Once an exclusive at their taproom, Reuben's Brews announces Fruitfizz fruited hard seltzer.
For anyone over the age of 35, it’s hard to forget film, television, and sports featuring bottles of Perrier throughout the screen. Once considered an elitist beverage, consumed by Europeans and the rich, sparkling cider has been making a comeback. Some say it’s because the nation is slowly being nudged away from carbonated sodas and flavored beverages. While others argue that it’s more about calories than anything else. Whatever it is, the brewing industry in recent years hasn’t allowed sparkling seltzer to grow in popularity in isolation.

Maybe that’s why breweries throughout the region have been promoting their unique approach to so-called Hard Seltzer. From breweries like Deschutes Brewery, Rogue Ales & Spirits, and Public Coast Brewing; to as far North as No-Li Brewing or San Juan Seltzer, breweries are taking a swing at the seltzer market. But as a writer who has dipped their pink into the sparkling waters of hard (aka, alcoholic) seltzers, the most common issue experienced are ‘seltzers’ that leave a film on the palate and use fruit extracts. Recognizing this, Reuben’s Brews and breweries like them are taking a fresh approach.

What sets Reuben’s Brews’ Fruitfizz apart from many other hard seltzers, is their use of real fruit in the brewing process. The result is an alcoholic beverage that is clear and colorless, 100 calories with no added sugar, 0 carbs, and only 5% ABV (alcohol by volume). Oh, and it’s gluten-free. Plus, with this announcement, the brewery is happy to confirm 1% of all Fruitfizz sales go towards the Reuben’s Brews Foundation.
With a focus on social justice, equal access to education, an improved environment, access to the arts, human rights, animal rights, and overall health, Reuben’s Brews Foundation is a worthwhile benefactor from each sale of Fruitfizz.

L&B Beer Guide
We live in such a great place to drink beer. There’s so much fantastic craft beer being made here — Able, Dangerous Man, Enki, Fair State, Fulton, Indeed, Surly, and Tin Whiskers, just to name a few. And nowadays it feels like a new brewery or taproom opens every few months or so.
All that variety is thrilling, whether you’re a beer expert, enthusiast, or dabbler. Beer has all the complexity of wine at a lower price point — so it’s a fun drink to explore. And like wine, it pairs beautifully with food. Of course, if you’re just getting into beer, figuring out what you like is challenging enough, without adding in food pairings. We’re here to help with both!
In this guide, we’ve provided general tasting and pairing notes for a handful of the most popular lagers and ales. You’ll see that we refer to a couple of beer terms throughout the guide: Alcohol by Volume (ABV) and International Bitterness Units (IBU).
ABV is generally listed as a percentage, and it tells you how much of your beer is alcohol. Basically, the higher the percentage, the boozier the beer. That’s a handy thing to know when thinking about pairings — you might like to go for a lower ABV at lunch, for example.
As you might expect, IBU measures a beer’s bitterness from hops on a scale of 0 to 100 (0 is not bitter at all and 100 will blow up your taste buds). If you know where your tastes fall on that scale, IBU can help you choose a beer, but it can also be a deceptive number. For example, a stout’s relatively high IBU can be balanced out by its malty sweetness!
Lager (ABV 2.5 to 5.1 %, IBU 5 to 15) Lagers are light yellow in color, and they have a mild flavor — crisp, clean and very smooth. With their low ABV, they’re a perfect mid-day brew. Drink a lager when you feel like a beer with lunch, but you’ve got stuff to do in the afternoon.
Pairings: We like a lager with lighter fare: think fish tacos or a club sandwich on the patio.
Pilsner (ABV 4.1 to 5.1%, IBU 30 to 45) Pilsners are golden as straw. They’re as smooth and clean as a lager, but with a little more personality. Pilsners have a little more hops, and they can also taste lightly malty, like a slightly sweet biscuit.
Pairings: Pilsners also have a crisp, medium body that’s really nice with lighter meals. We pair it with dishes like chicken salad and grilled salmon with asparagus.
India Pale Ale (ABV 6.3 to 7.6%, IBU 50 to 70) This beer’s pale, golden hue belies its gonzo hops. India pale ales taste amazing — big intense hops, full of citrus and herbaceous, with a nice dry, crisp finish. They’re on the boozier side, so treat them like cocktails; sippers rather than quaffers!
Pairings: Because India pale ales can tend toward strong and bitter, we’d recommend pairing them with something equally flavorsome, like a spicy chili, andouille sausages, or blue cheese. Chinese food? Yes!
Pale Ale (ABV 4.4 to 6.1%, IBU 30 to 50) A golden or copper blond beer, pale ales are hoppy — though less so than their cousins, the India pale ales — and their flavor can vary from mild hops to wildly complex and floral. With such a variety, pale ales are fun to taste in a flight.
Pairings: With all those floral notes and a light bitterness, pale ales are natural for seafood. Serve them with everything from linguini and clams to grilled herring.
Brown Ale (ABV 4.2 to 6.3%, IBU 24 to 45) As the name suggests, brown ales have a dark, caramel color and they taste malty — nutty, sweet, with a lovely, light bitterness. They’re incredibly easy to drink, and so while not too boozy, a little dangerous.
Pairings: We like to pair brown ales with heartier foods and rich flavors, like French onion soup, smoked salmon, or pot roast.
Porter (ABV 7 to 12%, IBU 35 to 50) Porters are deep, dark brown, and full bodied. They taste like dark chocolate — a little cocoa sweetness with just a hint of sharp, bitter hops. They’re so thick, you can’t drink a ton of them, and that’s a good thing because they have the highest ABV of any of these beers.
Pairings: That boozy quality is one reason to pair Porters with food — the other is that they provide great ballast for super flavorful or spicy foods. Serve a porter with chicken enchiladas or Korean barbecue. Oh, and chocolate cake!

