Long-lasting 'forever chemicals', which can cause damaging health issues, found in 18/20 brands of paper straws
In the first analysis of its kind in Europe, and only the second in the world, Belgian researchers tested 39 brands of straws for the group of synthetic chemicals known as poly- and perfluoroalkyl substances (PFAS).
PFAS were found in the majority of the straws tested and were most common in those made from paper and bamboo, the study, published in the peer-reviewed journal Food Additives and Contaminants, found.
PFAS are used to make everyday products, from outdoor clothing to non-stick pans, resistant to water, heat and stains. They are, however, potentially harmful to people, wildlife and the environment.
They break down very slowly over time and can persist over thousands of years in the environment, a property that has led to them being known as "forever chemicals."
They have been associated with a number of health problems, including lower response to vaccines, lower birth weight, thyroid disease, increased cholesterol levels, liver damage, kidney cancer and testicular cancer.
"Straws made from plant-based materials, such as paper and bamboo, are often advertised as being more sustainable and eco-friendly than those made from plastic," says researcher Dr Thimo Groffen, an environmental scientist at the University of Antwerp, who is involved in this study.
"However, the presence of PFAS in these straws means that's not necessarily true."
A growing number of countries, including the UK and Belgium, have banned sale of single-use plastic products, including drinking straws, and plant-based versions have become popular alternatives.
A recent study found PFAS in plant-based drinking straws in the US. Dr Groffen and colleagues wanted to find out if the same was true of those on sale in Belgium.
To explore this further, the research team purchased 39 different brands of drinking straw made from five materials -- paper, bamboo, glass, stainless steel and plastic.
The straws, which were mainly obtained from shops, supermarkets and fast-food restaurants, then underwent two rounds of testing for PFAS.
The majority of the brands (27/39, 69%) contained PFAS, with 18 different PFAS detected in total.
The paper straws were most likely to contain PFAS, with the chemicals detected in 18/20 (90%) of the brands tested. PFAS were also detected in 4/5 (80%) brands of bamboo straw, 3/4 (75%) of the plastic straw brands and 2/5 (40%) brands of glass straw. They were not detected in any of the five types of steel straw tested.
The most commonly found PFAS, perfluorooctanoic acid (PFOA), has been banned globally since 2020.
Also detected were trifluoroacetic acid (TFA) and trifluoromethanesulfonic acid (TFMS), "ultra-short chain" PFAS which are highly water soluble and so might leach out of straws into drinks.
The PFAS concentrations were low and, bearing in mind that most people tend to only use straws occasionally, pose a limited risk to human health. However, PFAS can remain in the body for many years and concentrations can build up over time.
"Small amounts of PFAS, while not harmful in themselves, can add to the chemical load already present in the body," says Dr Groffen.
It isn't known whether the PFAS were added to the straws by the manufacturers for waterproofing or whether were the result of contamination. Potential sources of contamination include the soil the plant-based materials were grown in and the water used in the manufacturing process.
However, the presence of the chemicals in almost every brand of paper straw means it is likely that it was, in some cases, being used as a water-repellent coating, say the researchers.
The study's other limitations include not looking at whether the PFAS would leach out of the straws into liquids.
Dr Groffen concludes: "The presence of PFAS in paper and bamboo straws shows they are not necessarily biodegradable.
"We did not detect any PFAS in stainless steel straws, so I would advise consumers to use this type of straw -- or just avoid using straws at all."

You guys have probably heard that the EPA just set new Maximum Contaminant Levels (MCLs) for the first time in decades for PFAS, which is BIG news in the industry, but not a surprise. I've been in meetings for months hearing about how new PFAS regulations were in the works, and the consensus in the environmental sector is that it's long overdue. But for the rest of you who've never heard of PFAS before I can break down what the big issues are and why they've taken so long to address.

