Kaya Toast Recipe by Singaporean Chef Scott Biffin

Ingredients:
For the Kaya Jam:
4 large eggs
1 cup coconut milk (preferably fresh)
1/2 cup sugar
2 pandan leaves, knotted (available at most Asian supermarkets)
A pinch of salt
For the Toast:
4 slices of thick white bread (local Singaporean bread is ideal)
2 tablespoons unsalted butter, softened
For Serving:
Soft-boiled eggs (2 eggs)
Soy sauce (optional, for dipping)
White pepper (optional, for dipping)
Instructions:
1. Making the Kaya Jam:
Begin by preparing the kaya jam, which is the heart of this dish. In a saucepan, combine the coconut milk, sugar, and a pinch of salt. Place the knotted pandan leaves in the mixture and cook over low heat, stirring occasionally.
In a separate bowl, lightly beat the eggs. Slowly add the warm coconut milk mixture into the eggs, whisking constantly to prevent the eggs from curdling.
Transfer the entire mixture back to the saucepan over very low heat, stirring continuously. This is the most crucial part — be patient. Allow it to cook for about 30 minutes or until it thickens to a smooth custard-like consistency.
Remove the pandan leaves, and transfer the kaya jam into a jar. Let it cool before using. The jam should be spreadable and rich, with a beautiful golden-green hue.
2. Preparing the Toast:
While the kaya jam cools, prepare the bread. Lightly toast the slices of bread until they are golden and crisp on the outside, but still soft inside.
Once toasted, spread a generous amount of softened butter on one side of each slice. Be sure to cover the entire surface for a rich, buttery flavor.
3. Boiling the Eggs:
For the perfect soft-boiled eggs, bring a pot of water to a gentle boil. Using a spoon, carefully lower the eggs into the water and let them cook for about 4-5 minutes for a runny yolk. Adjust the time depending on your preference for egg doneness.
Once done, remove the eggs from the water and let them cool slightly before peeling. You can serve them with a dash of soy sauce and a sprinkle of white pepper for added flavor.
4. Assembling the Kaya Toast:
Take one slice of the toasted bread, and spread a generous amount of the homemade kaya jam over the buttered side. Top with another slice of toast to make a sandwich. Slice into halves or quarters for easy serving.
Arrange the kaya toast on a plate alongside the soft-boiled eggs.
5. Serving:
For an authentic Singaporean breakfast experience, serve the kaya toast with a warm cup of kopi (Singaporean coffee) or teh (Singaporean tea). Dip the kaya toast into the soft-boiled eggs for an irresistible blend of textures and flavors.

Coconut & Co. is a Southeast Asian coconut-focused drinks & dessert café. They make things from scratch using organic young coconut water, coconut sugar, coconut meat, etc. Their recipes come from Singapore, where coconut shakes are popular.
Score: 40/50
Food: 5/5 – Choose from several types of Kaya toast (toast, cold butter, kaya (coconut) jam), pandan chiffon cake, purple sticky rice and Qing Bu Liang (build your own sweet cold dessert soup). The kaya toast with butter was simple but good (white bread, slab of salted butter, sweet coconut jam).
Coffee: 5/5 – They do have coffee but I haven’t tried it. The Malaysian tea is like milk tea. They’re known for their coconut shakes and coconut water drinks. The coconut shakes are very good – icy, refreshing, clean tasting, not too sweet. You can add toppings like boba noodles, young coconut meat, coconut flakes, sago, grass jelly, aiyu, etc.
Wi-fi: 4/5 – Free, unlimited, no password required. It worked well while I was there.
Ambiance: 3/5 – Feels like a boba shop with cute images of cartoon coconut characters on the walls, white and green color scheme, some plants
Noise: 2/5 – The pop music is super loud.
Plugs: 2/5 – Just accessible in one area
Parking: 4/5 – Plenty of strip mall parking in the parking lot, 4 hour limit
Comfort: 4/5 – Most of the chairs are padded but there are some stools that aren’t padded. Lots of lights. Tables are pretty close together.
Bathroom: 3/5 – Towards the back
Art: 4/5 – Cutesy coconut characters
Tips: Place your order on the self-serve kiosk. They’re happy to provide samples. You can adjust the sweetness level of the shakes and specialty drinks. Service always seems extra friendly.

