Shengdana Usal
This is an authentic Maharashtrian Recipe and is loaded with protein, dietary fibre and magnesium. This shengdana usal minimal ingredients but gives a burst of flavours with every bite. The nutty texture of peanut blends with the spices and coconut, to give a magical outburst of flavours.
Preparation Time: 1 Hour 10 Minutes Cooking Time: 15 Minutes Total Time:1 Hour 25 Minutes. Serves for 2
Ingredients: Peanuts – 1 Cup Beaten Curd – 1/2 Cup Green Chilies - 2 Grated Fresh Coconut - 1/2 cup Cumin Seeds – 1 tsp Cloves – 1 to 2 Black paper powder – 2 pinches Ghee – 1 tsp Salt to taste Pinch of sugar
Method: - Soak peanuts for 1 hour - Heat ghee in a pan, add cumin seeds, cloves and sauté it - Crush green chillies and add to heat. - Add salt, black pepper powder and stir it well - Now add soaked peanuts and fry well - Add the water in which the peanuts were soaked - Add grated coconut - Cover with lid and let it cook on medium flame - Once the peanut has cook well, add beaten curd and sugar - Garnish with chopped coriander and serve hot or warm
Sabudana Thalipeeth
It is Maharashtrian delicacy and a simple and tasty roti recipe. This is an ideal meal when you break your fast and a healthy treat for all age groups.
Preparation Time: 10 Minutes Cook Time: 10 Minutes Total Time: 20 Minutes
Ingredients: Sago (Sabudana) - 1 cup Mashed Potato - 1 Crushed Peanuts - 1/4 cup Green Chilies - 4 Lemon Juice - 1/2 tbsp Coriander leaves - 5 Cumin Seeds – 1 tsp Salt as per taste Sugar - 1/2 tsp Ghee - 1/2 cup Yogurt - 1 Cup
Method: - Wash sabudana & drain it - Keep aside for 5-6 hours. Add some water if required - In a heated pan dry roast the peanuts till they crisp - Grind peanuts along with green chilies - In a mixing bowl add sabudana, mashed potatoes, peanuts and chili mix, cumin seeds, coriander leaves, lemon juice, sugar and salt - Mix and knead well. Divide dough into equal small spheres - Take a plastic thin, spread little ghee on it - Take one sphere of dough place it on plastic sheet and press it down with your fingers to roll it out. If it feels sticky, use little water - Now heat the frying pan and place the thalipeeth it. Drizzle some ghee - Cover with lid and let it cook on medium heat - Fry from both the side till golden brown - Serve hot with fresh yogurt
Varichya Pithachi Bhakri
This recipe is made of little millet. An easy to make recipe, this is a great breakfast idea too. This bhakri tastes best when served hot with Peanut Curry
Preparation Time: 10 minutes Cooking Time: 10 minutes Total time: 20 Minutes
Ingredients: Millet flour - 1 Cup Salt for Taste Water to knead dough
Method: - Take Millet flour in a plate add water, salt, chopped green chillies and keep kneading for 10 minutes until dough becomes smooth. - Shape the dough into 2 inch spheres - Take one sphere of dough place it on plastic sheet and press it down with your fingers to roll it out. If it feels sticky, use little water - On a heated frying pan put bhakri on high flame - Once it is done on one side, flip it and roast from other side. - Repeat the process for the remaining dough. - Serve hot

It’s horrid to imagine life without the occasional plate of sabudana khichri— that delightfully contrary dish that’s somehow soft and crunchy, zingy and comforting at the same time. Just as it’s sad that years can sometimes slip by without a single breakfast at Prakash Shakahari Upahar Kendra, purveyor of the most reliable sabudana vadas in Mumbai. Always crisp on the outside and air-light on the inside. Always worth the drive and the wait. Even worth the having to share a table with three disapproving gents who clearly want to consume their thalipeeth in chatter-free peace.
It is required to first soak the sabudana pearls in water before cooking, for it to rehydrate, when it swells up to almost double its size. Once the pearls are well-drained and pat dry, they are then stir-fried with other ingredients and spices to make the popular sabudana khichdi. There are of course certain tricks involved in cooking sabudana perfectly, or else you will end up with leathery and very chewy pearls. A practice that is followed by some home chefs is to also soak the pearls in curd or dahi for a few hours before making the khichdi. This is said to prevent the pearls from becoming sticky and chewy during the cooking process.

