大家好! ML has seen me order tom yum goong at a stall near the office several times. As the office grew chilly during the rainy season, she was keen to give this beloved dish a try and she loved it. Between sips of spicy, tangy broth and bites of fresh prawns, fish, oyster mushrooms, onions, tomatoes and rice she kept saying hen hao chi (very delicious). MI also tried it that day and finished everything. There was a lot of food so I was stuffed when MI came to my desk offering dessert of blueberries. I only had belly room for a few but that's better than nothing! Tom yum goong will probably be 1 of my go-to dishes during this chilly weather. It's fiery, it sets my mouth on fire, it keeps me warm and it tastes amazing.

There was a gathering over a heavy dinner on Friday, so CY and I had a lighter lunch. We'd planned on having cut vegetables with hummus and ajitsuke tamago, but CY forgot to bring the cucumber, so she texted MI to help buy some. MI came with cucumber and 2 large packs of salad! We shared 1 pack and saved the other for next week. There was only 1 other time I'd had hummus, just before the covid pandemic. It's YUM! Since I'm looking for more ways to eat legumes and lentils to support the Palestinians in Gaza, I'll buy more hummus soon and find some ways to consume it more often.

Onto Friday's dinner, I grossly overate. 12 of us gathered at KY's favourite restaurant. They serve 1 of the most comforting double-boiled chicken soups with fish maw, red dates and tree ear mushrooms. Their steamed marble goby was remarkably fresh and tender and the tofu with mushrooms was a hit; ML had seconds because it was so yummy. We had such insane quantities of food that I skipped both first and second breakfasts the next day to reduce the bloating. At a time when thousands of people around the world struggle to put food on the table, I acknowledge my privilege.
Pa and I have revisited the Japanese restaurant which serves moderately healthy and delicious hotpot several times. It was Mummy's turn to visit. Instead of a hotpot each, we shared 1. I added salmon, a portion of veggies and udon, as well as spinach in sesame dressing to share since her appetite is smaller. Mummy adores hotpot so she loved everything, finished all her food and declared that she wants to revisit! I'm okay with that since I like vegetables and this restaurant serves generous portions. This high fibre meal was extremely filling; I had a light dinner of 2 ajitsuke tamago (ramen eggs) and a potato bun with hummus because it was all I could stomach.

It's Saturday. The weekend is once more upon us. It's been a long week and I'm very tired. We have an upcoming presentation to a client next week so it's been hectic. Apart from exercise, I just want to rest and catch up on sleep. I don't feel like talking or socialising much during this busy period. FL texted to catch up over lunch this week but I couldn't manage it. He was nice enough to wait till January, which I appreciated. Next year, CY wants to eat healthy with me on some days so I'll have to find a way to include high fibre lunches with her. Oh well, chuan dao qiao tou zi ran zhi (once the boat reaches the start of the bridge, the bridge will straighten). I'll see what I can do. 下次见!

Allium: What’s the best thing you can cook? I do love cooking! But I haven't fully delved into it yet. I like making this dish with thinly sliced roast potatoes, carrot & zucchini with olive oil & paprika. then you add salmon with slices of lemon on top, roast it. with a refreshing yogurt dip 🍋
Primrose: Favorite kind of soup? I love soup! It's such a mood thing though. I make a good minestrone! & a good cauliflower & leek one. But theres this really good kinda spicy Tom Yum Thai one I get (but it's different to regular Tom Yum) & it comes with fried Wontons & an egg on top, with noodles & baby mushrooms, it's so good!

