Cranberry chutney
Sweet, tart, jammy cranberries evolve into the subtle aromatics of cumin, mustard, and bay leaf before rounding off into a smooth, even chili heat in this Anglo-Indian-style chutney. It's excellent in place of cranberry sauce on all kinds of roasts, meat pies, flatbreads, sandwiches, and charcuterie boards.
The cooked fruit-and-vinegar chutneys made by English cooks during the British colonization of India were inspired by the fresh and pickled Indian condiments that English traders and soldiers—including those in the East India Company's military arm—had acquired a taste for, but substituted locally familiar produce and cooking methods for Indian ones. "Indian" recipes began appearing in English cookbooks in the mid-18th century, inspiring and fulfilling a desire for the exotic and, effectively, advertising colonial goods. The domestic kitchen thus became a productive site for the creation and negotiation of colonial ideology: the average English housekeeper could feel a sense of ownership over India and its cultural and material products, and a sense of connection to the colonial endeavor desite physical distance.
This sauce, centered around a tart fruit that is simmered with sugar and savory aromatics and spices, is similar in composition to an Anglo-Indian chutney, but some Indian pantry staples that British recipes tend to substitute or remove (such as jaggery, bay leaf, and mustard oil) have been imported back in. The result is a pungent, spicy, deeply sweet, slightly sour topping that's good at cutting through rich, fatty, or starchy foods.
Recipe under the cut!
Patreon | Tip jar
Ingredients:
1/2 cup dried cranberries (krainaberee), or 1 cup fresh or frozen
5 curry leaves (kari patta), or 1 Indian bay leaf (tej patta)
1/2 tsp cumin seeds (jeera)
1/2 tsp black mustard seeds (rai)
3 Tbsp jaggery (gur / gud)
1-3 small red chili peppers (kali mirch), to taste
1/2” chunk (5g) ginger (adarakh), peeled
1 clove garlic (lahsun)
1/2 red onion (pyaaj) or 1 shallot
1 Tbsp mustard oil (sarson ke tel)
1/3 cup (80 mL) water
Pinch black salt (kala namak)
Curry leaves can be purchased fresh at a South Asian grocery store. If you can't find any, Indian bay leaves can be used as a substitute (the flavor isn't per se similar, but it would also be appropriate in this dish). Indian bay leaves are distinct from Turkish or California laurel bay leaves and have a different taste and fragrance. They will be labelled “tej patta” in an Asian or halaal grocery store, and have three vertical lines running along them from root to tip, rather than radiating out diagonally from a central vein.
Instructions:
1. Pound onion, garlic, ginger, and chili to a paste in a mortar and pestle; or, use a food processor.
2. In a thick-bottomed pot, heat mustard oil on medium. Add curry leaves or tej patta and fry until fragrant.
3. Add cumin and mustard seed and fry another 30 seconds to a minute, until fragrant and popping.
4. Lower heat to low. Add aromatic paste and fry, stirring constantly, for about 30 seconds, until fragrant.
5. Add cranberries, jaggery, black salt, and water. Raise heat and bring to a boil. Reduce to a simmer and cook uncovered, stirring often, until thick and jammy. Remove from heat a bit before it reaches your desired consistency, since it will continue to thicken as it cools.
Store in a jar in the refrigerator for 2-3 weeks.

Remembering Prakash Mehra, a remarkable filmmaker in Hindi cinema, on his birth anniversary (13/07).
He was among the trailblazers of masala films, alongside Nasir Hussain and Manmohan Desai. His collaborations with the actor Amitabh Bachchan resulted in numerous sensational hits and timeless masterpieces.
Mehra commenced his journey in the late 1950s as a production controller. In 1968, he helmed Haseena Maan Jayegi, featuring Shashi Kapoor in a captivating double role. Then, in 1973, he ventured into production and direction with Zanjeer. This exceptional collaboration with Amitabh Bachchan marked the beginning of a long-lasting and fruitful partnership, spanning seven more films. Among them, six emerged as blockbuster sensations: Hera Pheri, Khoon Pasina, Muqaddar Ka Sikandar, Lawaaris, Namak Halaal, and Sharaabi.
Their final joint project, Jaadugar, unfortunately faced a setback, concluding their streak of triumphs. Zanjeer holds the distinction of launching Bachchan's career as a leading actor, while Jaadugar was released during a transitional phase in Bachchan's illustrious journey.
