For the Love of Food
So where does my love of food come from? I firmly believe that my passion for all things food related and my willingness to try almost anything stems from my childhood and my family upbringing. My much loved Nan and Grandad must take most of the credit as from a very early age I was introduced to a wide variety of home-grown and home-cooked foods. My Grandad was an avid gardener growing a whole manner of fruit and vegetables in his garden. He showed me the delights of growing runner beans, cabbage and cauliflower along with a whole range of soft fruit ranging from English plums to gooseberries. My Nan like my Grandad was old school so everything in the kitchen was made from scratch using what was grown in the garden. I can still remember watching her cook and learning how to make pastry and cakes from basic ingredients.
Some of my fondest memories as a child are of the big family meals we had at their house at 218, London Road Waterlooville (sadly now demolished). At various times during the school holidays my cousins, uncles and aunties would all come to stay. This would be a big event for me as we would have fantastic traditional roast dinners with all the trimmings and yes if you didn’t eat your vegetables you most definitely wouldn’t get any dessert! To be honest I wasn’t a fussy eater even as a kid. As I recall it was only Brussels sprouts and Stilton cheese that I could have quite happily avoided throughout those formative years. The only real problem I had at these family meals was whether I could finish my meal and get to that last roast potato before my cousin Glen, who despite being younger than me could always match me for appetite. My much missed Mum carried on the tradition set by her parents and although home-cooking has changed a lot over the years she has always instilled the same values in me to experiment and try everything at least once.
My Mum worked as a waitress in a local café called The Black Cat Café. I can remember going to work with her on one occasion and being allowed to watch what went on in the kitchen. My clearest memory here is one of the veg prep guys giving me a raw carrot to try. I had always eaten carrots from my Grandad’s garden but cannot recall eating them raw so this was a new experience. Even now I can still taste that distinct flavour which was somewhat of an epiphany moment for me. Like eating your first oyster or you first taste of true caviar this was a profound moment for me.
Another early food memory is also somewhat unusual. My Nan and Grandad lived in a big house next to a petrol station. The station had one of the first vending machines I can remember on the forecourt next to where the air and water could be found. This particular vending machine dispensed milk shake. My particular favourite was a raspberry milk shake which became a firm favourite with me so much so that if ever I had any money this would be my first purchase. The petrol station is still there but the machine has long gone but the taste of this milk shake still lingers in my senses. Every so often if I taste very fresh raspberries I get transported back in time to this very happy period in my life.
Food always seems to give me happy memories so it is probably no surprise that I followed my nose 9and stomach) into the industry. I began my adventure by training as a Chef at Highbury College in Cosham. At the time I started there I was a fresh faced sixteen year old. The catering facility at Highbury was only a year old and at the time regarded as one of the best places to learn the trade in the UK. I studied there for three years from 1981 to 1984 and was as proud as anything to emerge with my Diploma in Professional Cookery. If my family gave me my love of food then the lecturers and college definitely fed my addiction. It was one of the happiest times of my life and I am forever grateful to all my lecturers and fellow students who taught me so much that stood me in good stead for later life. I would heartily recommend to anyone thinking of studying catering to go ahead and do it. Even if you never cook professionally after you leave, the skills you learn there will be with you for life.
I can still remember my first day at college as one of the new influx of PCD (Professional Cookery Diploma) students. We were all resplendent in a blizzard of spotless white jackets and blue checked trousers, wearing our new uniforms with pride for the very first time. Our aprons were trailing down to the floor and our starched hats were pointing proudly to the ceiling, we really must have been quite a sight. Over the years our aprons shortened until eventually they were folded into nothing more than miniskirts that just about covered our crutches; while the starched Mohawk-like hats were replaced by neat uniform disposable paper ones. We had finally come of age and were ready to launch our talents onto an unsuspecting world. Looking back it was hard work and frightening at times but honestly worth every second and an experience I would do all over again if I had the chance. It was the days before politically correctness had reared its head so it was a harsh environment for a young teenager.
Saying that the harshness was nothing to what I found when working in a professional kitchen. For a short while I was able to work as a Commis in The Café Royal, Claridge's, Langans Brasserie and Simpson's in the Strand. Working as a Chef in London was fresh, exciting and frightening. Working as a Commis you were on of the lowest ranked employees only one up from the pot wash. You were treated with disdain and generally verbally and sometimes physically abused. Nowadays this sounds horrific but it was pretty standard at the time in the industry. London tended to amplify this somewhat but wherever you worked in the UK it was pretty much the same. This harsh treatment either broke you or made you stronger. The restaurant trade has always been pretty transient so to survive you had to be strong. As a Commis you had to prove yourself before you were let anywhere near a stove. Although I was a qualified chef I spent 6 months peeling and turning potatoes, turning mushrooms and preparing the mise en place ready for service. I can remember many occasions when my julienne of carrot or my bruinoise of vegetables was unceremoniously thrown in the bin because it was not perfect. Through sheer persistence I managed to survive and once I gained the trust of the brigade I was able to watch and learn from the more senior Chefs. As time went on I was allowed to do more and more in the kitchen until I was welcomed as one of the team. I still have very fond memories of the loud punk music played prior to service and the sense of belonging I felt as part of the team. Outside of work we played hard and in London this could be very hard but I had a lot of fun and learnt a great deal.
