The Two Minute Road To Happyness : My Discovery & Rediscovery of the Humble Maggi.
It happened just yesterday - I stood at a counter in a grocery shop well distant from the rest [ for all future purposes, this is being written at the time of the Corona Lockdown in India, and currently at Bhubaneswar. ], with a cart full of random food stuff, amongst which were all the TopRamen Curry (the best flat-noodles, everrr!!!) the shop had in stock. I looked across the partition, and there was this lady on the other side with her son, who didn't seem older than 10 years, constantly staring at her with puppy-eyes as if earnestly requesting for some treat while pulling down on her dupatta - forcefully enough to warrant attention, yet careful enough of the barrage that could ensue. And inevitably so, she finally gave into those tugging and calmly reaffirmed her predicament, "There is no Yippee left; You'll have to eat maggi". With all that's going around these days - the cooking and studying - that moment had just skipped the register of memories, until today's lunch when I Swiggied. "Veg n Cheese Corn Maggi with extra Cheese" is what I ordered and was delivered to me in under an hour. The moment I opened the packet though, I was hit with a smell of nostalgia. It has been ages since ordered food had "that maggi smell" in it. Of course, the menu did say maggi - but, with an emphasis on the but, it never was that maggi which I knew. It was either some other brand, mix, or ingredients which didn't make it the maggi that it should have been. If Shakespeare would have asked me then, What's in a name? - I would have surely replied, "Something different".
My tryst with Maggi was like any other kid of the early 90s. Easy to cook food, loved by the child and ate without a fuss. However, being an overweight child, in a very conscious family and yet giving into those wishes and cravings of mine - as my Mom at times was - I used to have maggi, once every fortnight. It could have been every week too, but I didn't want to bid adieu to french toast and thus reached an amicable truce. To be honest, maggi was the first thing I learned to cook (everyone's is), but rather learnt to experiment (which till date is how I cook anything). To adding spices and eggs to bournvita and ghee - I have had conjured all sorts of maggi - and never was a bowl wasted. I learnt how Soy sauce works, when once I had accidentally put half a bottle in a 2 cake maggi, and covered it up with sugar, for Taste!
However what fascinated me the most, and still does, is the taste maker. I can wager you anything for the statement that follows : Go to any hostel, get hold of the guy who wastes the most, and I am more than sure, even he/she would have patted the Tastemaker packet enough till every ounce fell into the mix and made sure any stary bits were properly licked. Thus, was the magic of that pandemonium of a multitude of spices and aroma that created such a distinct timid yet tempered flavour, one that suits, fits and satiates every palate.
In those times, when Chowmein was luxury, Ramen wasn't available, fastfood was looked upon and a Sunday breakfast meant the entire family at the table - Maggi was the perfect garnish. And not just family, friendships have been forged under the evaporation of the maggi mix. In school the maggi cake (cold maggi in shape of a cuboid tiffin) was the first to be eaten, notwithstanding who got it. The first time the entire boys' hostel of AIIMS Bhubaneswar congregated in a room was when someone took out his induction and cooked maggi. The first time me and the two roomies of mine got into a fight of who would do those dishes, was after a maggi meal. So much was maggi attached to me, and us, that in our batch magazine, the caption under my pic reads, "No one is alone while eating maggi" (thanks, Akshat!). And yes, all those were the stories of maggi - no Yippee, or WaiWai, or Pasta, or TopRamen or anything; plain and humble maggi. Yes, it never took two minutes to make, yet it was a wonder wrapped around a piece of yellow plastic.
It is said, Imitation is the truest form of flattery - and it's true when you see the variants available as options once you go to a store to get stuff. From brands to flavours, from taste to time taken to prepare - there is a plethora of option to choose from. Children these days know more about how which Instant Noodle (towards the end of the article, I mention the actual technical name for the first time!) goes with what sauce and what dip and so on; whereas, for me it was a bit soupy maggi, with tomato sauce, and a bit of chilli sauce - four gulps - and an empty bowl. Those were easier times it seems, and yet every child under 15 now will differ.