Both their original and flavored beers have taken German and world markets by storm, becoming in-demand and garnering numerous praises. To this day, Schöfferhofer remains a trailblazer, with the first Hefeweizen grapefruit beer in the world being produced by them, and launched in 2007. It’s brewed in Mainz, and its first wheat beer, the Schöfferhofer Hefeweizen, was brewed in 1978. In fact, its logo depicts a portrait of Peter Schöffer. The brewery was founded in Mainzer Schöfferhof, the former home of revolutionary German printer, Peter Schöffer. Schöfferhofer is the first wheat beer outside of Bavaria, embracing modernity instead of clinging onto old traditions. Serve this beer cold, and have it as a refreshing partner to barbecues and smoked salmon. An easy-to-drink beer, it’s crisp and zesty, with sweet grapefruit flavors, and sharp wheat notes.įruity and citrusy, the Schöfferhofer Grapefruit Beer pairs wonderfully with fresh and soft cheeses, and salads. Medium-bodied, it has subtle aromas of wheat and grapefruit. This casual, refreshing brew has a cloudy orange hue, and ABV of 2.5%. Avoids putting all the fresh zest into starsan. 39 g of zest from 7 small grapefruits.doing larger boil volume to get right amount for fermentation changed hop profile to decrease IBUs slightly base on taste of last beer. Sanitized bag for zest and dunked the zest in sanitizer. Had a kraussen the next day!ĩ-30-14 Dry hopped with 35 g of grapefruit zest from 7 small (washed) grapefruits. Added 3/4 of a gallon H2O, got it to ~1.64. Our final boil volume was ~5 gallons, but lost a good amount to trub (lots of hops). I have no idea what that makes our efficiency. We collected 6.5 gallons for the boil, it had a gravity of 1.06. We opened the cooler and stirred every 15 mins. It dropped down to maybe 152 by the end of the hour. After yeast starter, 5.2 gal or so.įirst all grain batch! We used a single infusion mash 154. Final volume (before yeast starter) ~4.75. Measured ~1.06 then added another quart of water, and the yeast starter. Going for a starting boil volume of ~6 gallons, with about a gallon of boil off. Sparged grains with 3 gallons of 170 degree water. Mashed 7.1 pounds grain in 3 gallons of water at ~150-152 for an hour. This round of Citra hops was super high alpha.
GRAPEFRUIT BEER FULL
With our full boil setup, had to reduce the hops so it wouldn't be too bitter. These ones yielded way more zest than the last ones! I washed before zesting, then put in a fine mesh bag and dunked in sanitizer before putting into fermenter. Added 43 g of grapefruit zest from 3 large yellow grapefruits. Then into the fermenter!ĭry hopped after 9 days with 1 oz fresh cascade and 0.5 oz fresh Citra. I washed them before zesting, then put them in a fine mesh bag and soaked them in sanitizer for ~1 minute. Little worried because they had some green areas (underripe?). Also added 13 g of grapefruit zest from 6 large grapefruits. Vodka and ginger beer provide balance smoothness and sweetness to pair with the sourness. Some say this bitter fruit is an acquired taste (and it well may be, given my husband’s avid disregard for it), but it’s a star in this cocktail. Its semi-sweet juices make for an elevated Moscow mule. Dry hopping after 9 days with 1 oz of fresh Cascade and 0.5 oz of fresh Citra. Instead of lime, we’re opting for grapefruit.