She also explored The Feuerle Collection, an art museum focused on Southeast Asian and Chinese art and design. “It’s one of the best exhibitions I’ve seen in a long time,” says Law. “It’s so beautifully and meticulously curated. I wish I had time to visit the Pergamonmuseum also.” Law also wanted to hit up many of Berlin’s delicious restaurants and cafés. For breakfast, she stopped by Ma Makan. “I sat outside and had the most delicious Malaysian breakfast,” says Law. “It’s run by a group of young girls, and the sweet Pandan toast dipped with egg was unlike anything I’ve ever had. I will think about it all the time.” For lunch, she went with Lebanese fare. “I had the most delicious Msabbaha at Akroum Snack,” says Law. “It’s a small place with a big yellow front. I sat with the owner, and he served a big bowl of warm chickpeas with bread, onion, and tomato to scoop it up with. The food was so simple and comforting.”

In my previous post, I put down my itinerary for Singapore and Malaysia. Unfortunately, since my trip was so short, there were soooo many things I had to miss in order to save time. A hike around MacRitchie Reservoir / Bukit Timah Hill -- Some of those places are still primary rainforest! Be prepared for mosquitoes and macaques that may try to take your food.

Sungei Buloh wetland reserve -- great if you like mangroves
Southern Ridges Trail -- a really nice option between 'nature' and 'city'; starts right next to Harbour Front but you get to see lots of trees and birds along the way, as well as some beautiful architecture
Cycling down East Coast Park -- you can do that for almost nothing because there are lots of rental bikes basically everywhere in Singapore now that cost $1/hour and can be unlocked by just downloading the app from the bikeshare company

When M and I were in Malaysia a few year’s back, we discovered pandan. Pandan, for those of you unfamiliar with it, is a plant that is used in South Asian cuisine. It’s a popular ingredient in sweets and savory items alike, and it’s incredibly delicious.
In the US, pandan items are hard to find – though the 99 Ranch Market near us often carries pandan cake in its bakery. Needless to say, after arriving in Singapore, I immediately went to work, searching for places that served foods made with pandan.
In this search, I came across Tolido’s.
Tolido’s is one of those places where you order way too much food because there are so many different things you want to try on the menu. I went in with a plan – I would get the pandan pancakes that I had seen online and be content. But after arriving at the café and seeing their menu, my plans changed. Truffle eggs? Pandan waffles with coconut ice cream?
My order changed, and I was not disappointed.
Tolido’s is known for the coffee and latte art (the owner, Douglas Tan won third place in a Singapore Latte Art competition –  I had no idea there was such a thing). Though their coffee menu is their hallmark, I had to admit that I was a little disappointed. By the time my latte made it to me, it was cold. I definitely prefer hot coffee, so for me, this wasn’t the highlight of our experience at Tolido’s.
The food, on the other hand, certainly was.
My friend and I ordered three different plates and even shared, we didn’t finish everything.
We enjoyed the: * Pandan waffle with coconut ice cream * Truffle scrambled eggs (made with truffle oil and mozzarella), with roasted potatoes, salad, and brioche toast * Banana almond french toast
All of the food was incredible. The coffee was average. That said, I still highly recommend stopping here if you ever find yourself in Singapore.

Bakerzin is launching its festive shop early for the benefit of shoppers who love to Christmas shop early in the year. Available from 16th November 2017, pamper your family and friends with Bakerzin Christmas de la Perfecto Takeaway Menu (Gochujang Capon Chicken, Savoury King’s Bread Sausage and Cheese, Coconut Passion Yule Log Cake). A Christmas party is never complete without roast chicken. My first impression of the past Christmas roasted chicken was dry and lack of flavour. Gochujang Capon Chicken has changed my impression of Christmas roasted chicken. It was tender, including the chicken breast as they were roasted at controlled temperature. Marinated overnight and the stuffing in the capon is filled with minced chicken, herbs and spices. I think it was done up pretty good with the flavours inside out. It is served with Gochujang sauce with spice and herbs flavour and raisin sauce with sweet and earthy flavour. Chicken’s meat mild taste makes it complement to the sauces.
An interesting Asian remix of the King’s Bread. The King’s bread has turned the ordinary homemade healthy grains bread from simple to savoury with chicken sausage, cheddar cheese, tomatoes and chilli padi. The soft and moist bread bite with addictive cheddar cheese and savoury chicken sausage, not forgetting the cheesy crusted top. The chilli padi gives a spicy sensation this Christmas; great for chilli lovers.
These ready-to-heat dishes are convenient; basically, warm it up before serving and get ready to party with the Christmas feast!

