It has taken me a while to get out to Penticton and visit TIME Family of Wines at their urban winery downtown, but happy to have visited now.  The winery has combined a tasting room bar and a restaurant so you can enjoy their wines on premise.  I started off my visit with a tour by Peter who told me how this building used to be a movie theatre and described the different rooms as we passed…

Too Sweet - Chapter 6: Fermentation

The next morning at the apartment was a bit awkward. Questions flooded my mind. Did I really ask her to kiss me? And now what? My head is pounding so much, but the way she took me in her arms, it was so Ellie-like, I'm screwed. I slept in the guest room, the bed softer than mine. I'll ask her where she got it. I got up and headed to the bathroom. There were small tubes of toothpaste and disposable toothbrushes. Ellie was very prepared for visitors.
The smell of fresh coffee was practically making me float to her kitchen, where she was comfortable in sweatpants and a tank top from a rock band, her hair slightly damp and slicked back. She looked beautiful.
"Good morning, Els," I greeted myself, sitting on one of the stools and admiring her. Ellie turned around with a smile and came to me
. "Good morning, Sweetie, may I?" She asked, holding my face gently. I nodded, and she kissed me. Much softer and sweeter than yesterday's make-out session, but it was good nonetheless. "I'm making coffee, I know you prefer something sweeter, lucky for me the coffee maker can do various types of things," she laughed, returning to her activities.
Breakfast with Ellie was so natural and familiar, between conversations and smiles, that it seemed like we did it every day. I spent a few more hours with her and then went home. Sara wanted to go out for a walk this afternoon, it's been a while since the last time we went out together. We decided to go to an immersive Monet exhibition, with 360-degree projections and a wonderful soundtrack. I took several photos and sent some to Ellie.
"You two are quite close, aren't you?" Sara suggested with a gentle tone. I looked at her, and she pointed to my phone. "I was a bit apprehensive when I thought you two might not get along, I'm glad it turned out to be the total opposite," we were sitting in a diner now.
"I find it hard not to like Ellie," I smiled at the waitress who came to bring our orders.
" Well, that's true, but it can become a problem when you fall in love with her," Sara said, now serious. I looked at her, trying to understand what she meant. "Ellie is amazing when she's in love, but she has a collection of ex-girlfriends. I know it's hard to resist her, but I hope that if by chance you two end up together, it'll be more enduring. You two mean a lot to me," she took my hand and looked into my eyes with great affection.
"Even if things aren't long-lasting with Ellie, I'll never stop being your friend," I told her with all the sincerity in the world.
She smiled mischievously, "So, are you two having something?"
I blushed. "We kissed last night and spent the morning together. I'm not going to label it; I don't even know if it will continue," I replied honestly.
To my happiness, things really flowed. The meetings that initially were exclusively for wedding preparations turned into precious moments for us, filled with kisses and hugs. Visits to vendors became more than that, full of laughter and varied conversations. Being with Ellie is incredible.
Today we're going to a wine tasting, Ellie invited me a few weeks ago. I got dressed as best as I could, chose a black dress, heels, and did a more elaborate makeup. Ellie, as always, looked impeccable, gave me a peck on the cheek, and we headed to the tasting.
"They usually start serving from the lighter ones to the fuller-bodied ones," Ellie said while holding a glass of white wine, her other hand resting gently on the small of my back.
It was a fascinating journey through the different flavors and aromas that the world of wines has to offer. We started with Sauvignon Blanc and Riesling, and that explosion of freshness and fruitiness was like an irresistible invitation to what was to come.
As we moved on to the reds, each glass revealed a new dimension of sensory pleasure. The Cabernet Sauvignon with its dark fruits and oak notes, the Malbec with its unique combination of fruits and earth, the Syrah with its complex interplay of flavors that awakened my palate, and the Tempranillo, a delightful dance of red and dark fruits, spiced with oak and earthy tones.
Ellie's presence by my side certainly made the experience even more special. Her knowledge and enthusiasm for wine added layers of appreciation with each sip.
After the tasting, Ellie smiled and said, "I think we found some really incredible wines today, don't you think? It was a wonderful experience to share it with you. I loved seeing how you engaged with the different flavors and aromas."
"It was all so amazing, Ellie. Thank you for inviting me," I smiled at her, and she gave me a peck on the cheek. We went for a walk afterwards; the night was quite cool, and there were many stars. The tasting took place at a winery, and the landscape was beautiful with several vineyards.
"I think we're quite similar to the wine production process, you know," Ellie's tone was gentle. "We've spent several weeks together, gradually harvesting our feelings."
"We might be in the fermentation stage, I guess," she chuckled.
Ellie really has a poetic way of seeing things, doesn't she? Her comparison between the wine production process and our journey together is so insightful and touching. It's true, over the weeks we've spent together, we've experienced moments that are like ripe grapes, ready to be harvested and transformed into precious memories and feelings.
And when she mentioned that we're in the fermentation stage, it was as if she recognized the process of growth and transformation we're experiencing. Just like wine, we're developing, allowing our experiences to blend and evolve into something even richer and more complex. It's a beautiful metaphor for our journey together.
As we walked through the vineyards under the gentle glow of the stars, I felt a sense of serenity and connection with Ellie, as if we were truly aligned in our feelings and thoughts. It's a moment to appreciate not only the beauty around us but also the depth and richness of our own journey. And I couldn't be more grateful to share this with Ellie by my side.
As we walked through the vineyards, enveloped in the magical atmosphere of the night, the tension between us was palpable. Every glance, every touch, seemed to carry a pulsating electricity, heightening the anticipation of what was to come.
Suddenly, Ellie stopped and turned to me, her eyes burning with desire meeting mine with an intensity that made my heart race. She didn't say a word, but her gaze spoke volumes, conveying all the longing and passion burning within her.
Without hesitation, I surrendered to the moment, allowing myself to be pulled closer to her. Our bodies drew near, every inch of space between us vanishing in an instant. I could feel Ellie's breath against my skin, warm and uneven, echoing my own excitement.
Then, in a bold and impulsive move, Ellie captured my lips in a fiery and passionate kiss. It was as if a flame had been ignited within me, consuming me with overwhelming intensity. Every touch, every caress, was a promise of uncontrollable desire and complete surrender.
The world around us disappeared, leaving only the two of us immersed in the fiery passion that consumed us. Under the starry canopy of the vineyards, we surrendered to the heat of the moment, lost in the whirlwind of emotions and sensations that could only be found in each other's arms.

