tart was specially crafted by Suzette for its location at Esplanade. Underneath the white chocolate dome is huge amount of durian paste is so rich and flavourful. Bittersweet taste, sticky, creamy texture D24 durian definitely please any durian lover!
The taste of the cheese cake evolves into a slightly sweet, aromatic flavours of passionfruit and basil. The taste is quite unique and very different from those cheesecake that you ever had.
White Chocolate Durian Tart at S$12.
Passionfruit and Basil Cheese Cake at S$8.
Warm and crispy waffles drizzled with chocolate sauce, maple syrup and dressed with fruits. If you are lucky, you must order earl grey ice cream flavour. This is real ice cream with a twist. It is smooth, aromatic and malty with a different sensation of ice cream. All ice creams are hand-crafted, check with the friendly crew for the selection.

Esplanade Food Hunt #5 : Wah Kee Big Prawn Noodles
I would recommend to order dry version as the noodles and soup are placed separatedly. If you are one to go with stronger flavour, you can’t miss the dry version with al dente mee kia (thin noodles) tossed in their special sauce. Must try! You don’t get to eat this mee kia anywhere else cause it is specially made for Wah Kee. This is like the best combination with Wah Kee Big Prawn Soup and Tasty Mee Kia. It tasted as good as my first visit.

If you’re a fan of Wah Kee Big Prawn Noodle, you certainly can’t miss the new clam soup. With added fresh clams, the soup is sweeter with a taste of ocean. Psss the clams are so good and got wiped clean by another foodie.

Chinese New Year is coming in less than a week. Are you getting excited? Being a Japanese food lover, it excites me to see Japanese delicacies incorporated into Chinese cuisines in conjunction with Chinese New Year. I have drawn two Japanese restaurants that not only offers delicious and also beautiful cuisines for this Chinese New Year. And not to miss, the gorgeous Yusheng offerings in this post!
Boruto Japanese Tapas and Sake Bar
Boruto Singapore, a modern double-storey izakaya, located at South Bridge Road. It is just a short distance from the Central Business District (CBD). Boruto Japanese Tapas and Sake Bar is established by Chef Patrick Tan. Besides Boruto, he also owns Tamashii Robataya, the premium Japanese robatayaki restaurant located nearby.
When the yu sheng gets too mainstream, here we have Truffles Infused Yu Sheng. You can already smell the fragrance of truffles upon served. Featuring Salmon and Yellowtail Yu Sheng at S$68. If you’re a truffle lover, definitely can’t miss this! The Yusheng is available for dine-in at Boruto Singapore. Take-aways are on pre-order basis on eve of CNY 27th February 2017.
From 23 February, you can expect to see these new creation dishes on Boruto Singapore Menu. Probably, you can only get from Boruto Singapore. Don’t miss it!
I have a habit of drinking bottled Ume wine at home. And to my excitement, I get to try freshly chilled and aged Ume Plum wine at Boruto. Sweet, fruity flavour without a strong alcoholic taste and ends with distinctively ume plum lingering in the mouth. I was an instant fan.
1kg tub of Ume plums at S$288. Free storage at Boruto, it’s convenient as you get to pair with your meal on every visit.
What makes a delicious croquette? Crispy on the outside(check!) and fluffy on the inside(check!). Croquettes are yummy rolls of food mixed with crab meat, sweetcorn, poached onions, then breaded and deep-fried. There is extra blue crab meat topped on each croquette to impart the crab flavour.
Kani Croquettes at S$12.80.
Probably the hardest guess for this dish. Presenting Boruto‘s version of “Chai Tao Kuek”; also known as carrot cake. It’s always pleasant to see local flavours added to Japanese cuisines. Instead of the usual carrot cake, main ingredient flour, we see loligo squid here! These squids are sauteed with garlic, poached onions, Japanese pickles and egg. Squid has have absolutely no flavour, however they were filled with the concentration of the sauce imparting a tangy flavour. Psss, there is no black Chai Tao Kuek served here, only white Chai Tao Kuek at the moment.
Hotaru Ika “Chai Tao Kuek” at S$12.80.
Risotto gets healthier! Using black barley, with its bran layer intact, cooks up a crunchy and black dramatic looks with nutty taste. A degree of doneness that might seem underdone. That’s not all, fresh uni are added for the extra sweetness. This dish has totally won our hearts.

Looking at the dish name, I get question mark. Well, it’s actually grilled sea bream. Charming and tasty white meat infused with red miso broth, Shiitake and minced pork. The red miso broth acts as a seal so the fish becomes succulent and tasty but not salty.
Madai a la Plancha at S$15.80.
Massive piece of pork shoulder carefully handled with effort. It is brined and sous vide for 24 hours. And finally roasted for an hour in the oven before served. It looks huge, but is appetising with garden greens and truffle green tomato chutney sauce. I would have enjoyed more if the skin is more crispy.

This Nikka whisky is a gem and it tastes marvellous for the first time and again and again. You get a full bottle of Nikka whisky topped over the yuzu cocktail fantasticly in the classy martini glass. Basically, I’ve poured the entire bottle after a sip. Lovely mouth-feel and a citrusy yuzu finish with a touch of wood spice dryness.

Fan of mochi can never miss this. Jelly- like mochi made from bracken starch and coated with kinako. Probably the softest mochi in Singapore. They have totally melt my heart!
Warabi Mochi at S$6.80.
Hot and cold desserts that are a real treat. Dessert heating up with half cake, half souffle and a surprise warm chocolate liquid at center. Love the simplicity of homemade vanilla ice cream with fragrance of vanilla seeds and crushed peanuts. It would be perfect if the chocolate is less sweet.

Choubei Japanese Restaurant
Choubei Japanese Restaurant is situated at Changi Village Hotel, serving fresh and authentic Japanese cuisine. Head Chef Ong is one of the pioneer Japanese chefs in Singapore, with over 38 years of experience added to his repertoire. Most of the fishes are freshly imported from Japan. Don’t miss out sashimi at Choubei Japanese Restaurant, it’s one of my favourites!
Beautiful garden salad with a variety of mixed shredded vegetables and assorted premium raw fishes. Sashimi lovers will be delighted to receive salmon, tuna, yellow jack, tuna, swordfish and yellow tail in your yusheng. It is drizzled with Choubei‘s hand-made sauce, that is sweet and appetising. An auspicious dish specially eaten during Chinese New Year as it symbolises prosperity, ushering in the new year.
Sashimi Yusheng from S$68.
Ong Maki has made a hit and hot favourite dish of the day. This was my second favourite besides the savoury sashimi yusheng. It comprises of 4-5 types of seasonal premium fishes. Most of the fishes are imported from Japan regularly. Don’t you agree that fresh ingredients play a big part in delicious maki.

The briny and sweet flavours of clams pair perfectly with the garlic and butter sauce and stir fry to perfection.
Asari Battayaki at S$18.
Not the typical agedashi tofu that you usually get at any Japanese restaurant. Choubei has reinvented agedashi tofu with assorted mushrooms. It has a very delicate flavor profile with fragrance from the mushrooms whilst outer shell is crispy.
Hand-made Kinoko tofu at S$8.
Crispy, airy, light, and non-greasy captures the flavour of what ebi tempura. 1 is definitely not enough,
Ebi Tempura (5 pieces) at S$19.
I guess Choubei made a wise choice to include sole fish. Sole fish tends to be consistently mild whilst delicate taste and firm-textured flesh; best for deep fried. It also comes with a special ponzu sauce that is light and you can even drink it by itself!