In hindsight, years have passed since those days when Maggi was a delicacy. Gradually as food style changed it just transformed for something looked upto to something looked down upon as being unhealthy and harmful. Everyone remembers the year maggi was banned, and maybe it was that watershed moment that made us look elsewhere. New flavors and taste became the norm while the OG of Instant Noodle was pushed into retirement. Also, I have nobody else to blame rather than me - in the meantime I became a connoisseur spaghetti, a lover of lasagna and a preacher of the perfect bechamel sauce pasta; and buried within all this was that guy who didn't even use a spatula but a fork and a spoon, checking the salt and pepper and "masala" in the water (just as Sanjeev Kapoor would have) while I was making something basic. But, the truth was, it was fun, it was love for the food. I wasn't trying to make something worthy of an Insta post or just a quick belly fill - but was putting in hardened effort to make something which I would sit in front of the TV and gobble it upto Mahabharata or Shri Krishna. Surely those days are gone, but not the characters involved (and also Mahabharata is re-running now).
So, when I opened my lunch I realised, how far have we come since those days. It was necessary and inevitable, but yes there always will be a longing, to go back to those "easy" days. As I always had a high BMI, I was always kept in check of the amount and quality of food that my mom cooked, and I always thought, once I go out of this cocoon I will eat whatever I wish for - sans restrictions. And so I did that, and a decade latter ask me, I will always wish to go back to that Santula and Badhi Chura (Odia dishes - Google It).
Here I am at a crossroad of time when I can make the finest Amuse-bouche or any hors d'oeuver right upto the dessert (and everything in between) - but will eagerly and happily and unflinchingly go back to the time when I could have some ghee on rice and posto-bara to call it a feast. The depth of this wish is, as a very good friend of mine would say, Unfathomable.
And as I finished my lunch, and was back on track to this semi mundane life of mine, I stopped for a while, and asked myself - Won't it be nice, to have a Sunday breakfast, with both Maggi and French Toast. Mama wouldn't say yes, maybe now she would.. But think, the dilemma aside, wouldn't it be aweosme?

A pulse oximeter is neither a luxury nor a requirement. To most it feels as if it randomly displays a value greater than 96 most of the times and I am not denying it. It Does! And, I was the last person to need it. However, it was not to be so for long. To give a certain context to it, grab hold of any of my PG colleagues who have ever gone out for shopping with me, and they will attest to the fact with a stomp of their foot that ย I should never be left ย in a supermarket alone or unsupervised. The first time they did that I came back to room with an assorted set of 10 Pringles that didnโ€™t even last a week; and the last time they did that (which was by the way yesterday), I brought back along with 15 packs of Amul Masti, a pulse oximeter. Did I need it? No. Did I think I need it? Even No. Did the seller ask me if I wanted a pulse oximeter and I say a Yes? YES!
So today at noon as I was fleeting through reports of patients (well forgot to introduce myself โ€“ I am Dr. Saurav Nayak currently pursuing Post-graduation in Biochemistry at AIIMS Bhubaneswar. Hi!) my mom called me up to inform the cough my father was harbouring since last week. It had gotten worse.Thus when they tested for COVID-19, they tested positive. To be honest I accepted the diagnosis with alacrity. Both were almost asymptomatic and were well toned. At least them having been tested will keep them on the path of caution and safeguarding self. As I hung up giving the usual mediocre advice which you can when a pandemic is in full swing, I realised as to where does that leave me. I had recently visited home and was well in contact for several hours without any precaution, and to add to it I have not ever got tested. It was 1:30 PM by my clock and at 2 the collection of sample stops. So, I literally ran (and with my size, I weigh 20 stones, it just looked figuratively). Battling the usual queue and chaos I finally was successful in providing my sample and was all-a-hoping to get my results as soon as I could. In hope it would rest.