Where to Tie One On in Brookline’s Washington Square
And what to eat while you’re at it
Welcome back to Food Crawls (or in this case, Booze Crawls), a series in which Eater Boston staffers guide you (virtually) on various food and booze crawls in the Boston area.
When we go out, we often find ourselves wanting to try more than one restaurant (or bar) at a time — a drink and a snack here, another drink and perhaps a dessert there — and want to share our favorite multi-stop combinations with you. These crawls are meant to be relatively walkable, and the amount of food and drink is meant to correspond roughly to a couple of average appetites (so bring a friend), although your mileage may vary. Email us if there’s a particular theme, specific dish or drink, or neighborhood you’d like to see covered in a future installment.
Brookline’s Washington Square is a little less sexy than Coolidge Corner — there’s no Art Deco theater screening 70-millimeter prints of 2001: A Space Odyssey, and there’s no independent bookseller with a cellar full of rare used books, after all. But that doesn’t mean Washington Square isn’t worth a visit, especially if you’re looking to have a boozy night out.
If it’s a long and varied beer list you’re after, Washington Square’s got it. If it’s a classic cocktail in a dimly lit local haunt you’re after, Washington Square is also your ‘hood. And if you’re looking to dance the night away in the function hall of a Chinese restaurant that more closely resembles a club in a Las Vegas casino than it does a function hall of a Chinese restaurant, look no further.
Gather a crew, hop on the C line, and head to Washington Square this weekend.

One of Greater Boston’s best beer bars
Stop at the Publick House first and pad the gut with some mussels (try the pot cooked with Fiddlehead IPA, which is a slightly funky American-style IPA brewed in Vermont.) Wash them down with something Belgian. The Taras Boulba is a good bet: It’s on the lighter side (4.5 percent ABV) as far as Belgian beers go, which is great because you should never go hard at the first stop on a night out.

The Golden Temple is, sneakily, one of the best dance clubs in Greater Boston. When dinner service ends, the arched and faux-portholed auxiliary dining room to the left of the restaurant’s main dining room transforms into an ochre-washed mid-century dreamscape where hip hop and dance classics thump while twenty- and thirty-somethings who know where to go dance and drink the night away. This is the last stop, and you’re probably already feeling yourself by now, so drink whatever the hell you’d like. After you’re done, call a cab because you’re a responsible adult. But only after you luxuriate in the wonder that is the Golden Temple at midnight.

I have been running a small Whisky Maturation related Experiment and I wish to share an update with myself. I am writing this blog for myself as a diary, but if other people enjoy it too, all the better. Anyways, I am maturing “ethanol” in different kinds of ABV concentrations.
I’m running 4 experiments in numbered erlenmeyer’s
Tab-water and oak (way to much)
100 ml Alcohol / 400 ml distilled water / 3 grams of oak
400 ml Alcohol / 100 ml distilled water / 3 grams of oak
450 ml distilled water / 3 grams of oak
The photo’s I have made of these experiments have not been under controlled lighting conditions.

So I decided to have some fun in my “Darkroom” and make photo’s in a controlled environment.
Small studio setup
I made some photo’s at ISO 100, f/22, 70 mm, 1/100. All with the same flash settings. All at 5600K.
In the photo’s above I combined the photo’s into one image so I can clearly see the colour differences between the different content in the Erlenmeyer’s.
What was interesting to see is that Erlenmeyer’s 1 (tap water, 0% ABV) and 4 (distilled water, 0 ABV) all had stuff growing in them. See photo below. Erlenmeyer 4 has lots of condensed water droplets on the inside. Erlenmeyer 1 used to have that but for some reason today it had not?
Now here comes the tricky thing. I would have expected that there is a correlation between ABV and the red colouring of the Erlenmeyer’s. The correlation being that at higher ABV’s the reddish colour we know from a bourbon would be extracted. But, what I can see in 0% ABV erlenmeyer 1 is a way deeper reddish/brownish colour than in the 80% ABV erlenmeyer nr. 3. How can that be?
Erlenmeyer 1 used to be a dirty brown mucky kind of colour and with time it seems to have been gaining red tones. What does that mean? I will have to think about that!
Possible answers could be that at lower 0% ABV’s a chemical is extracted from the oak that is also red. It would have to react with chemicals present in tap-water to become red, because the same does not happen in the 0 ABV Erlenmeyer that has distilled water in it. Tap water in the Netherlands contains some chemicals. Florine, chlorine etc. so there are chemicals in the mix, besides water, that could result in some chemical reaction.
Erlenmeyer 3 has always had a red colour component in it. Apparently this is due to the reaction between 80% ethanol and the oak?
What is making me puzzled is the how and the why of the yellow in the 100% distilled water. Does this explain the yellow in the erlenmeyer 2 as well? Does the water draw out chemicals that are only yellow? Does the red chemical only come out of the wood at higher ABV? if so, why is erlenmeyer 1 red?
After more than half a year of maturation I am formulating more questions than answers. And the answers I was hoping for are not turning out to be true. Excellent stuff off coarse, but why am I seeing what I am seeing?
Will erlenmeyer 2 and 4 also turn red with time? Just like erlenmeyer 1? Is only time the factor before the red comes out in Erlenmeyer 2 and 4?
I will let the experiment run for another half a year to see what is happening then!