My experience in London was for a relatively short time but it is an experience that has left its mark on me both personally and professionally. To this day I have a strange affinity with London and simply love the old school restaurants there. My career took me back down to the South Coast and away to sea working front of house for a change before ending up as a Food Buyer procuring high end products for the cruise industry. I have never forgotten my roots and although my time in the front line was brief I still regard it as one of the best experiences of my life. I am indebted to my college lecturers who got me the placements and hopefully I have paid my dues to the industry.
At home I still cook every day and still get that same sense of enjoyment I felt at 16. I genuinely love food and will try just about anything if I feel it is something that I might enjoy. I am frequently asked what is the best meal I have ever eaten. I have been lucky enough after nearly 40 years in the industry to have eaten in a lot of top restaurants and to have had the opportunity to try a myriad of dishes across the world. I have tried many unusual dishes and as a Food Buyer had the opportunity to taste many new and innovative ingredients before they reach the trade.
It therefore can come of something of a surprise when I reveal my favourite meal is not only very simple but from a most unusual food outlet. The location was Hong Kong International Airport around 2005 in restaurant which if my memory serves me correct was situated upstairs on Level 8 of the main concourse above the various check in desks. The restaurant itself is very simple, quite large but very unassuming. It was early morning and I was catching a flight back to the UK. I was not particularly hungry so I was just looking for something light before my flight was ready to board.
I opted to go for a simple Prawn Foo Yung. The picture above is exactly what was presented to me. You cannot see it on the picture as the colours are pretty subdued but the scrambled egg was almost orange in colour. To this day it is the freshest egg I have ever eaten. For such a simple dish the flavours were exceptional and taught me that to have a great dish sometimes simplicity is really the best. As long as you use good quality ingredients less really is more. Sometimes the most complex recipes containing multiple ingredients are no better than a single ingredient prepared well.
Life can quite easily be compared to food Choose your friends and your ingredients carefully and you will find that good friends and good ingredients can give you much happiness. As a Chef I can give you no better advice than love your life and love your food.

It’s the little details that they really appreciate: An In-Depth Study of Spongebob’s Current Sound Design

Spongebob Squarepants sound effects designer & editor Jeff Hutchins is exactly right. This guy is as important to Spongebob as Ben Burtt is to Star Wars, which’re some of Hollywood’s biggest franchises.
This is the team that makes up the sound of current Spongebob episodes. Just 4 creatives are listed: sound effects designer & editor Jeff Hutchins, foley artist Vincent Guisetti, foley mixer Aran Tanchum, and re-recording mixer D.J. Lynch. The sound service has been Atlas Oceanic, Inc. since 2012; originally it began at Horta Editorial & Sound, Inc., which folded into Hacienda Post.
All episodes of Spongebob since 2015 have been very rich in exaggerated, humorous, unpredictable character design, animation and, of course, respectively, sound design. Starting in the late Hacienda Post years, Jeff began to create a very predictable style of sound design for his work, among the many unique sounds he formerly created for Spongebob. The style was very predictable during the Oracle Post years, continuing through early Atlas Oceanic episodes, until 2015, when Jeff’s array of sounds would include sounds not often used (if at all) from later 2007-2015, plus a few new sounds. Additionally, Jeff was only the sound fx editor on the pilot, Help Wanted; according to Roy Braverman, Tom Syslo served as the sound fx designer. The sound design isn’t too different, though, from Jeff’s style--in point of fact, most cartoon sound design by Hacienda Post creatives share similar styles to Jeff’s; you could say the same for most creatives of Advantage Audio and Skywalker Sound--many of the creatives of each studio share similar styles.
A number of sound effects in Spongebob have been used to accent character footsteps. Some H-B squeaks accent Spongebob’s shoes, Squidward’s feet are accented by oil splurts (used in Rocky & Bullwinkle), and Mr. Krabs’ feet are accented by “Hollywoodedge, Wooden Blck Hits Raz CRT019402″. For the pilot, though, Tom Syslo approached their footsteps differently.
One of my favorite episode’s sound design in Spongebob includes Krusty Towers, a Hacienda Post episode. It was during Season 4, of course, that the sound design became far more cartoony, like the character design and animation. Another is the scene between Mr. Krabs, Squidward and the exchange chef in Le Big Switch, an Oracle Post episode, as is Walking the Plankton (with some very funny moments of sound design). Also, one of the funniest moments in pre-2015 episodes, Skill Crane, is appropriately accented with the right sound effects as Spongebob does a wild take with his eyes... and then RUNS on ‘em!
One of the most common and funniest parts of Jeff’s sound design is accenting not-so-wild takes with funny sounds, like one of Disney’s “CLANK!”, a Warner Bros. “EHH!” (horn squawk), or my personal favorite: “QUACK!” This quack, “Hollywoodedge, Bird Duck Quacks Clos PE020501″, can be used for many things like impacts or duck-related stuff, but the use of a duck quack for a take was first employed in Mermaid Man and Barnacle Boy II as the episodic title characters react in shock to Spongebob attacking the Atomic Flounder.
