“Beans, beans, good for your heart…”
You probably remember that little chant that was popular among second graders, at least at my elementary school. It lightheartedly reminds us of the cardiovascular benefits of eating legumes… among other things!
Turns out that there may be some truth in the old nursery rhyme. While it’s true that beans contain certain heart-healthy benefits (and on the downside, yes, they can cause flatulence as well), the health benefits of beans are not quite so cut and dried.
Why Are Beans Controversial?
Vegans and vegetarians often rely on black beans, lentils, and other bean varieties as their main source of protein. However, diets like Paleo and keto avoid beans entirely because they contain controversial compounds called lectins.
There are also different grades of beans. While chickpeas (or garbanzo beans), navy beans and many others are a good source of B vitamins, most Americans get their fill of beans from unhealthy soy products, which are devoid of such beneficial nutrients.
Peanuts are also technically in the bean family, as they’re classified as a legume (and not a nut). Sadly, allergies to peanuts are on the rise, especially among children.
Here’s the lowdown on the pros and cons of eating certain types of beans, and how you can prepare them to maximize their nutritional value.
The Pros: Health Benefits of Beans
There are quite a few nutrients packed into the humble little bean. They’re rich in dietary fiber, they’re a great protein source, and they contain vitamins like folate and iron.
They are also generally low-fat and contain few calories, making them a staple in the Mediterranean diet and slow carb diet.
It also turns out that the second graders in my class were right: Beans may, in fact, be good for your heart health! One study found that pinto beans, in particular, helped to reduce LDL cholesterol, lowering the risk of heart disease.
Another study showed that eating baked beans helped reduce risk factors for type 2 diabetes, while other research finds that eating kidney beans can help reduce inflammation in the colon. And if you’re trying to lose weight, good news: yet another study found that bean consumption is associated with smaller waist circumference, lower body weight, and even reduced blood pressure.
But before you go crazy eating high fiber beans for every meal, we need to understand their risk factors, and how to mitigate it.
The Cons: Can Beans Be Unhealthy?
The biggest problem with beans is that they contain lectins, which are also present in high amounts in grains. Lectins essentially act as thorns do in rose bushes — as a protective measure for the plant. Instead of prickly deterrents that harm our skin, lectins assault our digestive systems, prompting predators (or consumers like us) to stay away.
One of the experts I look to most on this topic is Dr. Steven Gundry, renowned heart surgeon and author of the book The Plant Paradox. He explains in our podcast interview:
Lectins are a sticky plant protein, and they’re designed by plants as a defense mechanism against being eaten. These plants don’t want to be eaten… so one of the ways they fight against being eaten is to produce these lectins, which like to bind to specific sugar molecules in us or any of their predators. And those sugar molecules line the wall of our gut. They line the lining of our blood vessels, they line our joints. They line the spaces between nerves. And when lectins hit these places, they are a major cause of leaky gut. They can break down the gut wall barrier. They’re a major cause of arthritis, they’re a major cause of heart disease, and they’re a major cause, in my research, of autoimmune diseases.
We can understand from this that some lectins are more toxic than others, but all lectins have some effect on the body. This is the reason that grains, beans, and other lectin-containing foods cannot be eaten raw. In fact, ingesting even just a few raw kidney beans can cause vomiting and digestive problems.
Another problem with lectins is that they can contribute to obesity and diabetes. Lectins can bind to any carbohydrate-containing protein cells, including insulin and leptin receptors, desensitizing them. Without proper insulin and leptin function, problems like metabolic syndrome can emerge.
How to Reduce Lectins in Beans and Grains
Fortunately, it’s possible to reduce the number of lectins in beans and grains by using certain traditional cooking methods. Sprouting, fermenting, soaking, and pressure cooking are all useful ways to cut down on lectins, but keep in mind that none of these methods will remove the lectins completely. You can also buy certain brands that have taken some of these steps, so you don’t have to do any of the prep yourself.
You may choose to avoid beans entirely, but if your body isn’t too sensitive to lectin, you can reap the beneficial fiber content with these preparation methods. Start by enjoying a half-cup or so at a time to see how you feel. You might also want to get your cholesterol levels checked before and after you try these methods!
