Water (1.5 cups)
Steps to make Kodo Millet  pulao:
Heat a small pressure cooker with oil or ghee. Fennel should not change colour as you add cinnamon, fennel, and bay leaf to a medium flame. Add the onion after that, then stir. After that, add the ginger-garlic paste and cook it over medium heat for a minute.
Add the chopped veggies, mint leaves, and fry on a medium flame for about 2 minutes. You can add a little salt to the veggies.
Add washed, drained millet to the mixture and mix well. Let it dry. The flame should always be in medium.
Add water, salt, and bring to a boil. Mix together and cook for a whistle on a medium or low temperature, or if possible, for 12 minutes on a low flame.
Serve hot with onion raita. Fluffy, tasty, and flavorful pulao that is sure to impress!

वेजिटेबल पुलाव रेसिपी बनाने की सामग्री
जीरा   ½  छोटा चम्मच
लौंग   4
चक्र फूल   1
दालचीनी  1 इंच
इलायची   5 पिस
बड़ी इलायची   1
कालीमिर्च  6
तेजपत्ता  2
नमक  स्वाद अनुसार
हल्दी  ½  चम्मच
धनिया पाउडर 1 चम्मच
पुलाव मसाला 1 चम्मच
हरी मिर्च 2 बारीक़ कटी हुई
लहसुन  8-10 कलि
अदरक  1 इंच
दही 100 ग्राम
प्याज  1 बारीक़ कटा हुआ
फूलगोभी ½ पिस
पत्तागोभी ½ पिस
मटर  100 ग्राम
शिम्लामिर्च 1 पिस
गाजर 2 लम्बे कटे हुए
पनीर 100 ग्राम
चावल  ½ किलोग्राम
वेज पुलाव बनाने की विधि
एक पतीले में पानी ले और उसमे नमक, जीरा, तेज़पत्ता, दालचीनी व छोटी इलायची डालके उबाल लें |
इस उबलते हुए पानी में धुले हुए चावल मिलाए और जब चावल 80% तक पक जाए तो चावल को एक तरफ रख दे |
अब एक बर्तन मे पनीर, मटर, गोभी, पत्ता गोभी व गाजर को हल्का हल्का फ्राई कर ले |
फिर एक बर्तन मे तेल गरम करेके उसमे तेज़पत्ता, काली मिर्च, लौंग, बड़ी इलायची,  छोटी इलायची, दालचीनी और चक्र फूल डाल दे |
अब इसमे बारीक़ कटी हुई हरी मिर्च, लहसुन, अदरक और प्याज डाले और अच्छे से पकाए |
इसमे कटी हुई शिमला मिर्च ( हम पहले शिमला मिर्च फ्राई करना भूल गए थे इसलिए अब डाल रहे है ) और धनिया पाउडर, नमक, हल्दी व पुलाव मसाला मिलाए |
मसालों के अच्छे से भुन जाने के बाद इसमे हल्का फ्राई करा हुआ पनीर, मटर, गोभी, पत्ता गोभी और गाजर मिक्स कर दें |
अब इसमे फेटी हुई दही मिलाए और फिर से मिक्स करे |
आखिर में पके हुए चावल मिलाए और 2-4 मिनट तक धीमी आंच मे ढक्कन बंद कर  के पकने दे |
उपर से बारीक़ कटा हरा धनिया, नीबू और भुना हुआ प्याज डाल कर सर्व करे |

Instructions to make Nihari😊(rich mutton gravy):
First heat oil then the sliced onion when slightly brown then add mutton mix,add ginger garlic n chilli paste,mix then add nihari masala,turmeric, red chilli pwd,coriander pwd n 2 tbsn salt(acc to u) add 8 cup water n cook till meat is tender but not off the bone.now take saute wheat flour then add the fennel water plus add 1 tbsn nihari masala.before adding the mixture remove some oil floating above the cooked mutton..this we save for garnishing.now add the flour mixture in the mutton mixture..
Gradually mix n let it cook on slow flame or simmer for 15 to 20 mins till gravy is thicken.when done serve hot with pouring little oil we saved n garnish with sliced chilli, ginger, onion and coriander leaves and a pinch of garam masala.serve with naan or rice.(sorry as couldn't remove pictures while cooking).

Usually people make different types of biryani on weekends especially. You can use a mix of carrot, beans, cauliflower, fresh peas and potatoes for making this veg biryani. Hyderabadi Veg Biryani or Vegetable Biryani is a delicious medley of succulent vegetables, spices, ghee, saffron, and flavourful basmati rice which no one can resist. Veg Biryani is a delicious medley of rice, vegetables and a variety of spices.
Steps to make Veg biryani:
In a wok add 3 glass of basmati rice and water to soak rice well for booking(approx 6-7 glass)..
Now add 2 tbsp ghee, some cumin seeds, 1 bay leaf, 4-5 cloves and mix them well at medium flame, till rice is 80% cooked..
Once boiled 80% switch off the flame and strain the water completely..
Now in another wok add 2tbsp butter and 2tbsp cooking oil. Then add 1bay leaf, 3-4black pepper, 2red chillies, 1chopped green chilli, some cumin seeds, cinnamon stick and saute for one minute at medium flame..
Now add green peas to it and cook for 1minute..
Now add french beans, carrot and cook it for 1minute at medium flame..
Now add florets of cauliflower and cook till it partially softens..
Now add sliced onion and cook for 2more minutes at medium flame. If you want you can add cashews also for additional crunch and flavour..