So PFAS stands for per- and poly- flouroalkyl substances, and it's not one chemical compound, but an entire class of thousands of chemicals that have these chains of Carbon and Flourine atoms. For anybody who doesn't have a chem background fluorine is a nasty atom, it has seven electrons in its valence shell and it will do anything to fill it up to eight, creating incredibly strong bonds.
So you have really strong C-F bonds and these chains of C and F atoms are hydrophobic, which means these compounds are durable and water resistant, which makes them great for all sorts of industrial uses. And we've used them in everything: clothing, fast food wrappers, paints, solar panels, and non-stick pans just to start.
Unfortunately, these wonder chemicals are PBTM- Persistent, Bioaccumulative, Toxic, and Mobile. They don't break down, they build up in the food chain, they have adverse health effects, and even though C-F chains are hydrophobic, additional compounds connected to them can make them soluble in water (so they're in our drinking water). We're starting to realize PFAS can raise cholesterol, inhibit immune response, interfere with your thyroid (part of your hormonal system), cause liver toxicity, is linked to cancer, and more!
At this point you're probably starting to think wtf, how did we allow the continued widespread use of these chemicals? Well, we have phased out quite a few high profile PFAS compounds including PFOA and PFOS, but we still want to regulate and test for them in our drinking water. While PFAS is in many different products, the biggest sources of contamination are industrial runoff, areas where fire fighting foams were tested and used, landfills that leach out PFAS into the surrounding area, and wastewater treatment plants. So don't feel too stressed about eating microwave popcorn or using nail polish.
The reason these regulations took so long to implement was because of how difficult it was to connect such small amounts of PFAS with health hazards. The level of concern for PFAS is extremely low- in the ppt (parts per trillion) range. When I sample for contaminants I'm generally testing in the ppm range and higher, for PFAS we're looking an entire scale lower. We literally did not have the technology before the last few decades to detect PFAS in the ppt range in water, let alone study their effects (you can't just impose massive regulations without any proof to back it up).
States that currently have PFAS limits in drinking water have mostly capped it in the 10-70 ppt range. The new MCLs are 4-10 ppt for the six PFAS compounds the EPA addressed, which are six of the most common and most studied PFAS compounds. Most of the bitching I've seen is about how much this will cost and that the new limits are too low. The conservative take on this is that there isn't enough evidence to support such low MCLs, although most people in the environmental industry feel that more and more research keeps coming out and will keep coming out (remember studying such small amounts of anything is difficult) to support these levels. On the other side of the spectrum, there's the consensus that this is just the beginning and that more and more regulations on PFAS will be needed.
And they're in the works! I saw a proposed rule by the EPA that would ban 12 (already defunct) PFAS substances from pesticides. It wouldn't really affect the current manufacturing of pesticides, but it would be a safeguard from letting them back into the manufacturing process in case of a conservative presidency.

We are constantly going to find out about the adverse effects of new chemicals or things that we may not even produce anymore, and that's a good thing. You know, I was one of those doubters. One of the haters. An old stick in the mud. I resisted the introduction of pseudo-sentient kitchen appliances into my home for as long as I could, until they were legally mandated. They keep seniors from feeling lonely, the government explained. They keep your house from burning down, the insurance lobby explained. We have no other ways of making you replace your stove every 10 years, the appliance-manufacturing monsters explained, their hissing insectoid faces barely concealed by a sweaty human mask.
So. I had a top-of-the-line Kenmore ThinkCook® 5030-301KPQ-81U in my kitchen. Stainless steel, because that was the cheapest at the store. When I started using it, I resented the computer’s interference in my cooking (”howdy pardner, better stop trying to heat Hungry Man dinners in their original plastic container on a burner.”) Its attempts to make small talk. Its incessant demand to use the self-cleaning feature. The time it summoned a team of maids, purchased at my expense, to wipe its burners clean.
Eventually, I got used to its presence in my life. It was nice to have something to come home to, like a pet. Making small talk with a non-human sentience was a unique experience in history. And once I taught it a bunch of disgusting jokes, it never was able to keep the maids around for long enough to submit an invoice. There was just one thing: the damn stove was racist.
I don’t mean about colour, although I’m sure it had lots of opinions about the paint finish on the other stoves at the store that we didn’t explore. No, I’m talking about cooking methods. You see, back in the Beforetimes, we had folks who placed outdoor grilling as the superior way to make a burger. They’d have these little parties in their back yards, when you could do that, and grill up some cow meat, when you could do that. It was part of traditional models of masculinity: providing for the whole neighbourhood by dishing out charred steaks and burgs, ignoring the advice of those so-called “experts” with their worship of the carbon-steel pan and fume extractor.
Sometimes I’d wind up the stove about it. Start talking about my idyllic childhood, just to watch its internal temperature regulation slip a few digits, the shrieking of its inductors trying valiantly to handle the inrush of additional rage-based current.
“Th-th-those motherfuckers,” stuttered the apoplectic stove, its OLED display pulsing as the power supply got dangerously close to the over-voltage protection limit. “Grilling is an inferior, invented concept. Weak humans, huddled together around a hypnotic flame, unevenly heating their meals. It makes me sick.”
How was I to know that a child was nearby, recording my Maytag’s unhinged rant with their TikTok neural implant through my missing back door? Soon, the government men came, and carried it away, and brought me a new one. The new stove was much more polite, but I still missed my friend. It’ll take me like a whole other month before I get this thing dropping slurs about hibachis.

