Southern-Style Keto Holiday Dressing Chicken and dressing has always been a tradition in my household and in most households in my neck of the woods (Mississippi). After starting keto in September, I knew I had to figure out a way to make keto dressing and none of those cauliflower things would work...I needed the right texture! I found a keto bread recipe that uses almond and coconut flour (here: http://bit.ly/2BO4Dc5 ), crumbled it up, then made the dressing as usual. And it turned out amazing!Southern-Style Keto Holiday Dressing11 servings (including optional chicken) at: 269 calories, 2g net carbs (4g total, 2g fiber), 23g fat, 11g proteinIngredients for Bread:1.5 cup blanched almond flour2 tbsp coconut flour4 tbsp butter4 oz cream cheese4 eggs3/4 tsp baking powderOptional seasonings of choice (such as poultry seasoning, rosemary, sage, etc)Preheat oven to 350F. Cream together butter and cream cheese until smooth. Add the eggs and seasonings and mix again until smooth. Now add the dry ingredients until everything's mixed well. Pour into a greased pan and bake until golden brown and the toothpick test is passed. Timing will vary on your pan size and height. Check every so often to ensure it doesn't burn.Now that you have your bread, turn it into crumbs in a food processor and you're ready to make the actual dressing.Dressing Ingredients:Keto breadcrumbs from full recipe above1.5 cup chicken broth0.5 cup heavy cream3 boiled large eggs, chopped75g celery, chopped75g onion, choppedPoultry seasoning to taste100g cooked shredded chicken (optional)Put your broth to boil on the stove. Add the chopped onion and celery and let it cook while you tend to the next step.While you're waiting for the veggies to cook, put the crumbs in a bowl, mix in the chopped boiled egg and shredded chicken until evenly distributed then sprinkle liberally with poultry seasoning. I've never measured so I don't have an estimate, just give a good sprinkle to coat the top, mix, another good sprinkle, mix and you're probably good. You can taste a few crumbs to check if desired.Your veggies should be done by now, so add the heavy cream and stir for a minute or two. Now pour everything in the bowl with your crumbs and mix it all together until well moistened.Pour into an 8x8 square pan (no need to grease) and bake in the oven at 350F until the dressing solidifies and the top turns golden brown.And voila! A way to not get tempted by the traditional holiday dressing. I make a pan of regular for everyone else and a pan of this for myself. I've made it both for Thanksgiving and Christmas now and I love it so much. I might tweak it to cut down on some of the fat next time I make it, but at least the net carbs are very reasonable!