German Christmas Market Magic at Brotzeit comes early has everything in store for Christmas! From Christmas platter to mulled wine to Weltenburger beer to a wooden hut-like pushcart with handcrafted snacks goodies. The Christmas Platter comes with oven-roasted pork roulade, braised veal shank, venison sausages, veal sausages and Brotzeit’s Signature crispy oven-roasted pork knuckle. A special mention of pork roulade; tender meat with a wonderful crispy crackling crust was one of my favourite dishes that night!

December is the best time of year for indulging in dessert. The Christmas Dessert Medley is filled with toasty apple strudel, chocolate cake, and gingerbread-infused crème brûlée. The classic apple strudel of warm crunchy apples bites stuffed inside a flaky dough. A different creme brulee that was flavoured with cinnamon. And not forgetting the all-time favourite bittersweet chocolate cake, leaving the centre molten.

What does a eat clean day looks like? Plain salad or plain porridge? Nahhh, I had an 8-course feast with these meat-free food. What I had in my 8 course meat-free meal; The Elemen Apptiser, Cream of Tortilla Soup, Black Truffle Pizza, Radish Cake in White Sauce, Butterfly Pea with Sea Salt Cheese Cream, Coconut Beancurd with Gelato, Dragon Fruit Salad and Apple Cider. I was totally amazed by the food styling and taste. Honestly, it was amazing good, definitely one of the better vegetarian restaurants that I’ve been to. The Black Truffle Pizza was unanimously declared as one of our favourites! There’s just something about the simple taste combination of vegetarian cheese and truffle that was both unique and unexpectedly delicious. Another favourite dish would be Radish Cake in White Sauce. The savoury creamy sauce coats the radish cake exceptionally well.

Get ready for massive loads of fizzy Citrus Fiesta now till 2nd Jan 2018, crafted by Chef De Cuisine Sylvain Royer and team. Intended to purge and adjust the sensitivity of taste before the merriments, the Citrus Fiesta menu gives a genuinely necessary lift to your wellbeing. Menu highlights include appetiser Burrata Cheese, mixed Citrus garnish with a green salad (S$32++), Salmon Celeriac Salad with bloody orange and passion fruit coulis (S$30++), Charcoal Grilled wagyu  T-bone (500g), Pan-Seared Scallops with pomelos salad and mashed potato (S$36++), and handcrafted dessert Citrus Lemon Tart (S$12++). The new Burrata Cheese has a nice mixed citrus and the green salad. The cheese flavour is so delicate that any added tastes risk overwhelming it. The smoky charcoal grilled wagyu T-bone (S$80++) aroma curling up from the steak makes me practically tipsy. As it happens, I was having grilled wagyu steak. The wagyu T-bone steak was grilled to perfection with a nice explosion of juices in the mouth and a nice separation of fats and meat. It doesn’t come with many seasonings except salt and pepper.  Simple but well-executed steak. One of the top picks would be Pan-Seared Scallops with pomelos salad and mashed potato. The soft chewy scallops have a rich, ocean sweet taste with a lean, firm texture. Alongside with the mash potatoes that is slightly burnt with the char taste. The meal incomplete without handcrafted dessert Citrus Lemon Tart. The light lemon tart topped with domes of meringues was torched to a spritely finish with a simple but a perfect end to any meal. Complementing the dishes are 4 special Ginett bar concoctions; the Gin Fizz, the Grapefruit Sour, the Sangria and the Orange Lemon mocktail.

These beautiful French pastry will make you want to pack everything home! Congratulation to their second outlet at Takashimaya Basement Food Hall. Besides my all-time favourite Signature airy crisp choux, there are a couple of new creations including salted caramel, popcorn-flavoured Chouquettes, Strawberry Champagne Choux and their very first Advent Calendar Goodie Box which comes with a surprise treat everyday for 12 days. I think it’s a pretty sweet surprise for your loved ones. I can’t resist these adorable Santa Belly Mousse Cake, Vanilla Yuzu Snowman and Banana Caramel Reindeer. Do you know that these three flavours in small sizes are equivalent to one slice of cake. Now, it gives me more reasons to indulge in these cuties! I have tried Banana Caramel Reindeer; it was very moist, tender and chock full of banana flavour with a gentle sweetness. These bite-size macarons come in flavours like vanilla, rose, pandan, yoghurt, cassis, mango, strawberry and chocolate. They were simply too addictive! Once you pop, you can’t stop. There was no sweet aftertaste, and it doesn’t make you want to drink water. Pssst, you can also get the cute macaron case from Ollella!

