this chili has glitter in it.
in january and february of 2014, i found myself engaged in heavy thoughts of love, loss, life, self-care, and actively caring for others. when things get deep, i head into the kitchen to work through my meditations.  one evening in the middle of #DCsnowmageddon, i grabbed a deep heavy-bottomed pot and took my meditations to the stove.   the most essential element of this dish is that it must be shared with people whom you love greatly, because you will see an unexpectedly dark, scheming, and greedy side of them when the question of leftovers comes up. the good news: you’ll find it that much easier to forgive, #becauselove. start with 1 lb veggie sausage, crumbled and sautéed in grapeseed oil <higher smokepoint> and toasted g-powder*, then slowly add  4 large garlic cloves, smashed  1 small ginger knuckle, diced  1 medium red onion, diced  1 small red, orange, and green bell pepper, diced  1 tiny ripe habanero, left whole!  and continue the saute. then add:  12 oz black beans  12 oz pinto beans, mashed (refried is ok too, here)  12 oz kidney beans  16 oz roasted tomato purée and bring up to a very low simmer for about 30-45 min, then add  6-8 sprigs of fresh cilantro, chopped  8-10 oz sweet corn kernels, charred  1 bottle dark ale or heavy mexican lager added slowly during the next 10-15 min. to steam off the alcohol and thicken the chili, which should be very heavy. If not thick enough, add a bit of cornmeal to the simmer. do not add extra pepper to the pot, as the habanero will eventually burst, bringing a whole different dimension of heat.    keep sea salt and a teaspoon of dark honey on standby, to alternately elevate and round off the sharp edges of the flavor. balance the heat with a squeeze of lemon. as this chili matures in the fridge, it will get hotter. *g-powder = glitter powder: coriander, cayenne, cumin, cinnamon, roasted chipotle pepper, paprika, and smoke seasoning: all dry-toasted to release the oils.                                                 *   *   *  *  * i have served this with crumbled queso fresco or shredded jack on top. in certain cases, i’ve done a simple quesadilla and fresh classic chunky guacamole on the side, heavy on the lime. definitely try it and let me know how it turns out. don’t forget to put love in it, on it, and around it.