As I was deemed to be a contact at the moment, I provided my sample, I was under room isolation and the official beginning of โ€œEl Cuarentenaโ€. To be honest at first it was all bubbly fun. No work for 14 days, no duty hours, no waking up, no getting sterile for work โ€“ I was getting ahead of myself, but at that moment it was as fun as it could be. I hadn't started taking it seriously at all, still roaming around in the corridor, chatting with people, with a mask on and at a distance, but still chatting.
It has been well documented that realisation hits hardest when you try to be aloof of it, and I just presented more surface area for the same. So, when my friends left for hanging around and I kept to my room, I just realised what I have gotten into. The smile vanished, the fun vapourized, and the veil of non-consequence just undraped itself. You see, infallibility is an inherent delusion which is too persistent. It breaks only when you are hit at your Achilles' heel. That is when I found out that I wasnโ€™t afraid or frightened of staying alone but of missing out those 15 days which were mine. It was not just about missing out the days, honestly, COVID had already shot down all plans and parties but still it did linger. I was never an โ€˜isolationโ€™ person, and the last time I was bound by four walls the results were not good. All that apart I had something coming.
I had still not been reported of my results, and in all probability that would have to wait till the next day. I had hoped the time would slow and stop. Nothing of that sort happened. Preparation for UPSC exams , enough food and a sleepy head made sure that my time flew as swiftly as it could, and there I was on a cliff-hanger on a rather secluded cliff with a dry ocean bed waiting for a thud.
And as I was about to sleep, the last thing I did for the day was to check my luck and see what random numbers came up on the display of my pulse oximeter when I put my finger in.

Cheesecake but not a Cheesecake! Close to a decade ago, I walked into a small restaurant called Dalma in Koramangala, Bengaluru having no idea about Odia Cuisine. I pretty much enjoyed the Chingudi Besara & the khattas in the thali but what really captivated me was this caramelised gorgeousness in the glass shelf. One bite of it, I was in love with Chhena Poda. I would often request my college mate Sutapa Mishra to bring me some every time she would visit Bhubaneswar. Chhenapoda is believed to be an invention of Sudarshan Sahoo, when he set up a sweetmeat shop in Nayagarh right at the time we received our independence. Chhena based sweets are believed to be in existence in Odisha for a long time & to me they taste best. The number of sweetmeat shops around Jagannath temple, Puri is a class apart & I couldn't resist eating the Chhena Poda, the Kheer & the Rasagola there. Day before yesterday I decided to bake my version( Recipe: Veg Recipes of India). 2 litres of milk was split using lime juice to extract Chhena by hanging it in a muslin cloth. The whey wasn't discarded and was used to make sambhaaram. The cheese curds was then mixed with powdered jaggery ,a tsp of samba wheat semolina ,a pinch of baking soda & chopped cashews to a cake like batter consistency . The original recipe called for flavoring with cardamom powder. I instead used the pumpkin spice & some lemon zest . The traditional way is to bake it in sal leaves, but I used Banana leaves instead by heating them in flame to make it pliable. This was lined in a baking tray & baked to close to an hour at 200 degree Celsius till it became a bit caramelised at the top. I wanted to achieve more caramelisation but I was scared that it will go dry if I bake longer. The final product was moist and quite nice with a distinct banana leaf baked flavor. Bhubaneswar:
Intensifying its battle against COVID 19, the Odisha government has announced a 48-hour total shutdown, akin to curfew, in the state capital Bhubaneswar and Bhadrak town from 8 pm tonight, the stateโ€™s top official said.
The lockdown in force in other parts of the state will continue during which essential supplies like groceries, vegetables and milk will be available to people.
However, all shops selling essential commodities will remain closed during the shutdown in Bhubaneswar and Bhadrak towns, Chief Secretary AK Tripathy said.