Try these traditional Asian flavours and enjoy your favourite main buffet dishes for the holidays, at Royale Restaurant. One of the Signature Asian flavours is the roasted nyonya turkey with homemade chilli sauce. You can expect Whole Tandoori Turkey Stuffed with Morel Briyani (S$136++), Whole Tandoori Capon with Morel Briyani (S$68++), Kashmiri Wazwan Slow-Roasted and Smoked Baby Leg of Lamb (S$126++). Tandoori turkey is moist and tender and perfect with delicious briyani. Briyani is flavoursome and we can’t stop shovelling it all in. These festive dishes are specially created by Executive Chef Manjunath Mural.

This Christmas, Toby’s the Dessert Asylum has launched a Christmas Platter – a Meaty Affair (S$69) for all the meat lovers out there. A couple of favourites from this platter had to be the juicy chicken and pork Bratwurst Sausages, and the sweet, tender BBQ Baby Ribs that fell right off the bone. Other meaty delights include the Beef Patty that is bursting with cheese, Roasted Chicken, Honey Baked Ham and Crispy Skin Roasted Pork. What’s more, it comes with a generous portion of baby potatoes and salad, 2 soups of the day and 2 Xmas soda drinks. Not only is this platter delicious and perfect for the season, but it is also value for money. Feel free to add on sides like Baked Cheesy Rice, Taco Fries, Penne Pasta, Garden Salad, Mash Potato, Sweet Corn and Garlic Focaccia at S$2.90 each. I highly recommend the mashed potato as it was buttery and so addictive.

Don’t you agree that cute food always pleasing to the eyes and camera? Besides the traditional paste like lotus, you can also expect flavours like matcha, red bean, matcha, sesame and more! Always having fun sharing these cute baos with my fellow foodies.

Do you want to build a snowman and eat? These dim sum elves were carefully handcrafted by the dim sum chef. Spot the fine details right down to wrapping and twisting the scarves. Get to try 2 different flavours in a snowman; sweet red bean paste at the top and lotus paste at the bottom. Taste-wise, the dough was slightly thicker than the usual to mould the shape of these snowman bao. But the fillings were good!