How to Soak Beans
The easiest way to remove lectins prior to cooking is to soak dry beans overnight. For best results, cover the beans completely with cold water, and add a little baking soda to help neutralize the lectins further. Since the lectins will release into the water, try to replace the soaking solution at least once or twice. Drain and rinse a final time before cooking to ensure you’ve removed as much as possible.
How to Sprout Beans
If you want to take it a step further, you can sprout the beans after you’ve soaked them. To do this, its best to use special sprouting seeds, which are free of any bacteria that would be killed if you were simply boiling them as usual.
After the soaking process, put the beans in a mason jar with a sprouting lid, or a cloth secured by a rubber band. Invert the jar over a bowl, and set it on the kitchen counter out of the way. You should see sprouts within a day, but you can keep sprouting them for a bit longer if you prefer. Just be sure to give them a rinse once a day. How to Ferment Beans
If you like your beans a little funky, fermentation might be the way to go. Like the sprouting process, you’ll want to start with rinsing and soaking your beans, except this time you want to cook them.
I recommend boiling them for at least an hour on the stovetop, or throw the soaked beans into a slow cooker and set on low for six to eight hours. Next, add seasoning (like garlic or salt) and a culture, like kombucha, yogurt, or a culture powder you can buy at the store. Mash them up a little to get more surface area fermenting, cover, and store in a warm place for several days. Open the lid slightly every day to release the excess gas, then set in the refrigerator when done.
Serve your fermented beans as a side dish, or enjoy them as a refreshing side dish!
Use a Pressure Cooker
Another easy way to reduce and almost completely eliminate lectins is to cook foods in a pressure cooker, like an Instant Pot. This greatly reduces the lectin content of beans and is an easy and fast way to cook them.
As with the other preparation methods I mentioned above, I recommend soaking the beans overnight in several changes of water, then pressure cooking according to the manufacturer’s directions.
Buy Safe Brands
If you don’t want to go through the hassle of soaking and cooking the beans yourself, Dr. Gundry recommends Eden brand beans. They’re pre-soaked, cooked in pressure cookers, then stored in BPA-free cans. Go ahead and eat these beans straight out of the container for the ultimate low-lectin convenience!
What Level of Lectin Consumption Is Safe?
This is a difficult question with no single answer. Keep in mind that many foods contain lectins, not just beans and grains. We can’t avoid them completely. The key is finding a workable balance that minimizes the worst sources.
My personal recommendation is to soak, sprout, ferment, or pressure cook foods high in lectins, like legumes, seeds, nuts, and grains like barley, oats, and wheat.
Nightshade vegetables like tomatoes, potatoes, peppers, and eggplant also contain lectins, and these can be reduced by peeling and pressure cooking.
What I Do to Avoid Lectin
Personally, I avoid grains and legumes unless properly prepared, soak nuts overnight, and avoid all processed and commercially prepared foods, grains, and soy.
When I was actively working to halt my autoimmune disease, I avoided lectins much more carefully. Similarly, if you are overweight or attempting to lose weight, a more stringent avoidance of lectins might be helpful.
For many, avoiding lectins for a year or so can help soothe the intestinal lining, improve gut bacteria, facilitate weight loss, and reduce allergy symptoms. If you or your children are suffering from unknown allergies or gut problems, try removing beans entirely from your diet to see if that helps.
The Bottom Line
While many people in the United States don’t sprout or ferment their beans and grains, it might be worth trying. After all, beans are proven to lower cholesterol and fight cardiovascular disease. On the other hand, if your gut health suffers when you eat beans, or your kids have a strong reaction to them, you might want to avoid them a bit more stringently.

Yes, I had a gastric bypass a few years ago, so I’m mostly fine now, but I‘ll write down everything I can remember. This got a bit long, because I also explained a bit about different procedures in case anyone is interested.
First, there were a lot, and i mean A LOT, of pre surgery checks to make sure I was healthy, psychologically stable and to make sure my insurance would cover it. They were annoying, incredibly time consuming and if I didn’t have the support from my family I wouldn’t have gone through with it.