Prakash Mehra also stood as one of the early Bombay directors who aspired to explore Hollywood. In the late eighties, he embarked on a collaborative endeavor with Frank Yandolino to bring The God Connection to life. This ambitious project aimed to include acclaimed Hollywood actors like Charles Bronson, among others. Despite substantial initial funding, the project ultimately remained unrealized.
Today, we remember Prakash Mehra's invaluable contributions to the world of cinema, his pioneering spirit, and the indelible mark he left on the industry.

kapil sharma PS-1 extras
(bear in mind, not fully fluent in hindi here!)
youtube
[0:17]
kapil: a big round of applause for our guests!
my question is to all of you. [to the audience] you might already know, they're making a big-budget film.
[to the actors] so when you found out that the budget is so big, did you tell your actual price to the producers or did you add some ten thousand to it, like it's fine, it's already so expensive, let us ask for a little more as well? or did the producers say, we're making PS-1 now, there will be PS-2,3,4,5 so please lower your rate a little?
i heard from [somebody] that those who weren't lowering their rates would be dying in the war scenes in the film. is it true, sir?
vikram: yeah, yeah, definitely.
-
vikram: you can say amitabh sir's dialogue; "i can talk english, i can walk english, i can speak english" (dialogue from the movie 'namak halaal' in 1982; i think they cut to when they're talking about kapil's english)
archana: [kapil] can flirt english! anytime!
kapil: i can what?
archana: you can flirt english. hindi, punjabi, sindhi, marathi, all!
kapil: thanks, thanks, pleasure. okay, you know that this film is based on kalki's novel and it's a 2600 page novel. so did you read the script or read the novel? and if you read the novel, how many days did it take you to read such a long novel?
sobhita: there are five books, each of them this thick.
kapil: you read the whole thing?
sobhita: yes.
vikram: half payment is for reading the novel.
kapil: for [a book] that long, actually yeah!
vikram: and exercise also with that.
kapil: you read the book in seven days.
-
archana: about trisha, do you know this?
trisha: so actually, my first film in telugu, "nee manasu naku telusu" ('i know your heart/mind'), in that film, archana ji was my mother; and she's very hot, and the role was of a hot mom, so…
kapil: until now, there's no one in the industry who has said they haven't worked with archana ji.
trisha: that's true.
kapil: some people were saying that when the british left in 1947, she was standing at the main gate to see them off.
-
[2:24] to [8:11] is the game, as per this post.
-
from [8:12]
kapil: karthi sir posted this photo.
[reads comments]
"it looks like they're pulling the TC (ticket collector for trains) aside to confirm their ticket on the waiting list"
(reply to above) "hey, that's not the TC, that's the director; they're confirming their roles"
please show more.
"karthi sir's smile is telling that his next scene is a romantic one"
"director be like: you're doing all the romance scenes; what share are we getting? take out a couple thousand [rupees]"
please show more.
[trisha's post]
"it seems like the producer is coming to discuss the budget, so she's taken out all the awards and put them there"
[another trisha post]
"by standing on that cake, you could even fix the ceiling fan"
[another trisha post]
"madam, a question: in horse riding, does the horse burn calories or does the person sitting on the horse burn calories?"
"you give your helmet to the horse and put on the horse's ears on yourself, then your height will be as much as the horse; free advice, there's no fees"
[jayam's post]
jayam sir posted a photo; back to doing what i do best. please show the comments below.
"i can also drive a tractor well; you are a good actor also"
"seeing the lion behind you, i remembered i have to (not sure what the word means exactly but i'm assuming it's some type of consumption) drink two bottles of glucose"
"sir, i have to shift my house, will you give your tractor? dm me the charges"
"he's also waiting for the ride; it won't move forward until the trolley is full (of people)"
please show more.
[sobhita's post]
oh this is anurag sir? (a filmmaker) show the comments.
sobhita: i'm feeling scared.
kapil: "boys are like this only. even if their own leg is broken, they are always ready to give a support to a girl" (referring to the fact that in the picture, anurag's leg is in a cast, and he's letting sobhita lean against him)
"sobhita ji, from looking at your shoes, it seems like you came straight from school"
(reply to above) "in that sense, then anurag ji looks like he just came after getting beat up"
please show more.
karthi: it's scary when it scrolls, huh?
kapil: "it looks like whoever they trusted and came to france, that person isn't picking up their phone" (because it looks like they're stranded somewhere)
"i have also sat like this is a foreign country; people started giving me money"

But before I wind up and say you bye for the day, here is Amitabh Bachchan for you !
Amitabh's conversation with Mausi in Sholay
Mausi : Arre beta, bas itna samaz lo ke ghar me jawaan beti seene par
pathhar ke sil ki tarah hoti hai. Basanti ka byaah ho jaaye to chain
ki saans loo.
