Dosa served with nutritious Goji berry tomato spicy chutney! Recipe: take a cup of goji berries and boil it in 1 cup of water adding little salt, once soft keep it aside to cool. In a pan add oil and sauté chopped onions, garlic, ginger, Thai chili, red chili, hing, dalia (pottu kadalai) tomatoes, mint, cilantro. Blend them together along with the boiled and cooled goji berries along with the boiled water, little tamarind and salt. For garnish, add oil in the same sauté pan, add oil, mustard seeds, curry leaves and broken red chili, once the mustard seeds starts to splutter, add the ground mixture and let it simmer for 3-4 minutes with a lid slightly open since it splashes like crazy! It’s ready to be served with Dosa, Idli, rotis and even as a spread on sandwiches! Yes, after Ragi kali/porridge, Instant Ragi Rava dosa, this week I present you the humble and nutritious Ragi idli. Here, I have shown the grinding of the batter with the traditional wet grinder and stationary mixer grinder. Results were the same, provided the fermentation process is successful.