As I said, I had a gastric bypass but that’s just one of the many different procesures. Basically there are three main procedures (blocking, restricted and mixed) with various forms of surgery. A short overview of the different procedures from Wikipedia (because I‘m no medical expert and I also don’t know the right medical terms in english): Blocking: Some procedures block absorption of food, although they also reduce stomach size.Restricting: Procedures that are restrictive shrink the size of the stomach or take up space inside the stomach, making people feel more full when the eat less (like the gastric band or gastric sleeve)Mixed: Mixed procedures apply block and restrict at the same time.
The gastric bypass falls into the last category and basically a part of my stomach got cut away, so I can eat less and loose weight.
What can you eat after surgery? You can eat practically everything, just less of it. For the first 4-6 weeks after surgery you‘re only allowed mushy food - mashed potatoes, soup, etc6-8 weeks after surgery you can start eating ‚soft food‘ - untoasted bread, soft noodles, bananas etc (i basically ate baby food because it was soft and convenient; also one glass lasted 2-3 meals) This is to make sure you stomach doesn’t have to process anything hard or „sharp“, because it‘s still healing. The first months are the hardest because although theoretically you can eat everything, your stomach might rebel against the slightest inconvenience - the noodles were too hard -> get sick, you thought you could eat a piece of bread? -> get sick, there’s a grain of sugar -> get sick (and by ‚get sick‘ i mean cramps, violent vomiting, sitting on the bathroom floor reevaluation all your life choices) For me the first few months were discovering what i could eat and what not - I was a bit lactose intolerant before surgery but now it’s really bad sometimes, I can’t really eat sweet stuff, meat, some noodles (spaghettis are demons), eggs,… now i know that sounds really bad and discouraging, but after a while of experimenting you get it and also those are my own experiences, people i know who went through the same surgery can eat like before, just less of it. Then my doctors told me that i shouldn’t eat and drink at the same time or that some people couldn’t do that anymore (i think they have to wait 15 minutes after they finished their meal before they can drink), but that never was a problem for me. Also you should take vitamins and drink protein shakes after surgery, which i don’t do, because i can‘t be bothered tbh.
As I mentioned I had my surgery a few years ago and for the most part I‘ve figured out what I can eat and what not and most of the time you‘ll just now, when your stomach isn’t ready for something, it’s just intuition. But I do still get sick sometimes, mostly because of lactose, sugar or wheat, sometimes because the food was too cold, sometimes because I ate too fast, but that’s my own fault tbh.
As for the weight loss part, I was a big idiot and didn’t really weigh myself before surgery, but I was around 160kg at my worst. Now I‘m around 90-95kg, which I know is still overweight and I probably should do more, but I‘ve maintained that weight for about 2 years now and before that and that’s also a big step for me since before that I was always gaining weight. The last three years I have attended the International Whisky Night at the Conexus Arts Centre in Regina, the closest thing we have to a major whisky festival in our province. Unfortunately, I haven’t been quite as good at writing about it after the fact! On average, I’ve tried almost 20 new items each time, so obviously I am in no shape to be writing well-considered posts in the moment.
However, after the fact there is plenty to talk about! I made it through 18 products that were completely new to me, so while my tasting notes may have slid somewhat as the evening progressed I think I still managed to get a fairly good sense of what was on offer. In this first post I’ll focus on four Canadian whiskies that I tried...one of which was against my better judgement.
The surprise hit of the Canadian offerings for me was Goodridge & Williams’ Northern Grains. I had tried their base level offering, Western Grains, at the previous year’s show and had been fairly impressed. It came across as a pretty standard Canadian, sweet, grainy, and pleasant, but didn’t win me over so much I’d spend the $45 a hit on a bottle. I might change that policy when it comes to the Northern Grains, however.
This one is mashed from winter wheat and malted barley, aged in bourbon barrels, and finished in French Oak wine barrels from the Okanagan Valley. Normally a red wine finish is one of my least favourite, but here the sum of its parts is appealing. The nose is like a nutty banana bread, cinnamon and nutmeg and oats combined with cherry. That carries over to the palate, with a cherry and raisin-led fruitiness combining with a pleasant touch of spice. It doesn’t have the bitter or tannic notes that a lot of red wine-finished ryes I’ve had in the past have been overwhelmed by. It was that rare neat-sippin’ Canadian whisky that proves so elusive. I haven’t seen it on a single shelf in town yet, but if I do (and the price isn’t too high) I will absolutely be giving a full bottle a try.