Jay : haa sach kaha mausi aapne. bada bojh hai aap par.
Mausi : Lekin beta, is bojh ko koi kunwe me to phaik nahi deta.Bura
nahi maananaa , itanaa to poochhanaa hi padataa hai ke ladke kaa
khaandaan kyaa hai uske lachhchhan kaise hai, kamaataa kitnaa hai?
Jay : Kamaane ka to ye hai mausi,..,ke ek baar biwi bachhon ki
jimmedaari sar pe aa gayi to .. kamaane bhi lagegaa.
Mausi : To kya abhi kuchh bhi nahi kamaataa?
Jay : Nahi nahi ye maine kba kahaa mausi, kamaataa hai lekin,... ab
roj roj to aadmi jeet nahi sakataa na. .. kabhi haar bhi jaataa hai
bechaaraa?
Mausi : haar jaata hai?
Jay : haan mausi ab ye kambakht juwaa cheej hi aisi hai ab mai kyaa
kahoon ?
Mausi : heynnnn. to kya juwaari hai?
Jay : chhi chhi chhi chhi mausi, woh aur juwaari na na. woh to bahot
hi achchha aur nek ladka hai.Lekin mausi, ek baar sharaab pi li na
phir, achchhe bure ka kahaa hosh rahataa hai. Haath pakad ke bitha
liyaa kisi ne juwaa khelane. ab isme bechare Veeru ka kya dosh?
Mausi: Thik kahate ho beta. juwaari woh sharaabi woh lekin, uska koi
dosh nahi.
Jay : Mausi aap to mere dost ko galat samaz rahi hai. woh to itanaa
seedha aur bhola hai. aare basanti se uski shaadi karke to dekhiye, ye
juwe aur sharaab ki aadat to do din me chhoot jaayegi.
Mausi : Arre beta, mujh budhiyaa ko samaza rahe ho. ye sharaab aur
juwe ki aadat kisi ki chhooti hai aaj tak.
Jay : Mausi aap Veeru ko nahi jaanati , wishwaas kijiye wo is tarah
kaa insaan nahi hai. Ek baar shaadi ho gayi to woh us gaane-waali ke
ghar jaanaa band kar degaa. bas, sharaab apne aap chhoot jaayegi.
Mausi: Hi hi, bas yehi ek kami raha gayi thi. to kya kisi gaane-waali
ke ghar bhi aanaa jaanaa hai?
Jay : To isme kaunsi buri baat hai mausi. arre , gaana soonane to
raajaa- mahaaraajaa unche unche khaandaan ke log jaate hai, haan.
Mausi : Achchha ! to beta ye bhi bataate jaao ki tumhare yeh gunwaan
dost kis khaandaan ke hai?
Jay : Bas mausi, khaandaan ka pataa chalate hi ham aap ko khabar de
denge.
Mausi : Ek baat ki daad doongi beta. bhale sau buraaEyaa hai tumhare
dost me ,phir bhi tumhare munh se us ke liye taareefe hi nikalti hai.
Jay : ab Kya karoo mausi.. mera to dil hi kuchh aisa hai.(pause)...
To.. mai ye rishtaa pakkaa samazoo?
Mausi : Pakkaa? . bhale saari jindagi ladaki kuwaari baithi rahe.
lekin mai aise aadami se Basanti ko nahi byaahanewaali. Sagi mausi
hoon. koi sautelee maa nahi.
Jay : Ajeeb baat hai. mere itane samazaane par bhi aap ne inkaar kar
diyaa.. Bechaaraa Veeru... naa jaane kya karega?
Amitabh's conversation in Namak Halaal
Arjun Singh : know such English that I will leave the British behind. You see sir, I can talk English, I can walk English, I can laugh English, I can run English, because English is such a funny language.
‘In the year 1929 when India was playing Australia at the Melbourne stadium Vijay Hazare and Vijay Merchant were at the crease. Vijay Merchant told Vijay Hazare. look Vijay Hazare Sir , this is a very prestigious match and we must consider it very prestigiously. We must take this into consideration, the consideration that this is an important match and ultimately this consideration must end in a run.‘
‘In the year 1979 when Pakistan was playing against India at the Wankhede stadium Wasim Raja and Wasim Bari were at the crease and they took the same consideration. Wasim Raja told Wasim Bari, look Wasim Bari, we must consider this consideration and considering that this is an important match we must put this consideration into action and ultimately score a run. And both of them considered the consideration and ran and both of them got out.‘