Only select medicine stores will be open, he said, adding the local administrations will decide on which pharmacies will continue to function.
Of the five COVID-19 cases detected in Odisha so far, four are in Bhubaneswar and one in Bhadrak.
โ€œThere will be total shutdown in Bhubaneswar and Bhadrak district headquarters town for 48 hours from 8 pm of Friday till 8 PM of Sunday,โ€ the chief secretary said.
Justifying the action, Mr Tripathy said the 48-hour shutdown is required in Bhubaneswar and Bhadrak towns in order to prevent community transmission of the highly infectious disease.
All passes issued for the lockdown period will also remain suspended during the total shutdown in Bhubaneswar and Bhadrak.
The situation during the 48-hour shutdown will be like curfew but people need not panic as it is a precautionary measure against the spread of COVID-19, said Director General of Police P Abhay.
Stringent action will be taken against violators of the shutdown guidelines, he said. ย

Coronavirus Outbreak: Centre extends lockdown till 17 May but eases restrictions; 1,755 new cases, 77 deaths reported in 24 hrs
India reported another surge of COVID-19 cases on Friday with a record 1,755 patients testing positive and 77 people dying from the novel coronavirus that has claimed over 2,33,000 lives and shattered global economies since it originated in China's Wuhan city in December last year.
The confirmed cases in the country climbed to 35,365 while deaths reached 1,152 as theย Centre extended the nationwide lockdown till 17 May.
Prime Minister Narendra Modi had first announced a 21-day nationwide lockdown from 25 March, which was later extended by two more weeks till 4 May to contain the virus spread.
On Friday, the Centre announced a third extension but this time, it provided some relaxations for various business activities and people's movement within areas with limited or no COVID-19 cases.
In fact, on Friday morning, the first train carrying around 1,200 people left Lingampally in Telangana to Hatia in Jharkhand by a 24-coach special train on a pilot basis, while another train carrying migrant workers stranded in Kerala left for Odisha's Bhubaneswar on Friday night.
Later in the day, the Centre announced that states and Union Territories will be able to avail "special train service" to bring stranded migrant workers, students and tourists home, provided they are willing to pay for it and both host and destination governments mutually agreeย to the movement of the people.
The government on Friday also announced that it has ramped up production of COVID-19 protective gear and medical equipment, giving a boost to its fight against COVID-19 and reducing it dependency on foreign countries for these items which are in high demand globally due to the pandemic.
The Centre on Friday said it has placed order for 2.22 crore personal protection equipment (PPE), of which around 1.43 crore will be procured from domestic manufacturers and the rest imported.
Separately, Chief of Defence Staff General Bipin Rawat announced at a special press briefing, along with the three service chiefs, that the armed forces will express their gratitude to all "corona warriors" on Sunday by conducting fly-pasts, showering petals on hospitals treating COVID-19 patients and illuminating naval vessels.
Besides, the Army will conduct mountain band displays along some COVID-19 hospitals in almost every district.
Rawat also said it is not proper to conclude that the novel coronavirus outbreak is a result of biological warfare.
US president Donald Trump has often claimed that the deadly virus originated from a virology lab, but his comments undercut a rare public statement from his own intelligence community, which stated no such assessment has been made by them, whether the COVID-19 outbreak began through contact with infected animals or if it was the result of an accident at a laboratory in Wuhan.
COVID-19 cases as of Friday
In its 5 pm update, the Health Ministry said the toll due to the novel coronavirus rose to 1,152 with 77 fatalities reported since Thursday evening, while the number of cases saw a record jump of 1,755 to go up to 35,365 cases on Friday.
The number of active COVID-19 cases stood at 25,148 while 9,064 people have recovered, and one patient has migrated, the ministry said.
"Thus, around 25.63 percent patients have recovered so far," a health ministry official said.
The total number of cases include 111 foreign nationals.