Canadian single malt seems to be a bit of a growth area over the last few years as well. Having my socks neatly knocked off by distilleries like Shelter Point and Two Brewers I am open to trying some more. Luckily, there was two offerings from Lohin McKinnon available at the International Whisky Night. Lohin is the flagship product of Central City Brewing + Distilling, best known for Red Racer beer. Lohin McKinnon is a three year old single malt that anchors their whisky offerings, though they have proven to be remarkably open-minded; limited products include whiskies aged in cocoa, tequila, and Niagara wine barrels. They have malted barley, chocolate barley, and rye. I love an experimental bent.
The standard Lohin is...fine. It didn’t wow me. It is very much like an Irish whisky, very fruity and floral with apple, cherry, pear, sweet orange, oak, and almond creating a pretty robust nose. That mostly translates to the tongue, though it also brings plenty of grain and some unexpected peppery spice out as well. But the more you drink the more bitter and tannic it gets, with a grassy earthiness and a hint of cocoa helping soften the finish.
The Peated variant did strike a chord, however. it builds on the backbone of the standard version, adding a lovely hickory smoke, with salty, peach, floral, citrus, and vanilla notes rounding out the nose. On the palate the smoke is gentle and well-integrated; it really blends well and balances the fruitiness. The grain shines through, with citrus and salt to bolster the sweetness. There is more spice than the standard version, and it does lead up to a similar bitter finish, which unfortunately makes it tougher to handle. But everything up to that point was pretty delightful!
As you can see from the photos, Wiser’s also rolled up with four of its ‘Alumni Series’ releases, distinctive and diverse whiskies created in conjunction with famous retired NHL players (and benefiting other retirees through a partnership with the NHLPA). The series is everything I’ve always wanted - a crazy combination of different mash bills, ages, and barrel make-ups. Ranging from 6-10 years and nearly as many different styles of barrels, it has been very cool to see a major company recognize the desire for experimentation that exists in the marketplace.
I have previously enjoyed the Paul Coffey and Larry Robinson bottlings; at this event I added the Lanny MacDonald and Darryl Sittler variants. I will probably follow up with a more comprehensive post once I’ve tried some more of them, but for the time being if you had to choose I would say go with the Robinson. It’s a good one.
The 2019 International Whisky Night marked the one year anniversary of the tarnishing of a legend: the first time I tried a Wayne Gretzky whisky, the red wine barrel finished version of his Canadian whisky line. It sucked! It sucked a big one. Since then, the company has issued a version finished in ice wane casks.
Great idea! Wrong product.
Like the red wine version (and countless other rushed-out, young, adulterated whiskies), the overwhelming top notes on the nose and palate is rubber bands. The nose builds on that unsavoury element wth burned sugar and a chemical sweetness. The palate repeats the rubber bands and gross sweetness, like the chemical flavouring in cotton candy or something. There’s probably some oak, as well as cloying, bitter spice. It’s pretty bad!
While those were the Canadian products I hadn’t tried before, there was plenty of others on offer. Most notably, Last Mountain Distillery from Lumsden had their terrific single malt and rye whiskies, as well as the incomparable Judd from Paperback Beverage Co. mixing up literally the best Old Fashioned I have ever tasted. Built on a solid backbone of his home-made barrel-aged orange bitters, it was an elegant and delicious cocktail that put the Wild Turkey booth’s orange Tic Tac-flavoured concoction to shame. If you get a chance to try Judd’s myriad products (vegan-friendly, largely) don’t miss it!
That’s part one of the International Whisky Night round-up. Odds are good I probably won’t finish discussing the rest of the night until next year’s edition, but I’ll try!

1917. Living Dead
This is called “Living Dead.” A horror story where if you read a pitchfork review, you become a bad band in seven days.
The man believes himself to be a ghost.
He lives alone in his home.
He has no friends.
His family is largely gone and forgotten.
