White tea:

~ was probably first produced during China’s Tang Dynasty (AD 618–907) 

~ during China’s Song Dynasty, was ground and then whisked into water to create froth

~ leaves are harvested only on sunny days

~ of all the teas produced, is the least processed

~ is brewed at lower temperatures so as not to ruin the flavor of the tender buds and leaves

#531 China Pai Mu Tan (white classic) (photos below)

PREPARATION: 3 g tea leaves (2 heaping tsp) per 8 oz cup of filtered water, boiled and cooled to 70°C/158°F; allow to brew 2 minutes

INGREDIENTS: White tea from Fujian, China

LEAF: Minimally oxidized large leaves,many of them full leaves, along with the occasional down-covered silvery bud

INFUSION: Pale gold

AROMA: Subtle earthy woodiness

LIQUOR: Like its aroma, with a dry but not bitter aftertaste

PAIRING: On its own or with a light summer salad

#1030 Lemon Vanilla (white aroma) (photos below)

PREPARATION: 3 g tea leaves (2 heaping tsp) per 8 oz cup of filtered water, boiled and cooled to 70°C/158°F; allow to brew 2 minutes

INGREDIENTS: White tea from India, lemon grass, lemon myrtle, vanilla pieces, and natural flavor

LEAF: Classic, minimally oxidized, large leaves—representative of most white teas—generously sprinkled with lemongrass pieces, along with vanilla bits

INFUSION: Bronze

AROMA: Lemon and vanilla are foremost

LIQUOR: The lemon and vanilla flavor gives way to the woody earthiness of the white tea

PAIRING: The flavors are enhanced when iced; nicely pairs with a buttery shortbread

PREPARATION: 3 g tea leaves (2 heaping tsp) per 8 oz cup of filtered water, boiled and cooled to 70°C/158°F; allow to brew 2 minutes

INGREDIENTS: White tea, elderflower blossoms, and natural flavor

LEAF: Classic, lightly oxidized, large leaves, with a scattering of elderflower blossoms

INFUSION: Orangy-gold

AROMA: Sweet, floral

LIQUOR: The strong elderflower is well balanced by the earthy, woody white tea

PAIRING: The flavor is more intense when iced; perfect on its own

Blue Pea Flower Tea We tried the pretty Blue Tea made with Butterfly Pea Flowers 💙 This tea has been around for a long time, popular across South East Asian countries for it’s colour and also used as a natural dye. I did get confused initially because the instructions said to add a teabag to water but I’d ordered loose tea as I’m trying to cut down on waste! The taste is rather mild despite the rich colour with a earthy smell. Solar mint tea had been essential in the heat we have had this summer. Especially being without power for a few days, having something to cool the body internally is key. Since mint proliferates so much you can make as much as you want all summer long! All you need is a clear glass jar (bigger the better) Add two parts water to one part mint. Muddle the mint leaves by ripping them apart a little but before put in the jar. Let it sit in the sun for 4-12 hours. Strain the mint and if you can put the tea in the fridge! Solar infusions are what @medicalmedium calls living water because you literally recharge the water from the sun after it has been stripped away of vital nutrients from filtering. Another thing I like to do is make ice trays out of the tea so I can add a couple cubes to water at a future date. Chinese Mint is called Bo He In traditional Chinese medicine. It has pungent, aromatic and cooling properties. Mint is associated with the Lung and Liver meridians, and is used to expel wind heat, clear the head and eyes, clear up rashes, and remove liver qi stagnation. Taken orally, mint is used to treat diarrhea and painful menstruation, promote perspiration and dissipate body heat.
