I've recently discovered a new Polish metal band with a symphonic & folk vibe - LYRRE. And it just ROCKS. I need the world to discover them so here you go.
They even have a hurdy-gurdy (which I'm kind of obsessed about recently), played by Michalina Malisz who was previously a member of Eluveitie.
Their first album "Not All Who Dream Are Asleep" is a masterpiece and I'm currently replaying all their songs. Here you've got two of them:

5 System of a Down riffs on hurdy gurdy by Michalina Malisz
3 things I love: unusual instruments, cover songs, and System of a Down. I got chills hearing “BYOB” at the start, and I was crying by the time she got to “Aerials”- one of my fav songs by them.
This also adds to my exploration of rock/metal sounds played on classical (eg stringed) instruments. It does help that the original bass line and percussion are still there. I’m okay with just parts of the songs being played like this, rather than the whole ensemble being classical instruments. It loses it’s punch if you don’t have that fuller, bass sound. (In this case, I mean bass versus treble, rather than an electric bass guitar as an instrument.)
