Sally started making blue food out of spite. Percy loves the color blue because Sally made blue food out of spite. She also kept her last name as Jackson when she married Gabe and Percy loved that too. I think that’s a defining characteristic of Percy cause like... that’s totally where he inherited his saltiness and sarcasm and sass and dam I mean Sally Jackson.

Headcanons: Percy in high school
Percy keeps to himself for the most part.
He has two friends both younger kids who became friends with him after he ‘saved’ from bullies. They’re better friends with each other than him. With the time he spends away from school on quests and the secrets he keeps as a demigod (because no one would believe him) it’s hard for Percy’s mortal friends to really get to know him (they try though)
Percy is still friends with Rachel Elizabeth Dare but doesn’t hang out with her
Rachel’s friends are really off put by Percy when he does approach her at school (he normally has a specific reason for doing this, like asking her for something)
Tons of students find Percy intimidating. They don’t know what to make of him
Percy still gets attacked by monsters at school (and is often late because of this)
Percy still gets in trouble with teachers for behaviours related to his ADHD and dyslexia (plus depression - they aren’t aware he has that though he isn’t either)
Paul really sticks up for Percy in both the above areas with the teachers and principal (It’s the only reason he still goes to that school though no one really acknowledges that)
Just picture Paul defending Percy in a staff meeting for a moment (“he’s a good kid!” + “and what efforts have you made to actually help him, Karen”)
Percy works harder and asks his teachers for help more during his last year of high school (he really wants to go to college)
Honestly I don’t think it’s fair to expect Percy to make up a whole years worth of school in one year while also completing that year of school, while dealing with the aftermath of Tartarus and the Giant war (and the Titan war). His school may have made an exceptions for him but even that won’t get him level with his classmates
Percy pulls even further away from all social aspects of school during senior year. Not doing any clubs or sports, hanging out less and talking less with his mortal friends, etc.