The Imp was happily sitting in his spot chatting with Mariah his mood had seemed to improve so much since he had met Julius and the older egg pod. “ Ta dah! Mariah and I worked together and made Thailand food for dinner! There's Andaman Shrimp Cake, Classic Spring Roll (Poh Pia Tod),Spicy Lemongrass Soup (Tom Yum), Pork Rice Noodles (Kuay Tiew Haeng),Steak Curry (Gaeng Panang Nuea),Thai Foil Salmon, Vegetable Stir Fry with Green Curry Paste, Banana Fritters for dessert and Refreshing Thai Lemonade (Nam Manow) to drink!” The imp tail was wagging happily. “ Oh and we got the sauces too! Thai Green Curry Paste, Thai Sweet Chili Sauce, Tamarind Dipping Sauce, Thai Red Curry Paste, Spicy Peanut Sauce, Cucumber Relish, Sweet Plum Sauce and Peanut-Coconut Milk Sauce. Yeah we went all out today but it was fun and it really lifted my mood up!”
Julius’ eyes bugged out a little when he came face-to-face with what Moxxie and Mariah had made. He blinked, for a second frozen, before moving forward once more, a big smile covering his face.
“Well, I’m glad to hear you two had fun!” He sat down at the table, looking over the spread. “You certainly did go all-out..!” There would be plenty here- both for the imp and himself, and whoever they gave the extras to, he was sure.

Hot Pot: A Popular Soup Dish in East Asia
Hot pot is both a dish and cooking experience. This dining method involves a single pot of simmering broth surrounding by an array of ingredients ready to be cooked and eaten. People take turns placing raw ingredients they choose into the pot. Hot pot ingredients usually consist of thinly sliced meat, leafy vegetables, mushrooms, vermicelli, sliced potatoes, tofu, and seafood. The broth adds flavor to the ingredients as they cook and ingredients can be dipped into sauces after cooking.
Hot pot originates from China and has been eaten for over 1,000 years. This hot dish used to be favored in the winter to warm up its consumers, but recently has been served on tables year round. This dish is popular for its flavor as well as its social aspect. Families and friends gather around the table to chat and drink all while sharing their meal around the pot.
The variety of ingredients that can be used for hot pot means there are endless combinations. The stock consists of water, salt, and spices. Sichuan hotpot is the most famous Chinse hotpot.
Protein: slices lamb, beef, pork, chicken, fish, squid, shrimp, tofu, eggs.
Starches: glass noodle, udon, flat noodles, potatoes
Vegetables: spinach, bok choy, daikon, cilantro, scallion, bean sprouts, lettuce, mushrooms, taro
Hot pot is popular throughout East Asia and different kinds of hot pots can be found in each country. In Japan, hot pot dishes are called nabemono and are enjoyed very similarly to Chinese hot pot. Shabu-shabu is the most popular nabemono hot pot dish seen in the United States. The Japanese verion is slightly differen in that they focus on the natural taste of fresh ingredients rather than flavor the broth heavily.
My favorite place to enjoy shabu-shabu is at Osaka Japanese Cuisine in Midtown or Cordova. The restaurant brings out the broth and ingredients prepared where you can cook them on the stove top tables. They bring out beef, calamari, clams, mussels, shrimp, fish cakes, and spicy broth.
In Vietnamese cuisine, hot pot is called lẩu. There are variations such as a salted fish base called lẩu mắm. There is a sour soup version called lẩu canh chua.
My mother prepares this dish often when we will be having a lot of guests over. Just like its Chinese origins, this dish allows us to hang around eating good food, chatting, and drinking. The version she likes, which is also common in Vietnamese cuisine, is lẩu Thai. This is a hot pot that combines the influences of Vietnamese and Thai cuisine. The soup uses Tom Yum base which is spicy and sour. We put in green onions, king trumpet mushroom, napa cabbage, white beach mushroom, salmon, squid, beef, shrimp. My favorite ingredient is squid, which is scored in a criss cross fashion which allows it to curl up while it cooks and makes it easier to chew.
Hot pot is a very popular dish that is enjoyed throughout East Asia. I hope everyone is able to experience this delicious dish and its social aspects.