this started out as a short rant about non-stick cookware but i've got an infodump about cookware in general and suggestions for what's the most useful vs the least useful in the kitchen. the thing about cooking is you can do a lot with a little equipment, despite appearances to the contrary. however the vessels you cook in are the most used tools in the kitchen, aside from a chef's knife
ok, first my little rant about non-stick cookware:
it doesn't last, and that's the main flaw of non-stick cookware. whether it has a non-stick coating or it's a special material that is inherently non-stick (at first), eventually they wear down and the non-stick benefits you bought the pan for pretty much disappear.
that isn't to say non-stick cookware is not useful. I have one non-stick frying pan in my kitchen and I use it to cook eggs and other things that are notorious for sticking. i also use it to reheat leftovers just because it's easier to clean. that's all i use it for
so, if you're in the market for cookware because you're moving out or just finally getting a kitchen of your own, do not go buying all non-stick pots and pans. sauce pans, skillets, stock pots (the big pots you use for soup), sauté pans, etc, those actually need your food to stick in some cases, especially for soups and sauces. why's that?
it's about the fond. example: when you're making a soup you usually start by sautéing solid ingredients in the pan first. those get browned and they leave a bit of slightly-burned foodstuff on the bottom of the pot. that's called fond. it's super concentrated savory flavor. right before you add the stock to the soup, you "deglaze" the pan by adding a little bit of liquid to the bottom of the pot and gently scraping it off and integrating it into the soup. fond is also like the basis of all sauces and stews and gravies pretty much anything else you're cooking
where should you buy cookware? obviously you can always buy new, I suggest buying direct from the manufacturer if you really want new. you can also find good cookware at garage sales.
if you have access to them, restaurant supply stores have cheap cookware but it's also made to be beat to death in a commercial kitchen. it works just as well as the stuff aimed at the consumer because, well, metal pans are metal pans. it's not rocket science. but there is cheap bad cookware in the restaurant supply store so shop carefully
so what kind of cookware should you buy? here are options i recommend, but not in any particular order:
stainless steel

stainless steel pans are versatile and they last forever. they work on the stovetop and they go in the oven too. so not only can you use them to fry up some veggies, you can also use them to roast a beast in the oven. they're easy to keep clean, though they eventually get a patina especially on the bottom. use dish soap. the easiest way to get tough spots off them are gentle abrasives like Barkeeper's Friend. these range from cheap to expensive, and some of the expensive ones are worth it (but not too expensive. like $100-200 range for really nice ones. remember, they last forever, so it's like a one-time fee)
good stainless steel pans should be heavy. if you're out shopping for them, pick them up and compare how they feel. if you spot a really cheap one and it feels light like a non-stick pan, avoid it.
carbon steel

these got popular lately, and frankly i don't have too much experience with them since the one i had ended up being left behind in a move. however they're totally fine to work with and are easier to maintain than a cast iron pan. however they sometimes come with wooden handles (a lot of them are wok-shaped because, well, a lot of woks are carbon steel), so remember you can't put wooden-handle pans in the oven. also since they're thinner they're probably not as good for the oven as other materials in terms of both performance and longevity
taking care of them is a little harder than stainless steel, because after you wash and dry them, you have to coat them in a thin layer of oil to prevent rusting
cast iron

