Giant Scorpion and Walking Mushroom Hotpot

So a few weeks before I decided I was going to attempt this recipe, I actually obtained a hotpot from my local Asian grocery for entirely separate hotpot reasons (hence the hotpot you see in the photo). It works! It’s great!

For ingredient replacements, I made the following substitutions:

Giant scorpion — Lobster tail, which I got from my local supermarket. I realised halfway through cooking them that cutting them in half with a knife was going to be really hard, so I actually used kitchen scissors to slice the shell open before using the knife to crack them lengthwise. If lobster is inaccessible for you, use shrimp.

Invertatoes — Small potatoes (babyish), if you’re going to attempt this i recommend peeling them before putting them in the hotpot because it makes them melt into the stock in a way that’s really nice. These will be cooked when you can poke a fork through without resistance.

Walking Mushroom — King Oyster Mushrooms, cut up the stem and slice it vertically so you end up with these 1-2 inch mushroom slices in squareish shapes. You can keep the caps whole for the look but honestly if you’re not taking photos, the texture is nicer when sliced through lol.

Dried Slime — Konnyaku/Konjac noodles, I also found these at my local Asian grocery. I like the texture of them a lot and they’re really yummy because they’re basically made for hotpot.

Algae — I rehydrated a bunch of wakame seaweed before placing it inside the hotpot. IF YOU ARE GOING TO DO THIS I recommend NOT using a hotpot stock with a lot of particles. There are also other types of Japanese seaweeds which are meant for soup that look closer to the real deal, but they are not as easily available to me.

Hotpot stock — I know it says water and salt in the manga but frankly I wanted spicy food, so I used HaiDiLao mala hotpot stock. You can use whatever stock you want to be honest, the downside of the stock I used is that while it was extremely tasty, the peppercorns and chillis did get lost in the seaweed so I kept biting into peppercorns by accident. Honestly, that’s my bad for being way too eager to eat spicy food. Anyway use something you won’t regret as much, like mushroom stock or chicken stock or something.

It’s possible to make this meal fully pescatarian and gluten-free (the konnyaku noodles AFAIK do not have any gluten in them). I added a little bit of noncanonical chicken to my hotpot because I was trying to eat up ingredients in my fridge before travelling, but you are of course not obligated to do this.

You can also see from the photos that I laid out the ingredients in the pot before I poured the stock in, which is generally counterintuitive for hotpot, but I did it to get the layout. So whatever. Bring everything to a rolling boil. If you’ve put everything in at the same time, everything cooks fairly quickly except the potatoes which will finish cooking last (see above for the sign that they’re done). Since this is hotpot, feel free to begin picking at it in order of doneness, beginning with the seaweed and noodles (neither needs much cooking) and then heading over to the proteins.

and the party at haidilao!!! we were having thai and mushroom hotpot and obviously this not my party so i can’t request for mala broth but the other still quite good. my secret to good dipping sauce is dumping everything spicy in, at bean sauce, soy sauce then a bunch of chilly and garlic. also look at the milk tea and the chocolate ice cream i snatch for dessert

i finally annoyed my family into going around the mall since this one of the rare time i dressed up. my mom got this really cool cooling pillow i want so bad. the denim skirt i tried on like fit but i don’t really like tight fitting clothes. and ain’t that suede jacket cool? it even match my outfit too bad my parents all say it ugly

now i got this really cute maxi camisole dress that i can do a bunch of cool layering with. it 59$ which is what the fuck like maybe the price because it’s 100 cottons idk. also cause our bills they gave us these sedge bag. definitely gonna use this later on beach vacation or working

HOMEMADE HOTPOT>>> tyvm. 4. bramboráky is because i just... wanted to use the "this is tax for cultural appropriation" line. i figured it was in line with carzzy's character, so i went and googled czech dishes and settled on it. 5. chinese beef and broccoli stir fry with rice because (i say this in the fic) it's a chinese dish for bo and bo's favorite food is meat (according to this video i watched anyway) 6. finally, budae jjigae because of this video. of course. also, Korean dish for photon, its a comfort food, yeah.

Week 11 in Singapore: Step 11 Events and Concerts

There are many concerts in Singapore. Several famous artists came to Singapore and in my semester artists like Brent Faiyaz, IU, and Bruno Mars came to Singapore. I got the opportunity to go to a Bruno Mars Concert. It was absolutely amazing! 

The concert was held in the Singapore National Stadium which is quite far from campus. It is around a 45 min to 1 hour commute so plan ahead if you would like to go there early! The National Stadium is huge and holds an important note not just as a concert venue but is a multifunctional space that is used for sports, ceremonies, celebrations and community events. The stadium embodies national pride and contributes to the social, cultural, and economic fabrics of Singapore. 

There are other big events Singapore holds such as the international Rugby games which are in late may or even the Formula 1 Singapore which is usually around September or october. If you are a huge formula 1 fan and would like to experience it in Singapore then you should choose to study abroad in your first semester not second. Regardless, if you would like to immerse yourself into certain events make sure to plan ahead and apply on time so that you can do in your desired semester.

After the concert, it is always a great option to eat food with friends. More specifically, go to a hot pot or barbecue place which is usually open until 2-3am (make sure to make a reservation it is incredibly popular). For those of you that do not know what hot pot is, it is a fusion that comes from Chinese, Japanese, and Korean flavors.  It is basically a soup that is placed in the middle and continues boiling and then you order side dishes and you are able to dip and cook the side dishes within the liquid. It is very good and the pricing is quite reasonable. The pricing is set meal pricing. The location we went to is called Haidilao in Boon Lay Interchange.  More importantly, it is incredibly filling!

After that, since it was already past 12 we were unable to take the bus or train so since we were too tired we chose to take a gojek (like uber) back and it was around 3 SGD per person. It is possible to bike back to campus which would be around 20 minutes.

hendery really is a MESS he had no idea how to present the menu tablet to the customers and jingmin still did all the work lol

apparently the customers so far have been real haidilao customers and already two of them have recognized wayv so that makes me think that wayv are perhaps more popular than i thought in korea

clapping for hendery after he did the bare minimum

a big group came in and hendery very loudly greeted them and this customer was like "hendery?!" and hendery went "???"

there's another table where the customer recognizes kun and yangyang. i just realized that it's probably because people who are interested in chinese food are more likely to be interested in chinese pop.

also i noticed the three camera people in the seat behind that big group? it must feel a little uncomfortable to be eating there on that day ^^;;

another canto convo between hendery and dejun. hendery was feeling idle and dejun was all "well you just have to see what they need" but he was saying it...a little cutesy. anyway dejun said that that large table was at haidilao for the first time so they might need recommendations. and then as he pushed hendery to go he reminded hendery once again not to scare them lol.
