For @shanastoryteller who asked for the gut bacteria expert's* recipe:
The professor's green energy smoothie
Ingredients
(two servings, according to the original)
half an avocado
half an apple
the juice from half a squeezed lemon
1 pinch fresh ginger
10 grapes or half a kiwi
5 dried walnuts
1 sheet nori (the kind used for sushi)
4 bunches of spinach
1 bunch parsley
a handful of broccoli
a handful of bean sprouts
half a glass of herbal tea
Preparation
Prepare the vegetables and fruits by removing the core from the apple, the peel from the kiwi, etc.
Put the vegetables in the blender with the herbal tea (cooled) and blend until it becomes a very fine-grained, green and fragrant smoothie.
Garnish with fresh herbs according to your taste preferences.
From https://livsstil.tv2.dk/mad/opskrift/professorens-groenne-energigroed (translation: https://livsstil-tv2-dk.translate.goog/mad/opskrift/professorens-groenne-energigroed?_x_tr_sl=auto&_x_tr_tl=en&_x_tr_hl=da)
My tips
The taste is pretty neutral (YMMV) but if you substitute ingredients, it may affect the taste - cabbages in particular
I usually double the recipe and have it over two days - I can't be bothered to keep half an apple lying around
I use a tall container with a volume of 1,6L/3.4 pint - that's on the small side for my version
I wouldn't make bigger portions than can be eaten over two days, and unless consumed straight away it must be kept in the fridge - you're risking a bacteria bomb instead of a nice smoothie...
I rarely use lemon, but use a few good slices of ginger (peel the whole chunk, slice and freeze for less fuss)
If you live near an Asian market, they probably have bigger packs of nori. I buy one with 50 sheets - it's *much* cheaper per sheet than the supermarket's price
I skip the parsley (can't be bothered) and buy chopped (see next bullet point) frozen spinach and add to taste
Instead of broccoli (expensive; doesn't last long in the fridge) I buy whatever cabbage is cheapest and use a large handful of it chopped up some (the fibres in cabbage and whole spinach leaves does not play well with my blender - YMMV)
I use a large mug of herbal tea and add psyllium husk for more fibre
In general I substitute/add veggies/fruits if I have something going a bit overripe (buying a load of bananas cheap and freezing them if they go brown before eating: also great for this); if I'm out of grapes, I add raisins ¯\_(ツ)_/¯
IIRC he's a proponent of using organic prooduce. As you can tell from my notes I'm cheap and/or poor cost conscious, so I buy the cheapest. It's up to you :)
I eat this in addition to whatever fruits&vegs I usually have - it's an easy way to up my intake and get some things I don't eat a lot of (e.g. cabbage, spinach)
I make my own beansprouts - but this is already too long, so it's in the next post
*Oluf Borbye Pedersen - from the link:
Intestinal Microbiome Research OP is a leading partner in the EU-Metahit initiative (www.metahit.eu) which delivered the first and second gut microbial gene catalogue of 3.3 and 9.9 mio microbial genes, respectively, from the human intestinal tract. With quantitative metagenomics he and his team demonstrated in a population sample that about a fourth of adults is markedly deficient in gut microbiota diversity. The same individuals were featured by insulin resistance, overweight, dyslipidaemia and proinflammation. OP et al. reported the first quantitative metagenomics study of gut microbiota in type 2 diabetes, prediabetics and women with gestational diabetes and they discovered a new biological fingerprint, gut enterotypes of the human host. In addition, in recent studies of the human gut microbiome, Pedersen and colleagues have teased out drug effects versus disease effects on gut bacteria composition and function. Recently, they reported the first example of gut microbes linked to human insulin resistance. Mechanistically the investigators extended and validated their findings in in rodents. The Pedersen team has done several interventions targeting the human gut microbiome and blood metabolome including the impact of broad-spectrum antibiotics and of dietary gluten content, respectively. Studies that influence dietary and medical practice.

Hello, I am Aya, 26 years old. I currently live in the northern besieged Gaza Strip. I am a mother of two children, my eldest daughter Sanaa, who is 5 years old, and my youngest son Wasfi, who is 3 years old.
We were displaced from our home 🏠at the beginning of the October 7 war. We were displaced to schools🏫 and relatives’ homes. We left our home under the bombing, fire belts, missiles and terrifying shells in the Zeitoun area. We did not take anything with us. We left our food, belongings and clothes and left our beautiful home. We have not returned to it until now. I appeal to everyone and ask you to help me. There is nothing. We lost everything we own, our home and my husband’s only job. My husband and I suffer daily from the problem of providing food and what we will feed our children today due to its high prices. All our food depends on canned food. My children always cry😭, wanting fruits, vegetables and eggs,🍅🍏 and my young son tells me, “Mama, I want to drink milk.🥛” I do not know how to respond to them. My young children have suffered greatly from the spread of pimples that left a disfiguring effect on their bodies, like burns. Also, The shortage of gas led us to use firewood🔥, nylon and brambles for baking and cooking.
With the arrival of winter, I do not know what to do. Even the clothes in the market are very expensive. I went to buy used clothes to warm my young children.
I hope everyone will donate even a little.i am confident that you will stand with me and support me until I achieve my goal and save my family 👩❤️👨from from the danger of war share my story. Everythings help.