Instructions to make Chanay ki biryani:
Soak rice according to instructions..
Prepare all vegetables.
Boil water for rice with salt, illichi, bay leaf and cloves and star anice, add rice and cook.
When rice are cooked 3/4th, I kanni reh jae to strain karen..
In another pan heat oil add garam masala, brown onions, ginger garlic paste and fry it.
Then add dahi and mix, tomatoes add karen cook till soft, achi tarha bhun lein thora pani dal ke.
Add chanay and green chillies, mix and bhunai karen achi tarha jab oil uper aa jae..
Now make layers for biryani, In same pot used for boiling rice put 1tsp oil and 2tbsp water and then half rice, than chana masala..
Green chillies aur Podina add karen, phir baqi rice spread karen, orange colour aur kewra dal ke cover and dum.
Tawa raken phir flame tez karen 5 mins phir low kar dein dum pe rakhen for 15mins..
Delicious biryani is ready serve with raita and salad.

Moong Sprout Pulao can also be cooked in Indian style Stove-top pressure cooker. Before buying Instant Pot , I used to cook in pressure cooker.
Whole Moong Beans and Sprouted Moong Benefits
Sprouted Moong beans are made with whole moong beans or green moong beans. These are also known as Sabut Moong in Hindi. In many southern states of India it is known as pesalu.
Native to India, Moong beans are used in Indian cuisine since ancient times. These are also  mentioned in Ayurveda as one of the healthiest meal option and  used in many detox recipes.
One the most nutritious legumes that are recommended by health experts for various aliments. These are protein packed, rich in vitamins and minerals.
Very beneficial for those who are on weight reducing, low cholesterol and low sugar diets.
Sprouted Moong beans are known to have much less calories than unsprouted whole  moong and are more rich in amino acids and anti-oxidants. These also cook quickly and are easily digestible than whole moong beans.

Moong Beans are power house of nutrients and one can create so many dishes using this simple bean. Hence the theme name is #MoongMagic. I use Moong Beans/Sprouts quite regularly in my cooking  but what a shame till now I didn’t had any of the dishes like Whole Moong Dal fry, Sprouted Moong Stir fry and Whole Moong Instant Dosa and Idli. Sprouted Moog Salad or Chaat topped with papdi and sev,  is something that even my too kids love to eat. Will Soon update the recipes.
Let’s see how to make Moong Sprouts Pulao
Ingredients for Moong Sprouts Pulao
I use basmati rice in my cooking, especially Pulao and Biryanis. I recommend to use it for this recipe. It gives a nice texture to Pulao.
Sprouted Whole Moong Beans, homemade or store bought.Choose vegetables like carrots, green beans, corn of your choice, I added carrots only.
I have added Fresh fenugreek leaves in pulao you can use Spinach or even Cilantro leaves or altogether skip it form the recipe.
I don’t use much of the powdered spices in in this pulao, keep it to minimum. Here I used Pav Bhaji Masala for a different taste. You can use Garam Masala also. Spice level can be adjusted as per to one’s preference. I used green chilies so skipped red chili powder.
Whole Spices like Bay leaf, Cinnamon, Cloves , black pepper and black cardamom with cumin seeds to enhance the flavour.
Method to Prepare Moong Sprouts Pulao
Wash and soak Basmati Rice for at least 15 minutes.
Rinse Sprouted Beans.
Switch on the Instant pot on SAUTE MODE for 10 mins. Once display shows hot, add oil and then all the whole spices. Once cumin seeds crackle, add finely chopped onions and saute for 2-3 min. , then add ginger garlic and green chilli paste.
Once Onions turn pink, add tomatoes and carrots/vegetables and saute for another 2-3 minutes.

Add finely chopped greens(fresh fenugreek /spinach leaves), sprouts , rice and pav bhaji masala and salt as per taste. Mix well. Add water. For 1 Cup of Rice and 1 Cup of sprouts I added about 1.5 Cups of water.
Cancel the SAUTE MODE, cover  and seal the lid set the PRESSURE COOKER MODE On, for 6 minutes.
Once the timer goes off, wait for 5 minutes then do QRP(Quick Release Pressure).
Fluff Pulao lightly with fork or ladle. Serve hot with raita of your choice. Curries like Kadhi Pakora, Dal Tadka, Aloo Matar or Paneer Makhani. Even plain curd/yogurt goes well it.
To make Pulao in Stove-top Pressure Cooker follow all the steps till preparing pulao masala and adding sprouts and rice. After adding water, cover the lid and cook for 2 whislte ad let the pressure release naturally.

1 Cup Rice
1 Cup Moong bean Sprouts
1/2 Cup Finely chopped Fenugreek/Spinach Leaves
1/2 Cup Finely chopped Vegetable(Like Carrots, beans , corn)
1/2 Cup Finely Chopped Onion
1-2 Tomatoes(Medium)
1 tbsp Ginger Garlic and Green Chili Paste
Spices used
1 tbsp Pav Bhaji Masala/Garam Masala
1 Bay Leaf
1 Cinnamon Stick(medium)
4-5 Cloves
4-5 Black Peppercorns
1-2 Black Cardamoms
1 tsp Cumin Seeds
Salt to taste
2 tbsp Oil(any good Plant based oil)
Wash and soak Basmati Rice for at least 15 minutes. Rinse Sprouted Beans.

Cancel the SAUTE MODE, cover  and seal the lid set the PRESSURE COOKER MODE On, for 6 minutes.

Use Red Chili powder instead of green chilies. Adjust the chilli used  as per heat tolerance.
  Do make this delicious one pot meal whenever you make sprouts . It is very simple, easy and quick to prepare and trust me it’s delicious too.