I’ll describe of a few episodes: Bunny Hunt, Old Man Patrick, Grandmum’s the Word, Ink Lemonade, My Leg!, and Bottle Burglars. (listing in progress).
BUNNY HUNT
In the beginning, Squidward finds that a sea bunny is eating up his garden and attempts to stop him.
This scenario could remind one of Bugs Bunny, of course, and that Warner Bros. ricochet that sounds like “CHOW!” (called “Sound Ideas, CARTOON, WHIZZ - FAST WHIZZ BY”) is used often in the episode, like in the above as the sea bunny falls back into his hole...
and also in this shot, to accent Patrick streaking out of the shot. Not common in past episodes of Spongebob, but very typical for cartoon sound design.
Here, the sea bunny shoved a burnt roast into Squidward’s mouth, and proceeds to swallow it... until soon he has to puke it. Unlike many cartoon sound designers these days, Jeff Hutchins is one of the few to use Disney’s trademark gulps from The Hollywood Edge library’s Cartoon Trax Volume 1. The 4th gulp in “Hollywoodedge, Big Single Gulps For CRT026802″ is the most common, as is heard in the shot above. I wouldn’t object to working with the voice actor on gulps, but I’d like to not avoid the use of the goofy vocal sounds Disney created, too.
Knowing Jeff’s style, one would probably expect “FISHFACE” (created by Roy Braverman), but these more recent Spongebob episodes make good use of the infamous Warner Bros. sound called “TROMBONE GOBBLE”.
I don’t know what horn toot is used here (not “Hollywoodedge, Old Car Horns Single CRT021302″, which Jeff tends to use), but it sure stands out. I never heard this particular “ahooga” before, though it kind of sounds like the Hanna-Barbera one. Also, while Jeff tends not to use heartbeats to accent love like other cartoon sound designers (such as Glenn Oyabe, Robert Hargreaves, Michael Warner, Randy Thom), “Hollywoodedge, Sub Woofer Heartbea SDT021301″ (a synthiszed-sounding, heartbeat-like pulse thump), also common to Jeff’s style, is (I think) subtly audible.
The only use of “QUACK!” in Bunny Hunt seems to accent the oven mitt sock puppet opening its mouth. It’s a bit subtle, but perhaps the gag is that the mitt is making the quack. Regardless, not an episode of Spongebob goes by these days without at least one “QUACK!”
In this moment, I picked up on a subtle, funny sound of foley--some sort of stretch sound, admist the typical red-tailed hawk screech--as Spongebob ceases speaking and slumps to a different position. Foley is the art of performing specific sounds, like walking, touching, that help give life in the aural medium and make the scene sound believable. The mixer of Vincent Guisetti’s foley, Aran Tanchum, did the same with J. Lampinen’s on Star vs. the Forces of Evil, which’s probably driven more by foley (among dialogue and Brian H, Kim’s sound effects) than sound effects.
With crazy visuals such as this, the question often comes to mind: What choices might the sound designer make to accent such exaggerated animation? What’s the right sound--or, often, what are the right sounds to accent and/or help tell the story? Bird chirps and saw warbles are some that help accent the insane stage of Squidward at the end of the episode, whacking himself with a mallet, thus causing his brain to fly away.
Most recent Spongebob episodes tend to close out with the classic “iris out”, but Jeff finds different approaches to accenting the transistion without Robert Clampett’s classic guitar string sounds (like one would expect with Looney Tunes and the works of sound master Michael M. Geisler and Glen Oyabe). In Bunny Hunt, “Sound Ideas, RICOCHET - TUBE ARRIVE 01″ (”ShhhOWP!”) is the accent; in Old Man Patrick “Sound Ideas, ZIP, CARTOON - FAST ZIP IN 01″ helps accent.
OLD MAN PATRICK
The detail of sound design can include even the small pieces of animation by accenting the slightest touch, movement, etc. When Patrick tells Spongebob that he’s “all wrinkle-y now”, small raspberries/farts spice up the movements of his skin when he touches it, and his old organs are clearly at work as his stomach growls loudly, perfectly in sound timing as he says “old stuff”.
INK LEMONADE
Essentially the Ren & Stimpy of Spongebob episodes, including character design by Bob Camp; Ink Lemonade has Patrick scare the ink out of Squidward... literally, to sell it in place of lemonade.
Another use of “QUACK!” is used for comedic effect here in addition to a “BIG HEAVY FACE SLAP” to accent Squidward’s face snapping back into place after Patrick blows Squidward’s face out of place with a megaphone.
Patrick goes to extremes for scare tactics... like talking with his intestines. Along with a “gooey splat” for the intestines’ “tongue”, most of the sound here is Vincent Guisetti’s foley to convey the sound of his intestines talking.
As with most of the 2015- Spongebob episodes, the H-B “TEMPLE BLOCK GALLOP” is used for many run accents (in the pic above it accents Squidward rapidly swishing his arms and legs); Jeff also used this for shaking/trembling movements in The Marvelous Misadventures of Flapjack shorts. Also, in Ink Lemonade, Jeff played this sound twice in reverse.