This is crispy, round-shaped snack that is sweet as well as spicy in taste. Having base as gram flour made into spirals stuffed with a mixture of coconut, poppy seeds, and sesame seeds. It is to be fried until it becomes crispy. It can be stored for months and can be served as an evening snack. It contains less cholesterol and fat and good for health.
• Mastani
We would have to drink one or two types of milkshakes in our day-to-day life. But, in Pune, you will get around 15-20 types of milkshakes known as Mastani. It contains dollops of ice cream, garnished with dry fruits and tastes heavenly. The natural fruit flavours in the milkshakes are thick and yummy. You can order according to your favourite fruit taste, topped up with ice cream and rose-syrup.
• Sabudana Khichdi
One of the most popular dishes in Pune is Sabudana Khichdi. The dish is a mixture of sago, mashed potatoes, peanuts and tomatoes thrown in spices. While the rest of the country only tastes the dishes during festivals, it's a normal dish for Punekars. It is almost pure carbohydrates and contains very little protein, vitamins or minerals. The addition of peanuts to Sabudana Khichdi contributes to the protein and makes it a more balanced meal. Due to the amount of starch and fat present, it has a high-calorie content.
• Thalipeeth
Thalipeeth is a popular type of multigrain pancake popular in Pune. The dough is made from a flour called bhajanee, consisting of roasted grains (rice, wheat, bajra and jowar), legumes (chana and udrad) and spices, usually coriander and caraway, as well as other vegetables and spices. It is an extremely healthy and nutritious breakfast dish. These flatbreads consist of multigrain flour, consisting of rice, wheat, bajra and jowar, mixed with onions, peppers and spices.
• Peanut Oil & Chutney
Cold-pressed peanut oil is usually sold at stores and supermarket as Punekars love this taste a lot. Every dish they eat, you can find a taste of peanut in it. The other product is peanut, jaggery, red chilli and garlic chutney that is sold in 100-gram packets. It tastes so yummy and anyone can have that with chapattis when you feel you won’t like your mom’s lunch.
• Amti
It is the well-known dal across Pune and made from tuvar with the addition of a spice mix called Goda masala. It is a blend of khus-khus, red chillies, desiccated coconut and dagadphool or stone flower. Even though it’s ordinary but the presence of goda masala makes it unique.
• Bhel
This is the most famous dish among youngsters and kids. People flock from different parts of the city to eat matkibhel, which is a mixture of bhelpuri with fine and crunchy sev, chillies& chutney served with chopped onions & lemon. One full plate is enough to put your stomach full.

The festival is an important one for Marathi and Konkani Hindus, who celebrate it by preforming ritual pujas, decorating their houses with colourful rangolis and feasting on traditional Maharashtrian fare. The main feature of Gudi Padwa is the Gudhi flag that is hoisted outside many Maharashtrian homes and which is said to ward off evil and bring prosperity. Gudi Padva is also known as Samvatsar Padvo and it coincides with Ugadi in Andhra Pradesh and Karnataka and Chaitra Navratri in North Indian states.

1. Puran Poli Recipe
A paratha-like flatbread stuffed with a rich, sweet and flavourful lentil stuffing is extremely popular in Maharashtrian homes and it is called puran poli. The stuffing is made from chana dal, which is boiled and ground to a paste. To this lentil paste, ground whole spices like fennel seeds, cinnamon, black peppercorns, etc. along with some ground jaggery are added. The covering is made from a mix of whole wheat and refined flour and after stuffing the dough with the sweet lentil filling, it is roasted with ghee on an iron griddle.