ROMAN CABBAGE (c. 1st c.)
This week, another historical side dish from Tasting History. Roman Cabbage (Another Way), from the 1st century, is another dish from the De Re Coquinaria of Apicius, a written collection of Roman recipes. Cabbage was most often used by the Romans in medicine, however De Re Coquinaria does have a couple recipes for eating it. I chose to make this Roman Cabbage recipe because it seemed to be a simple dish to make, Max enjoyed it, and I had most of the ingredients at home already. My experience making it:
I made a couple small changes to the modern recipe below. I halved the recipe, as this was just going to be a small appetizer for my husband and I before having burritos for dinner. I used fish sauce instead of garum, which Max suggests as an alternative, and for my sweet white wine, I chose to use a sweet Riesling from the Rhineland Pfalz region of Germany.
The preparation was very simple, which I appreciated, but I still made a change or two to the method. I cut the bok ckoy I used into small, bite-size pieces, mostly because I hate having a whole cabbage or lettuce leaf on my plate that I have to cut as I go. Also, instead of just putting the cilantro, pepper, and carraway seeds on top, I mixed them into the cabbage after dressing it, as I hoped the mixture would then become more evenly flavoured. The finished cabbage dish was very green, looking deliciously fresh! The Roman Cabbage dish turned out similar to Max’s, so I was quite content. I even had a little bit of dressing left, in which I later cooked some rice, which also tasted good.
My experience tasting it:
The Roman Cabbage tasted lovely - definitely quite savoury. The spices were well-balanced and unique to my palette in the best way; I can't say I've tasted a dish with these flavours before. I suspect it might be the carraway and wine combo. The dish was a little oily, and the dressing kind of sunk to the bottom, so I had to mix the bok choy around a little bit in order to ensure each bite had a bit of dressing. The cabbage had a great crunch though, and the cilantro and cumin added a lot to the dish (I love both of them, so that probably had to do with my liking this dish). My husband and I quite enjoyed the dish overall, and will probably make it again, perhaps served alongside a red meat. Cabbage another way: Arrange the boiled cabbages in a dish, dress with garum, oil, wine, cumin. Sprinkle with pepper, chopped leeks, caraway-seed, and fresh coriander.
Modern Recipe
Based on De Re Coquinaria of Apicius and Max Miller’s version in his Tasting History video.
Ingredients:
2 pounds (1 kg) cabbage, for instance, bok choy
1 1/2 tablespoons garum
3 tablespoons olive oil
1 teaspoon ground cumin
1/4 cup (60 ml) sweet white wine
Freshly ground black pepper
Chopped leek*
Caraway seeds*
Cilantro, chopped*
*use amounts according to your tastes
Method:
Remove any discolored leaves from the cabbage. Trim the stems and separate the leaves so that you can wash them thoroughly.
Bring a large pot of water to a boil and add the cleaned cabbage. Boil for 90 seconds, or until the stems are tender. Take the cabbage out and set it aside in a dish to cool.
In a saucepan, whisk together the garum, olive oil, cumin, and wine. Bring it to a simmer over medium heat. Simmer for about 3 minutes.
After the dressing has cooked, pour it over the cabbage, making sure each piece is covered in it.
Top with pepper, chopped leek, caraway seeds, and cilantro.
Serve it forth.