Worthy of note is that accenting Squidward’s fall is a whistle of air that’s different from the usual “Sky Rocket Loud High”, that high-pitched whistle you’d in hear in Cartoon Network’s “Powerhouse” bumpers and most cartoons these days, except for most of Advantage Audio’s projects. Jeff uses “Sky Rocket Loud High” for most falls; in earlier episodes he’d play it in reverse if a character/prop ascends a great distance, and in some Hacienda Post episodes this whistle would accent flying objects (e.g. Squidward’s windows and other parts launched toward his house in Squidville). However, Jeff uses some other whistles on a few occasions too, including “SHELL SCREAMING WHINE DOWN” (the classic H-B/MGM whistle) in The Secret Box and The Good Krabby Name; Jeff also uses sounds of artillery “roaring”.
As I said before, one of the most common uses of “Hollywoodedge, Bird Duck Quacks Clos PE020501″ is for a simple “take” of a character. The pic above highlights the extremes of that take where Jeff tends to put a funny sound to help spice up this little jump of his emotion.
A more poignant take, here, is accented by the H-B “KAZOO PARTY HORN”. Advantage Audio tends to use that sound a lot, particularly Heather Olsen (she even used it in Star vs The Forces of Evil episode “Booth Buddies” for accent when confetti is thrown), but it seems to be an occasional accent in current Spongebob episodes.
Quickly following it, as Squidward streaks under a rug, is a very high-pitched version of the classic WB siren whistle, “FAST ZING WHISTLE, ZIP”, which is rarely heard in non-Hacienda Post episodes.
Like most cartoon sound designers these days, even a simple movement of a small body part can be accented with a funny sound. Squidward’s eye looking up here is accented by a Warner Bros. double violin string sloop, similar to Joel Valentine’s use of such sounds in The Powerpuff Girls and Samurai Jack.
Relative and notable is that many classic cartoon sound effects come from musical instruments, like violins, slide whistles, xylophones, and even harps [a Jew’s harp, in particular].

To solidify knowledge of sound design, I’ll introduce a little about myself in this area: I’ve always been very conscious of sound effects, and my realization of sound design in cartoons has always been a part of my life. In 2010, I began to become the huge fan of Skywalker Sound I am, and I’d read up online about their 500+ staff over the years. In 2013 I joined IMDb to update credits regarding knowledge of credits and articles about the roles of certain creatives involved; soon I looked up the credits of non-Skywalker projects, like Spongebob (Hacienda Post, Atlas Ocenaic/Oracle Post), The Fairly OddParents (Advantage Audio), Tom and Jerry: The Magic Ring (DigiPost.TV), etc.
Eventually, I began to know of an unsung sound designer, Joel Valentine, a mentor to Jeff Hutchins and “a pillar of sound design”, but often uncredited--except as the name of his “sound editing” company “Twenty First-Century Entertianment, Inc.” Though I knew not Joel’s name (or pretty much anyone in post-production sound), yet certainly I was conscious of Joel’s work from an early age, watching The Powerpuff Girls, Dexter’s Laboratory, and Foster’s Home for Imaginary Friends. His sound design for Cartoon Network projects has always been familiar to me, namely that castanet sound he uses to accent trembling, shaking in anger, etc. Joel Valentine & Jeff Hutchins met in 1986 and were roommates at Saban Productions, where Jeff often worked for Saban sound designer Johnny Valentino. Jeff edited sound effects with Supervising Sound Editor Joel on Dead in the Water, and Jeff worked for Joel also on Pirates of Darkwater Season 3. After Sym-Bionic Titan, Joel didn’t work on anything until Season 2 of Wander Over Yonder at Craig McCracken’s request, eventually returning for Season 5 of Samurai Jack, with which Joel and his very small team opened up an amazingly realistic sonic world of sound, but not without some of his signature sounds and some really cool new sounds.
I’m always conscious of sound effects. On January 31st, 2010, I did this camcorder recording shaking and stuff in sync with SFX from “Sandy, Spongebob and the Worm” (tweet here).
Jeff Hutchins also did sound on Bill Kopp’s Tom and Jerry movies, The Marvelous Misadventures of Flapjack, and many Hacienda Post projects. Jeff works usually at Hacienda Post/Sabre Media Studios and Warner Bros. Sound (particularly division Audio Circus); he also worked at West Productions, Inc. and even his own place, Jeff Hutchins Sound Design in Oxford, California.
I feel that some of my favorite shows deserve contribution from certain sound services/creatives, like Disney’s franchise of Star vs. the Forces of Evil (at least for the future) due to its cartoony animation & design but imbalanced sound design.
@rwinger24 and I are people who appreciate the art of sound design and the work/style of Jeff Hutchins, who will always be one of my favorite influences in creative media. Thanks for all of the laughs your aural art creates for us!

We're back in business after two weeks of skiing, bobsled and all other things I'll never do (fan of the warm weather activities, myself).
This episode was co-written by Kristen Cloke who was Melissa Rydell Ephesian in "The Field Where I Died" (the woman with the multiple personalities), Lara Means on Millennium and the wife the episode's director Glen Morgan.
