Lo sapete che oggi si celebra la Giornata Mondiale del Caffè?
Ma voi l’avete mai bevuto il Caffè Pedrocchi alla menta nello storico locale? Si tratta di una ricetta tutta padovana, ormai famosa in tutto il mondo, nata dal perfetto connubio tra espresso 100% arabica, emulsione di panna fresca, menta in sciroppo e una spolverata di cacao amaro.
La storia di questa bevanda, che si snoda tra i secoli XV e XVIII, tra l’Oriente e le capitali europee. Venne importata per la prima volta in Europa a fine Cinquecento, nella città di Venezia. A portarla con sé, di ritorno da uno dei suoi viaggi, fu Prospero Alpini, Direttore dell’Orto Botanico di Padova dal 1603 al 1616.
Alpini trascorse alcuni anni della sua vita in Egitto, dove la pianta del caffè era utilizzata per produrre un decotto dalle proprietà medicinali. La nuova bevanda incontrò, nella sua diffusione, alcuni pregiudizi: si riteneva che il suo uso allontanasse gli uomini dal focolare domestico e i consumatori di caffeina erano associati a una vita notturna licenziosa. Basti pensare che ancora nel 1732 il compositore Bach scrisse una cantata il cui testo descriveva l’angoscia di un padre desideroso di guarire la figlia dalla passione del caffè.

My F/Os and how they like their coffee ☕
Macchia: If he’s “chilling” at home, it’s moka time, as per the purest Italian tradition. Dark roast type, specifically 85% Arabica blend and 15% Robusta, but a 100% Arabica will do too. If he’s on the go, then he usually allows himself a macchiato instead (me? basing head-canons on puns?? I don’t know what y'all’re talking about hdjdnk). However, when he seriously needs caffeine, usually when working on some big project, then he goes for a Dead eye (regular coffee with three shots of espresso).
Sturm: Back when he was still alive (and with a functional mouth) he used to be a Ness (instant coffee) kinda guy. It’s cheap, quick and basically always available no matter the circumstances. Heavily laced with sugar ofc. On special occasions however, or when visiting relatives or friends, it was customary to enjoy a Cafea Turceasca (Turkish coffee) together and try to read the future in the particulate bitters on the bottom of the cup for a laugh.

In truth, while not much of a habitual coffee drinker, he’s a Cortado (espresso shot served with an equal amount of steamed milk) enthusiast because 1. A lich needs his calcium and 2. The milk to coffee ratio helps keeping his acidic stomach at bay (yes I did diagnose him with GERD, whatcha gonna do about it? >:3c)

Varietal: Gesha
Originally from Ethiopia. Gesha is a part of the Arabica family. It is grown all over the world. Gesha trees are coffee rust resistant.
It is a crossbreed of Robusta and Just like any varietal, Gesha will be used in any process.
It has set the record for being possibly the most expensive coffee in the world. In 2004, Hacienda La Esmeralda sold unroasted for $21 per pound. In 2019, a Gesha produced by Lamastus Family Estates nicknamed "Elida Natural Gesha 1029" sold for $1029 per pound. 100 pounds of this Gesha sold for $100,000.
Known for their Sweet floral notes that are almost tea like: jasmine or black teas, and even tropical fruit notes.
Examples of Gesha that you may have had or will try: I have sample roasted some gesha from Kona, or my favorite coffee grown by Letty Bermudez.
A lot of my current favorite coffees have been Gesha varietal. Multiple roasters sold Letty Bermudez: Manhattan Coffee Roasters from Rotterdamn, Netherlands and Hydrengea Coffee Roasters from Berkley, California. Both roast the coffee differently and have different flavor notes. I have yet to have a bad experience with this coffee. This just happens to be one of the varietals of coffee I have bought multiple bags.

As climate change batters coffee production worldwide, innovators are creating lab-grown brews formulated using bioreactors instead of beans. Food scientists are utilizing cellular agriculture techniques to bypass traditional methods and create a new coffee ecosystem of the future

“Cells from a coffee plant are propagated and grown under sterile conditions in a bioreactor. The cell biomass is then harvested, dried and roasted. The coffee drink is brewed normally and is 100% real coffee, not a substitute,” he details.
For the study, the scientists used commercial Coffea arabica seedlings (Plantagen Finland Oy, Vantaa, Finland) as a source for leaf explants. For biomass production, the coffee cells were cultivated in a wave bioreactor.

Lab-grown coffee can help tackle such demands and sustainably mitigate the main issues in coffee production, note the scientists. These include more “regional self-sufficiency” in areas with climates unsuitable for coffee bean farming.
“The technique allows coffee production at any premises where a bioreactor can be operated,” explains Dr. Rischer.Moreover, producing coffee cells in a bioreactor has the potential to “speed up” coffee production significantly, the study highlights.
“Traditionally farmed coffee provides one to two harvests per year, whereas a new batch of lab-grown coffee can be made in a month due to the controlled process and the infinitely renewable nature of coffee plant cells that removes the need to grow new coffee plants from seeds.”
