today i pretty much begged my professor to put the ice cream question on the exam, fully knowing that no one else in my class can do the ice cream. something something you are coming down with me hand in unlovable hand
#if i fail the management exam because of the cheese question we are ALL failing the exam because of the ice cream question#also its not fair that the dairy industry is HUGE and all we ever talk about is cheese plants!!!!!!!#the problem is that i only understand ice cream.#i was talking to my food safety prof and he was explaining a concept to me and i was like 'can you put this in ice cream terms please'#because literally i cannot understand things unless i frame it as something that would happen to me at [redacted]#like this ice cream question. it makes sense because i know the process and i know the personnel and i know the general business decisions#but cheese? yeah i know the 12 steps of cheddar making but like. my brain just shuts off during cheesemaking#'how can you improve yield in cheese making' uhhhhhhhhh idk. next question#'how can you improve yield in ice cream' EASY. depends on your classification. adjusting the overrun will decrease the weight of the ice#cream and ultimately give you more containers of IC. however too much overrun can be an undesirable trait. so another way is increasing the#amount of add-ins. using more variegate will decrease the amount of ice cream mix in a container once again increasing overall IC yield#anyway i love ice cream and i love dairy and i love school#dairy post