Nobody seems to call on him—at least nobody who is important or personal to him.
At the holidays he gets no cards of greeting or good will.
He is dead, he thinks.
He is living as a ghost, the walking dead, the living dead, whatever you may call it.
He goes and turns up a Prince record really loud and dances to it. He doesn’t need to worry about neighbors anymore.
There is nothing to worry over his body any longer since he is dead, so he begins a strict diet of eating anything he wants.
He’ll eat large steaks, one after the other, and mashed potatoes and gravy, and bowls and bowls of cereal with tiny mountains of sugar landscaped over them.
He stops paying his torrential bills. No longer does he pay the electric, the heating, the water, etc., but he also no longer pays his damaging and accumulated debt from student loans and medical bills.
The invoices collect in all of his inboxes.
He begins not even dressing himself.
He’ll walk the yard naked, pretending to water the flowers.
The flowers, because it is autumn, have all died.
Some nights he sits in his dark house and wonders how he died.
He doesn’t wonder it often but when he does, it is like he is thinking at the very bottom of a grain silo filled with dry ice.
He will lose days wondering like this.
But never reaches an answer.
One morning he wakes up and finds himself weighing thirty pounds more.
He finds the bills, the notices of collection, piled up and waiting for him to do something about them.
He thinks, Ghosts do not gain weight. Ghosts do not keep getting billed.
At least not usually...
He goes outside and feels the sun on his skin.
He goes inside and looks at the obituaries online.
On one that isn’t him, he imagines his face. Under it, it says: FAILURE AT DEATH, DIED OF LIFE, STUPIDLY CAME BACK.

What is Barley Malt?
Malt is a cereal grain that after being sprouted is dried through in a process called malting. We Asked 16 Brewers: What’s the ‘Weirdest’ Beer You Ever Tried to Brew?
No idea or ingredient is off limits in today’s brewing world. There are beers made with Maine lobsters and Mangalitsa pigs, candied ginger and gingerbread cookies, human urine, Norwegian money, and yeast harvested from beard hairs (no, seriously).
Craft brewers are a creative bunch, and that means sometimes things get weird (even out-of-this-world weird). Here, 16 brewers share the strangest beers they’ve ever made.
“Like all brewers who were previously homebrewers, I dabbled in a lot of weird sh*t. But I think the weirdest beer I brewed was an imperial stout with Atomic FireBalls candy. I was hoping for a nice cinnamon-roast-sweet thing, but it ended up tasting exactly like beef jerky. That was a dumper. Another weird beer was my second brew ever, which was a fruited ‘lambic.’ I brewed this one with my college roommates, and we pitched a tube of White Labs Brettanomyces yeast, and nothing else for primary fermentation, not knowing that their pitch rates for Brettanomyces at the time were one-tenth the size of a normal pitch. Then to top it off after the extremely slow fermentation, we threw a bunch of old freezer-burned berries into the plastic fermenter. “My weirdest brew was a one-barrel batch of a kettle sour we did with Little Hug Fruit Barrels, those little sugary, fruity drinks we called ‘quarter waters’ as kids. We used no actual water, replacing it entirely with 800 containers of blue raspberry Little Hugs in the mash and sparge. The yeast struggled with the preservatives, fermenting very slowly and stopping a bit earlier than we had hoped. The final beer was bluish green, with a touch of sweetness, but tasted better than we feared. We also served it with lemonade as a shandy. People still ask us when we’re brewing the Little Hugs beer again.” — Ryan Diehl, Co-Founder and Brewer, Imprint Beer Co.