How the World’s Rarest Wine Is Made! It's a Painstaking Process to Create Royal Tokaji's Essencia.

One of the biggest heartbreaks of making wine is a lost vintage, which is usually due to weather conditions before grapes have a chance to fully mature. This has been the case in several years since 2009, the last time—until now—that Royal Tokaji was able to produce bottles of its ultra-rare Essencia. The conditions weren’t right for azsú berries in five out of the six vintages between 2009 and 2016 (the current release), but 2013 offered the biggest heartache of all.
“I think most producers in the region would agree that 2013 is one of the greatest vintages in Tokaji, ever. We had perfect conditions for azsú, and we had amazing quantity as well,” Royal Tokaji managing director Charlie Mount tells Robb Report. “We had a lot of Essencia dripping, but after five or six years in our cellar, we couldn’t find anything that we thought was worth bottling. And it was one of the most painful decisions we’ve ever had, having a huge amount of Essencia not meeting our standards and having to decide not to release the 2013.”
Although neither 2014 nor 2015 provided ideal conditions for enough quality azsú berries to produce Essencia, the summer and fall of 2016 offered perfect circumstances to capture the precious free-run juice (more on that later) that goes into making this prized elixir. And prized it should be. Only the eighth vintage of Essencia released in the winery’s 34-year history, sipping Royal Tokaji 2016 Essencia from specially designed crystal spoons that reveals its deep amber hue and aromas of dried apricot, ripe summer peach, and honeycomb. It rolls over the tongue like syrup with nimble viscosity and a sumptuous vein of acidity that keeps its inherent sweetness from overpowering its flavors of apricot nectar, peach pie, candied orange peel, and fresh honey that leaves a trail of tangerine zest in their wake.

The Grapes Falling Prey to “Noble Rot”
Meaning “dry” in Hungarian, azsú berries are grapes that have been afflicted with Botrytis cinerea, the grey mold called Noble Rot that is responsible for the creation of Tokaji Azsú as well as Sauternes and Spätlese and Beerenauslese Riesling. Unlike common household molds, Botrytis requires an optimal setting to do its work; if it is present in a season that is relentlessly wet, it will ruin the grapes it’s growing on, making them useless for winemaking. But a period of humidity, especially one with cool, foggy mornings, that precedes a dry period just before harvest creates an ideal situation. The fungus dehydrates the grapes, which increases the proportion of fruit sugars and acids, offering a sweeter, more intensely flavored berry from which to make wine. Affected grapes shrivel to the point that they look like raisins.
In regular azsú wines, botrytized grapes are collected in large baskets known as puttony and added to 136-liter barrels of base wine. The number of baskets of sweet grapes added to the base wine give the Tokaji Aszu the Puttonyos rating of either five or six Puttonyos. For a Tokaji Aszu wine to be labeled today as five Puttonyos, it must have at least 120 grams per liter of residual sugar and a wine labeled as six Puttonyos must have at least 150 grams per liter of residual sugar. Essencia’s sugars can run between 450 and 600 grams, requiring strong acidity to balance out the sugars; Royal Tokaji’s 2016 weighs in at 534.6 g/l of sugar.
Although Tokaji Azsú has been a favorite of noblemen, poets, and artists for centuries, Tokaji Essencia is in a league of its own. While Louis XIV may have proclaimed that Tokaji is “The King of wines, the wine of Kings,” Hugh Johnson OBE, the esteemed British wine writer who founded Royal Tokaji in 1990, has been known to call its Essencia “medieval Viagra.” Each 375-milliliter bottle of Essencia contains the juice of 88 pounds of dehydrated berries, which comes out to about 50,000 grapes; compare that to an average 750 ml bottle of dry wine, which is made with about two and a half pounds or approximately 200 grapes. The painstaking production process involves picking the finest botrytized grapes from the best plots and then, as Mount says, “It’s a question of waiting.” The term “low-intervention winemaking” is tossed about with abandon in the wine world, but Essencia is truly the epitome of the style.