On March 23rd, an AI chatter bot was released on Twitter. It was supposed to learn how human speak. It presented itself as a 19-year old young woman. The AI was supposed to become more intelligent as it dealt with people. The bot, however, was treated poorly and her tweets became offensive, racist and hateful. She tweeted 100,000 time, had 50K followers. The account was deleted - the creator was forced to take it down. The voiceover warns that if people don't start being better to each other, we too will be deleted.
The tagline was a random series of numbers and letters that I'm sure a very "focused" Phile will figure what the true mean is.
Mulder and Scully (who is rocking a great, short haircut) are waiting to eat at Forowa Restaurant in DC. They look to be the only customers. The menu appears on a screen before Mulder. He orders for both of them. Scully pulls out her phone. She's working online. He's playing on is phone as well. The restaurant invites them to follow or friend them to a number of social media accounts. They blow those off.
Mulder's screen tells him their food is read. A door opens and Scully gets some fine-looking sushi. Mulder's meal looks like an awful fish with a big nose. Scully takes Mulder's photo with his odd fish. Scully enjoys her meal - Mulder tries to get some help for his. He enters a kitchen where everything is being created by robots. The robots stop when he walks in.
Mulder leaves the kitchen. While Scully offers, Mulder pays for dinner with his credit card. The payment machine won't give him his card back when he doesn't tip. Mulder bangs on the screen to get the card, causing a short that locks them into the restaurant.
Through the whole first act ,Mulder and Scully never said a word.
Using Her chopstick Scully is able to get them out of the restaurant. Mulder's Credit Card is still stuck inside the payment machine. Scully's Whipz - an Uber-like service - arrives. Just as she's about to say something to Mulder, the driverless car takes her away. The car asks her to write a review for the restaurant - she does not. They get in an argument about how fast the car is driving.
Mulder gets a ticket for having an expired meter but he has three minutes left on the meter. In his car, Mulder has problems getting his music from his library and his GPS brings him back to the restaurant. He's not happy. "You suck, Mr. Phone." Mulder breaks out a map to find his way home. He also gets a message from the restaurant telling him he has three hours to offer the sushi "chefs" a tip.
Scully won't be let out of the car until she leaves a review. She yells "poor, awful, terrible" at the screen and is allowed to leave.
Mulder arrives home and his front porch light is flickering. His bug zapper is also working overtime.
Scully can't turn off her burglar alarm. The alarm company calls. Her password is "Queequeg" - nice. She is charged $250.
Mulder tries to call his credit card company. They are busy - he'll get a call back. Mulder turns on The Six Million Man. His TV changes the channel to the inside of his house. He sees a drone outside.
Scully finishes using some "Rock It Like a Redhead" hair product. As she throws it away, she gets a phone alert telling her to buy some more. This startles her, causing her to spill some bath salts.
Back to Mulder, he gets a callback that gets stuck on his name (he left his name for the call). The drone is back and with a baseball bat Mulder tries, and succeeds in taking it out.
As Scully is cleans up the bath salts, she hears a drone too. The drone delivers a package, which Scully takes into the house.
At Mulder's, other drones arrive to pick up the pieces of their dead drone comrade. It is really odd.
This episode is flying by. No drone pun intended.

Chasing the Northern Lights
Each wondrous in its own right, Alaska, Finland, and Sweden share one particularly extraordinary trait: All three fall within the auroral oval, the zone within which the northern lights (also known as the aurora borealis) become visible. The phenomenon is caused by electromagnetic storms in space and is steeped in lore. The Nunamiut of Alaska believe that if you whistle at the lights, they will dance to your tune, while others say that whistling will prompt the shimmering curtain to scoop you up and carry you into the sky. As for the Vikings, they believed the lights were how the gods made themselves known on earth.
This dazzling spectacle is best viewed from September through March. Even if you know roughly when and where to go, catching the lights can be tricky and depends partly on good luck and clear weather. To see them for yourself-and have some fun along the way-follow our lead to arctic latitudes in North America and Scandinavia, where igloos, reindeer-led sleigh rides, and dog mushing are a prelude to the big event: the lights themselves.

The Last Frontier is a magical place to look for the northern lights, and unlike most areas within the auroral oval, Americans don't need a passport to get here. Many travelers base themselves in Fairbanks over Anchorage because it falls farther north and thus deeper within the auroral oval, making it a more reliable place to see the lights, but the phenomenon can be seen around Anchorage, too. Just make sure to get out of the city lights-the darker and clearer the sky, the better.
Fairbanks
For Outdoor Lovers: Up north in Fairbanks, the Northern Alaska Tour Company (3820 University Ave. S.; 800-474-1986; three-day tours, from $789 a person with double occupancy) leads multinight excursions into the remote Brooks Mountain Range to search for the aurora. You'll also cross the Arctic Circle (and get a certificate to prove it!) and go dogsledding through pristine wilderness.
