The parietal eye is actually not a recent evolution, it’s a primitive trait from the common ancestor of all vertebrates, and is retained in some species of fish, amhibians and reptiles. Its function seems to mainly be for regulating circadian rhythms and hormones in the species that still have it, and is not used for vision. It is unlikely that it will ever evolve into a true eye as the fact that vertebrates already have two fully functional eyes means there is no evolutionary pressure to independently evolve another eye from scratch, and despite having hundreds of millions of years to do so, no vertebrate lineage has ever adapted this organ for the purpose of vision.

Iguanas started evolving a third eye on the top of their head.

Right now it’s just a basic patch of light-receptive cells, but in the future it could evolve into a third fully-formed eye.