大家好! Pa and I revisited the little Japanese restaurant which serves healthy salmon hotpot. This time, we decided to try their other menu items. Pa ordered unagi kabayaki with rice and I had oyako don. We shared spinach in sesame dressing with bonito flakes and cucumber in sesame dressing. Pa finished his fish, rice and edamame but left the pickles and bamboo shoots untouched. The vegetables were soooo yummy! Fresh and crunchy, both the spinach and cucumber paired well with sesame dressing. As for my oyako don, tender chicken, silky egg and sweet onions on a bed of fluffy pearl rice? YUM. So coming back to try their other dishes!

Singaporeans love Thai cuisine; I'm no different. It's just that 9 months out of the year, we have very hot weather. It doesn't make sense to eat spicy food and make myself sweat even more! As we enter the rainy season, consuming more Thai meals is possible. Returning to the stall at the coffee shop near my home for WFH lunch, I ordered their green curry. The dish came with rice, crispy sunny side up and cucumber slices. Inside the little bowl of curry were chunks of chicken thigh, carrots and green beans. After devouring the egg because yum, I spooned a little gravy onto my rice, topped it with chicken and took my first mouthful. Although the basil taste was slightly too strong for my liking, this was delicious. The vegetables were cooked till tender and the chicken was firm and juicy. The gravy was lemak (rich) but not too gloopy. Will definitely revisit to try their other menu items!

ML, CL, MI and I returned to the coffee shop with the stall that sells yummy fish ban mian (board noodles). This time, I was in the mood for something different and ordered tom yum goong from the Thai food stall next to it. The fiery soup came with 3 medium prawns and 3 pieces of fish, each piece about half the size of my palm, tomatoes, oyster mushrooms and red onions. The seafood was fresh and the veggies tender, but the robust broth was the star of the show. Rich, tangy and flavourful, this was very tasty when spooned over rice. I had a hard time stopping myself from drinking it even though I wanted to reduce my salt intake. YUM! Will definitely revisit for this and to try their other menu items.
Although I don't live lavishly, especially during these uncertain economic times, I'm grateful for being able to dine out and enjoy moderately healthy meals pretty much daily. Many people in countries around the world are struggling with stubbornly high prices of basic essentials, including food. Whilst I count my blessings that I can eat well, my prayers go out to the Palestinians suffering immensely due to this genocidal war.

The world we currently live in is a very troubled one. I don't like it but this is our new reality, at least for the next few years. Living standards have dropped and will possibly remain lower for some time. If we don't adapt, we'll become very bitter human beings. It's much better for my emotional wellbeing to accept the way things are and will be until we achieve global peace. Today is the last Friday of the month; we get to leave the office 1 hour earlier, yay! We also have a gathering which I'll share about perhaps next week. 下次见!

Salmon Lentil Fancy Broth Thingie
Did not have many veggie ingredients today so tried my best.
300 g salmon. Bones and skin removed, peeled into chunks and placed in medium saucepan. Toss the bones. Place skin on foil and bake, around 250C for less than ten minutes until screaming and crispy.
1/2 - 3/4 cup red lentils. Wash properly and dump in with salmon chunks.
1 chicken stock cube and 1/4 tom yum or other stock cube.
Hot water into pot, just covering the salmon and lentils. On lowest heat, and set timer for 18ish minutes.
While pot and skin heat up:
Chop 1 baby wong bok roughly
Slice 2 internal stalks of celery, including the leaves, into crispy pudgy noodles
Time’ll be ticking down to around 10mins left on timer.
Then to the soup add:
- The oil from the baked salmon skin
- 1/2 tablespoon each of rice wine and sesame oil
- 1/2 teaspoon each of white pepper and chilli powder and ginger, slightly more of black pepper. Salt if you want it, I did half teaspoon.
Time at 5minutes left, add the rough-chopped wong bok and increase the heat slightly.
Once done, ladle into bowl at portion size of choice, mine was around half of the total.
Place the celery noodles and crispy salmon skin shards on top. The soup is very in-your-face, especially salt-wise. So if not celery would be cold lettuce or elbow pasta, something like that. To balance out.