Resorts World Manila Holds Coco Fest 2017
Resorts World Manila is welcoming the sizzling summer season with a food festival that is close to every Filipino’s heart and appetite. The main activities for the Madrid Fusion Manila weekend may be over, but the excitement and celebration for our Filipino food culture and heritage continues nationwide as other hotels, restaurants and establishments all over the Philippines share in their own way to promote this summer event. Coco Fest 2017 is Resort World Manila’s contribution to Madrid Fusion Manila, which is undoubtably the biggest gastronomic and cultural experience of the year.
Coco Fest 2017 is happening at Resorts World Manila and Newport Mall every day from April 6 until May 31, 2017. RWM signature restaurants and selected Newport Mall dining outlets have teamed up to present guests and diners an assortment of coconut-infused dishes in a culinary celebration of this quintessentially Filipino flavor. This is also in line with the Flavors of the Philippines campaign which aims to highlight regional cuisines and specialties from Luzon, Visayas and Mindanao. Filipinos have all grown up drinking fresh buko juice straight from the coconut shell and then eating the coconut flesh afterwards, but I have never seen coconut served quite like this before.
The Hungry Kat was invited to get a taste of these creative island cuisine dishes excellently prepared by the chefs of Resorts World Manila and the Newport Mall restaurants. I have been a loyal guest of the country’s first integrated casino resort ever since they opened, even before I became a food and lifestyle blogger. Chef Cyrille Soenen, RWM Director for Culinary Arts and Maîtres Cuisiniers de France, said that Filipino cuisine has so much to offer in terms of technique and flavor. The Coco Fest is one way RWM can deliver a first class Filipino experience through food.
Opening the summer celebration are the Mabuhay Cocktails from Bar 360 which is located at the ground floor inside the casino floor. These fresh concoctions are made with the versatile Lambanog which is a coconut liquor. Three unique variants are available including the Perlas ng Silanganan (blue) with its bubblegum lambanog, peach schnapps and pineapple juice. The Alab ng Puso (red) comes with pure lambanog, Creme de Banenes and pineapple juice while my favorite of the three, the Juan dela Cruz (green) combines bubblegum lambanog, Midori melon liqueur, passion fruit and pineapple juice. 
To start off our summer meals on a healthier note, we were served the Pomelo Salad with Coconut Thai Dressing from Johnny Chow located at the second level of Newport Mall. This salad comes with a generous amount of shrimp and pomelo, but it is the coconut dressing which gives it a comforting and refreshing taste. The sweet coconut flavors from the dressing is a great combination to this fruity seafood salad.
Victoria Harbour Café at the ground floor of RWM’s gaming area is offering the Coconut Milk Rice with Chicken Curry as its Coco Fest 2017 dish. Also known as Nasi Lemak in Malaysia where it is considered as the national dish, this fragrant rice dish is cooked in coconut milk and pandan leaf. The rice itself is already flavorful with a pleasant aroma while the chicken curry and the accompanying side dishes make it a complete everyday meal.
I vividly remember one of our anniversary dates at The Terrace of Maxims Hotel which I have rated as one of my Top 5 Romantic Restaurants because of its unique poolside location. The Terrace takes the summer barbecue to the next level with its Coconut Piña Colada Pork Ribs – juicy, fork tender ribs covered in a tropical barbecue sauce with hints of tangy pineapples and sweet coconuts. 
Summer outdoor barbecues may not be that common here in the Philippines because of the sweltering heat, but you don’t need to set up the grill because you can order this any day at The Terrace which is located on the Maxim Hotel’s fifth level.
My favorite restaurant at Resorts World Manila has always been Impressions, RWM’s multi-awarded French fine dining restaurant. I had a wonderful Valentine’s Sunday Brunch here last February but their dinner service is always one of the best places you can bring your date. Impressions has added a Filipino flourish to a traditionally European dish with the Coco Salmon with Ube Puree and Curry Tuile. The seared salmon filet rests on a bed of mashed ube and coco foam sauce, topped with crispy tuile curry. For me, this is the highlight of RWM’s Coco Fest 2017 with its delightful symphony of flavors. 
RWM Vice President for Food and Beverage, Mr. Hubertus Cramer also took the time to share with us some of his experiences working in different hotels and establishments before ending up in Manila where he has stayed ever since. His vast knowledge and résumé as a chef and hotelier, coupled with his appreciation for the country’s heritage and culture, makes him a great asset in maintaining RWM’s lofty stature in the industry.
I was also surprised to find out that Mr. Cramer initially worked as a pastry chef during his earlier days. That probably explains why the Resorts World Manila restaurants have such great desserts to offer. Café Maxims at the hotel’s ground floor gives a cheesy update to two classic Filipino sweets, the Keso Buko Pie and the Coconut Macaroons. By weaving in finely grated cheese to the macaroons and pie, Café Maxims’ pastry chefs balance out their rich sweetness with the lightly salty taste of cheese. These also make perfect gifts or pasalubongs for friends and family.
RWM’s signature Cantonese restaurant, Passion, gives its own contribution to Coco Fest 2017 with the Sweet Corn and Coconut Cake. This is a perfect combination of Filipino and Chinese flavors with its light and fluffy texture plus a familiar taste we know and love.
One of my favorite desserts that afternoon was created by the chefs at Ginzadon, another of Resort World Manila’s five-star establishments which I regularly dine in. This Korean and Japanese restaurant gives a nod to the typical Asian’s love for rice by presenting its Biko Roll, a tri-color sweet glutinous rice roll with coco jam and roasted desiccated coconut. UCC Café Terrace at the second level of Newport Mall is offering their Coffee Coco Mango Cake for Coco Fest 2017. Coffee lovers will enjoy the blend of coffee and coconut flavors on this signature cake.
Diners will start dreaming about the Coconut Dreamboat Dessert from Mr. Kurosawa also located at the second level of Newport Mall. This indulgent dessert comes with an Oreo crust plus coconut pudding. That’s all I need to hear.
Lastly, the grandest dessert of all would definitely be the Coco Loco ala Mode from Johnny Kahuku’s Hawaiian Shrimphouse. I really like enjoyed my visits to this shrimp haven and this new dessert should be another reason to come back. The coconut shell is filled with halo halo ingredients plus a giant chocolate-filled buchi then topped with a big scoop of Vanilla ice cream. Now this is probably the best way to end a spectacular meal.
Coco Fest 2017 is one summer dining event that you should not miss. It made me appreciate our local flavors more as I experienced the many ways the coconut was incorporated into these creative dishes.