“The weirdest beer I made was a dry stout with mussels, about nine years ago when I had just discovered oyster stouts and I wanted to interpret it in a Neapolitan way. I still hadn’t opened the Birrificio Flegreo, but I dabbled in homebrewing and I decided to give it a try using mussels directly in the boiling process. The experiment turned out well and resulted in a slightly salted beer with a rich and persistent foam. I called it Stout & Co. because the Italian word for mussels is ‘cozze.’ I will absolutely retry the experiment!” – Chiara Bolognino, Co-Owner and Brewmaster, Birrificio Flegreo
“As homebrewers, there was a time we were experimenting a lot with the possibilities of gruit, changing hops for herbs. We tried all kinds of different herbs from our garden: alehoof, yarrow, mugwort… One of the most extreme versions was a test beer we made with gentian root, added both at the end of boil and on the cold side, together with bitter oranges. Because of our wild-yeast culture, the lactobacillus produced a lot of lactic acid. So it started pretty sour, but then gave way slowly to a long lingering bitter finish, as gentian root is one of the most bitter herbs. We took the beer to a festival in Amsterdam, Carnivale Brettanomyces, and it was definitely a love-it-or-hate-it beer. On a professional level, we made this beer again, but we decided to use aged hops in the beginning of the boil, just to temper the lactobacillus, and to use a bit less of the gentian root, to balance the beer more.” — Tom Jacobs, Co-Founder and Co-Brewer, Antidoot Wild Fermenten
“My supply rep stopped by the brewpub and happened to be carrying a small baggy of food-grade glitter. He asked me if I was interested — I know this sounds like a drug deal! — and I told him I wasn’t sure, so he left the glitter behind. A few weeks later I was blending a keg of What a Trip, a 10 percent ABV Belgian tripel with a prickly pear puree when out of the corner of my eye I noticed the small glitter baggy. It was just sitting there tempting me! I must have felt the magic in the brewery that day because I didn’t hesitate to sprinkle the glitter in the keg along with the puree. The result was quite magical. The beer tasted just how I expected with complex fruity esters, spice characteristics, and a melon-fig sweetness from the puree. While the glitter didn’t affect the taste of the beer, it was a feast for the eyes! When poured into a glass it danced around like stardust.” — Nacho Cervantes, Head Brewer, New Original Breweries
“The term ‘weirdest’ is way relative. For me, I’d have to say one of my ‘weirdest’ ideas was hatched on a trip to Italy when I visited a highly traditional acetaria, a place where they have been making real balsamic vinegar for generations. My first thought was: This stuff is awesome, how can I use it in a beer? Soon after I thought of a Flanders-style sour ale, as balsamic vinegar would not be out of character in that sort of flavor profile. So I brewed a base beer and aged it in red-wine barrels, as is how traditional balsamic starts off, with appropriate cultures and added balsamic in judicious amounts at points during a 20-month aging process. The result was our Philsamic (so named without my consent, which is another story), a balsamic vinegar-infused, wood-aged, Flanders-inspired sour ale we now brew at Area Two, our new wood-aging facility down the road from Two Roads. “I think it has to be our Nightwood, which we released recently but brewed back in the fall of 2016. It was meant to be a black Berliner weisse of sorts, using our usual turbid mash, short boil, aged hopping, and coolshipping, but using some local midnight wheat and foreign de-bittered black malt for color. While the wort hitting the coolship was jet black, after spontaneous fermentation in barrels it yielded an admittedly disappointing deep brown hue that we empurpled a bit with some local aronia and elderberry. And while we typically use barrels as a neutral, porous vessel for microoxygenation, here we also opted to extend the age of the beer to maximize contact with character barrels: port, red wine, and bourbon. “The weirdest beer I’ve made was an experimental imperial stout attempting to resemble coquito, a Puerto Rican holiday drink. I made a base imperial stout that was treated with nutmeg, cinnamon, vanilla, milk sugar, and lots of coconut flakes. I also soaked oak chips in rum to impart some of the rum flavor. Or, the most extreme beer I’ve made thus far is our latest bottle release, which is a full-bodied IPA with milk sugar, vanilla, and guava. The idea was to make a beer that could resemble a guava pastelito, a staple Latin pastry. “Weirdest thing we ever brewed was probably one of our most recent collaborations. We made a smoked helles with Westbound and Down, Pizza Port, and Freigeist. It was a slightly drunken idea during last year’s GABF. Most collaborations start out like this. We got green malt (malted but not kilned) from Coors, and got a local barbecue guy from Owlbear Barbecue to smoke the malt we got. We smoked it over local applewood and oak. We basically made smoked crystal malt. It took 24 hours to dry and smoke. Then we had to actually rub the acrospires off the malt before we could brew with it, which took eight of us like an hour to do!
