These vegan cookies combine the flavors of pumpkin, warm spices, and creamy white chocolate, with a hint of sea salt for a delightful sweet and salty treat. Perfect for autumn or any time of year!

Ingredients: 1 cup canned pumpkin puree. 1/2 cup coconut oil, melted. 1 cup brown sugar. 1 teaspoon vanilla extract. 2 cups all-purpose flour. 1 teaspoon baking powder. 1/2 teaspoon baking soda. 1/2 teaspoon salt. 1 teaspoon ground cinnamon. 1/2 teaspoon ground nutmeg. 1/4 teaspoon ground cloves. 1 cup vegan white chocolate chips. Sea salt flakes, for sprinkling.

Instructions: Preheat your oven to 350F 175C. Line a baking sheet with parchment paper. In a large mixing bowl, combine pumpkin puree, melted coconut oil, brown sugar, and vanilla extract. Mix well. Add flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves to the wet ingredients. Mix until well combined. Fold in vegan white chocolate chips. Using a cookie scoop or spoon, drop tablespoon-sized dough balls onto the prepared baking sheet, leaving space between each cookie. Sprinkle sea salt flakes lightly over the tops of the cookies. Bake in the preheated oven for 12-15 minutes, or until the edges are golden brown. Remove from the oven and allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