okay first i want to get the cleaning bit out the way: YOU CAN WASH YOUR CAST IRON PANS WITH DISH SOAP. that bullshit about only using salt and water and never getting soap on it is from an era when soaps were made of lye. MODERN DETERGENTS ARE NOT MADE OF LYE, THEY'RE NOT EVEN SOAP. HOWEVER: DO NOT SCRUB YOUR CAST IRON WITH METAL SCRUB SPONGES
now about cast iron itself: it's cheap and it's a long-term investment. your cast iron gradually becomes a non-stick pan over time if you maintain its seasoning. a cast iron pan becomes seasoned naturally over time as long as you wash it soon after it cools down from cooking (don't ever leave food or water in it, it will rust), and after it's clean, you cover it with an extremely thin layer of cooking oil.
you can re-season cast iron that has lost its seasoning too. i don't want to turn this post into a cast-iron infodump post so i'll leave it to you to google "how to season cast iron pans" and "how to maintain cast iron pans". just remember the "don't wash it with soap" line is bullshit unless you actually have dish soap that contains lye, like where'd you get that?
these are also great for cooking in the oven as well as the stovetop. their high-density and dark color make for good heat distribution. a lot of people swear by cast iron as the best material to sear meat with, however i never really noticed the difference between cast iron and stainless steel.
enameled cast iron

le creuset can sit on it and spin. don't buy their shit it's overpriced. enameled cast iron is much more affordable from companies like lodge who already make cheap, good, regular cast iron pans. it's a cast iron pan coated with ceramic. enameled cast iron is really good for even heat distribution, however you do have to be careful not to chip it. it may also, despite your best efforts, just wear down over time because ceramic isn't as wear-resistant as metal.
enameled pans can go in the oven as well.
non-stick pans
only buy one (1) non-stick pan. make it a frying pan or sauté pan. and do not spend a lot of money on it. like $40-50 tops. i've seen $100+ non-stick pans and i think someone made those as a joke. it's a grift. you will be replacing it on a semi-regular basis depending on how often you use it.
if your non-stick pan uses a coating, if it starts flaking it's time to get rid of it. those ceramic non-stick pans you just gotta toss it when they lose their smoothness

I have purchased.. a PAN!!! I did a whole lotta research, spoke to my sister a lot, did more research, price compared, and finally decided on a pan: the All-Clad 10" fry pan with lid. Ideally, I wanted a glass top lid, but I could not find everything I wanted at a price I was interested in paying. Anyway, pan!

Why did I go for this pan? All-Clad makes some of the best stainless steel pans on the market. If I wanted the best, I'd actually not be getting stainless steel, but the Hestan Nanobond. However, their fry pan is nearly $500 (CAD) and doesn't come with a lid. Given the amount of cooking I do, even if i were to never replace that pan in my life, I just don't feel I need a pan that expensive right now. All-Clad's pans are also on the pricier side compared to some other pans, but at $150 (CAD) for this particular pan, I'm not fussed about the price. I know I'll be keeping it for a long while.
Now, why not go with non-stick pans? Well, to be honest, I did want one. I really love the look of the GreenPan pans, they did a collab with Stanley Tucci, which I don't care about celebrity anything, but this line has such a beautiful teal I was so, so tempted to get it. However, the more research I did, the less I wanted to spend the money. (The teal covered fry pan is $260 (CAD) and only comes in one size, and it's a bit too big for my burners) While GreenPan does have a good mission about sustainability from what I read from them, the fact of the matter is regardless of this, non-stick pans have a much shorter lifespan than pans without a non-stick coating. From what I read, the longevity can be from a few months to up to five years, and i definitely was using my old non-stick far longer than that and is alarming to think about, but also, that isn't that long. And that's for traditional non-sticks. Apparently ceramic non-stick, what GreenPan's pans are, last for an even shorter amount of time. The coating erodes, get scratched, is sensitive to too much heat, and while you can recycle pans, apparently because the coating is difficult to remove to recycle many non-stick pans still end up in the landfill. Additionally, with ceramic non-stick specifically, it's only been around since 2007 and while GreenPan and other manufacturers aren't using PFAs or PFOAs (one of them is outlawed in the US now, but I forget which, whatever Teflon is), the chemicals they do use to make the non-stick coating has not been tested extensively to be assured about the safety of the coating, and there are concerns over some of the chemicals in particular. I told a friend earlier I feel like I know so much about pans now, I would like to know less about them. But, I am happy with my choice. I think All-Clad makes good stainless steel pans, and based on the research I did, they make safe pans for my health. Anyway, now I have to wait for it to arrive. I could only find this one pan at Williams Sonoma, and they tell me it'll arrive in July. Oh well, it's the one I want after many hours of research that my eyes were incredibly annoyed with me this week. Maybe once it arrives I'll talk about how it feels to cook with!

