Three evenings in a row I’ve cooked the same taco recipe from the back of a tortilla package. Three nights in a row I have woken up at 4am with terrible gas-type gut aches. Three days in a row I have learned absolutely nothing from this and jumped head first back into the guacamole the second I got hungry.

l So this was an interesting experiment. At dinner on Friday I tried an avocado toast recipe because my mother likes avocado and so do I. the result was good; I used a snow pea variant on Serious Eats radish/fresh pea avocado toast that turned out great.
During dinner my mother remarked that she thought an avocado devilled egg would be nice. For those who don't know me, Hi, my name is Frank and hard boiled egg yolks are NUMBER 1 on the short list of food I really don't like. ..but I was compelled to try it. I liked the idea. I figured we could take  them along as an extra on Fathers' Day.
I admit I tried the filling and while I liked it. I still couldn't get around the texture. I do actually think the flavour was nice but texturally NOPE. Who knows: My dad doesn't like avocados but I think he likes boiled eggs so maybe he will like this. If not, my mother really didn't seem all terribly upset that she'd have to eat all the eggs.
What really was interesting about this was that it was a thing I don't myself like and it was a successful experiment because I made it successfully for someone who does. (Clearly the next time I have to make scallops or shrimp successfully since I cannot even eat that - the idea of making food based on every sense BUT taste sounds like a fun challenge.)
  I boiled 8 eggs total - good thing because I broke 3 - Two I broke scooping out the yolks, 1 I broke in the boiling water...shows how much I actually hard boil eggs. I boiled for 8 minutes - and I think I should have done a bit longer - ONCE MORE WITH FEELING: I don't make a lot of hardboiled eggs, though in my head I figured I'd go to the lower end of the 8-10 minutes for a good quality hard boiled egg. I like soft boiled eggs so I in the spirit of experimentation...but unfortunately I still find them impossibly chalky, even while they were mixed up with other things.
Now to the actual recipe. 
For the filling I used a ripe avocado, the egg yolks (I actually used the yolks from two of the eggs I ruined), fresh chives, tarragon, a bit of basil, lemon juice and olive oil and black pepper and salt and a little hit of peri peri spice and cayenne pepper. I treated it like guacamole - I taste tested until I liked it. I used about 1/2 a tsp of each: Neither of my parents like spicy food so I keep my use of it VERY limited if they are my audience (i’d say ‘white people’ but my family defying stereotypes here - Black Irish Paternal Grandma could have made a wonderful case for Irish food being bland stodge and my white blond Maternal German Grandfather had ‘how spicy is this pepper’ contests with his employees and I am pretty sure that if he had racial biases while he could shrug off getting the shit kicked out of him by Jewish classmates but REALLY wanted ‘Africans and Bahamians like spicy food to be completely true”.but I think that there needs to be some. I'd double it if I were making it for anyone else. I filled the egg halves with a 1M open star tip - I would be inclined to blitz more thoroughly as mentioned; - and topped with bacon and a sprinkle of smoked paprika.
As a last note: the reasoning of how I put this together was because when I think eggs and avocado in the same sentence I think of both scrambled eggs and avocado toast so I went 'savoury breakfast'.