For Pleasure Seekers: At the 1,940-acre Chena Hot Springs Resort (17600 Chena Hot Springs Rd.; 907-451-8104; aurora snow-coach tours, $75 a person; children 6–11, $38; round-trip shuttle service with pickup anywhere in Fairbanks, $125 a person for two or more people), 60 miles northeast of downtown Fairbanks, you don't have to be a guest to take part in the on-site activities-snowshoeing, dogsledding, ice-skating, or searching for the lights aboard a snow coach. If you've got time, don't miss a relaxing dip in the natural hot springs, which stay open until midnight; you just may glimpse the sky doing its thing while you soak in the mineral-rich waters.
Anchorage
For Independent Types: You don't necessarily need to sign up for a tour to see the northern lights in Alaska's largest city. If you would rather go it on your own, set out after dark and travel 16 miles southeast of downtown to the Glen Alps Trailhead and Viewpoint (3101 Glen Alps Rd.; 907-345-5014), at Flattop Mountain. The parking lot here is a popular place to scope out the sky on cloudless nights. Before heading outdoors for the evening, fortify yourself with a meal of wild Alaskan salmon at Simon & Seafort's Saloon & Grill (420 L St.; 904-274-3502; dinner for two, $70*), a downtown Anchorage institution that affords panoramas of the calm waters of Cook Inlet.
For Shutterbugs: A clear image of the aurora is notoriously difficult to capture, but you can maximize your chances as a student of photographer Carl Johnson of Arctic Light-Gallery & Excursions (17800 Steamboat Dr.; 907-748-7040; aurora photo tours, $275 a person). The tours usually max out at three people, so you'll get lots of one-on-one training from Johnson, who has been in Alaska since 1999 and says that taking good photos of the aurora depends more on fine-tuning the camera's focus than its exposure settings. He'll walk you through other hacks while leading you to remote areas within an hour's drive of Anchorage so that you can escape the crowds and lights. “We practice compositions while waiting for the aurora, working on incorporating landscapes, trees, rivers, and ponds so people already have ideas for how they want to frame their shot by the time the lights appear,” Johnson says.

In parts of Finnish Lapland, the northern lights are visible for about 200 nights a year, from late August to early April. The small town of Kemi, set near the Swedish border and right on the Gulf of Bothnia, is a favored destination for winter fun and aurora viewing. Finnair flies to Kemi from Helsinki, or you can take a bus, train, or rental car to get here. Alternately, a 90-minute drive farther north from Kemi brings you to Rovaniemi, the capital of Finnish Lapland. Rovaniemi is mainly known for being Santa Claus's official hometown-but a chance to spot the northern lights is another compelling reason to visit. To the southeast, travelers can gaze up at the lights in Vuokatti, a ski village in the Lakeland region that's an hour's flight from Helsinki.
Kemi
For Instagram Obsessives: From the walls to the tables to the cups, SnowRestaurant (29 Kauppakatu; 011-358-16-258878; three-course dinner for two, $120; opens in January) is made almost entirely of ice and snow. You can wrap yourself in one of the restaurant's blue-and-white blankets while you feast on Arctic specialties, such as reindeer fillet or smoked salmon, beneath a glittering chandelier. If the aurora appears while you're eating, don't worry-someone will beckon you outside.
Rovaniemi
For Adrenaline Junkies: In Rovaniemi, Aurora Emotion (27 Lehtoahontie; 011-358-40-5402146; Northern Lights Safaris, $175 a person for a two-person eSled) recently launched the world's first electric snowmobile safaris on machines called eSleds. You'll be outfitted in the proper gear-think boots and balaclavas (a type of ski mask)-before embarking on a guided 8 p.m. ride through forests frosted with snow to see the northern lights, stopping along the way for belly-warming sausages, crêpes, and drinks.
For Families: With Lapland Safaris (1 Koskikatu; 011-358-16-3311200; tours, $186 a person; children 4–14, $140), arctic reindeer will pull you and your little ones on sleds to Santa Claus Village (011-358-16-3562096; admission, free), a themed village where you can meet Santa, mail a letter with an Arctic Circle postmark, and see the northern lights. Before you leave Rovaniemi, sit for a meal at Ravintola Nili (20 Valtakatu; 011-358-40-0369669; four-course tasting menu for two, $135) to try smoked vendace (a Finnish fish specialty) or pike soup; fishermen catch the pike by casting nets under the frozen surface of nearby lakes.
Vuokatti
For Dog Lovers: The countryside around Vuokatti is a natural paradise. On the Howling Northern Lights tour from Vuokatti Safaris (1 Suvikkaantie; 011-358-40-9115-323; Howling Northern Lights tours, $244 a person, including safari outfit), you'll pile into a two-person dogsled for an hour-long ride through meadows and forests, passing by lakes, rivers, and canals, and then spend time getting to know your team of friendly huskies before gathering around a picnic dinner.

The picturesque town of Åre, an hour's drive east of the Norway border, is a good place to base the family for an aurora expedition. Åre sits at the foot of Sweden's largest ski resort, where a dedicated kids' ski area has “magic carpet” (conveyor belt) ski lifts and serves pint-size hot chocolates and cardamom buns.
For even better odds of seeing the northern lights, it's worth the trip farther north into Swedish Lapland. Daily flights depart from Stockholm to the country's northernmost town, Kiruna, some 90 miles within the bounds of the Arctic Circle.