A total of 77 deaths were reported since Thursday evening, of which 27 fatalities were reported from Maharashtra, 17 from Gujarat, 11 from West Bengal, seven each from Madhya Pradesh and Rajasthan, three from Delhi, two from Andhra Pradesh and Uttar Pradesh and one from Karnataka.
Of the 1,152 deaths, Maharashtra tops the tally with 459 fatalities. Mumbai on Friday recorded 751 new COVID-19 cases, the highest in a day, taking the number of coronavirus positive cases in the city to 7,625, civic officials said.
Gujarat reported 214 deaths, follwed by Madhya Pradesh at 137, Delhi at 59, Rajasthan at 58, Uttar Pradesh at 41 and West Bengal and Andhra Pradesh at 33 each.
The death toll reached 27 in Tamil Nadu, 26 in Telangana, while Karantaka has reported 22 deaths.
Punjab has registered 19 fatalities so far. The disease has claimed eight lives in Jammu and Kashmir, four in Kerala while Jharkhand and Haryana have recorded three COVID-19 deaths each.
Bihar has reported two deaths, while Meghalaya, Himachal Pradesh, Odisha and Assam have reported one fatality each, according to ministry data.
According to the ministry's data updated in the evening, the highest number of confirmed cases in the country are from Maharashtra at 10,498 followed by Gujarat at 4,395, Delhi at 3,515, Madhya Pradesh at 2,719, Rajasthan at 2,584, Tamil Nadu at 2,323 and Uttar Pradesh at 2,281.
The number of COVID-19 cases has gone up to 1,463 in Andhra Pradesh and 1,039 in Telangana.
The number of cases has risen to 795 in West Bengal, 614 in Jammu and Kashmir, 576 in Karnataka, 497 in Kerala, 426 in Bihar and 357 in Punjab.
Haryana has reported 313 coronavirus infection cases, while Odisha has 143 cases. A total 111 people have been infected with the virus in Jharkhand and 57 in Uttarakhand.
Chandigarh has reported 56 cases, Assam has 42 while Himachal Pradesh and Chhattisgarh have registered 40 infections each so far.
Andaman and Nicobar Islands has 33 COVID-19 cases while Ladakh has reported 22 infections so far.
Meghalaya has reported 12 cases, Puducherry has eight cases while Goa has seven COVID-19 cases.
Manipur and Tripura have two cases each, while Mizoram and Arunachal Pradesh have reported a case each.
"Our figures are being reconciled with the ICMR," the ministry said on its website adding, " 393 cases are being assigned to states for contact tracing."
States wise distribution is subject to further verification and reconciliation, it said.
Centre extends lockdown till 17 May, names 130 districts as red zones
While several countries including Italy, Switzerland, New Zealand, Austria and various states of the US have begun easing their respective lockdowns, the MHA on Friday announced that the nationwide lockdown will extended by another two weeks, starting from 4 May, a day after the second phase ends, till 17 May.
The MHA's announcement came after the Ministry of Health issued a new list of districts categorised into red, orange and green zones depending on the virus-load. The updated list shows 130 districts in red zone, 284 in orange zone and 319 in green zone.
This classification of districts is to be followed by states and UTs till 10 May and the will be revised on a weekly basis or earlier if required.
All major urban centres including Mumbai, Delhi, Kolkata, Hyderabad, Pune, Bengaluru and Ahmedabad have been designated as red zones in the new classification.
Announcing the guidelines to be followed for third phase of the lockdown, the MHA said that some activities such as air travel, rail, metro and inter-state movement by road, running of educational and training institutions, hospitality services, cinema halls, malls, gymnasiums and sports complexes, will remain prohibited throughout the country, irrespective of the zone.
All social, political, cultural and other kinds of gatherings and religious places or places of worship for public will also remain shut, as per an order issued by the Union Home Ministry.
Outside the containment zone falling within red zones, certain more activities will be prohibited and these include plying of cycle rickshaws and auto-rickshaws, running of taxis and cab aggregators, intra-district and inter-district plying of buses, as also barber shops, spas and saloons.
