This might make him sound like a troublemaker, but Xavier is quite the opposite really. Though he live by the concept ‘some rules are made to be broken’ he isn’t one to get into trouble, and if he happens to find himself in some he has a keen way of talking himself out of every situation, good and bad alike. He’s quite the charmer, a proper flirt and a ladies man, making it hard to dislike him in general. And when you top it with his skills of being a funny man that puts a smile on your face and turns frowns into smiles with a single line you get a man that’s likable to almost everyone, and easy to be around and enjoy the company of. History: In his 31 years of life Xavier have experienced a lot more than most others his age. His life has been filled with love and laughter, great loss and heartbreaks, adventures and routines.
From the day he was born Xavier have been on the move, hardly spending more than three years at the same place. His parents where both fond of traveling, and lived their lives on the move. Even though they settled down in different areas they were hardly there half of the time, making it hard for Xavier to connect with people and make real friends until his parents one day had an epiphany. Why drag him away from the stability and routine when there was a simple solution to every argument he ever had with his parents? The solution was moving in with his grandparents in the south of France, and from the age of 10 Xavier lived at a rather large wine farm in the southern region of France. It was heaven, large space, spending time in the same area for a longer period of time and actually making friends. Living there also sparked a new interest in him, for both wine and finer food.
After years at the farm it was no surprise to anyone that Xavier went into culinary school, making himself noticed from day one. Growing up with his grandparents have given him a lot of knowledge about wine and how to pair it with food, and this expertise was greatly valued with everyone who housed Xavier for his internships.Graduating culinary school was no problem for Xavier, he went through with flying colors and had more than one job offer standing when he received his diploma, but Xavier had other plans. What culinary school had thought him was only the beginning, if he wanted to grow as a person and chef he had to learn from the best, from all corners of the world, thus his decision to pack and leave France to travel the world and learn from the best chefs and bartenders there was. His goal was to one day open a place of his own, either a fine dining place or a gourmet bar, he didn’t know for sure - maybe both if faith wanted it that way.
During his years in culinary school Xavier had spent time abroad, making friends for life. Visiting them became one of the things he looked forward to most, and though he has a mission to travel the world he often went back to visit the people he considered to be his best friends, they were his support system beside his grandparents, and knowing they had his back made it easier to push himself out of the comfort zone.
For years Xavier traveled around, learned from the best and in the end he ended up in New York, working under and learning from a five star chef with restaurants across the world. It was at that time he met the one person that made him want to settle down. It didn’t take long before they were engaged and ready to marry, but that’s when disaster struck. For so many years life had been smiling down at Xavier, but on the most important day of his life it didn’t. The woman he thought was the one turned out to be someone else than he believed, and she left him at the alter, in front of his family and friends. It was heartbreaking, Xavier had truly believed this was the women he was meant to spend the rest of his life with, and being proved wrong broke his heart. It wasn’t easy to swallow, but he had no other choice but to accept it. Though it broke his heart something good also came out of it, that night he decided it was time to go back and be with the people who had proved they were his best and closest friends, and time to realize the dream he’d had for years. With a broken heart, but a determined mind Xavier backed his bags and moved, not back to France and the life he’d left behind there, but for the town of Arendelle, where his most trusted friends lived, and he’d never regretted a single day that he settled on this small coast town for the location of his life and bar, whose been nothing but a success since the day it opened.