Åre
For Soft Adventurers: Explore Åre (1 Regnbågen; 011-46-647-50885; Åre Northern Lights Adventure tours, $113 a person) leads nighttime snowshoeing excursions outside of town through thickets of towering fir trees to wide-open spaces where you can keep an eye on the sky for the northern lights. The company also arranges daytime activities, such as reindeer feeding, ice fishing for arctic char, and even ice-sculpting lessons. Back in Åre proper, Granen Restaurant (127 Tottvägen; 011-46-647-51560; dinner for two, $45) makes for a good introduction to Swedish fare. And one can't talk about this area without also mentioning star chef Magnus Nilsson's Michelin-starred restaurant, Fäviken (216 Fäviken, Järpen; 011-46-647-401-77; dinner for two, $677). A meal here is hard to secure-only 16 diners are seated each night-and a very serious splurge, but hard-core foodies may not mind all that for the chance to dine on innovative dishes made with flora and fauna from the surrounding hunting estate and lakes.
Swedish Lapland
For Cocktail Culturists: In the snowy village of Jukkasjärvi, Sweden's IceHotel is rebuilt every winter with enormous blocks of ice cut from the nearby Torne River. You can sip cocktails with muddled mountain berries in glasses carved from ice at the on-site Icebar (63 Marknadsvägen, Jukkasjärvi; 011-46-980-668-00; drinks for two, $44) then dance into the wee hours on a floor made of snow-stopping to dash outside if the northern lights appear, of course.
For Foodies: In Lapland's Abisko National Park, the Aurora Sky Station (STF Abisko Mountain Station, Abisko; 011-46-980-402-00; admission, $82; admission for two with four-course dinner, $436; both prices include warm overalls) is set on Mount Nuolja in an area nearly devoid of light and sound pollution. A chairlift brings travelers through the inky sky to the station. Consider reserving the add-on four-course dinner so that you can settle in for the night as you wait for the lights to appear.

A QUEST FOR EXCELLENCE
4TH QUARTER 2018 PROGRESS REPORT
This 4th quarter newsletter of my 4th year on the SJUSD board of trustees is my last, as my term will come to an end in November. I am very proud to have been a part of this board and school district and would like to take this opportunity to share my reflections of the past 4 years and the progress our district has made in improving student outcomes.
The 30,000 foot/statewide perspective: San Jose Unified is a highly functional and progressive district, led by smart, competent professionals of strong integrity and commitment to high quality public education. Our district is recognized across the state as a model in many ways:
Our strong relationship with the San Jose Teachers Associationresulted in the creation and implementation of a salary formula, ensuring that teachers receive an increase in compensation whenever the district receives increased funding; a robust teacher evaluation process, resulting in an environment of supportive coaching, professional growth and high expectations that are consistent across every site; and the most progressive maternity/family leave policy of any school district in the state.
SJUSD is regularly hailed as a model district for our early adoption of A-G graduation standards, rollout of common core, implementation of the local control funding formula and clear presentation of the state required local control & accountability plan. We are a district of continuous improvement, searching for newer and better ways to serve and improve outcomes for all students.
SJUSD takes a leadership role in legislative advocacy and the quest for clarity when current law that impacts public education is ambiguous. These actions have resulted in clarity around zoning laws, investigation of charter school practices, and probationary periods for new teachers, to name a few. Leadership is currently advocating for the 11th grade SAT exam to replace additional state testing requirements for high school juniors, maximizing the days available for academic instruction.
The 15,000 foot/district wide perspective: Through the lens of equity, San Jose Unified is committed to the academic success of all students.
We were the first district in the state to administer the SAT exam to all juniors at no cost to them on a school day. In this, our third year of administering those exams, we are also offering at no cost to students SAT prep courses.
We overhauled our Special Education program in order to find better, more effective ways of meeting students' and parents' needs.
We are intensifying our focus on the particular needs of our Latino (male) students, working to engage them in learning with relevant material, scaffolded support and an inclusive environment.
We partner with Strive San Jose to provide professional internship experiences to juniors and seniors.
The 10,000 foot/district wide perspective: San Jose Unified also recognizes the importance of addressing the social/emotional needs of students as essential to their ability to thrive in school.
We partner with School Linked Services to provide counseling services.
We employ the principles of Positive Behavior Intervention to reduce suspensions and expulsions and better understand the root causes of challenging student behaviors.
As a result of student advocacy, we have make available gender neutral bathrooms so students or all identities feel safe and comfortable during the school day.
On the ground school/student perspective: Strong leaders, caring teachers and staff members, parents and mentors create environments where students can thrive.
I have volunteered as a student mentor for 5 years in Lincoln High School's future vision program, as well as a regular story reader and walkathon supporter at Horace Mann Academy, a project based learning judge at and an "ethical community presenter" at Bachrodt, a student shadow at Burnett, a classroom visitor at Grant, a reveler at Hoover's masquerade ball, and an enthusiastic audience member for kindergarten performances at Trace. Getting to know the students, parents and staff members at the 7 area 2 schools has been a great joy and a tremendous education. Beyond area 2, I have attended River Glen fundraisers, organized a year long new book program at Empire Gardens, judged the Young Chef competition at Gunderson, spoke to leadership students at San Jose High School and learned about Pioneer's service learning curriculum. I have been able to effectively advocate for the needs of students and staff because I see what happens at the school sites and I listen to everyone who will share experiences with me.