Hello everyone
I really miss all of you
Thanks for your ask
After 400 days of war on Gaza I can say :
I am still alive and the dream continues
But war crimes are still increasing day after day, we are suffering from forced displacement and continuous displacement, there is famine in the southern Gaza Strip, the markets are empty
There are no vegetables or fruits or any kind of meat, there is a great shortage in the availability of flour and it is available at crazy prices despite being spoiled and full of insects, there is no day of clothes and winter is at the door, if something is available it is at a crazy price
Where are human rights and international organizations
I feel oppressed every moment my daughter cries (Mama I am hungry I want to eat something delicious)

Sunday evening marked the beginning of the Muslim holy month of Ramadan, as Israel’s relentless attacks on Gaza amid severe foot shortages continue. Instead of celebrating, Palestinians in Gaza are entering the month with heavy hearts. The Palestinian Ministry of Foreign Affairs says Ramadan in the Gaza Strip this year is “unlike the holy month in previous years or anywhere else in the world,” especially in light of the destruction of all aspects of life in the Gaza Strip, including dozens of mosques. Ramadan has arrived as “Palestinians have been suffering from the lack and scarcity of food and drinkable water for more than five consecutive months,” it continued. Half of the besieged enclave population crammed into the southern city of Rafah, many living in plastic tents and facing severe shortages of food.
“Everyone we’ve known has lost a family member or loved one or someone they knew from their networks, which makes it very difficult for people. People used to prepare and start the first day of Ramadan with festivities, decorations, lights, and lanterns in the streets, markets, and mosques; the vast majority of those are now destroyed, according to Al Jazeera correspondent Hani Mahmoud from Rafah. Ramadan is usually filled with family feasts; however, Israel’s ongoing siege has rendered this almost impossible for those living in Gaza. Even where food is available, there is little beyond canned goods, and the prices are too high for many. Philippe Lazzarini, head of the UN agency for Palestinian refugees, says Ramadan is here as “displacement continues, and fear and anxiety prevail amid threats of a military operation on Rafah,” Gaza’s southernmost point.
“This month should bring a ceasefire for those who have suffered the most. They need respite and peace of mind. It’s long overdue,” he continued on X. Sabah al-Hendi, who was shopping for food on Sunday in the southernmost city of Rafah, told AP: “You don’t see anyone with joy in their eyes. Every family is sad. Every family has a martyr.” Meanwhile, in the north of Gaza, Palestinians continue to face famine, as severe food and aid shortages continue.
On Monday afternoon, two more children in northern Gaza died of starvation, reported Al Jazeera, citing local sources, bringing the total number to 27, most of them children who have starved to death. At least one in six children in the north are malnourished, according to the World Health Organization. “I came here to buy but I can’t find anything to buy,” Sufian al-Yazji, a displaced Palestinian in the north, told Al Jazeera.
“There’s nothing, no dates or milk, or anything. One can’t find anything for their children. All these canned goods are full of germs that infect the stomach. We need vegetables and fruits to feed our children because they’ve weakened and will die from hunger.” Over 2,000 medical staff in northern Gaza are exhausted and struggling to keep up under immense physical pressure with nothing to eat as they work around the clock, says the Palestinian Ministry of Health. As a result of the lack of healthcare, bombing, starvation, and dehydration, the enclave’s elderly population are dying at an alarmingly high rate.
Euro-Mediterranean Human Rights Monitor said in a statement on Sunday that its team in Gaza “is recording nearly daily deaths among the elderly due to Israel’s systematic and pervasive crimes of starvation and treatment deprivation in the Gaza Strip, especially in Gaza City and the Strip’s northern regions.” “The majority of these cases do not reach hospitals, which are only partially operational in northern Gaza because of the difficulty of access given the ongoing Israeli military attacks. Consequently, after dying at home, the elderly are buried either close to their residences or in makeshift graves dispersed across the Strip. There are currently more than 140 such cemeteries,” Euro-Med said.