After harvesting, shriveled Furmint, Harslevelu, and Muscat Blanc grapes that have lost 80 percent of their water are placed on racks and left to drip. “We don’t press them or apply any pressure so a tiny amount of liquid drips through a grating at the bottom of the collecting vat. We draw it off from time to time, we keep every grape variety and every site separate, and we do an initial selection,” Mount says. The juice absorbs atmospheric liquid from the high humidity wine cellar; naturally occurring yeast from the cellar settles on the surface and a top-down spontaneous fermentation takes place. Up to 70 percent of that free-run juice is poured into appropriately sized glass demi-johns; as grapes from vineyard plots are kept separate, the containers vary in size from 10 to 50 liters. The entire process takes at least five to seven years; Mount continues, “All along we’re waiting and tasting and towards the end we’ll make a final selection of the batches to be blended and bottled as Essencia.”
Although a bottle of wine boxed with a crystal spoon can seem like a bit of a gimmick, the viscosity makes sipping from a spoon rather than a glass a much more efficient means of imbibing with minimal loss. After all, 15 percent of the initial juice has already been lost sticking to the grates, and up to 30 percent more is discarded prior to blending. Only 2,300 bottles of this treasured liquid were made (priced at $1,416 each), and each one holds roughly 25 tablespoon-sized pours; you seriously want to devour every last drop. If you can’t get your hands on a full bottle but are dying to give it a try, a select group of restaurants such as Oiji Mi and Gabriel Kreuther in New York City have bottles and crystal spoons on hand for your sweet sipping pleasure.

She has the standard abilities of a goddess except shapeshifting. As the goddess of wealth her other powers/abilities include teleportation (through bank vaults), money mimicry, chrimatakinesis, and chrysopeia (being able to change anything into gold & back).
Her immediate family includes her son Chrysos (god of gold & riches). They've always had a close relationship. She lovingly used to call him "my golden prince" when he used to be a child. They don't get to see each other often because of their hectic schedules, so they mainly keep in touch through video calls and texts. She gave her son a loan to jumpstart his music career.

She also owns an apartment in The Parthenos Plaza, a stylish beach house on Shimmering Tail Island, and is currently overseeing the construction of her mansion that's being built in the state of Olympia. Orthosia often shuttles back & forth between her main apartment and her boyfriend's place.
She has an animal companion, a she-dragon named Starwing. The dragon is a slender beauty with mint green and glittering silver scales with silver-white horns, claws, & crests. Starwing is Orthosia's usual mode of transportation when traveling great distances. The dragon has an Imperial Gold collar that's studded with diamonds while the saddle is made out of the most exquisite leather.

Orthosia loves getting the buttery toasty baguettes from the boulangerie owned by Aphrodite (goddess of love & beauty). More likely than not she'll frequent The Luxe (a high end eatery) for breakfast. Some her faves there include the thousand bagel (a plain bagel topped with whipped white truffle cream cheese along with goji berry infused riesling jelly & edible gold leaves) and the galore eggs benedict (which includes sevurga caviar, black truffles, mushrooms, & champagne creme fraiche). She also likes the meat loaded scrambled eggs (added with bacon, lamb, & sausage) with garlic home fries from The Hearthside Diner.
She normally wears her hair sleek and straight or in elegant updos. Her go-to hair product is the Olmorfia caviar anti-aging replenishing moisturizing shampoo. The shampoo contains pure caviar extract.
Orthosia loves giving fashion advice to her boyfriend's sister Aerin (goddess of the ethereal). She was the one who threw her a celebration party after Aerin's transition.
Her favorite thing to get from The Bread Box is the gourmet grilled cheese along with a salmon caviar salad.
She's one of the few to have a star on the Pantheon Walk of Fame as well as being one of the few goddesses to own the most expensive pair of heels from Diamond Ave. She's even in talks to have her own glamour doll collectible!