Activities allowed in red zones with restrictions would include movement of individuals and vehicles for permitted activities, with a maximum of two persons (besides the driver) in four-wheelers and with no pillion rider in two-wheelers.
E-Commerce activities in red zones are permitted only for essential goods. Private offices can operate with up to 33 percent strength as per requirement, with the remaining persons working from home.
Commercial and private establishments allowed in red zones include print and electronic media, IT and IT enabled services, data and call centres, cold storage and warehousing services, private security and facility management services, and services provided by self-employed persons, except for barbers.
In orange zones, taxis and cab aggregators will also be permitted with one driver and one passenger only, while inter-district movement of individuals and vehicles will be allowed for permitted activities only. Four-wheeler vehicles will have maximum two passengers besides the driver and pillion riding will be allowed on two-wheelers.
In green zones, all activities are permitted except those prohibited throughout the country irrespective of the zone. However buses and bus depots can operate with maximum 50 percent capacity.
MHA allows movement of stranded migrants, students, pilgrims by special trains
On Friday, the MHA also announced that states will be able to use trains for ferrying people stranded due to the nationwide lockdown to their respective states.
Exercising the powers conferred under the Disaster Management Act, Union Home Secretary Ajay Bhalla said the movement of migrant workers, pilgrims, tourists, students and other persons stranded at different places is allowed by special trains to be operated by the Ministry of Railways (MoR).
The MoR will designate nodal officers for coordinating with the states and Union territories for their movement, he added
"The MoR will issue detailed guidelines for sale of tickets, and for social distancing and other safety measures to be observed at train stations, platforms and within the trains," the home secretary said.
These trains will run provided "on request from both the Originating and Destination State Governments".
News agency PTI quoted railways officials as saying that state governments will be charged the fare of ferrying stranded people in special trains back to their native places.
Joint Secretary in the MHA Punya Salila Srivastava said that states and the Railway Board will make the necessary arrangements for the transportation of stranded people.
Underlining that some problems are cropping up in the movement of trucks and load carriers, Srivastava also said the MHA has again written to the states, reiterating that no separate pass is needed for trucks and load carriers, including the empty vehicles.
Centre orders 2.2 crore PPEs; 1.43 crore to be manufactured in India
The Centre on Friday said it has placed order for 2.22 crore personal protection equipment (PPE), of which around 1.43 crore will be procured from domestic manufacturers and the rest imported.
"Earlier, there was no domestic manufacturing of PPE in the country and almost all of them were imported. We now have 111 indigenous manufacturers," said PD Vaghela, the Secretary of the Department of Pharmaceuticals and Chairman of the Empowered Group-3, adding that the number of PPEs ordered is higher than the projected demand of two crore PPEs.
Vaghela also said about 19,398 ventilators are available in India and orders have been placed for 60,884 more, and of these 59,884 will be made by domestic manufacturers.
The Ministry of Health has indicated a projected demand of 75,000 ventilators till June, 2020.
"Against the same, the present availability is about 19,398. Out of the total orders placed, 59,884 ventilators have been ordered to domestic manufacturers and imports are to the tune of 1,000 ventilators," he said.
He said of the total 2.49 crore N-95/N-99 masks to be procured, 1.49 crore have been ordered from domestic manufacturers and about one crore N- 95 masks are being imported.
On production of drugs and other medical equipment, he said, "HCQ (hydroxychloroquine) production has increased from 12.23 crore to 30 crore (tablets) per month."
He further said that over four lakh oxygen cylinders are available which is "sufficient for today's requirements". "Orders for more than 1 lakh oxygen cylinders have been placed and industrial oxygen is being converted into medical oxygen," he added.
He also informed that against a demand for 35 lakh combined RT-PCR testing kits, the ICMR has ordered more than 21 lakh and close to 14 lakh kits have already been received.