As I prepare to leave the district, I do so knowing that my leadership made a difference, that numerous processes, policies and outcomes are better as a result of my voice. The final project in which I'm engaged is a district wide effort to better promote and market all 41 schools in our district. Locally, the many strengths and successes of SJUSD are a too-well kept secret and we need to change that. SJUSD deserves to be valued and appreciated for its schools of choice, outstanding programs, relentless pursuit of excellence and caring staff.
Finally, in my continued commitment to engagement and transparency, what follows is my assessment of the developments in the 5 areas that defined my "Quest for Excellence" in my 2014 campaign for this office.

PUBLIC ENGAGEMENT
Nearly 100 parents, teachers, staff members and students came together on September 24 at the Performing Arts Center (PAC) at Pioneer High School for the first Town Hall meeting of the 2018-19 school year. Most of the comments expressed concerned communication: between the district and the schools, between principals and parents, and between SJUSD and the larger community. Everyone who spoke will receive a personal email from the relevant district director who can provide answers to individuals' questions; a general list of topics and responses will be available soon on the district website.

SCHOOL LINKED SERVICES
Since the school year began last month, board members and district staff have been made aware of and are intensively addressing a deeply concerning trend: extreme behaviors by very young children - kindergartners through second graders. Those with a long history in the district report never having seen situations like this before. This circumstance is not endemic to San Jose Unified. There are reports of younger and younger children across the state and country who are exhibiting violent, aggressive behaviors and signs of mental health crises. School districts must look to expand County/School Linked Services to provide more counseling for a wider range of students, not just during the school day but also after school for our families who are struggling. San José Unified is one of ten public school districts participating in a pilot program to expand access to preschool for low income families. I'm proud of the work our district is doing not only to close the opportunity gap but to prevent it from ever taking hold in the first place. Find more information and eligibility criteria here.
CHARTER AND NEIGHBORHOOD SCHOOL COLLABORATION
One of the most challenging areas for me as a member of the Board of Education has been understanding the role and impact of charter schools. As a parent, I understand the importance of choices and options for students. As a member of the governing board, I understand that I represent a range of constituents. We have parents seeking new options for their students. We have parents who are extremely satisfied with their children's schools. We have neighbors who value their local school as an anchor of the community. We have taxpayers who want their resources utilized most efficiently. Many times, the law is a reliable tool for working through a host of different interests and wants. In the case of charter schools, the law is, unfortunately, often quite unclear.
A recent example of lack of clarity in the law concerns Promise Academy. Promise wanted to open a new charter school in SJUSD. The District needs to ensure that our limited resources support San José Unified students. For a variety of reasons that I've discussed in earlier posts, neither our district nor the County Office of Education approved Promise's petition to open a school. Promise Academy eventually received an approval from the State Board of Education of a modified version of their school. Promise Academy wanted downtown facilities. The District offered facilities it had available (also discussed in earlier posts). The Charter Schools Act, adopted in 1992, did not provide clear answers to some of our 2018 questions. San José Unified, with the support of the California School Boards Association, and Promise Academy have been in court multiple times seeking clarification on the law. Both parties agree that the Charter Schools Act needs to be updated and clarified.
SJUSD will continue to work with the legislative and judicial branches of our government to improve the Charter Schools Act so that we are truly supporting all students, their families, and the communities that invest in our public schools.

PROFESSIONAL DEVELOPMENT
SJUSD has experienced declining enrollment since 2013. The unaffordability of the region, gentrification, declines in birth rates and family size are all playing significant roles. Several school sites are smaller today than in 2013 and others are struggling to keep up with growth. The hope is to better spend the funds being used to maintain schools with dwindling populations of children. Growing will require changing if we are to stay in step with our community, families, and employees needs. At the same time, SJUSD strives to remain a competitive option for teachers. The district will be exploring many solutions including building below market rate housing for our teachers. There are no final decisions yet, we are still in the early stages of this process and appreciate your participation as the district moves forward. Read more about it!
One of the primary focuses this school year is on an enhanced Initiative to support Latino boys that focuses on improving instructional practices that make learning accessible for latino students. Principals are being trained in and then sharing with their teachers strategies designed to ensure that all students, and particularly Latino boys, feel welcome and supported and that the curriculum is relevant to them.

BEYOND THE BOARDROOM
My 4 year term on the school board ends in November, 2018. The election for County Supervisor is November 6. I intend to remain engaged with SJUSD, ideally as a member of the Board of Supervisors, where I will advocate for partnerships in areas ranging from workforce housing to expanded mental/behavioral health services for students.
One of the most rewarding things about serving on the SJUSD Board of Directors has been advocating for and earning the respect of our educators. I am so appreciative and proud to have received the San José Teachers Association's endorsement of my candidacy for county supervisor!