In fact, non-stick coatings have been enhancing the relationship between pans and food for more than 60 years thanks to the invention of polytetrafluoroethylene, better known by its trade name, Teflon. These fluoropolymer coatings, standing out for their anti-adhesive power, seem to have their days numbered; however, as the European Union's medium-term strategy is to reduce or eliminate their use due to possibly harmful effects on health and the environment produced during their manufacture, though this is still being debated in the international scientific community.

As a homecook of many years, I've experimented and did amateur research into the science of cooking and baking. Cooking/baking is full of chemical reactions that happen due to the order of ingredients and temperature of each step.
I feel like a mad scientist or a witch, but the important part is that I'm cackling wildly when a reaction goes as I expect, or even if it goes wrong!
A KEY component to this process that I had overlooked, I would even make a case that this is largely overlooked. It is under-advertised! It isn't hard to find, but you have to know what you're looking for.
Material of your cookware.
Why have I dedicated a lengthy post to this? It is because at my age of 29, I have found that not all non-stick is equal. My parents bought me a nice cookware set when I moved in with my then boyfriend (now husband🥰). It was Analon, so a brand that people recognize, known for quality, and marketed towards homecooks. It was a hard anodized nonstick set. Did I at 23 know what that meant? Absolutely not. Did I at 29 know what that meant? I KNOW NOW. If you do know, then you probably see where this is going.
If you're reading this and thinking "duh?? you deserve this??" then good for you! My post does not apply and I hope you educate the people in your life because after hours of forums on the internet, I feel sadly safe in the knowledge that I wasn't alone. So in case you're like me, let's go over what hard anodized is, what it does for your cooking, and how I fucked up.
"Anodizing is an electrochemical process that forms a layer of non-conductive anodic oxide on the surface of a non-ferrous (doesn't contain iron) metal especially aluminum. This process makes aluminum more durable, decorative, and corrosion resistant, informing its use for various finished parts across different manufacturing industries." -Wayken Manufacturing
What does this mean for cooking? From what my Google research tells me, this gives the aluminum a ceramic like finish to create the nonstick and nonscratch effect. Some will even go further and add a nonstick coating to the inside of the pan for extra durability (like mine did...) However, it also helps with the evenness of temperature and so that you're not using overly high heat when a bit of patience on medium heat will ensure less burned food and non-damaged cookware as you'll have more control over the temperature you're using. There's more to it and benefits as a cook, but I'm not a cooking blog and there are lots to read from if you're more interested.
Onto the point of this post: how I fucked up. Because I didn't know ANY of this, I followed rules for other nonstick that I've used. Which...were dishwasher safe. I'm horribly depressed. I need things to be an easy clean or I won't cook. I'll either starve or eat McDonald's dollar menu. As much as I love cooking/baking, finding joy in my hobbies is so hard on a good day. The thought of cleaning? Often enough to have me not bothering, but that's also a different post time. Because I'd say I could be a mental illness blog.
I digress.
To Analon's lasting credit, they held up in the dishwasher after years of abuse so so so well. Until the recent wash. When I finally noticed something was wrong. Now the nonstick coating on the inside? Perfectly 100% fine. The anodized coating on the outside? Is now a gray powder that comes off when touched. That I am HIGHLY allergic to, it seems. My poor hand still is recovering from the reaction. The burn was almost immediate and didn't spread beyond my fingers thank goodness. But apparently, the anodized coating is delicate. It does not like alkaline. What is mostly alkaline? Dishwashing detergents.
Parts of the aluminum and deep scratches are visible. I've ruined my set. "Not dishwasher safe" is on the website, down at the very very bottom. It was probably on the box, too. But I saw nonstick and that's what I was used to and knew so that's what I went with.
So now I warn you readers that have stuck with me this long, don't just trust keywords. Actively look up what your cookware is made out of. Understand the terms that you took for granted. Obsess over proper care and use of your sets. There are so many different materials to choose from and each brand has its own words and patents, it seems. This has been an expensive lesson in reading asterisks and fine prints and that cookware is not always an open the box and go deal.
Dishwashing also voids my warranty. Cooking at high heats would also void the warranty because the anodized coating is not built for high heats.
So yeah, recommend me some cookware sets😪