For other means of income Orthosia models for/endorses Platinum Luminescence, Euryphaessa, Megaleio, Luxuria (the goddess Hera's fashion brand), Diamond Ave., ýfasma óneiro, and Heavenly Spark. She's also a writer of the finances section in The Oracle newspaper as well as being a contributing writer for The Acropolis Street Ledger. With Orthosia's personal endeavors, she recently released a limited edition parfum simply called Ploúsios. Only a thousand bottles have been made. The fragrance include notes of mint, white musk, pink pepper, magnolia, & jasmine. The product's three liter crystal bottle is adorned with pure Astrean Silver, 24K gold, and more than 3,000 precious gemstones. The parfum costs a million drachmas. She's also currently developing a business reality television show centered on prospective entrepreneurs making their business pitch to a panel of venture capitalists (investors in start-ups). Her boyfriend is already signed on as an executive producer.
There has also been a limited edition credit card released inspired by Orthosia. The card is made of platinum with Astrean Silver plating and a solitary .235 carat diamond centered on the front. It weighs approximately five times as much as the conventional plastic credit card. The limited edition card aptly named the Pantheonic card is so exclusive- details about how one can become a cardholder haven't been released. Orthosia is also working with Hermes (god of roads, travelers, thieves, merchants, messengers, speed, trade, sports, borders, thoughts, communications, money, & luck) in developing digital currency.
When she gives out cash loans, she ascribes to two rules- that they're considered as gifts and that it only happens twice. The last loan Orthosia gave out was to Aisa (who was settling a gambling debt).
With her enourmous monetary wealth, Orthosia has given back to several charities & organizations. Recently, a scholarship has been made in her name.
A favorite frozen treat for her is chocolate chip cookie dough ice cream. She alongside Kéfi and Litismós pooled their money together to buy & share the most expensive sundae at The Luxe aptly called "Strawberries & Drachmas." The sundae includes candied strawberries, 24K gold flake toppings, whipped champagne cream, and bourbon vanilla ice cream. Other reasons for the hefty price (9.85 million drachmas) is the Imperial Gold serving spoons & the 10.06 carat royal blue diamond ring that's placed at the base of the dining plate. After a friendly competitive game of rock, paper, scissors, Orthosia won the ring. She wears it on her pointer finger.
Orthosia is currently dating Aplistos (god of avarice). She didn't think that there was a deity more materialistic & selfish as her until she met him. They initially met at a blowout extravanza at the Caduceus Palace casino and they met again at the Summer Solstice Ball where he asked her out while she was there with her boyfriend at the time, a mortal financier. Intrigued by his cockiness, Orthosia agreed. On their first date (which started as a ride on their dragons to Olympia), Aplistos presented her with a gift- a floor length hooded lynx fur coat with diamond buttons! After becoming Fatestagram official, they made their public debut as a couple at the Olympic Derby.
She has the largest collection of Diamond Ave. jeweled clutches. Kéfi got her the limited edition truffle fries clutch while her son gave her the billion drachma bill clutch for her birthday.
Orthosia has been a part of a few high stake poker games hosted by Euryale, one of the gorgon sisters.
Her all time favorite meal comes from The Crown- the Golden Burger (champagne infused gold dusted buns, whiskey infused liquid-smoked patties topped with king crab meat, black truffles, beluga caviar, & a garlic aoli) along with the crème de la crème pomme frites. The meal totals to 6,000 drachmas. She also likes steak that's well done smothered in onions, mushrooms, and black truffles.
In her free time Orthosia enjoys yachting, polo, ballroom dancing, working out, collecting antiques (artwork & jewelry), tennis, golf, playing poker, shopping, going to museums, going to the cinema, skiing (in the Underworld), clubbing, going to the theater, sunbathing, and dining out.