2. Kairi Panna Recipe
Kairi ka panna (also called in Marathi, Kairich Panhe) is a summer drink prepared from raw mango pulp, flavourful spices, jaggery, fresh mint leaves and rock salt. The drink is prepared by first cooking the raw mango pulp in a pressure cooker. The pulp is then separated from the fruit and then jaggery, cardamom powder and rock salt are added to the warm pulp. The ingredients are mixed and once it cools down completely, it is then diluted with water.

3. Shrikhand Recipe
Shrikhand is a hung or strained curd desi dessert that is popular in Gujarat and Maharashtra. Sabudana Vada, Snacks and Fast Items – Here’s what you can try
Fasting doesn’t have to be boring. Generally Hindus prepare special food with selected ingredients to be consumed during fast. You can find varieties of tasty easy snack recipes prepared during fast, out of which following are some special ones that are filling and can provide energy for the entire day. You can very well try these recipes and enjoy eating them with your loved ones.
Sabudana Khichdi
Another commonly prepared dish in Maharashtra and many other states in India during fasting is the delicious Sabudana Khichdi prepared by mixing together soaked sabudana, coarsely powdered roasted peanuts, sugar and salt.
Now heat some oil, crackle cumin seeds, curry leaves and add chopped boiled potatoes and sabudana mixture, stir it continuously on low flame and then ganish coriander leaves and drizzle little lemon juice over it and serve hot. Quick, easy and tasty!!
Sabudana Vada
Sabudana vada a traditional tasty snack of Maharashtra that can be had during fast is also called as ‘sago vada’. It tastes good with sweet curd.
It is easily prepared by soaking sabudana for at least five hours and draining the water completely and adding boiled mashed potatoes, roasted and coarsely grounded peanuts, cumin seeds, ginger, green chillies, coriander leaves, lemon juice, sugar and salt to it.
Mix the whole mixture and make flat round sabudana vadas and deep fry them in hot oil on medium flame till they turn golden brown in colour.
Sabudana Thalipeeth
Sabudana Thalipeeth is the mouth-watering tasty fasting dish of Maharashtra which is prepared by mixing together soaked sabudana, boiled mashed potatoes, cumin powder, coarsely powdered roasted peanuts, ginger, coriander leaves, sugar, lime juice and salt.
Prepare Thalipeeth by flattening a portion of the mixture with your palm and placing it on the hot pan and frying it until both sides become golden brown. It tastes well with chutney and raita.
Rajgira Paratha
Rajgira or amaranth flour is one of the ingredients that is used for Hindus religious fasting. Rajgira Paratha a gluten free, healthy snack is prepared by no onion and no garlic but only rajgira flour, boiled and smashed potatoes, jeera powder, green chilli and ginger paste, coriander leaves and salt.
Knead this mixture into smooth dough and roll out medium parathas, fry them on hot tava till golden brown on either side and remove after applying ghee on both sides.
This nutritious paratha is yummy when served hot with curd.
Farali Shingada or Chestnut flour Sheera
This delicious and healthy fasting recipe is very simple and can be quickly prepared with minimum ingredients.
Begin by heating ghee in a pan, add Shingada flour and saute it on low flame till it is roasted and brown. Add boiled water, keep on stirring, once thick add sugar, mix well and add cardamom powder and dry fruits.
Now enjoy this tasty hot or warm tasty sheera with your entire family.

Clickbait headline I made up: You're Maharashtrian Only If You Have These Ingredients In Your Pantry. By that measure, safe to call me a true daughter of the soil (aamchi maati aamchi wo-mansa?), since I managed to put together a Hindu fasting meal at the last minute. That means no upvas-equals-sabudana trope (the long soaking time means you can't spring it last-minute on the menu) , the first choice of any 'holy' day you're supposed to observe as spiritually and dietarily clean. I happened to have a mixed samo, amaranth and sago flour in the freezer, all deemed kosher for upvas. Mixed with tater mash, this was made into thalipeeth, the vrat version. Fresh coconut ground with chili and peanuts made for a rich curry, that also had kokum-bestowed tang and jaggery-accorded sweetness. The 'duppat khaashi' part was duly achieved with an ending of takeout rabdi. "Fasting" done right?
